Cataract causes, treatment Cataracts are the most common cause of vision loss among people age 40 and older. According to All About Vision, cataracts also are the principal cause of blindness in the world. There are more cases of cataracts worldwide than there are glaucoma, macular degeneration and diabetic retinopathy, states Prevent Blindness America. Fortunately, cataracts are easily recognized and treated. What are cataracts? A cataract is a clouding of the lens in the eye that affects vision. The lens is the clear part of the eye that helps focus light and images on the retina. The lens must be clear to receive a sharp image. If the lens is cloudy, vision will be blurred. “Cataracts are part of the aging process so everyone will develop cataracts during their life,” said

Cataracts occur when the lens of the eye becomes clouded, affecting vision. Seeing halos around lights, fading of colors, sensitivity to light, glare and the need for brighter light are some of the most common symptoms.

Heather Anderegg, O.D. and of TSO in Fredericksburg. Cataracts tend to form slowly. Initially, they only affect a small part of the lens, and they’re not very bothersome as a result. “On average, cataracts start developing around age 50, she said. Thrive daily activities, such as driving and reading, then surgery becomes an option. What causes cataracts? Various things, including aging or injury to the eye tissue, can cause cataracts. Prior eye surgery, diabetes, longterm use of steroid medications, and inherited genetic disorders also can cause cataracts, says the Mayo Clinic. Smoking and alcohol use as well as consistent exposure to UV sunlight also may contribute to the formation of cataracts. With aging, the lenses in the eyes become less flexible, less transparent and thicker. Tissues within the lens can break down and clump together, clouding small areas within the lens of the eye, thereby forming a cataract. Cataracts may be a subcapsular cataract, which occurs at the back of the lens. A nuclear cataract forms in the center of the lens. A cortical cataract starts in the periphery of the lens and works its way inward to the center. Treating cataracts Cataracts need only be treated if

▶ CATARACTS continued

“After someone has surgery, the cataracts will not return,” Anderegg said. “About 50% of the time, a film may form behind the lens implant, which can cause blurry vision, but this can be easily treated with a simple laser procedure.” The surgery involves removing the clouded lens and replacing it with a clear, artificial one. The

procedure is usually done on an outpatient basis and patients typically stay awake during the surgery. Routine eye examinations are a key part of an overall health plan. “We treat patients every day, making sure that their glasses prescription stays current and prescribing lens options such as antiglare to help reduce glare at night,” Anderegg said. They can shed light on the

formation of cataracts and help people develop effective treatment plans. Anderegg recommends wearing sunglasses on a daily basis to help maintain healthy eyes. In addition, she says yearly eye examinations not only diagnose and monitor cataracts, but help manage glaucoma, macular degeneration, complications from diabetes and high blood pressure.

Foods that promote healthy hair, skin Millions of people across the globe deal with conditions that affect the skin and hair. Acne is a skin and hair ailment that, according to the American Academy of Dermatology, is the most common skin condition in the United States. But what if the foods people eat could affect the health of their hair and skin? There is evidence that they can. Foods that contain certain nutrients, phytochemicals and enzymes may help people develop healthier hair and skin. Blueberries: The U.S. Department of Agriculture gave blueberries its top ranking for antioxidant activity. The antioxidants in blueberries neutralize free radicals and protect people from premature aging, which can help the skin look younger and more vibrant. Eggs: Eggs are great sources of protein and biotin, which are two nutrients that may help promote hair growth. The health and wellness information

contain more vitamin C than oranges. According to dermatologist Dr. Julia Carroll with Compass Dermatology, vitamin C is an antioxidant precursor to collagen production, so consuming more vitamin C through foods can neutralize free radicals that could damage skin.

