EDITOR’S NOTE If your week has been anything like mine, it’s been filled with unintentionally deep conversations that teeter on the very edge of argument with someone who‚Äôs take on the world differs from your own. And the funny thing is it’s not even so drastic as to be in stark opposition from you either, it’s that their views are just different enough to make the debate fairly prickly. If your week has been anything like mine, it’s been a little exhausting, trying to hit every nail on the head and make an impact with your cause without boiling down to phrases made up of impressively laid out, and creatively used, four-letter words. However, it has grown to be an important part of my day/week/randomly-dispersed-moment-throughout-the-month regardless of the frustration of what seems like an endless task to prove a point.

There’s this trend on social media (because this is where most of the arguments are happening) where people are beginning to put much more effort into finding the truth. Seriously. And if you haven’t seen it yet, just wait. Each person is digging through political history, pulling out old video links, and researching policy to not only make their case heard but to also end the argument. Nothing shuts down a debate like hard, cold facts. So why is` this important and what does it have to do with The Fresno Flyer? I’m so glad you asked. We’re having more and more conversations with each other that go well beyond pop-culture and celebrity gossip. The conversations about policy, the environment, education, art, and how they all play into our future are transcending the usual age groups of parents and grandpar-

ents to twenty-somethings and even teenagers. It may all be coming in the wake of changes in our White House, but they’re still happening, and it’s important we keep the momentum going. To keep the conversation going. I’ll reiterate the fact that we’re not a political publication, but it doesn’t mean that some things don’t have a place here. If it’s a national affair affecting us locally, let’s talk about it. If it’s a concern over our local education, the arts, or policy, let’s talk about it. And let’s get away from concerns for a moment. If it’s a triumph, accomplishment, or something of a positive impact on our Central Valley, let’s talk about it. And when I say “talk about it” I mean literally, let’s talk. Tell me what you want to see on our pages, or give me a head’s up on something you think will be important to our community that others

Palm Village Senior Network A local community for seniors to have fun, socialize, share, and meet new friends.

etting older doesn’t have to mean that the fun stops here. It’s true that our society has led us to believe that when we become seniors, our lives are resigned to leading a quiet life either with family or in assisted living facilities. And often times these environments lack the same kind of social interaction we would have likewise enjoyed in our youth. However, it doesn’t have to be the only reality for seniors living in the greater Fresno area. Palm Village Senior Network is a 501(c)3 non-profit committed to providing on-going opportunities for seniors to remain active and engaged in mind, body, and spirit with each other and in the community. For many seniors who choose to age in place, isolation and depression often affect the ability to maintain good physical and mental health. By providing a place to gather for activities, provide moral support and opportunities for socialization, Palm Village Senior Network (PVSN) members can keep their minds sharp, bodies active, and spirit uplifted. “Getting involved with PVSN has made a tremendous impact on my life. In August of 2013, I retired from Fresno Unified after 50 years. When I turned in my retirement papers I felt like my life was over, my children were off on their own, my husband deceased, and I no longer had my teaching job. I came home to an empty house [one day] and found a postcard from Palm Village Senior Network inviting me to join. I immediately emailed [contacted them] and went over there the next day. Now, I have a full and active life playing bridge, canasta, bingo, bunco… I do crafts, line dancing, and belong to a book

club. We go out to lunch once a month and have taken some wonderful field trips. Most importantly, I have made some wonderful friends that have had a positive impact on my life,” shares Carol Fiorentino. PVSN’s first visitor in 2013, Carol has been an avid participant in all the organization’s activities as well as a welcoming presence for the newer members. Carol also recently took a position on the Board of Directors as Secretary/Treasurer. Research has shown that for the next 15 years the senior population will explode. Statistics show that there were 40.2 million seniors in the United States in 2010. By 2050 the projected population of Americans age 65 and older will more than double to 88.5 million. It begged the question, what kind of programs would need to be created to support this increasing population? In the summer of 2013, Barbara Beauchamp, Director of Palm Village Senior Network, along with David Reimer, CEO of Peer Services Inc., a consulting firm for senior living, came up with an idea to create a program for seniors in the Fresno area. And in looking at their program for just the month of February, they’re hosting activities nearly 5 days a week. The activities include line dancing, bridge and various other card games, a monthly luncheon, a book club meeting, bunco, and potluck just to name a few. And many of these activities are led and promoted by their members. Volunteers and members are currently working on planning an upcoming day trip to the Getty Gardens and the Reedley Playhouse. Currently, PVSN is the only senior network in town and presents an experience that differs from the senior centers within the community. “I like to think of Palm Village Senior Network as a social club with no membership fees,” offers Director Beauchamp, “small fees are required, however, for some of our activities like line-dancing, Bingo, Bunco, and crafts.” As a non-profit organization, PVSN relies heavily on donations from members who donate what they can. Some members donate in-

