EDITOR’S NOTE Enjoying all this rain? It’s funny, I used to complain about the drought and wish to no end that the weather would send us at least a little drizzle. And now… Now I can’t wait for it to let up and have the smallest bit of sunshine break through the clouds. But it’s the perfect kind of misery, because we got exactly what we asked for. It’s a little like this paper, if you can imagine it. The Fresno Flyer had been a longtime coming, but we weren’t quite sure when it would happen. Before the changeover it was just a phantom vision of a dream the publisher and I discussed continuously. Some days it felt like the road to get here had almost no end, and other days we could see it just over the next hill. Then, like a shot, it was here.

We made it. But even still, there’s work to be done and plenty of it. Turns out, the changing masthead was just the beginning. Even though we’ve made the journey and have given ourselves a name that matches our identity (no easy feat mind you) there’s still a wealth of work left in building familiarity with who we are and what we do. There’s also still work in creating the pages that accurately reflect the heart of the Central Valley. And that’s where you, the reader, can help give us a little boost. It’s no surprise that we’re always looking for writers to contribute, and I don’t think that will ever change, but there are other ways you can get involved. For instance, do you know a

place that would be great for our paper? Visibility is a huge deal for us and we’re always looking for new places to leave some copies of The Fresno Flyer for new readers. Art is undoubtedly subjective, but there’s something profoundly alluring about Wren’s work that causes the viewer to stand back in order to fully feel the weight of what’s being presented. The colors are often bold, yet subdued in shadow or eloquently feathered to create unique hues that signal a hidden message about the realities of something… I … just… can’t… put… my… finger… on… so I’m left staring at each piece looking for the truth hidden there, absolutely certain that I’ll find it. But this is yet still the perspective of only one viewer. To truly understand the impact of Wren’s work you’ll have to see it for yourself. Essential Oils - What’s The Difference?

ot all essential oils are created equal. Some oils are used for aromatherapy while others have medicinal value. What exactly does this mean? Webster’s dictionary defines “aromatherapy” like this – “the use of natural oils that have a pleasant smell to make a person feel better especially by rubbing the oils into the skin.” Aromatherapy is a pleasant smell. These oils are not intended to be ingested or used to attack viruses or bacteria in our physical bodies. There is emotional value in smells. Our sense of smell goes directly to the limbic system of the brain – the place where emotions are stored. Given that our emotions often drive our behaviors, aromatherapy often impacts the decisions we make. Consider the different emotional reactions to smelling the flowers from your wedding bouquet verses catching a whiff of dirty gym socks. Smelling your favorite dinner cooking creates a completely different emotion than the stench of rotting garbage. Smells create unique and often passionate reactions, which can potentially influence our behavior. These behaviors generate physical as well as emotional consequences or benefits. This is why some people believe that aromatherapy can change your life. Therapeutic-grade essential oils, on the other hand, interact with our physical bodies more than just our expressive side. Many studies find the properties of essential oils can penetrate the blood brain barriers and alter your body chemistry on a cellular level. Research has proven essential oils have properties such as anti-inflammatory, anti-viral, anti-

tumoral, anti-bacterial, anti-spasmodic, and anti-coagulant, just to name a few. Physical healing also stimulates our emotions. When your body has a disease or ailment, most people have an emotional reaction to that. Once that disease or ailment leaves the body, emotional energies can shift to other things. Using therapeutic-grade essential oils for physical healing ultimately generates sound emotional health as that energy is no longer needed to address physical maladies. Therapeutic-grade essential oils impact our physical bodies while aromatherapy influences our emotional self. Both types of oils have their value and place in our lives. Which one is best for you depends on your goals and objectives. If the driving force is overcoming a bacterial infection, for example, therapeutic-grade essential oils provide more benefit than aromatherapy. Insomnia caused by everyday life stresses can be overcome by aromatherapy. On the other hand, insomnia caused by physical pain is best combated with essential oils. Not all essential oils are created equal. The local craft supply store sells “essential oils” to make soaps and candles. This is not “therapeutic grade” and should not be used for anything except scenting soaps and candles. Future articles will provide more detailed information about labeling and wordings on products. Fun Facts In honor of Martin Luther King Jr. Day

