From a Dream to Reality … Beleef Restaurant

Taking over the premises of Ryan’s Kitchen at Place Vendôme in Franschhoek’s Main Road, Beleef Restaurant can’t wait to take locals and tourists on a true “boerekos belewenis” (boerekos experience). Headed by chef Herman Steyn, Beleef offers traditional South African fare with a brand new outlook on “boerekos”! Inspired by the likes of old South African stalwarts from people like S.J.A de Villiers of Leipoldt’s fame, and of course his parents who were both brilliant, no -nonsense cooks and according to Herman, the pioneers of the original “farm to fork” concept and a “waste nothing” attitude! Herman’s passion for traditional South African food was born out of these, his childhood memories which almost all involved food. From ouma and oupa to mom and dad and remembering the first time he made an egg when he was just six years old. Making Franschhoek his home in 2009 and being executive chef of the Traumerei group, Herman fell in love with the quaint village and dreamed of owning his own restaurant

here. After a stint on a game farm in the Free State, he returned to Franschhoek in 2015 where Café Franschhoek with Leo and Ilsje de Beer became his home for the next few years. Herman looks back at the experience with fond memories and still names Café Franschhoek as his favourite spot for “coffee and brekkie” in town. The name Beleef means “experience” in Dutch and Afrikaans and it is his vision of a genuine “oumas kitchen” that Herman wants to bring to life from Beleef. Expect dishes like smoorsnoek, melktert, pampoenkoekies all with a unique twist and Herman’s signature surprises. Strictly seasonal and “farm to fork” with unique South African hospitality at its very best! Die lewe is ‘n pampoen koekie in kaneel! (Life is like a pumpkin fritter in cinnamon!) Come in and Beleef! A Tribute to Morena

“I drink it when I am happy and when I am sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it when I am not hungry and drink it when I am. Otherwise I never touch it unless I am thirsty” – Madame Lily Bollinger (1899-1976) Overlooking the exquisite Franschhoek Valley and nestled along the pass road is one of Franschhoek’s secret gems – Morena. Those who have been lucky enough to have experienced a personalized tasting at Morena, mark it as a bucket list experience! The dream began 10 years ago when the irresistible pleasures of Champagne, its history and all the characters that have made it into the celebratory drink it is today, captivated owners Nick and Gaye Davies. Their move to the beautiful Franschhoek Valley enabled them to make Méthode Cap Classique in the French tradition in their boutique cellar on the slopes of the Franschhoek Mountains. An association with Thierry Lesne from Epernay, France, assisted in producing a wine of high quality using the exact method that is still used in the Champagne region today. The style is dry and elegant and suitable to the South African lifestyle. Producing limited quantities ensures attention to detail. Nick offers bespoke Champagne Tours for groups ranging from four to 24 persons. These very popular tastings consist of a description of how Champagne is made with visitors riddling and degorging bottles in the cellar, a brief history of Champagne and tastings of MORENA Cap Classique and Thierry Lesne and Beaufort et Fils Champagnes. Musings of a Musician

“I’ve worn most of the the hats from the singer in a band, songwriter, studio and record company owner to music business entrepreneur – most recently bringing the finest South African artists to perform at the Franschhoek Cellar for the very first time. I’ve come a full circle: At the root of it all I like ideas and making them work. It’s a mad business, fuelled by a simple truth: people love music. As long as they do I’ll be finding ways to facilitate that. There’s always a new conversation, a new way to connect fans to musicians. That’s what it’s always ever really been about for me.” Franschhoek local James Stewart is an Emmy nominated, multi-SAMA Award winning singer songwriter and music business entrepreneur. He made his bones as the writer and singer for pop rock sensation The Usual which captured South African hearts and minds with national number one hits like ‘The Shape that I’m in’, ‘Like a Vision’ and other chart-topping singles. This laid the platform for a successful solo career resulting in international TV exposure. His collaborations with multi-Emmy-Awardwinner Andy Gundell and Grammy Award winner Julie Gold resulted in an Emmy nomination for ‘Outstanding Musical Composition’ for their composition ‘Prayer’ featuring the Archbishop Emeritus Desmond Tutu. James has also recently achieved success in the European dance market through his collaboration with Serbian EDM Producer Nemanja Kostic who remixed “The Shape That I’m In”. With almost a million Spotify streams the track cracked the Beatport top 10. Besides being a successful commercial writer, James partners with Barry van Zyl – Johnny Clegg’s drummer and go-to ‘world beat’ specialist, multi-SAMA winning engineer and producer Peter Pearlson and successful music publisher John Fishlock. MUSICalchemy offers a full service music production, licensing administration service which has produced soundtracks for award-winning documentaries, dramatic, sport and series TV programmes and feature films. www.music-alchemy.com

