When it comes to orchestrating the perfectly sequenced plated dinner, it takes some serious thought and finesse — and let’s just say the days of steak and crab cake duo are all but gone. Although your menu is definitely a big decision, don’t let it overwhelm you. Here are some tips from Melissa and Jim Benson, owners of Eleven Courses Catering & Event Co., to up your plated dinner game.
BUILDING BLOCKS – Focus on a menu where the courses really complement one another and build upon the next. Think of it as a great story, with a beginning, middle and end. All of the flavors will come full circle, and the meal will feel well-balanced and complete. OPT FOR AN INVENTIVE PLATED APPETIZER, instead of a classic soup or salad. It sets the tone for the evening and allows for your caterer to get creative with plating techniques. UTILIZE INGREDIENTS THAT PLAY OFF OF YOUR COLOR SCHEME. “We love when we design a menu for a client that draws inspiration from the couples’ wedding color palette. It always feels so right and brings everything together.” If you are going with a beautiful dusty-blue dinner plate, you don’t want to ruin it with a Frederick FrederickWeddings Weddings2018 2018

menu of clashing colors. Consider the art of your menu as you plan. DESIGN A MENU THAT MEANS SOMETHING TO YOU. Do you as a couple have German and Hawaiian roots? Go for a fun, vibrant fusion menu. Was your first date to an authentic Mexican restaurant? Think about pulling from that, but maybe in a redefined, elevated way. Is your favorite food Italian? Share the foods you love most with your guests on your big day. TO CAKE OR NOT TO CAKE? We are suckers for a gorgeous wedding cake, but also love the innovative nature of selecting an out-of-box dessert for a plated menu. Why not “have your cake and eat it too” by going with a smaller ceremonial cake and serving it as a late-night snack, or boxing it up to go for guests as an end-of-the-night dessert that matches your dinner menu vibe? LOOKING FOR MORE INSPO?
Check out this plated dinner menu that’s sure to keep your guests talking long after the big day. The mole gives just a hint of sweetness that really enhances the richness of the duck and balances the lightness of the greens. Revel in the ease of the gorgeous plating as you slowly dig in.
First set the mood with this creative take on an oyster laden dis:. “Skinny Dipper” Oyster Stuffing Empanadas. True Chesapeake Skinny Dipper Oysters, Collins Creek Farm Bacon, Celery, Pomegranate Paint and Caviar Pearls bridges elements of sweet, salty and tangy together for the perfect light appetizer. Then move on to this Sycamore Spring Farm Pan-Seared Duck Mole. Grilled Tortilla, Beet Powder, Ancho Chili and Arc Farm Micro Greens. With seductive, warm colors, this dish is as inviting as it is delicious.
Finish things off with this fun Baby Pear, Kiwi Puree, Mango Corn Cake with Avocado. Parfections’ White Chocolate, Trickling Springs Farm Cream, The Arc Farm Micro Cilantro. Here, texture and surprise are everything. Avocado and cilantro in a dessert? What’s not to love.

alpaca the ring KIMBERLY & ADAM HOW THEY MET
I met Adam in July 2016, beside the iconic willow tree, during the fireworks in Baker Park. What makes our story unique is that we were set up by a friend of mine, who also happened to be his ex-girlfriend. The first time I saw his smile, it captured my attention and I invited him to sit next to me on my blanket. After the fireworks, he walked me to my car and that is where our love story began. THE PROPOSAL
Fast forward to January 2018. Adam and I decided to take some time off work to celebrate my birthday and our anniversary in the Poconos. As our trip came to an end and we were to head home, I asked Adam if we could extend our stay to play in all
of the snow we had received the night before. To my dismay, he said that we had to head back to Frederick as he had reservations at the Wine Kitchen for noon the next day. I found it strange. Who makes reservations for noon on a Thursday? And I continued to try to be persuasive with my reasons to stay in the Poconos a day or two longer, but he was insistent that we come back to Frederick for our reservation. It was a few days before our anniversary, but since I would be out of town for work on our actual anniversary, Adam asked me to walk to Baker Park with him so we could share a kiss in the spot we met a year and a half

Kimberly and Adam were married on Aug. 18 on a family farm. Kimberly wore her mother’s wedding dress, and their friends and family helped do all the decor and made dessert pies. “It was a muddy beautiful mess.”

