Water St. Music Hall | July 19 The “King of Surf Guitar,” Dick Dale met Leo Fender (Fender Guitars) and began playing the Fender Stratocaster electric guitar early in his career...upside down and backwards! Dale continues to play left-handed, upside down; using the “Fender Tank Reverb” (which he developed) to provide his trademark sound. The first guitarist to perform on the Ed Sullivan Show (1963), and the first to be featured in a double page spread in Life Magazine (1963), Dale was named the “Forefather of Rock and Roll” by Thirty Years of Rock and Roll (1986) and “Guitarist of the Year” by Guitar Player Magazine (1981). Nominated for a Grammy Award for music in the movie Back to the Beach (1988), he received a platinum record for the song, “Miserlou,” which appeared in the movie Pulp Fiction. beer CRAFT

Sour Is The New... Sour By Mark Tichenor We Americans have a problem with the concept of subtlety, and that’s as true with our beer as anything else. Understated, traditional flavors don’t seem to cut the mustard for the committed American craft beer geek. For years, ‘hoppy’ was the mantra. Every newly crowned king brew had more hop aroma, more hop character, more tonsiltwisting, palate-ravaging lupulincharged musk and bitterness than the last. Some beers got so bitter that the human palate could no longer register that level of bitterness. That’s kinda silly, but the beer community slurped them up happily enough. Amazingly, though, even hoppy got boring. And a quick, inspirational look at the wild beers of Belgium pointed the way to the next frontier: sour beers. It might seem strange, considering that sourness is a flavor most people find averse in anything but pickles and yogurt (and mostly not even in yogurt), but sour beers are the current darlings of the irritatingly insular craft beer community. Sourness in beer is nothing new–the Belgians have been brewing them since before their country became a war-torn hellscape. Even today, the finest sour beers reflect the brewing tradition of Flanders, in which wild environmental yeast is allowed to settle into open fermentation vessels and innoculate the beer with all kinds of neat-o strains of bacteria (among them lactobacillus, brettanomyces, pediococcus and sundr y microorganisms. The resulting beers range from the exquisitely tart Cantillon Gueuze, to the subtle, yet vinously complex Rodenbach Grand Cru (one of the best beers in the world, seriously). Naturally, American brewers had to take a stab at things as well, and many breweries sport at least one unique bottle-conditioned sour in their product line. Some shops are now using souring microorganisms in practically all their beers, from stouts to witbeer, with decidedly mixed results. The question “Is sour the

•••••••••••••••••••••

new bitter?” f requentl y arises among beer people, and the answer reall y has to be no. Whereas bitter ness can domina te a beer’s profile, rarely does it exist without a supporting cast of malt sweetness, f loral esters and robust body. Make a beer too sour, and it pretty much crowds every other flavor out, leaving little more than the biscuity tannic flavor of sadness to dissipate on the tongue. That is, unless you’re a sour beer lover. There’s a lot of them, and more than one beer geek expressed bemused pleasure at finding that a seemingly unappealing flavor profile could become addictive over time. Ultimately we beer lovers are richer for having Belgian and American sour ales on our store shelves and taplines. We have more flavor experiences to choose from than ever before, and you never know when you just might be in a sour mood. In other beers The Naked Dove Brewing Co. released a superb Helles a few weeks ago, and you can find it on tap all over Rochester. Good Bavarian-style Helles (light) lager is a rarity from US craft brewers– they take more fermentation time in the tank, and the clean flavor renders any brewing mistakes glaringly obvious. This iteration from Canandaigua-based Naked Dove is one of the finest examples in recent memory. The guys from ROC Brewing went back down to Boston and brewed a collaboration beer with The Boston Beer Company (Sam Adams) as part of BBC’s Brewing + Business Experienceship. It’s a dark, spicy pint with generous fruit notes, and represents the growing partnership between the two breweries. The Boston Beer Co. continues to look for additional fledgling craft brewers to enter the experienceship under the ‘Brewing The American Dream’ program. Mark owns a laptop and likes beer. SCREEN

PACIFIC RIM

Written by Travis Beacham and Guillermo del Toro; directed by Guillermo del Toro With Charlie Hunnam, Idris Elba, Rinko Kikuchi, Charlie Day, Ron Perlman Rated PG-13 By Ed Symkus Those who speak Japanese will know that “kaiju” means “strange beast.” Speakers of Japanese who are also fans of monster movies will know that “kaiju” also refers to any of the long line of Japanese screen creatures including Godzilla, Mothra, and Gidrah. Those who speak German will know that “jaeger” mean “hunter.” OK, the lecture is done, and it took about as much time for you to read the first paragraph as it does for Pacific Rim to jump into all of its destructive glory. Within the film’s first minute a “Category 4” Kaiju – that’s a big one – has arrived on our planet from another universe, made its way through a

sock ’em style, accompanied by one of the loudest soundtracks ever created, by Ramin Djawadi, who also composes the thundering music heard in Game of Thrones. Actually, everything about the film is big and loud, from the overblown egos of some of the characters to the wondrous vision served up by director Guillermo del Toro. He’s visited similar areas before, with the soulful but creepy and creature-filled world of Pan’s Labyrinth to the much lighter but also more kick-ass stories told in his two Hellboy movies. Pacific Rim gives us a situation in which the human race is in danger of extinction. The monsters that rise up from the depths are not just mindless behemoths who knock down buildings and stomp on people. They turn out to be intelligent, and they have a plan. We join the story seven years after the Kaiju Wars have begun, when it looks like things are going badly for us. They certainly go wrong for the Jaeger team of

bond, the better you fight.” Five years after some tragedy goes down, Jaeger teams around the world are losing the battle, and gover nment officials are dropping the Jaeger program in favor of building coastal walls to keep the sea monsters out. Fat chance! Though the film’s mayhem meter almost always points to “high,” and there’s very little downtime, del Toro and his co-screenwriter Travis Beacham (the 2010 Clash of the Titans) manage to work in plenty of personal stories. Our hero, Raleigh Becket, has to do something about his reputation for taking too many risks. Two scientist partners, one a math nerd square (Burn Gorman), one an excitable Kaiju expert (Charlie Day), try to calculate and save the future of mankind. A military leader (Idris Elba) goes rogue but is keen on keeping order among those who still follow him. A young woman who dreams of being a Jaeger pilot (Rinko Kikuchi), must first overcome emotional scars then face the slightly clichéd challenge of being a small woman in a big man’s game. Some of the film’s dark comic relief comes

Ghostbusters, July 18 @ Highland Park Bowl breach in the ocean floor, come to the surface, and gone to battle with an equally big man-made Jaeger – a “brutal war machine” that’s piloted by two humans within it. The fight is fierce, with punches thrown and absorbed in rock’ em,

courtesy of del Toro regular – Hellboy, himself – Ron Perlman, who plays a dangerous, amoral, 24-carat-gold-shoe-wearing black market profiteer. The physical scale of the film is amazing, whether it’s dealing with the busy-ness of streets filled with people fleeing from the monsters (yes, del Toro is a big Japanese monster movie fan) or just seeing these gigantic monsters and robots right next to people and buildings or, in one case, nonchalantly carrying an oil tanker. It all builds to an air of finality. The surviving Jaegers (so many of which have been destroyed) must go up against the everattacking Kaijus, and there are now “Category 5” types coming through. Better yet, the seabottom breach must be destroyed. The machine versus monsters battles get more spectacular, and there’s even a pretty nifty human fistfight. Things become a little numbing, but it’s absolutely the movie every 8-year-old boy (there are a lot of us out here, no matter what our age) has been wanting to see, and definitely the film Guiller mo del Toro has long wanted to make.
