Here's something you don't hear very often: There's a new Trappist brewery on the scene. That's something of a big deal since, for the last few centuries, there have only been nine of these monastic breweries in total, clustered in Belgium and The Netherlands. What's even more remarkable is this new Trappis t Brewery's loca tion: Spencer, Massachusetts. The Abbey of St . Jo seph is the f i r s t Tr a ppist brewery in the United States. W h e n you think about it this totally makes sense. The order of Trappist monks, themselves an offshoot of the Cistiercian monastic tradition which originated in the Abbey o f L a Tr a pp e , France, hold selfsufficiency as one of their central tenets. Traditionally this meant baking their own bread ,and brewing their own beer. The St. Joseph's Monastery had been doing the bread thing, and selling preser ves to the public as well. When one of their monks grew interested in brewing, the abbey devised a plan to rekindle the beloved tradition. It was more about being Trappist than being Belgian. For a beer to be labeled trappist it has to be brewed under the super vision of the monks, and the abbeys tend to fly a little fast and loose with how they define "super vision." Often, just having one brother working in an
www.FREETIME.com •
ultramodern production facility counts. That's good, monkdom isn't as popular a vocational choice as it used to be. The Orval monastery, for example, is down to just 12 monks, which really isn't enough to run a brewery While this fact may shatter the romantic notion of men in burlap silently toiling over wooden vats in an old farmhouse, it does not change the fact that Trappist beer is regarded as some of the finest in the world. The dubbels, tripels and quads produced in these abbey breweries are universally regarded as some of the finest in the world. In that regard , St . Jo s e p h s may be starting at a bit of a disadvantage, for while they can d r a w on centuries of monastic tradition, it was only f ive years ago that the monks headed over to Belgium to learn how to brew. Their recipe for a 6.5% "Refector y Ale" is ve r y m u c h an American beer, but with a traditional Trappist character. The opening of St . Joseph’s Spencer Brewer y signifies a union between the classic Trappist brewing tradition and the modern craft beer movement. With an eye toward both past and future, and an innovative spirit it’s exciting to contemplate how St. Joseph’s can spearhead the next iteration of Trappist ale. Mark owns a laptop and likes beer.