1. King’s birth name was Michael, not Martin. The civil rights leader was born Michael King Jr. on January 15, 1929. In 1934, however, his father, a pastor at Atlanta’s Ebenezer Baptist Church, traveled to Germany and became inspired by the Protestant Reformation leader Martin Luther. As a result, King Sr. changed his own name as well as that of his 5-year-old son. 2. King entered college at the age of 15. King was such a gifted student that he skipped grades nine and 12 before enrolling in 1944 at Morehouse College, the alma mater of his father and maternal grandfather. What is American cuisine if not a mutant of the culinary world? So much of American cooking is about engineering food between two slices of bread. Hot dogs, hamburgers, sliced deli meat, peanut butter and jelly… these were the stepping stones to something much greater. Today, our ingenuity has taken us to new heights. I speak, of course, of waffles. Waffles are the new bread in which we can fuse our food inbetween. One such place that does this and is doing it well is a place near River Park called Griddle Me This. Griddle Me This is a new restaurant in Fresno having opened in June of last year and is located across from Red Robin. The outside of the establishment isn’t exactly noteworthy, in fact it’s very plain and unassuming, once could easily walk by without even seeing that it was there. However, the inside is a contemporary styled decor with shiplap on the walls, vintage lighting, and a few

wood tables that are all pleasing to the eye. There’s about forty to fifty seats with tables that can hold around 2-4 people and a couple of bar tables for individual seating. But you have order before you sit, as there isn’t a wait staff to accommodate you. Upon walking up to the counter I’m greeted by the cashier who asks me what I’d like. I tell him that this is my first time at Griddle Me This and that I’d like some recommendations. The cashier takes the care in asking me a few questions to get a sense of my pallet and I ultimately order the southern fried chicken sandwich along with waffle cut sweet potato fries. As I waited for my order I took a look at the various sauces they have available for sandwiches and fries. Barbecue and ranch are the staple condiments, but to my pleasant surprise they also carry thousand island sriracha and maple syrup. When my food arrives, it looks amazing. Everything is set to perfection

almost as if it were Photoshopped. My first bite into the sandwich reveals some great flavor which is a combination of chicken, coleslaw, spicy mayo, and jalapeño. There isn’t a whole lot of chicken in the sandwich, but the sandwich is very well balanced overall because of it and allows me to taste every component. The soft and warm crispy waffle around the the thin but juicy chicken played exceedingly well with the coleslaw and jalapeño. The spicy mayo wasn’t spicy enough for me, however, so I added enough sriracha to build the kind of heat I prefer and it made the sandwich truly spectacular. I tried my next bite with a little bit of the maple syrup and it did go well with the chicken and waffle, but once I tasted it with the coleslaw it’s not as complimentary. Instead, I try the syrup with a bite of sweet potato fries which are crispy and warm, but the syrup makes the bite excessively sweet. At first bite, it’s a pleasant experience but not one worth repeating. Instead, I go with the ranch and dip them on occasion in to the sauce. After finishing the meal I am certain of two things, first is that sliced bread is out and waffles are in. Second, even if you have a waffle maker at home, you’re not doing it like this. Get over to Griddle Me This because they are doing things between two magnificent gold waffles that should not be ignored.

For the Maple Brown Butter, melt 4 tablespoons butter in a 8-inch skillet on medium low heat. Cook and watch carefully until it turns frothy and slightly brown. Remove from heat immediately. Stir in maple syrup and tarragon. Meanwhile, bring 4 cups water to a simmer in a 10-inch non-stick skillet. Carefully crack eggs, one at a time into the low simmering water. Poach for about 3 minutes or to desired doneness. Dip lobster meat into poaching water for 30 seconds to heat then remove. Place and overlap two Johnny Cakes onto each plate. Place one egg onto two Johnny Cakes. Top with equal portions of lobster and drizzle maple brown butter over all. Sprinkle on parsley and serve.