Set the Season Alight

WITH LA PETITE FERME’S NEW WINTER MENU AND NEW CHEF Chef Kyle Norris has recently been appointed to head THE RESTAURANT AT LA PETITE FERME. Chef Kyle, has wasted no time instituting the new winter menu with tantalizing traditional offerings with a touch of gastronomic panache. The menu boasts an array of steaming roasts and bakes served with skillfully crafted, boutique wines in one of the region’s most envied locations. A former parachute battalion soldier, Kyle turned his hand to the kitchen almost two decades ago. He rapidly ascended through the ranks of numerous four and five-star properties in South Africa and abroad, including Tsogo Sun’s Beverly Hills hotel in Umhlanga Rocks and most recently, as Executive Chef, at Twin Waters – the first premium, multidining and entertainment centre of its kind in Nigeria. His arrival at Le Petite Ferme was the result of a dream held by his executive sous chef, Maveer Thulsie. Kyle and Maveer had worked together at a Drakensberg resort in 2012/3 and Kyle had left an indelible impression. Maveer himself has a sterling record in top notch kitchens learning from some of the country’s finest chefs, including David Higgs at the Saxon Boutique Hotel. Rounding off the kitchen team are pastry Chef Oscar Baard formerly of the Twelve Apostles Hotel & Spa and premier Kuwaiti lifestyle brand Fauchon Paris; and, junior sous chef Esther Labuschagne who joined La Petite Ferme in 2015 shortly after moving to the Cape from Lion Sands Private Game Reserve. The new winter menu presented by the team, is the sum of

their experience and passion and represents an expression of creative freedom with flavours, ingredients and textures. Starters include dishes like grapevine-smoked duck served with grilled green onion, micro greens, black cherry tuile, pomegranate, passion fruit dust and candied carrot roots. Baked camembert has been prepared with asparagus pesto, a classic vinaigrette, black garlic, candied walnuts, baby kale and fig confit. The slow-roasted lamb is a classic restaurant main and comes served with aubergine, fondant potatoes, spuma mint yoghurt, plum, red wine jus, candied rosemary and tomato soil. Roasted chicken roulade, partnered with mushroom duxel, cauliflower-and-turmeric purée, purple carrots and almond broccoli, pickled shallots, port jus and wild mushroom shards and the venison patisserie, served with butter bean, biltong, compressed grape, apple, apricot sous-vide loin, truffle mash, candied beetroot, spinach purée and bone marrow jus are also on the new menu. As is Franschhoek trout, with deep-fried pommes anna, seasonal vegetables, dill crème fraîche, caper butter

and beetroot dust. Complete your meal with the “Quartet of South Africa” featuring melktert, pampoenkoekies, hertzoggies and koeksisters or warm malva pudding served with guava sorbet, cinnamon, coffee-cardamom crème anglaise, vanilla shortbread and basil. The restaurant at La Petite Ferme is open for lunch from 12h00-15h30 and for dinner on Fridays and Saturdays from 18h30-21h00 in winter (May – October). Advance reservations are recommended. ART