Adding healthy spinach salads to a diet can help develop healthier skin and hair. site Healthline says biotin is essential for the production of a hair protein called keratin. Fatty fish: Fatty fish, such as salmon, are high in omega-3 fatty acids. Ciara Foy, a Toronto-based holistic nutritionist, says about three percent of the hair shaft is made up of omega-3 fatty acids. They are also found in cell membranes and in the natural oils that keep the scalp and other areas of the skin hydrated. Red bell peppers: These peppers

Spinach: Trade lettuce for spinach, which is rich in calcium, iron, magnesium, omega-3 fatty acids, and much more. These nutrients can be the building blocks of healthy skin and hair. Oysters: Nutritionist and author Lisa Drayer says oysters are good sources of zinc, which aids in skin cell renewal and repair. Coconut: Coconut water is great for hydration and contains potassium, an electrolyte that moves nutrients into the cells. Coconut oil also can be used to boost hair health as a pre-wash conditioning treatment.

The secret may be hiding in plain sight at the supermarket or Farmer’s Market.

He ultimately lost his job because he couldn’t work anymore. He had started seeing a specialist for his condition when he had insurance, but now he couldn’t afford her. She told him he needed to see us, and if he qualified for us then she has a relationship with us so that she can lower her price for him. Sometimes, the hardest thing about helping someone at The Good Samaritan Center (a charitable medical/dental/counseling clinic for uninsured individuals and families below twice the federal poverty level) is that they hate having to ask for help. In early May, a man came to our clinic in need. His family has been in Gillespie County for generations. He is old Fredericksburg and did not want to be here. I’ll tell you what I told him. Right now, there are a lot of holes in our healthcare system. Texas leads the nation in percentage of uninsured and there are thousands of people in our community who need our help because they cannot afford the traditional healthcare system. But there is good news in Gillespie County. The Good Samaritan Center is our community’s answer to the problem. Making a difference AgriLife Extension works to ‘Help Texans Better Their Lives’ Texas A&M AgriLife Extension’s vision is to “Help Texans Better Their Lives.” And, Gillespie County Extension Agent Shea Nebgen is helping make that goal a reality through a number of health and safety programs geared toward children and adults. “We have a lot of information available on the different programs,” Nebgen said, “to help make a difference in people’s lives.” While some programs focus on getting the message out about healthy choices to students, others are designed to help adults start making those small changes toward becoming healthier. Among the programs offered through Texas A&M AgriLife Extension with the help of local col-

laborators is Walk Across Texas!, Balance Food and Play, Health Education, Better Living for Texans, Child Safety Seat Education, Child Care Education, Food Protection Management/Food Handler’s Program and 4-H Nutrition projects. For more information on any of the programs, contact Nebgen at 997-3452. Walk Across Texas! It’s 832 miles across Texas, and participants in the eight-week Walk Across Texas! program are encouraged to Walk Across Texas. The 2019 Walk Across Texas! program wrapped up in April in Gillespie County. Nebgen reported that this year, the program had 181 participants, making

up 27 teams. Participants log their miles each week and report them online. In return, she sends out healthy tips and recipes on Mondays to keep walkers motivated and teach them how physical activity can benefit their health. “We all have to remember that we have to start by making small changes,” Nebgen said. “It took us a long time to get to the size we are or to our current activity level, but we can make small changes to get back to being healthy.” She noted that Walk Across Texas! has been recognized as a Best Practice Physical Activity Program by the Texas Department of State Health Services. Over the lifetimes of the 181 participants, it is estimated that 23 people could prevent the onset of diabetes through increased physical activity, Nebgen said.

Thrive Including the cost of lost wages and health care costs, the total potential economic impact for the 2019 team participants is approximately $2.6 million, she reported. Balance Food and Play Geared toward third graders, the Balance Food and Play program includes a set of 20 lesson plans, eight take-home reading assignments, four parent letters and a journal for each student. Third grade teachers at Stonewall Elementary and St. Mary’s are using the curriculum which focuses on snacking on fruits and vegetables, drinking milk with meals and water with snacks, encouraging 60 minutes of physical activity each day and limiting screen time to two hours or less per day. The program also includes the “My Plate” food guide system. Nebgen provides the teachers with the curriculum manual as well as a teaching kit. “The teachers don’t have to buy anything,” she said. “It’s all laid out on what to teach, the objectives and activities.” She said the curriculum was developed for third graders because “it

seems to be the grade that you can impact the most with nutrition lessons.” Along with the third-grade program, Nebgen also works with kindergarteners to help them understand the basic concepts of eating healthy. Health Education Through this initiative, Nebgen often collaborates with other organizations to offer educational programs for youth

and adults on how to make decisions that affect their own health. “It is always exciting when the students see me outside of the classroom and they walk up to me and say ‘I am eating more fruit’ or ‘I am eating healthy,’” Nebgen said. “I know that the messages I am teaching are being remembered by the students.” See EXTENSION ▶ 20

