In January Laura was diagnosed with Myelodysplasia Syndrome (MDS), which progressed to Acute Myeloid Leukemia one month later.

She spent the month of March at Methodist Hospital in Rochester having chemotherapy and receiving blood/platelet transfusions.

Early April she was able to come home. On May 9th in which she is scheduled to go back to the Methodist Hospital to have another round of chemotherapy followed up with a round of radiation in preparation for her stem cell transplant on May 14th. She will then go to the Gift of Life transplant house until she is well enough to go home.

Fiber Series - Turkey and Black Bean Quesadillas 1⁄2 lb ground turkey breast 1 (15-oz.) can Hy-Vee black beans, rinsed and drained 1⁄2 cup chunky salsa 1⁄2 tsp ground cumin 1 cup shredded reduced-fat Cheddar cheese (4 oz) Salt and pepper, to taste 8 (8-inch) whole-wheat tortillas Additional salsa All you do 1. Preheat oven to 375°F. Coat a baking sheet with nonstick cooking spray. In a medium nonstick skillet cook ground turkey, stirring occasionally, until no longer pink. Stir in beans, salsa, cumin and cheese.

Season with salt and pepper to taste.

2. Spoon about 1⁄2 cup of the turkey mixture on half of each tortilla. Fold tortilla over filling and place on baking sheet.

3. Coat the tops of the quesadillas with nonstick cooking spray. Bake 10 to 12 minutes or until the edges begin to brown. Transfer to a platter, cut in half and serve with additional salsa.

Fiber Series - Turkey and Black Bean Quesadillas 1⁄2 lb ground turkey breast 1 (15-oz.) can Hy-Vee black beans, rinsed and drained 1⁄2 cup chunky salsa 1⁄2 tsp ground cumin 1 cup shredded reduced-fat Cheddar cheese (4 oz) Salt and pepper, to taste 8 (8-inch) whole-wheat tortillas Additional salsa All you do 1. Preheat oven to 375°F. Coat a baking sheet with nonstick cooking spray. In a medium nonstick skillet cook ground turkey, stirring occasionally, until no longer pink. Stir in beans, salsa, cumin and cheese.

Season with salt and pepper to taste.

2. Spoon about 1⁄2 cup of the turkey mixture on half of each tortilla. Fold tortilla over filling and place on baking sheet.

3. Coat the tops of the quesadillas with nonstick cooking spray. Bake 10 to 12 minutes or until the edges begin to brown. Transfer to a platter, cut in half and serve with additional salsa.

In January Laura was diagnosed with Myelodysplasia Syndrome (MDS), which progressed to Acute Myeloid Leukemia one month later.

She spent the month of March at Methodist Hospital in Rochester having chemotherapy and receiving blood/platelet transfusions.

Early April she was able to come home. On May 9th in which she is scheduled to go back to the Methodist Hospital to have another round of chemotherapy followed up with a round of radiation in preparation for her stem cell transplant on May 14th. She will then go to the Gift of Life transplant house until she is well enough to go home.
