Owners James Ingerfeld and his wife Timea Laczko Ingerfeld were inspired by the owner and chef of Aubergine and Auslese, Harald Bresselsmidt, when they started Mason Farming, and decided to create a “small” vegetable garden. Timea started growing a small patch of vegetables, the products of which she delivered to Harald, who then cooked for them in return. In time, Harald suggested that the couple professionalize their hobby and plant a bigger variety of vegetables, and thus Mason Farming was born!

Illustrious Quoin Rock Pushes the Limits of Creative Artistry

Since its launch in November 2018, the family-owned Quoin Rock Estate has introduced a new dimension of luxury to the Cape winelands. Elegant, chic, and eye-catching, everything at Quoin Rock offers a refined experience: designer architecture and furnishings, award-winning wine, and superb molecular gastronomy at Gåte Restaurant, which pushes boundaries with arty aesthetics and a playful spirit that epitomises the theatre of food. The farm’s transformation has taken place over six years, when the Gaiduk family purchased it in 2012. Gåte Restaurant, a highlight of the estate, is helmed by Head Chef Nicole Loubser, who fronts a team of 11 chefs. Dishes have guests travelling the world through taste and scent, though her creations are always rooted in South Africa with an ingredient or technique. An example is the dish inspired by her home, a farm in Namibia: a dessert she calls ‘Starry Night’. “It’s so dark and there’s no light pollution, so lying on the grass and looking up at the moon and the stars is something we always do.” For the dish: “On a plate with gold flakes that look like shooting stars, there’s a cloud made out of cotton candy that goes over edible stars, ice cream, and half the moon so you only see half. When you eat the cotton candy, that’s when the clouds move away and you see the night sky.” Quoin Rock is offering an array of Festive season indulgences, from a superlative Christmas Day lunch or dinner to an elegant New Year’s dinner, both of which serve up a global gastronomic food and wine pairing experience (nonalcoholic options available). At the latter, there will also be entertainment by jazz trio, Alvin Dyers and co. and a live DJ performance. Tuesday to Sunday, there are tantalizing tea and cocktail pairings and from Thursday to Sunday, plastic-free picnics at Quoin Rock, which feature a set menu with vegetarian and vegan options. An additional option of MCC and oysters is also available.

From Vine to Design at Louisvale

Enveloped by the hills of Devon Valley just outside Stellenbosch lies an unusually striking building. This is the home of Louisvale wine farm and function venue. The building was designed by award-winning architect, Christof Albertyn and was modelled on the Khoekhoen, who built the first man-made domed structure in the area. The original homestead (built in 1924) reflects the white gabled Cape Dutch style introduced by European colonialists in the 17th Century. With 280-degree views of the three million-year-old Cape Mountains, Louisvale offers the perfect setting for weddings, corporate events, or any celebration, and can accommodate up to 150 guests. FROM THE VINE – Louisvale started producing wines in 1988 and prides itself on its signature award-winning Chardonnay wines and for being one of South Africa’s pioneers of this cultivar. Louisvale is passionate about the “Art of Chardonnay” and is tirelessly committed to the task of crafting exceptional Chardonnay wines. So far, Louisvale has won numerous prestigious wine awards and has just won three Golds at the recent Michaelangelo awards (4th of October) for its 2018 Chardonnay and for its Brut and Rosé MCC wines. Since 1994, the Merlot and Cabernet Sauvignon grapes have been sourced from the neighbouring vineyard, where the winemaker of 22 years, Simon Smith, partners with the owner in managing the vines to Louisvale’s exact specifications in order to ensure the wines retain their Louisvale character. THE CUISINE TEAM – As the seasons change, so too does Louisvale’s menus. Executive chef Kirstie du Toit studied at The Culinary Academy (TCA) at Backsberg and comes from a family of bakers and farmers. Grande Provence Rings in the Festive Season

Reinventing Monneaux In the heart of Franschhoek, the acclaimed Monneaux Restaurant, located adjacent to the luxurious five-star Franschhoek Country House & Villas boutique hotel, is evolving. The restaurant is reconceptualising its dining offering and introducing selfsustainable initiatives and a hyper-local focus at every stage of the culinary chain. The intellect behind these inspired changes is visionary young chef and newly appointed as Executive Chef, Calvin Metior. It was an all-encompassing love of food that first drove Calvin to pursue a career in the culinary world. After graduating from the International Hotel School, he completed a three-year internship at the Quarter’s Hotel on Florida Road. He then set his sights on London, where his portfolio flourished, including stints at Hix restaurants, D&D London collection, and the Michelin-starred Angler. After welcoming their first born child, Calvin and his wife decided to return home to raise their family. With his appointment as Executive Chef, Calvin is not only tasked with running the Monneaux Restaurant and developing new menus, but also reinventing the dining experience. It’s a challenge he readily accepts. “Having the freedom to dream, to make my concepts a reality, and to produce my own food is incredible. To be able to do in this beautiful country-style setting and surrounded by so much natural inspiration and superb produce in the Cape Winelands, is a dream come true.”

He follows a philosophy of ‘natural minimalism’, sourcing the very best produce at its peak and showcasing its natural character without overwhelming the plate with too many ingredients. He’s also fiercely passionate about supporting local producers and artisans, thus keeping the restaurant’s carbon footprint to a minimum. Micro gardens have been established throughout the property, which will produce a rotating supply of fresh herbs and vegetables. In the kitchen, Calvin will be making his own miso, hot sauces, and fish sauce; smoking and curing meat and fish; and making charcuterie from scratch.