ago. It was about 10 degrees outside, but I caved to his charm. As we approached the clock tower, I saw two alpacas and their owner being photographed near the spot we had met. I was elated to see alpacas in the park, as I have a deep love for these gentle creatures. As we approached them, I realized I knew the photographer and I asked her what she was doing there. She calmly stated that she was
there for a photo shoot. She asked me to pose for a few photos with the alpacas, and I enthusiastically agreed. I finally snapped into what was actually happening when I felt a tap on my shoulder. As I turned around, I found Adam on one knee asking me to be his partner for life, and I am sure a bunch of other wonderful things I wish I could remember. After a few moments of stunned silence, I said, “yes”.
tee-ball love birds JESSICA & AUSTIN HOW THEY MET
We have known each other since we were 5 years old. Austin’s dad was the tee-ball coach and my mom was the tee-ball mom. THE PROPOSAL
The day of the proposal we were going to take a walk around downtown Frederick when we just happened upon a tee-ball field we played on when we were younger. He started by writing out our names along with the date in the dirt right above home plate. He then took my hand and we walked the bases slowly, reminiscing about the good old tee-ball days – from where our parents sat to the big hill we would roll down after games. We rounded third base and he really started to lay it on thick, saying some really sweet things. When we got back to home plate, he got down on one knee and asked me to marry him. We spent the rest of the evening enjoying dinner downtown at Lazy Fish and enjoying dessert and wine from the Wine Kitchen on the creek.
A wedding is planned for Oct. 26 at Elmwood Farm Bed & Breakfast. It will have a country theme – cowgirl boots are a must!
HOW THEY MET
Will and Diana were merely acquaintances after having a few classes together in high school. In 2011, both of them had to attend a performance for class; she for chorus, and he for band. Neither of them had a clue after that night that their friendship would eventually evolve into a fire of a romance. THE PROPOSAL
Fast-forward six years to when Will finally decided the time had come to ask the question. He had known for a while that Diana was the one, but wanted everything to be perfect. Both are volunteer EMT-firefighters, and love helping people every chance they get, so Will knew he wanted it to Diana and Will got married on Sept. 8 at Caboose Farm in Sabillasville. The reception was at the Thurmont Ambulance Event Complex in Thurmont. The theme for their wedding was storybooks and fairy-tales.
firefighter’s parade proposal
gotta catch... just one.
DIANA & WILL
HOW THEY MET
relate to that somehow. Every year, they both are excited to be a part of the Thurmont parade. Will confided in some fellow station members, and got the plan in place. The day of the parade, Will was both excited and nervous, and Diana had no idea what was about to unfold. When they arrived in front of the ambulance company, Will jumped out and ran around to the back of the special unit. Diana, not sure what was going on, followed him. Will climbed down from the back, walked over to her and dropped to one knee. Before he could even get the question out, Diana was shaking her head “yes” and giggling. Diana never stopped smiling the whole night. And the rest is history...

HANNAH & AJ One of the very first times AJ and I hung out was to compare our Pokémon card collections. It was something we bonded over that helped spark a second date. THE PROPOSAL
Fast-forward a couple of years. We planned to have dinner with AJ’s mother and sister. We were on the back deck and his mother came out to give us a thank-you gift for hosting a party for her. It was a large box of Pokémon card packs, which wasn’t unusual given that our families knew our mutual interest. We split the packs, up three apiece and took turns opening them. I came across a card that I had never seen before. I was excited and showed him the card without even reading it. He told me to look closer and I realized it was a proposal card that he made himself and snuck into one of the packs. That’s when he got on one knee and asked. Obviously, I said yes! It was the perfect combination of cute and clever. A May 3, 2019 wedding is planned at Prosperity Mansion in Keymar.