Art, Wine & Timelessness

HOLDEN MANZ WINE ESTATE “THE HIDDEN GEM OF FRANSCHHOEK”

The truly remarkable art collection features the works of signed South African artists such as Karin Miller, Luhanri Bekker, David Filer, Marie Stander, Donna McKellar, Carl von Bach, Dedre Fouquet, Vincent da Silva and Lisette Forsyth, each personally selected by Migo and Gerard. Every living space is enhanced by an exquisite creation of contemporary art, from almost disturbing images by Shui-lyn White to delicate little sculptures, from the imposing head by Lionel Smit that dominates the lounge to pictures of buildings and people, reflecting a kaleidoscope of South Africa through unusual perspectives.

Walking through the gardens and vineyards you are greeted by dramatic sculptures: “Cornering Cheetah” (by Vincent da Silva) tearing through the air, “Gazelle Pair” (by Etienne de Kock) dancing at the side of the road; the life-size “Wind Girl” also by Vincent, reflecting the grandeur of the craggy mountainscape behind the Estate

Migo has a similarly stunning art collection in Franschhoek village, Manzart. He is also in the process of transforming the current yoga studio at the Estate into a fully-fledged art gallery.

So much to explore. The spa, afternoon tea, the picnic route, the quiet walks, new tasting journeys, constantly new additions to the awesome art collection. Truly, a gem. To be treasured.

The Estate restaurant is cradled at the head of the valley and here too, art enhances every space, Whimsical butterflies by Dominique Postera flutter on the walls of the balcony. Passion is evident with each dish and each glass of wine.

Partly underground, the spectacular facility now houses the winery’s oak foudres, demi-muids and barriques. TRAVEL

A River Runs Into It

“Wherever you go becomes a part of you somehow” read the note left on my pillow on the final night of my stay at Wilderness Safaris’ Kwetsani Camp in the central Okavango Delta. I agree; one certainly cannot leave this magnificent and mysterious place and be untouched by it. The facilities at Chobe airstrip have much in common with those at the other airstrips that dot the delta: undercover parking for game-viewing vehicles, a windsock and a hut-like ‘terminal’ with a bar counter and room to store emergency materials. All these are set against the edge of a mopane forest that hides the airstrip’s loo. And what a loo it is! There’s no-one around, except when a Caravan (Cessna, not camel) drops offs or collects the next few guests, so a rope makes do as door. Two rustic twig walls screen the terminal side of the loo; the others are open to the forest. I couldn’t help wondering how I’d react if an elephant were to pass by closely while I’m in the loo… A very real possibility based on the elephant-browsed state of the mopanes only meters from where I was perched. I was heading for Savuti camp – on the bank of the erratic Savute Channel that dried up from 1982 – 2008, then had water again for two years before once more drying up until 2016. (During my stay the water level had just started rising again after good rains in southern Angola where the Chobe River that feeds the channel has its origin.) The woodlands, floodplains and marshes of this area teem with wildlife. We had not yet left the airstrip when we spotted the first herd of impala, The next two days delivered playful juvenile lions (on the first game drive of my stay), baboons, hippo, kudu, Nile crocodile and jackal to name only a few sightings. It’s however the elephant concentration that is the biggest drawcard here. Up to 70 000 elephants call the Chobe / Linyanti area home. Birdlife is bountiful too and the twitcher in me could soon tick off an impressive array. Savuti Camp’s seven thatched, tented en-suite rooms are strung out along the bank of the channel like droplets on a blade of grass. Boardwalks connect the rooms to the public area where the open-sided lounge, dining room and pool deck all look out over the channel. It’s the bar though