kind items such as paper, ink, paper towels, and like supplies. Other members will donate cash to our donation box intermittently and some donate monthly or quarterly. There are also those who give the gift of time and talent, whether in volunteering or sharing/ teaching a skill. In fact, PVSN is always looking for volunteers. “Most of our volunteers are members who help with getting the newsletter or calendar out. Volunteers also help plan our events and trips while also acquiring donations for the silent auction. We have had several Fresno State students complete their volunteer hours or internships with us at PVSN,” says Beauchamp. The organization also hopes to add some vendors to their volunteer list for

small house repairs and errands. Since the members at PVSN live in their own homes, they often need a little help with things like changing a light bulb or the batteries in the smoke detector. If you or someone you know is a handyman and would be interested in volunteering their time for few hours a month, PVSN would like to hear from you. Likewise, if you are interested in volunteering for other activities or in becoming a member, Palm Village Senior Network would like you to reach out. Volunteers will be required to fill out an application whereas future members simply need to let organizers know where to send the monthly newsletter and calendar. Essential Oils Labeling and Wording By Mary Bell

t is common knowledge that words matter. Words have meaning. They can be informative, confrontational, emotional, or joyful among other things. Words can also be misleading. Everyone I know can admit to misunderstanding someone at some point in their lives. We do not always hear the sound emanating from people’s mouths. After that sound arrives at our ears, misinterpreting the meaning behind the words becomes all too easy to do. Distractions confuse our emotional filters and cloud our senses. Hearing and listening are not always the same thing. Words used in product labeling struggle with the same problems that are common to spoken language. Labeling can be information as well as misleading. Regulations regarding what goes inside a product are not as restrictive as what is printed on the outside label. Let’s consider an example about the use of the word “pure” when applied to essential oils. If a bottle contains pure rosemary essential oil and nothing else, it can be labeled as “pure rosemary essential oil.” If a bottle contains a pure rosemary oil mixed with a pure carrier oil to dilute the rosemary, it can be labeled as “pure essential oils.” See the difference? Even though everything inside the bottle might be “pure,” there is a huge difference in what you are actually getting for your money. The term “natural” is another example of labeling gone haywire. Some companies use the word “natural” or “nature” in their company name or product name to create the illusion that what is inside their bottle is also natural. This is

not always the case. Applying the word to the label does not alter the composition of the product or what is inside the bottle. Another way that labels can be misleading stems from the difference between what is required on the nutritional label and what information can be revealed in the list of “other ingredients.” Not all information is required to be disclosed on a nutritional label. We are used to reading serving size, fat calories, cholesterol, carbohydrates, proteins and such. The average consumer will stop there. It is important, however, to keep reading beyond the nutritional box. Other ingredients impact the effectiveness of products and often times render them useless to our body’s nutritional needs. Those pesky “other ingredients” regularly contain fillers and preservatives that are harmful to our bodies. Yet it is all too common for consumers to be content with the information contained only in the boxed area. Change serving size also contributes to misunderstandings in labeling and wording. While the logical mind assumes that the entire package, can, or container would often contain one serving, labeling allows for multiples servings. By creating smaller serving sizes, nutritional information can be manipulated. Being mindful of the serving size becomes very important for those of us who are watching our weight or trying to limit calorie intake. Safe Food Techniques Every Home Cook Should Know

(BPT) - Good hosts want positive experiences around the dishes they prepare for their friends and families - great conversation and good memories. What’s a sure way to mar the feast? Not being consistent in following safe food handling techniques that every home cook should know. Each year, one in six people experiences food poisoning, affecting some 48 million people, according to the Centers for Disease Control and Prevention (CDC). “Sometimes, the causes of food poisoning are beyond our control, in spite of regulations and best practices by farmers and food companies. While ready-to-eat foods and restaurants are often highlighted in the fight against food poisoning, we often overlook that home cooks are important partners in reducing the risk of foodborne illness,” said Mike Robach, vice

president of food safety at Cargill. “The most common foodborne pathogens, like salmonella and campylobacter, can cause serious illness, particularly in young children, the elderly, pregnant women and other immune-compromised people,” said Shelley Feist, executive director of the Partnership for Food Safety Education. “Consistently practicing good hand hygiene and safe food handling at home is important to protect your family from these microorganisms and the serious illness they can cause.” Each year, foodborne illnesses lead to 128,000 hospitalizations and 3,000 deaths, according to the CDC, as they can lead to serious conditions such as sepsis and kidney failure. Like any skilled chef, you are best prepared to create a memorable feast when you keep these safe food handling practices

Clean Hands and Surfaces Often

Finally, wash your hands with warm water and soap for 20 seconds before and after handling food.