KIDFRIENDLY

KIDFRIENDLY
If children are in your bridal party and you are uncertain on how to entertain them at the reception so that everyone (kids included!) can enjoy the evening, here are a few fun tips: • HIRE A LICENSED BABYSITTER to sit with the children after the ceremony so the parents have an opportunity to enjoy the reception. • SET UP A CHILDREN’S LOUNGE, and make it special. How? Tell them that no adults are allowed so the children will be excited and enjoy their time there because it’s completely kid-friendly. With a cool hangout spot, they won’t want to leave and look for Mom and Dad. • CHILDREN’S ACTIVITY BOOKLETS ARE FUN, and they offer a ton of options – word searches, tic tac toe, coloring and Mad Libs. Make these booklets extra special and individualize them with games about the bride and groom for the older children. • SET UP A TABLE WITH TOYS that will allow the children to connect with others. I mean, who doesn’t want to play with Legos? • SET UP A SEPARATE BUFFET SPECIFICALLY FOR THE CHILDREN. The perfect little snacks will make them feel special and give them some thing to munch on throughout the evening. • GOODIE BAGS OR FAVORS allow the children to feel included on your wedding day, too. Be sure to interact with the children at your wedding and put a smile on their faces. Let the little girl’s awe over your gorgeous dress. Don’t forget to snap a few selfies with these little loves on your wedding day. Frederick Weddings 2018

HELPFUL HINTS Choose a location that can accommodate the guests, and host your event. That way, your guests are not only sharing in the most important day of your lives, but you are also giving them a full experience they will never forget. Bed and breakfasts are typically great locations for you and a few family and friends for an intimate ceremony or elopement. Most importantly, don’t sweat the small stuff. Be sure that throughout the wedding planning process you make the day about you and your fiancé. Focus on the love and joy ahead. Also: be bold! Don’t be afraid of wearing a colored gemstone on your wedding day if you chose a Fourth of July holiday to say your “I do’s!” – or wear ruby and sapphire earrings with your white gown.

GLAM WINTER
After all those months of planning the perfect winter wedding — dreams filled with snow, ice and cold temperatures — you abruptly wake up to no snow, no ice, and a 75-degree day. However, when your guests enter your venue, they see evergreens draped on the fireplace covered with glistening sparkles, winter-white rose petals on the floor and pine cones with ice-like glitter. Your guests are then greeted by a warm fire in the meeting room, where they feel warm and cozy, as if they are cuddling together to stay warm on the perfect winter day.
Frederick Weddings 2018
Regardless of the temperature outside, rain or shine, take a deep breath. You hired an amazing team of vendors to ensure your day is perfect and memorable. The details of what you wanted your guests to remember will leave an imprint, and they will never forget the first moment they saw you in your stunning wedding dress – a bold silver gown with the Swarovski crystal cape

SOMETHING OLD, SOMETHING NEW, SOMETHING BORROWED, SOMETHING BLUE. BY GREEN SHOOT MEDIA
This sweet line from an Old English rhyme has morphed into a beloved and timeless tradition for brides in many cultures. It remains as popular as ever, with brides continuing to incorporate the hue into their special day. JEWELRY AND GEMSTONES A sparkly way to incorporate blue into your bridal look is by wearing a piece of jewelry or hair comb with blue stones. Ask friends and family members if they own anything that would work. Depending on the age of the piece, you could knock out old, borrowed and blue with one item! ACCESSORIES Blue shoes make a confident statement. A blue clutch or pale blue ribbon around your bridal bouquet make good options if you are looking for a less permanent way to add the color to your attire. Both can be set aside, come reception time. Frederick Weddings 2018
YOUR DRESS Color has never been more popular in wedding gowns. If you are a bold bride, consider one with a blue hue. Many bridal gown designers have embraced the lighter shades. You can find gowns with blue lining, tulle and lace. STITCHING AND EMBROIDERY Utilizing a bit of embroidery – such as stitching a phrase in blue thread on a vintage hankie or a heart in blue on the inner lining of your bridal gown – is a discreet way to incorporate the color blue into your special day.

The two met on Facebook, having several mutual friends. “Jake kept ‘liking’ a lot of my photos, so I decided to send him a message to chat. The conversation was nice, and he finally admitted he was going to message me that day, too. He asked me out for dinner, and our first date was at Brewer’s Alley.” Frederick Weddings 2018