that takes pride of place, overhanging the edge of the dark, lily-studded waters below. When the channel is dry elephants can be observed from the bar as they gather at the remaining deep water holes, I was told. My room offered all the amenities one could wish for: from a super-size bed to a writing desk and a hippo-sized shower. Hot water and electricity are supplied via solar power, as at all the Wilderness Safari camps in Botswana. Best of all is what it did not have and is generally not available in the camps – Wi-Fi or cellphone reception. I soon realised that the deck was not only my favourite perch, but also that of several Burchell’s starlings that made a game of flitting away moments before I could get the definitive photo of their iridescent plumage. Every few minutes my deck adventures were punctuated by the sound of hippos coming up for air in the reeds nearby. The days quickly took on a familiar rhythm: wake-up call, coffee, morning game drive, brunch, lazing about, high tea, afternoon game drive, drinks, dinner, repeat. On my last day at Savuti, towards the end of our afternoon game drive we were surprised to find that a lantern-lit bar had been set up on the edge of a marsh. One couldn’t help feeling ‘Out of Africa’ standing with a cocktail in hand basking in the Okavango sunset to the tune of a frog and hippo choir from a nearby pool. All too soon it was time to leave Savuti and head to Kwetsani Camp in the central part of the delta. With its five luxurious treehouse rooms, Kwetsani sits lightly among the soaring palm, mangosteen and fig trees of the eponymous elongated island. Sweeping does not begin to describe the camp’s views over the floodplains and channels surrounding the island. It really is a case of seeing is believing! Game drives started with a 10-minute boat trip to Handu Island – dodging the occasional hippo along the way. African Jacana, malachite kingfishers, wattled cranes and

other ‘water specials’ kept the twitchers happy, while the island soon delivered buffalo, wildebeest, kudu, warthog, water buck and zebra. Red lechwe were everywhere on the floodplains, with a few tsessebe and some elephants sprinkled in too. The highlight though was the female leopard and two cubs that we observed at length and close up as they rested in the shade of a shrubby knoll. A mokoro excursion on a nearby channel revealed the delta’s smaller creatures up close. Surprisingly, the speckled golden jacana eggs in their floating nest proved most memorable. My Bedouin-tented room was exquisite, but the outdoor shower proved to be the piece de resistance. High up in a majestic mangosteen tree with views over the floodplain it proved too tempting – even for this shy traveller. On my final night, after a pair of pre-dinner tall negronis and the usual superb three-course dinner, I heaved myself onto a couch – Glenfiddich in hand – and pondered the peculiar contentment I was feeling. Later, in my room, it hit me. I’d been Okavangoed! I voluntarily allowed a very special place to burrow its way into my heart, where I hope it’ll always stay. At least until I can go back again. Chef Michael Deg’s Fire at Cavalli In anticipation of the cooler winter months ahead, Head Chef Michael Deg of the Restaurant at Cavalli Estate is playing with FIRE.

FIRE at Cavalli is a dynamic way to relook a selection of South Africa’s hearty winter dishes with a new and exciting twist. Although the concept of introducing fire as a medium of cooking is not new to the braai aficionados among us, Chef Michael Deg imaginatively takes the use of FIRE in his cooking a step further. He sets out to explore the technique, creating exciting flavours through chargrilling, flambéing and smoking fresh ingredients with infused wood chips, in constant search of innovation to prepare his culinary masterpieces. For those who prefer vegetarian options, FIRE caters to all dietary requirements, firmly establishing Cavalli Estate as the winelands destination of choice for both vegetarians and vegans. From a flame-grilled cauliflower steak to charred Karoo lamb neck, Michael Deg’s superb culinary

technique makes the most of the ultra-seasonal local produce of the region.

Chef Michael has an impressive work history, becoming head chef of Delaire Graff in 2014 and having many a talented chef work under him including, Keven Grobler, head chef of the Michelin star restaurant Jan in Nice, France, and now heading the kitchen of the newly opened Le Petit Manoir in Franschhoek and Guy Bennet, head chef of Grande Provence, to name a few. In Late 2017 Michael became head chef of The Restaurant at Cavalli Estate. Guests are invited to sit back and enjoy all elements of FIRE at Cavalli, from savouring a dish prepared over flames to keeping warm thanks to the blazing fire in the state-of-art Cavalli dining space this winter.
