New York State used to be the epicenter of hop cultivation. Of course, like all the other awesome things New York used to be, that was long ago, since the trellised fields were laid to waste many years past by agricultural disease and prohibition. Nowadays, even New York’s small brewers need to look westward to find their hops. Fortunately a resurgence is taking place, at least on a small scale. It turns out some brewers are every bit as obsessed with the local-sourcing movement as restauranteurs, and the quest to include hops from local farms is shocking the long-dormant industry back to life. Over the last few years, farmers statewide went from planting basically zero acres’ worth of hops to over 200 acres. It’s still a drop in the bucket compared to most crops, but increasing demand from small breweries, as well as incentives from the recently signed Farm Brewery Law, mean new acreage sprouting up every year. The Finger Lakes Region is proving particularly adaptable to hop growth, supporting a mix of longtime growers, such as Pedersen Farms, where they’ve cultivated hops for 20 years, and new entrants like Victor’s Bluebell Hopyard, in its second season of cultivation. Hops are not the cheapest crop to farm. The plants are climbing vines so farmers need to install huge trellis frames for support. Up to three years will go by before the hop vines start flowering to their full potential. Oh, and it takes pricey specialized equipment, or many MANY man-hours to harvest the flowers when ready. But it’s a labor of love that is steadily becoming more profitable for area growers. Dave Schlosser, owner of The Naked Dove Brewing Company in Canandaigua New York, loves the resurgence of local hops, and the fact that the hops grown here have unique qualities of f lavor and aroma–what the wine set calls terroir. Terroir in this context refers to the effect a region’s climate has on

www.FREETIME.com •

the chara c te r o f hops; how much sun the vines re c e i ve s , how much rain, the acidity and composition of the soil. “It’s partially why when they tried to grow German Hallertau hops in the Pacific Northwest, it tasted nothing like the German Hallertau,” Schlosser explains. Luckily the Centennial and Cascade hop varieties he harvests from Pedersen Farms, eight miles up the road from his brewery, play very well into Schlosser’s overall approach to making Hopulus Localus, Naked Dove’s fall seasonal. Hopulus Localus is wet-hopped, meaning the fresh hop flowers are added to the nearly-finished beer prior to fermentation. “We empty out the mash tun, fill it with hops, and then pump the wort in on top of it after the boil, so it’s very much a late addition,” Schlosser says. “The mash tun becomes a giant hopback. Wet-hopping means big hop flavor, and Hopulus Localus bears the characteristic grassiness that signifies the use of this time-honored method. But there’s a subtle, soft, almost English undertone to this beer. Its voluminous aroma suggests a big, palate-wrecking flavor but the New York hops demonstrate restraint. A bold citrus essence gives way to a mild earthy evergreen quality that gently fades away. It is absolutely intriguing. This is the third year of Hopulus Localus production, and the fall seasonal is already kegged and/or on draft at pubs across the region. Each year, the beer is a little different, and that’s really the point of a beer this local: the changing conditions of the region alter the character of the hops differently each year, and those subtle variations factor heavily into creating a beer that is new and unique– a beer that perfectly captures the essence of its region. Mark owns a laptop and likes beer. For more on beer, check out the beercraft blog, updated regularly, at beercraft. wordpress.com. Find him on Twitter @beercraft. SCREEN

GRAVITY Written by Alfonso Cuaron and Jonas Cuaron; directed by Alfonso Cuaron With Sandra Bullock and George Clooney Rated PG-13 By Ed Symkus Anyone thinking that buying a ticket to Gravity will have them heading into a science fiction movie with Sandra Bullock and George Clooney might end up being disappointed. Oh, they’re the two stars, and they wear space suits and are way up in the heavens doing some repairs on the Hubble telescope. And even though this isn’t a based-on-fact story, I wouldn’t go around calling it science fiction. It’s completely contemporar y, and it’s about things that our astronauts actually do today. Let’s just call it a space movie. A great space movie, albeit one with a very simple story. The three spacewalking folks we meet in the first frame have been up there for a week, doing their business on the Explorer shuttle, making their repairs outside, nearing the end of their work, and preparing to come back home. The opening shot is kind of a calling card for director Alfonso Cuaron, who lets his camera (manned by the excellent Emmanuel Lubezki) run on and on, without a cut, for something like seven minutes, during which we meet Mission Commander Matt Kowalsky (Clooney) and Mission Specialist Ryan Stone (Bullock)

and a third NASA member who we only see in the distance, and might as well be wearing a red shirt. Get used to long shots, and little editing, as that’s what Cuaron and his cinematographer Emmanuel Lubezki have been getting better and better at, starting with Y tu mama tambien, and later, really digging in, with Children of Men. That first shot here, presented in the immensity of space, with the Earth looming in the background, is spectacular. Later on, there’s an interior scene that starts sometime around the point that Bullock says the word “Mayday,” and it just goes on, without an edit, giving us a terrifically staged sequence that’s pushed forward by terrific acting. She says that word because things go very wrong up there. Those pesky Russians screw up the demolition of one of their own satellites, resulting in the incredibly fast-moving space debris that first introduces terror to the story. It’s a really off-putting effect to see such rampant destruction and not be able to hear a sound. Frightening stuff, nicely shot in 3D. And, beginning with two words transmitted from the control center in Houston – “Mission abort!” – it puts the story of survival in space on track, first with some purposely casual banter from veteran astronaut Kowalsky, who knows he’s got to get rattled firsttimer Stone to stay focused. Great stuff here from Clooney, who eventually pretty much turns the film over to Bullock, who in turn spends a great deal of time talking to herself. They’re two very strong performances, but a lot of viewers are going to be too blown away

•••••••••••••••••••••

by what’s going on visually in the film to pay enough deserved attention to the acting. The last time weightlessness looked so real was in Apollo 13, but that was a film that didn’t have extended takes. Through lots of trickery, including some wires,

25

some robotic creations, a bit of animation, and the assistance of a few puppeteers who were moving the actors’ limbs around, this is a completely believable simulation of zero gravity. There’s also a ticking clock element to the story, in that the debris is in orbit, and it’s probably going to come around again. That, matched up with oxygen supplies getting low, ramps up the tension level. The film is relatively short, zipping by in 91 minutes, made fascinating by cameras that keep moving along with the almost-always floating and spinning characters, a visual gracefulness, and accompanying music that shifts between being soothing and unsettling. Don’t be concerned that this is yet another in a string of 3D movies. The process is used in a whole different way, in that most of it here is done under claustrophobic conditions, and gives off an unusual sense of dimensionality. Still, even with all of its gadgets and gimmicks and visual splendor, Gravity remains a meditation on survival, on the will to live, and the triumph of the spirit.

We make our own pizza crust and pasta fresh daily using un-bleached un-bromated flour. There are various appetizers including Grilled Lamb Chops and Prince Edward Island Mussels, salads, various pizza combos (yes, you’ll find one to fall in love with), great pastas Cioppino and Seasonal Risotto. Other entrees include Scottish Salmon and Maple Leaf Farm’s Duck Breast. Specialties: Although there are a number of similar items available at both the Monroe and University Ave. locations, each restaurant does offer items not found at the other, so check the website for updates.