Jacob’s grandfather handcrafted a nine-foot cross for the ceremony, which was wrapped in flowers and vines. “After Pastor Ron announced we were married, we walked away to Bruno Mars’ ‘Marry You.’” The couple chose to go with a romantic” theme for their color palette: marsala, burgundy, blush pink, creams, whites and golds were used throughout their decor and floral arrangements. When asked what her favorite part of the wedding was, Gabrielle couldn’t quite decide. “Everything turned out even more perfect than I could have ever imagined. I got to marry my best friend with my son by my side, who got to be a part of it, too. One-hundred and twenty-five guests attended their outdoor October ceremony at Holly Hills Country Club in Ijamsville, including seven bridesmaids, one junior bridesmaid and seven groomsmen. “Our ceremony was short and sweet. We had scripture readings by our grandmothers. I cried during my vows, but I got them out. Thankfully, Devrin had put tissues in his pocket before the ceremony.” The couple concluded their ceremony by jumping the broom. “Jumping the broom is an African-American wedding tradition,” Anshea explained. “Because slaves weren’t permitted to marry, they often jumped over a broom to ceremoniously unite. Today, it is done as a way to honor our ancestors as well as symbolize starting off the marriage with a ‘clean sweep.’” The couple chose a theme of wine and gold to match the fall weather. They also created a cocktail for their reception, a custom recipe created by Anshea’s cousin. They named it The Major Ambush. Anshea is a legal assistant and Devrin is an auto estimator. The proposal story involved a surprise plane with a banner and an a capella group singing “Marry You” by Bruno Mars on Harvard’s Campus. There were 125 guests at their outdoor ceremony at Liberty Mountain Boulder Ridge Lodge, including a 12-member bridal party. “We had a multicultural and packed wedding ceremony. The first half-hour was a traditional Christian ceremony officiated by a groomsman and best friend from middle school. Then we changed clothes and did a one-hour traditional Hindu ceremony in the same location.” Malorie and Shiv chose a fall color theme to match their October wedding. He set up a camera to act like he was taking a picture of us both, and when I turned to look at him, he had the ring out and asked me to marry him.” Frederick Weddings 2018

The couple had 125 guests in attendance for their March wedding, including an eight-person bridal party. Eric’s uncle, Mark Holtschneider, acted as the officiant for their indoor ceremony. “Even though we had a snowstorm earlier in the week, the day was beautiful, and our pictures really turned out amazing,” Mary said. Mary and Eric chose a color palette of dusty blue for their wedding decor. When asked why they chose Antrim 1844 for their wedding, Mary said, “Antrim 1844 was not only beautiful, but was able to do an indoor or outdoor wedding, could cater the food, and many people could stay the night. It was so easy having everything in one place. The buildings were unique and full of history, so we knew right away we had to have the wedding there.” Eric is a Northeast field marketer for Motorola Solutions, and Mary is a manager with Massage Envy. Pamela
& ARRINGTON
Pamela and Arrington decided to get married two years ago, after Pamela had graduated nursing school. “One night I came home from a party and he was at my house with a bunch of roses everywhere,” Pamela said. “He kept trying to get me to go outside with him, and I finally went. It was a super moon that night. We watched the eclipse, and then he proposed to me in my driveway. He surprised me with the Rhapsody ring by a designer in Southern California, Heidi Gibson. I admired the ring years ago while Arrington and I were on a trip to visit my brother in California. I couldn’t believe he’d remembered and found it for me.” Frederick Weddings 2018

Real Weddings Pamela and Arrington met in high school and were friends for five years before they started dating. “Arrington was always the one I called to help cheer me up. We became best friends,” Pamela said. Years later, while they were dating, their love was put through a hardship when Arrington broke his neck from a tumor that was embedded into his spinal cord. “We spent the whole spring at Johns Hopkins Hospital, where a neurosurgery team was able to remove the tumor, saving his life. We really used our wedding day to celebrate life and love.” Pamela said her favorite part of the wedding planning was trying on dresses. “Every single dress I tried on I loved.” The wedding was held on a sunny day in September at Catoctin Hall at Musket Ridge Golf Club with 105 guests, including four bridesmaids, four groomsmen, and one flower girl. The couple chose to go with an elegant, simple theme to match the ambiance of the venue. Their color palette was lavender and light pink with silver accents. The ceremony included touches of Jewish traditions, including stomping on a glass and doing the hora, a Jewish wedding dance where guests circle around the bride and groom as the newlyweds are lifted up in chairs. “It was a very personal ceremony,” Pamela said, adding that her brother, Mark Manstof, married them. “My guests said that there were butterflies everywhere behind Arrington and me when we were standing at the altar. It was like a fairy tale!” One of the highlights for her was listening to everyone’s speeches. “My dad had a really funny speech where he went over the Ten Commandments.” Frederick Weddings 2018

