New Makaron Menu Celebrates Simplicity

(snoek tartlet) and avocado wrapped in nasturtium leaf. All guests are treated to the two-day, whole-wheat sourdough with house-made amasi (the Zulu and Xhosa word for fermented milk) butter.

Stellenbosch locals are already familiar with Makaron, the celebrated winelands restaurant at the luxurious Majeka House & Spa. Now the rest of us have an opportunity to taste their recently unveiled exciting new menu that blends international panache with home-grown excellence.

Lucas also applies his explorations of other cooking techniques with fermented strawberries plated with locally harvested kelp and wood sorrel that populates the menu category “to finish”, the latter an encouragement for diners to curate their own meal.

The latest spread follows chef Lucas Carstens’ return from a culinary exploration of the Mediterranean city of Lisbon. Seafood makes a strong return to the Makaron table. There’s the five-day aged linefish with pickled potato, juicy green olives couched in dune spinach that is locally harvested from the wild and fire roasted octopus cloaked in kohlrabi and apple slithers.

On the sweeter side, diners can choose between guava served with turmeric and melon; pear with parmesan and burnt onion; and, the kitchen’s enticingly-named “variations of dark chocolate”.

The South African-ness of Lucas’ cooking is also highlighted in dishes such as, The staanrib (Afrikaans for standing rib) featuring lamb roasted crispy and plated with pickled waterblommetjies and whole lemon. The complementary farm egg-and-hereboontjie uses a South African heirloom bean cultivated in the Sandveld and is served with a snoek-tertjie

Grande Provence Brut, a classic Chardonnay and Pinot Noir blend, is paired with an oyster bedecked with dill, yuzu and cucumber in a dill infused dressing with yuzu pearls and vermouth compressed cucumber.

The two-course lunch and dinner Pinotage menu stars Le Chocolat braised oxtail served with heirloom beetroot, fondant potato and crispy polenta. For the second course artisanal cheeses are spruced up with grape chutney, nut loaf and Pinotage poached fig.

The Brut Rosé MCC, bursting with red berry flavours, pairs with an oyster with home-fermented kimchi, toasted sesame seeds and tom yum mayonnaise. The flagship Vintage Brut 2011 is superb with an oyster enriched with vintage brut velouté, Franschhoek trout roe, and dried nori. The Glenwood tasting room offers guests a unique Fine Wine and Food Experience. Think Pink-Cintron Pink Polo 2018 Cintron Pink Polo, presented by Vodacom, returns to Val de Vie Estate on Saturday 3 November 2018. Chitabe Camp in the Okavango Delta Opens after an Extensive Rebuild

Wilderness Safaris is proud to announce that the renowned Chitabe Camp in the south-east of the Okavango Delta has reopened after an extensive renovation and rebuild of its elevated walkways and main camp area.

“Over the past 20 years we have created a lifetime of memories for many guests and are absolutely delighted to reveal the camp’s new look and to continue to exceed our guests’ expectations,” commented Chitabe CEO, Helene Hamman. Situated on an island in a private concession it’s not surprising that lead architects Mark Thomas and Chris Bisset, in collaboration with Henry Fagan Engineers, found inspiration in the meandering of the Okavango waterways. The new walkways feature low-footprint longer spans and a more delicate-looking structure that weaves through the treeline. “The design of the new elevated buildings showcase the

responsible use of modern and traditional materials to produce an environmentally-respectful, sensually pleasing safari experience”, said Mark.

The main area features both indoor and under-star dining experiences while an elevated white Kalahari sand deck forms the heart of Chitabe. A new lap pool, relaxation lounge and a gym provides guests with exercise opportunities while moments for introspection will be found in the new library. An evaporative cooling system provides guests with ample cool spaces during the warmer summer months. Before the rebuild commenced a precision 3-D laser survey of the island was done to establish a precise ecological baseline of natural features such as trees and termite mounds. This enabled the main areas to be positioned precisely with minimal impact. Award-winning engineer, Henry Fagan, played an instrumental role in the team, innovating new non-permanent structures featuring

removable concrete-free foundations. “It has been critical to retain the island’s many trees as the canvas that dominates the camp landscape, so we unobtrusively wove the buildings in and around the trees and termite mounds,” Mark reflected. Chitabe has also retained the services of an arborist to replant additional trees that had been lost to fire or the natural cycle. Staying true to its philosophy of ‘reduce, reuse and recycle’, all of the hardwood timber from the original structure was repurposed and used to create the fire of a million stars, decorative cladding and ceilings. “We are confident that the new Chitabe will be a huge success, and are looking forward to sharing its magic with our guests and trade partners, Helen concludes.” Make Chitabe part of your “must see” travel destinations. Art Franschhoek: 27 October to 25 November 2018

Visitors to Franschhoek, one of the country’s premier art destinations, can once again look forward to a month of artworks and exhibitions, as Art Franschhoek ‘opens it doors’ to the public from Saturday, 27 October, to Sunday, 25 November. Art enthusiasts can choose to leisurely browse the galleries situated along the village’s main road, many within comfortable walking distance from each other. Alternatively choose to view the artworks on display at some of the wine farms, which include Grande Provence and La Motte. Garden and art tours at Leeu Estate add a different dimension to your cultural outing. To celebrate the start of this festival some participating galleries will be hosting special events during the weekend of 27 and 28 October. One of the highlights during the weekend includes a special wheel throwing demonstration by ceramicist, David Walters. The Everard Read Gallery will be exhibiting major works by some of our country’s finest contemporary artists, in a variety of media. Manzart Gallery is the venue for Marie Stander’s solo exhibition. Marie is best known for her figurative charcoal drawings, large scale portraits, group drawings, as well as near lifesize drawings. In addition to Marie’s exhibition, the Manzart Collection will also show works by collage artists Karin Miller and Caitlin Truman-Baker, amongst other prominent artists. Magnificent sculptures by self-taught sculptor, Bruce Little, will be on display at Franschhoek Cellars. Bruce sculpts to capture the spirit of the wild African creatures he has observed and guarded most of his life. Ebony/Curated, with its exquisite displays of fine arts, sculptures and ceramics, will host three solo exhibitions in their respective galleries. Admire one of South Africa’s greatest masters, Jacob Hendrik Pierneef, at the La Motte Museum as well as their Ink on Paper exhibition. The Art of Embroidery

As part of Art Franschhoek 26th October – 28th November 2018, Art in the Yard will be exhibiting Yarns, A group Exhibition. Yarns features three artists, Vanessa Berlein, Sheeka Kalan, Lerato Motau using embroidery as their chosen medium in innovative ways. Exploring possible meaning of social placing and personal historical implications. Textile art is re-emerging as an exciting and often surprising medium. Each of our artist’s aesthetic and dialogue is varied but all with a common thread. WHISPERS FROM THE LILY POND by Shany van den Berg 27 October – 19 November This exhibition 'Whispers from the Lily pond / Fluisteringe vanaf n Lelie poel ' is the first platform for a series, that reflects on rebirth through water, water spirits, and Nymphaea (water lilies). The body of works is mapped, woven, stitched and dressed to awaken the Nymphaea from a deep hibernation to play and dance with the water deities. “My memories of water and lilies (from childhood to present day) drove my practice conceptually as I found myself spending days in the Stellenbosch Botanical Gardens. This initiated painterly and drawing based experiments and research – in essence it served to manifest my lilies and water spirit through documenting my thoughts as they are mirrored back to me on the watery reflections.” - Shany van den Berg This exhibition will be opened with a performance by the artist.
