Franschhoek’s La Petite Ferme Appoints Talented New Head Chef

La Petite Ferme, the renowned manor house and vineyard suites on the Franschhoek Pass and member of The Nest Collection, has appointed a talented new head chef. Odette Olivier comes with a wealth of local and international experience and is set to re-invigorate the dining experience at one of the Cape’s most scenic locations. Odette will oversee and implement the menu design and provide oversight of the restaurant. A cornerstone of the offering is a seasonal menu showcasing quality produce. The motivation behind each dish stems from the origins of La Petite Ferme itself, delivering country cuisine with a fresh contemporary touch. Raised in Cape Town, Odette decided already at school that she wanted to become a chef. She completed a culinary diploma at hospitality school and began her career at the Africa-inspired Marimba restaurant, under Lindsay Venn. She ascribes this foundation to the “unforgettable” opportunities that followed. More recently, she was involved with Holland America Line and hosting live cooking classes for America’s Test Kitchen. Now at La Petite Ferme, Odette looks forward to building on the property’s great culinary and hospitality tradition. With summer approaching and Covid-19 restrictions being eased, the Afrikaans Language Monument is pleased to launch an exciting summer programme from November 2021 to March 2022.

Meet the Team at the Boschendal Farm Shop

The really great thing about shopping at the Farm Shop on Boschendal is the fact that there are such friendly faces behind the counters. This includes Ralton Adams, Tracey Mopane, and Thozama Thembani. Farm Shop Manager Ralton Adams has been working at Boschendal since 2014, and actually started out as tasting room manager. He has a strong background in wine and food tourism, loves food and wine and very excited to be part of the Farm Shop. His personal recommendations from the Farm Shop line-up includes the famous freshly baked Pastéis de Nata (‘people come from all over just for that!’), as well as the ribeye and fillet. “As for the wine – you’ve got to try the bubbly! Supervisor Tracey Mopane, has been part of the Boschendal team for seven years, and completed her WSET 2 training after working with the wine tasting team. When COVID hit in 2020, Tracey was asked to assist with setting up the pop-up Farm Shop. “As a person who goes for challenges, I went to help with this new offering. It’s been amazing so far, and I can’t wait to see where we take the brand in future,” she says. Tracey recommends that everyone try the chicken wrap, toasted cheese and tomato sarmie and the carrot cake. Farm Shop Supervisor Thozama Thembani started working at Boschendal in 2015 as a waiter at The Werf, and was then promoted to wine advisor before moving on to the wine tasting team, where she conducted historical tours, did connoisseurs tastings, and facilitated canapés and wine pairings.

Besides the popular star gazing and full moon picnics, this symbol-laden sculpture on Paarl Mountain will play host to musicians, flame dancers, choirs, Valentine’s Day, a night run and even father Christmas himself. “We look forward to welcoming locals and tourists to this magical place,” says director Michael Jonas. “The past two years have been challenging, but there is light at the end of the tunnel, and our summer programme is the perfect cure to get young and old out here where culture, nature and pleasure intersects. As nearly all events take place outdoors, physical distancing is easy.” The museum and monument are open to visitors, with playgrounds for the children and outdoor games. “We have also used the last few months to do maintenance work, create an indigenous herb and vegetable garden, improve access for the disabled, and cut brand-new mountain bike trails,” adds Jonas. “On top of that we have a new exhibit in the visitors centre, now provide audio guides in six languages for free, and still rotate our outdoor gallery with beautiful, creative Afrikaans works.” Everyone is invited to soak up spectacular sunsets before feasting their eyes on the glittering night skies and full moons, especially when it coincides with concerts. These include jazz and classical music, school choirs and Riana Nel as well as Psychedelic Theatre’s much-loved fire magicians. Guests are always welcome to bring picnics and drinks to share with family and friends, and with new friends. They are also invited to donate new or second-hand children’s books in support of the Taalmonument’s literacy project for children. All Covid-19 protocols, including visitor numbers, are adhered to. S.PELLEGRINO YOUNG CHEF FINALIST PAUL PRINSLOO PREPARES FOR THE GRAND FINALE

Chefs Paul Prinsloo and his mentor Gregory Czarnecki tell us about their preparations for the S.Pellegrino Young Chef Academy Grand Finale in Milan, where Paul will be competing against 11 of the top young chefs in the world for the prestigious title. All around the world the 12 finalists for S.Pellegrino Young Chef Academy 2021 are preparing for the Grand Finale which takes place in Milan from the 28th-30th October. Here in South Africa, where he is now sous chef for Gåte Restaurant at Quoin Rock, Africa & Middle East Region finalist Paul Prinsloo has just completed the fifth practise run of his dish, Bouillabaisse 2.0, guided by his mentor Gregory Czarnecki. Perfection, precision, and accurate timing is the aim. Paul’s dish, Bouillabaisse 2.0 is a modern take on a bouillabaisse fish stew, the fishermen’s way of using up unsold fish – it was traditionally made by poaching whatever fish and vegetables were left over that day, in stock made from all the bones and offcuts. “I’ve looked at it from a modern chef’s perspective,” says Paul, “adding neatness to the plate. The langoustine is

not poached it’s wrapped in kataifi pastry and pan-fried in clarified butter that’s been infused with langoustine shell. The lemon juice is a gel.” The bouillabaisse is reduced to a thick puree that is emulsified with butter to a rich intensity. “When you taste it, I want the sauce to make you say, ‘forget about the dish, just give me the sauce!’” Paul has made one small addition to his dish since the regional finals, adding a slice of poached scallop. He’s been working towards zero waste, using every last part of the seafood. “The leftover langoustine that you’re not using on the plating goes in the bouillabaisse. Potato offcuts go in as well. That doesn’t change the flavour profile but helps thicken it, and there’s even less wastage.” Gregory’s role as a mentor is hands off, he doesn’t do any

of the physical cooking. It’s about the mental preparation, protecting the finalist’s head space! This is the first time in the S.Pellegrino Young Chef Academy competition that finalists have selected their own mentors. “It just made sense to me to pick Chef Gregory as he was my head chef for the four and half years while I was at The Restaurant at Waterkloof.” Sanpellegrino wishes Paul and all the S.Pellegrino Young Chef finalists the best of luck with their final preparations, as the countdown to the Grand Finale begins. A Cape Classic Reinvented – The Winchester Hotel Nearly a century after it was first built; The Winchester Hotel has re-opened to the public after a comprehensive R90-million renovation that has transformed this much-loved seafront hotel overlooking Cape Town’s scenic Sea Point promenade.
