La Motte Receives Mayoral Award La Motte Wine Estate in the Franschhoek Valley was recognized as the winner in the category for Tourism Destination of the Year in the annual Cape Winelands District Municipality Mayoral Tourism Awards.

Café BonBon Welcomes New Chef Café BonBon’s new chef, Archie Maclean grew up in Scotland before moving to South Africa’s warmer climes in 2007. Asked why he became a chef he says: “I don’t have a cooking-with-granny-in-the-kitchen story; I only discovered the pleasure of good food much later on in life. I was 19, working as a barman, and I was called into the kitchen one night to help. It was a big deal and the chefs were cool. After that night I never looked back. I quit my college course and moved to Surrey in England to do a 3-year apprenticeship under Michelin-starred chef David Evans. My passion grew and grew and I began my culinary journey.” Archie has a great deal of experience cooking an array of cuisines in various countries, from Scotland to Australia and New Zealand; and during the last decade, all over South Africa. “I spent three and a half years at Le Quartier Français, in The Tasting Room, which had been consistently voted among the top 50 restaurants in the world. A highlight, was assisting executive chef Margot Janse to develop her

award-winning menu. From there it was to Asara and then to the Kruger Park. I relocated back to the Cape for a short stint as head chef at Neethlingshof and then to Catharina’s Restaurant at Steenberg Estate in Tokai. Café Bon Bon is my new home and I am very excited for the opportunity to take the reins at such a well-loved restaurant.” The new summer menu is fresh and light, offering homemade dishes, using locally sourced ingredients. The focus is on flavour and interesting combinations. Expect dishes like line fish with aubergine caviar and spiced avocado puree or compressed melon, buffalo mozzarella and rocket as a starter. For dessert, the chilled peach rice pudding, brulée espuma and honeycomb is not to be missed. Masterpiece of the seven seas

S

imply breathtaking is how cruise connoisseur Attie Swanepoel describes the new Regent Seven Seas Explorer, scheduled to arrive in Cape Town on 21 December 2018 for the South African leg of her itinerary. Attie, who hails from the Cape, has sailed with Regent before – as well as with other cruise lines – but when he heard about ‘the most luxurious ship ever built’ he just had to experience it for himself. “Seven Seas Explorer was honestly the best ship we’ve been on,” says Attie. “The food was extraordinary, the service excellent and the entertainment suited all tastes. After completing his Oenology degree at Elsenburg Agricultural Institute in Stellenbosch in 2006, he gained invaluable experience through harvests at the prestigious Chateau Bellefont Belcier and Chateau Trianon in Saint Emilion, one of the principal red wine areas of Bordeaux, France. On his return to South Africa he assumed the position of head winemaker at Eagles’ Nest in Constantia where he completed ten harvests. During this time he extended his international experience through various trips to Australia, France, Germany and Switzerland. Stuart considers joining the TOKARA winemaking team in 2017 as head winemaker at the age of 32, as one of the highlights of his career. He believes that the best wines are made by allowing the

grapes to express their terroir and by guiding the fruit carefully and with minute attention to detail through the winemaking process to the bottle. Making the cut at the 2018 FNB Sauvignon Blanc Top 10 with his maiden TOKARA Reserve Collection Elgin 2018 vintage in one of the most contested wine categories, is a feather in his cap. The wine stems from TOKARA’s Highlands farm in Elgin, an area producing some of the best cool climate renditions of this variety, with fresh acidity and purity of fruit in perfect balance. His winemaking style is guided by the knowledge that truly great wines express a unique sense of place. Cavalli’s Chef Deg Presents RAW

