Paserene – a Unique Winery in Franschhoek

Paserene offers something special for every visitor with a contemporary tasting lounge, superior service and elegant luxury wine selection. A winery at the very heart of the Franschhoek Wine Appellation, its’ name is derived from the Latin “Passeriformes”, the name given to “traveling and free” birds like martins, swifts and swallows. Co-owned by Martin Smith, a third-generation winemaker, born in the town of Ashton, and Ndabe Mareda, the pair joined forces over a shared ideal to produce world-class wines with creativity and passion. The tasting lounge (often referred to as ‘The Nest’), designed by SCS Architects, “complements the current landscape whilst being in harmony with the natural surroundings.” Set next to a small dam over which swallows sweep, this is the perfect spot for sipping on the delicious Paserene wines. The wine tasting experience invites guests to sink into comfortable chairs next to the fireplace or step outside and sit on the deck overlooking the tranquil water. There are two wine tasting experiences on offer: the Elements Range Tasting and the Paserene Range Tasting. The Elements Range showcases what Martin Smith can do

with excellent grapes from Elgin, Franschhoek and Tulbagh, and with his careful elevation in the cellar. The tasting includes the Rosie (Rosé), Emerald (Sauvignon Blanc), Dark (Syrah), and Midnight (Cabernet Sauvignon). Paserene’s resident Sommeliers will take you through each wine, allowing you to give your own feedback and tasting notes along the way. It costs R95 per person and is the perfect introduction to this range of wines. The Paserene range tasting looks into the luxury range, made up of the renowned Marathon (now 100% Cabernet Sauvignon), Union (Carignan, Mourvèdre, and Syrah), Chardonnay (100% Chardonnay) and the small-batch produced Shiner White (Sauvignon Blanc and Semillon Gris). This tasting costs R200 per person and is also offered as a blind tasting where guests are asked what they smell and

taste, without being guided. It is a truly different experience. As the Michelin Guide would say, “well worth the drive!”. A small plates selection of nibbles such as cured, organic olives, spiced and roasted nuts, homemade pâté, a variety of cheeses, charcuterie, and Franschhoek smoked trout, or the Paserene platter are available to be enjoyed alongside the tastings. The tasting lounge plays host to several small events, luncheons and concerts throughout the year and can also be booked for intimate weddings and birthdays.
