A walk among the vines at La Petite Ferme La Petite Ferme has ingratiated its way into the hearts of locals and tourists alike. Positioning itself as a one stop destination that offers sublime cuisine, boutique wines, luxury accommodation and spectacular views, and now the opportunity to enjoy an exclusive wine tasting and vine orientation tour of the History of their wine making. The charismatic Avron Williams leads the tour followed by an exclusive tasting of 4 of the best wines specifically chosen b wine maker Wikus Pretorius. Wikus has been with La Petite Ferme since October 2015 and is inspired by “the opportunity to go out and pick individual parcels that are specific to the area and to the farm itself. We are fairly small and as everything is done by hand I can go out and find these unique spots within our vineyards and showcase what we can do.” Striving to be innovative in a natural environment is a challenge most winemakers face but it’s one Wikus takes in his stride and every year he tries to change up his technique He has gone on to win numerous wine awards and has recently introduced a barrel-fermented stellar Chardonnay to its range.

A Soufflé a day …

METHOD:

1. Place cream, milk, zest and thyme in a pot and bring to the boil. 2. In a bowl, mix together egg yolks, castor sugar, flour and cornflour. 3. Pour the milk-cream through a sieve onto the egg mixture, mix well. 4. Pour back into the pot and cook on the stove, while stirring with a whisk until thickened and starting to boil. 5. Remove from stove and allow to cool.

TO MAKE THE SOUFFLÉ:

Lemon & Thyme Soufflé with Honey Ice-Cream LEMON AND THYME BASE: • • • • • • • •

125ml cream 125ml milk 15g flour 15g cornflour 50g castor sugar 3 egg yolks Zest of 3 lemons Few springs thyme

• 3 egg whites • 30g castor sugar • 2 tbsp lemon-thyme base

METHOD:

1. Ramekin painted with melted butter and coated with castor sugar-keep in fridge until needed 2. In an electric mixer, beat the egg whites to soft peaks. 3. Keep whisking and add the sugar little by little until stiff peaks. 4. In bowl, mix 1/3 of the egg whites with the soufflé base. Mix well. 5. Then gently fold in the rest of the egg whites until combined. 6. Place into prepared ramekins, fill right to the top and wipe off excess with a pallet knife. Knock the ramekin on your surface to release any air bubbles. 7. Bake at 200C until well risen and slightly golden on top. 8. Sprinkle lightly with icing sugar before serving.

Bring the milk and cream to the boil. Mix together the egg yolks and sugar. Pour the hot milk-cream over the eggs mixture, mix well. Return to the stove and cook until slightly thickened, while stirring. Do not let it boil. 5. Remove from stove and mix in honey. 6. Allow to cool completely before churning.

Award-winning wines for TransCape riders at La Couronne

Participants in the Liberty TransCape MTB Encounter will be treated to a selection of award-winning wines during the mountain bike race that finishes after a taxing 614km at La Couronne Wine Estate in Franschhoek on February 10. Not only will riders experience a tranquil finish to one of South Africa’s premier multiday races, the team at La Couronne will ensure the riders have a memorable experience off the bike too! “The La Couronne estate covers 40 hectares, of which half is under cultivation for wine production. Wine-maker Henk Swart uses only the best viticulture technique to produce topquality wine from the grapes that are hand-picked on the farm. Grapes had been cultivated on the mountain slopes surrounding Franschhoek for over 300 years and we are passionate about continuing the legacy” said Eldorette Carinus, who will be on hand to provide information on their brands. The community is invited to join them at the finish to welcome home the riders, who include former Springbok captain John Smit and Proteas batsman Gary Kirsten. Picnics, pizzas, a variety of other food, live music and designated play areas for children will be on offer. La Couronne’s wines that received gold-medal recognition this year are their 2015 chardonnay (Vitis Vinifera), 2014 portside red (Goldwine Awards) and this year’s merlot rosé (Vitis Vinifera, Michelangelo Awards, Rosé Rocks and Goldwine Awards). The organisers have also opened the race to e-bikes, the first event of its nature to do so in the country. “Our mission is to motivate as many people as possible to ride. This falls in with our philosophy to spread the message of wellness, fun and family time through the privilege of riding.” said ASG Events chief Wynand de Villiers. With its beautiful Cape Dutch architecture, prestigious wines and famous Indian Runner Ducks, VERGENOEGD LÖW WINE ESTATE is known for its timeless appeal. This summer the estate is excited to present its second season of Live Summer Sunday Concerts; featuring some of South Africa’s best local musicians these concerts are not to be missed.

One night, after sampling several of South Africa’s finest craft beers and talking about progressive politics, indie-rock, creativity blah di blah…. the idea of converting a 1975 Kombi to a beer truck was born. What if we take something old, make it look new and add something cool? One beer led to another and Bar Di Bar became a reality.

A festive food market will be set up on the estate’s lawns with a variety of food options, perfectly complemented by the wines to tantalize the taste buds.

Evolution happened and a craft beer and tapas bar opened and closed several years later. However, in mid December, the trendy eatery opened its doors again on Freedom Route, situated on the R301 between Boschenmeer and Val De Vie.

Each concert begins at 11h00 with opening performances kicking off at 12h00 and the headline band on stage at 16h00. The concerts will end at 18h00.

A New tapas and oyster menu has been introduced for summer which offers a perfect accompaniment to the range of wines and Méthode Cap Classiques. The small plates menu will be served on the terrace from 11h00 to 18h00 from Monday to Saturday during season. The Haute Cabrière Cellar Restaurant is now also open for lunch and dinner on Mondays, making lunch available seven days a week, and dinner Mondays to Saturdays. Chefs Nic van Wyk and Westley Muller bring a lighter touch to the menu for summer and their Sunday Feast, has now become a permanent addition to the menu. Priced at R370 pp and includes Haute Cabrière and Pierre Jourdan wines.