EDITOR m a ry k at e bat t l es
Over the past year, I have been asked a lot of great (and tough!) questions regarding weddings. I’d been in the industry for the past 14 years, so some of the answers were easier than others, and some took some digging. Here are a few of the best questions I’ve been asked in 2018.
DO I NEED TO BRING A GIFT TO AN ENGAGEMENT PARTY?
when looking at a stack of blank cards, but it’s really important to thank those who celebrated your nuptials.
Gifts are definitely not expected at engagement parties, but many will bring something anyway. If you don’t want to show up emptyhanded, a handwritten congratulatory card is always a nice touch.
name and addresses on the envelopes in advance. Even stamp them ahead of time. Once you’re back from the honeymoon, all that will be left for you to do is say thank you, sign them, and pop them in the mail.
A few tips: Write out the

I’VE BEEN ASKED TO BE IN THE BRIDAL PARTY, BUT I CAN’T AFFORD IT. CAN I SAY NO?
to you and why it matters. s
s
Yes. Absolutely yes. The average bridesmaid in the U.S. spends $1,400 on her duties — hair, makeup, dress and alterations, parties, travel expenses and more. If you are not in a place to drop that kind of cash, say so, especially before you get in over your head. Once you’ve committed, however, unless there’s a very serious reason, backing out isn’t really acceptable. Talk to the bride or groom if money is tight, and see if there’s a way to still be a part of the wedding in a more financially sound way, such as doing a reading at the ceremony, being an usher, etc.
A personal handwritten note to each guest telling them how thankful you are for them to have attended. This can be a timeconsuming task if you have a lot of guests, but very touching and one wedding favor your guests won’t soon forget.
HOW LONG SHOULD I GIVE MY GUESTS TO RSVP TO OUR WEDDING?
DO I NEED TO DO PROVIDE WEDDING FAVORS? The quick answer – nope. More and more couples are choosing to have less “stuff ” at their wedding. Often the favors are left on the tables or thrown out right away, so why spend the cash, right?
In general, you want to give your guests at least 15 days between when your wedding invitation will arrive and the RSVP deadline. Invitations typically are mailed out six to eight weeks before the wedding date, and further out if it is a destination wedding. Using pre-stamped enclosure cards or allowing guests to RSVP via email is a way to encourage guests to RSVP in a timely manner. You will likely need to get your final guest count
There are several alternatives to a traditional gift for those who attended your wedding. A few favorites: s

An edible gift – a cookie, cupcake, or your favorite candy can be a fun way to say thank you to your guests – and you know it will be used, probably right away!

Ask The Editor to your caterer a week before your wedding, so make sure you have the most accurate count no later than seven to 10 days prior.
DO I TIP MY WEDDING VENDORS? WHAT ABOUT FEEDING THEM? This can be a tricky subject, but in general, the answer is yes. First things first – feed your vendors if they are with you for any amount of time. Your DJ, photographer, videographer and planner likely have it in their contracts to be fed, and for good reason – no one likes to work when they are “hangry.” They will likely eat when you eat, so services will not be interrupted. A good, hot meal will recharge your vendors and get them ready to rock at your reception.
include gratuity. While tipping the owners of a company (wedding planner, photographer, etc.) is unnecessary, tipping their helpers is a nice gesture. The same thing goes for ceremony, reception and caterer. Many times, your wedding celebrant may not accept a tip, but if you enjoyed working with them, a nice way to say thank you is by making a donation to their church or a nonprofit they support. Bands and DJs should be tipped, especially if they are lugging heavy equipment. For solo and group musicians, individual tips are appreciated. Another thing to keep in mind: wedding vendors rely deeply on reviews and referrals. Consider writing in-depth reviews for wedding vendors who did a top-notch job for you on review sites where other couples will see them, such as Yelp, Facebook, WeddingWire, and The Knot, and sharing with friends how much you enjoyed working with any particular vendors.
As far as tipping, it is recommended to tip anyone on your wedding day who goes above and beyond for you. It is worth checking your contracts, as some vendors, such as caterers and transportation, may already