RAW celebrates the turning of the seasons, showcasing the homegrown produce from the estate garden and celebrating it by letting the ingredients shine. The dishes are served in a way that allows the best of these flavours to be extracted, using simple techniques that let the ingredients speak for themselves in the most natural and nutritious state – which is raw. The raw elements will form part of the new spring menu and won’t be a menu in itself. Chef Michael Deg says: “Our garden is abundant with peas, broad beans, bok choy, fennel, zucchini, yellow peppers, heirloom beetroot and carrots all planted and harvested during springtime.” The link to foraging and a truly organic approach to ‘growing your own’ holds true at Cavalli. Every day before service the team pick vineyard sorrel, nasturtiums, wild fennel and pineapple sage flowers, all grown around the estate. They use the amazing lemon flavour of sorrel with fish dishes and the beef fillet, where the sharp lemon flavour cuts the richness of the beef and helps with digestion to boot. The wild nasturtium, with its fragrant peppery flavour, makes an awesome pesto. The new menu includes dishes such as beef carpaccio with flavours of a Caesar salad; Asian spiced springbok tartare with sriracha aioli, smoked egg yolk and garden kale; and lightly-cured sea bass with elderflower and strawberries. Also on the menu is crushed garden peas served with roasted beef fillet and, for the vegans, a carrot tartar with onion ketchup, crispy ginger, pickled mushrooms, and a vegan crème fraiche made with almonds and coconut.

All the vineyards are irrigated with pure spring water and are located on a natural watershed area. The area is renowned for its diverse fynbos (indigenous flora), giving the estate’s wines a unique herbaceous characteristic.

The team changes a few dishes at a time every week or so. It is a process that is referred to as “evolving” the menu at Cavalli. The most important consideration when putting on new dishes is that the ingredients need to be in season and need to be sourced locally. Taste tests and experimenting with plating is part of the process. Often it takes weeks from thinking of a dish to getting it on the menu.

The manZArt Team Presents Marié Stander’s Sixth Solo Show

Best known for her figurative charcoal drawings, Marié Stander’s new show will take over the main exhibition space in the Manzart gallery with nine large-scale, near life-size drawings from her new body of work, entitled the ‘…to belong...’ series. The collection manifests itself in different, but related themes, all revolving around the concept of displacement. Stander has a very intimate approach towards appreciation of the female figure, female struggle and female power – the sheer beauty and immense energy of femininity.

The new series sees Khimati stripping off her multi-cultural clothing in a quest to find her roots and identity in our hugely complex country. Stander chose different multi-cultural clothes from South African history to symbolize this search for belonging. In the process of stripping herself from all her historical reference, Kimati, shows vulnerability, but also strength and sensuality. Unsurprisingly Marié Stander has a large following throughout the world - her works can be found in many African corporate and private collections and in international contemporary art collections too. The prestigious Sanlam Private Collection acquired several of her works. Her work was previously submitted for the National Portrait Award in the UK, she has opened the Aardklop National Arts Festival in Potchefstroom and was selected as one of the festival artists for the Oudtshoorn KKNK and the Stellenbosch Wordfees in recent years. Marié is also a finalist in the Top 40 from the National Sanlam SPI Competition – and she has had the honour to produce a portrait commission for Archbishop Desmond Tutu. The show will also incorporate her second book ‘Onse Mense II’, a combination of Afrikaans poetry and Marié’s works in a beautiful format. Start Your Engines as 1930s Grand Prix Cars Return to South Africa

The roar of 1930s Grand Prix cars returns to South Africa some 80 years since they turned a wheel in anger when the South African Historic Grand Prix Festival celebrates these legendary machines on 1 and 2 December at Val de Vie Estate. This inaugural celebration, organised by UK eventers Speedstream Events, will reunite more than 15 actual cars that raced in the South African Grand Prix between 1934 and 1939. Prime among them will be the Maserati 8CM driven to victory in 1934 by American, Whitney Straight. Other entries already confirmed for the event include the ERA that won the 1937 SAGP and the Riley Ulster Imp, which finished second in the same event. The original SAGP cars will be supplemented by a number of period cars taking the tally of participating 1930s cars to over the 20 mark. These cars raced in period but did not compete in any of the East London SAGP events. The Festival commenced in East London on 25 November where the cars retraced what remains of the original Prince George Race Track, before racing on the current track. They

then set off along the scenic garden route to the Cape and Val de Vie Estate where the event culminates on 1 and 2 December. The two-day Grand Prix Garden Party at Val de Vie Estate gives the public a further opportunity to interact with these spectacular cars on the pristine polo fields the estate is renowned for. Supported by local clubs, the event promises to be a classic car delight. The Grand Prix cars will be paraded on a short road circuit within the estate. Seldom will a collection of such historic cars be assembled and the opportunity to get up close and personal is even rarer in South Africa today. Adding to the Val de Vie Garden Party experience will be a selection of modern luxury sports cars from selected marques.