The Better Living for Texans program is a cooperative endeavor among the Texas A&M AgriLife Extension Service, Texas Health and Human Services Commission, and Food and Nutrition Services. The grant monies received help educate limited resource families through nutrition education.

▶ EXTENSION continued Partnering with the Fredericksburg High School HOSA students, Hill Country Memorial Wellness Center, Methodist Healthcare Ministries — Wesley Nurse Program and the Fredericksburg Independent School District, health fairs are held on the Fredericksburg elementary, middle school and high school campuses on a rotating basis. Nebgen explained that screenings include My Plate, personal care products, sugar and fat models, vision, dental, handwashing, body mechanics, body alignment, drinking/texting and driving, pulse ox, step test, Heimlich, drug education, fast food choices, glucose screening, CPR Anytime, blood pressure, hearing and the importance of water. Nutrition and health programs were conducted at St. Mary’s, Fredericksburg Independent School District and Kindernest Montessori School this year. The programs focused on teaching information on My Plate, hand washing, basic nutrition and calorie needs, fruits and vegetables, milk

Child Safety Seat Education Going hand-in-hand with health education, is Texas A&M AgriLife Extension’s Child Safety Seat Education. Nebgen has been a certified child safety seat technician since 2003. She said she became a technician after she washed her son’s car seat and realized she couldn’t put it back together again. And, she said, “I was misusing it. I wanted to learn how to install it correctly for the safety of my child.” Child Safety Seats are inspected through appointments held at the Gillespie County Extension Office.

Thrive es, Nebgen and a group of fellow agents offer a child care provider training conference in Kerrville each fall. Last year, 104 child care providers and directors who provide care for 1,174 children enrolled in 18 centers or family day homes attended the conference and earned continuing education training. Food Protection Management, Food Handler’s Program Because food safety is a concern among consumers, Texas A&M AgriLife Extension offers the Food Protection Management and Food Handler’s Program courses. Nebgen explained that the two-hour food handler course is targeted toward front-line food service workers. Food handlers can choose to take the class offered through Nebgen’s office or online in either Spanish or English. She added that the food handler’s class is also taught at Fredericksburg

High School to help students earn the certification. “Food Safety: It’s Our Business” is the curriculum for the two-day food manager’s certification training. Nebgen noted that Gillespie County has 252 retail and 26 institutional facilities to inspect each year. 4-H Foods and Nutrition Through the 4-H Foods and Nutrition project, youth learn basic cooking skills, food safety, health and nutrition and more. The project includes the Food Show, Nutrition Quiz Bowl and the Food Challenge. Youth participating in the Food Show take part in a series of classes and then have the opportunity to put their skills and knowledge to the test. Students are judged on their dish, preparation and knowledge of foods. The Nutrition Quiz Bowl is a “Jeopardy”-like event in which teams are quizzed over all aspects of health

23

and nutrition. Nebgen said that one of the most popular foods and nutrition events is the Food Challenge. “Students get to work as teams with their friends for the contest,” she said. Teams are given a bag of groceries, a list of ingredients but no directions and 40 minutes to create a dish. In that time, they must prepare and correctly plate a dish that has been cooked to the right temperature. In addition, they must give a five-minute presentation on how the recipe fits into My Plate, cost, food safety, nutritional value and healthy substitutions. Students in these contests first compete at the county level. Winners then advance to the district competition, and from district, senior division winners have the opportunity to compete on the state level. This year, the senior Quiz Bowl team won Nationals and a senior Food Challenge team will be competing at the state contest in June.