Here is a compelling reason to cook food to a safe temperature: Even a professional chef cannot say with precision if a food item is cooked to a safe internal temperature. Food is safely cooked when it reaches a high enough internal temperature to kill the harmful bacteria that cause illness. Get a food thermometer and use it consistently. Rinse Fresh Fruits and Vegetables

Safe Leftovers

Depending on what you are using, some foods will require rinsing. Rinse fresh fruits and vegetables under running water just before eating or using. Firm-skinned produce like cucumbers and apples should be rubbed under running tap water by hand or with a clean brush. You should also rinse any produce that will be peeled, because microorganisms on the surface can be easily transferred to the flesh with a peeler or knife blade. Blot fresh fruits and vegetables dry with paper towels. There is no need to rinse raw meat or poultry, at least, not in the name of food safety. All that will accomplish is potentially spreading bacteria in your sink and beyond. Raw meat and poultry must be cooked to a safe internal temperature.

Proper storing of leftovers in a refrigerator at 40 degrees Fahrenheit or below helps reduce the risk of food poisoning. Keep leftovers in shallow containers so they cool off more quickly. When reheating leftovers, make sure they reach a safe temperature of 165 F degrees as measured with a food thermometer. Consume or freeze refrigerated leftovers within three to four days. Safely Handle Meat and Poultry The best home cooks know it’s important to safely handle raw meat and poultry. To start with, do not thaw frozen meat and poultry at room temperature - to do so gives harmful bacteria an ideal environment to multiply and spread. There are three safe ways to defrost food: in the refrigerator, submerged in cold water, and in the microwave. Food thawed in cold water or in the microwave should be cooked immediately. The Horrors of Artificial Food Coloring

ajor grocery shopping is done once a month in my household, and I sometimes start to hear the theme music from the 1960’s classic horror movie “Psycho” in my head as I walk down the food aisles of the store. Throughout the years, companies have been targeting us with the alluring appearance of their food products by way of artificial colors. Everything from the colorful cereal with charming cartoon characters on the box to the colorful fruit gummy snacks our children adore. Let’s face it, for most of us the more colorful our food and beverages are, the more we’re captivated by it which is exactly why so many of our favorite foods contain artificial coloring. The eight most commonly used artificial dyes are Blue #1 (Brilliant Blue) Blue #2 (Indigotine) Green No. 3 (Fast Green) Red No. 40 (Allure Red) Red No. 3 (Erythrosine) Yellow No. 5 (Tartrazine) Yellow No. 6 (Sunset Yellow) and Orange B (restricted to use in sausage casings and hot dogs). The more frequently used food colors are Yellow 5, Red Dye 40, and Red 3 which is a petroleum product banned in 1990 from being used in cosmetics as well as anything else going on to skin due to the concerns the risk of cancer. Dr. Arlen J. Lieberm, The founder and Director of Advanced Medical of Twin Cities, PC said, “I would ban these dyes in a moment!” Manufacturers claim that artificial coloring is added to enhance the appearance, texture, and flavoring of food or beverages. Food dyes are also used to deepen the color of candy, fruit snacks, dry mixes, soups, and even bread. Studies published in the Journal of Pediatrics suggest that some children with ADHD are adversely affected by food additives. However, patients that have removed artificial food dyes from their diet have experienced a decrease in seizures, asthma, allergies, and behavior disorders. Various studies show that artificial colors like Yellow 5 and Yellow 6, Red dye 40, can have a devastating effect on one’s health, especially that of children. Red Dye 40, which has been specifically linked to seizures, tumors, asthma, allergies, Attention Deficit/Hyperactivity Disorder, also known as ADHD, is still commonly used in a variety of food products. Yet, the U.S. Food & Drug Administration includes Red dye 40 on a list of food additives that are generally recognized on the GRAS (Generally Recognized As Safe) list. Artificial food coloring can be lurking where you least expect it, in something as

simple as applesauce, flavored yogurt and pickles (that beautiful bright green perfect color isn’t always natural) The food industry dumps over 15 million pounds of the dyes into the food supply each year, according to Food Safety News. Joel Nigg, P.H.D., a clinical psychologist and a professor in the departments of psychiatry and behavioral sciences at OHSU stated “the studies support the link between dyes and hyperactivity. “ Nigg is also the Author of “What Causes ADHD? Understanding What Goes Wrong and Why”. He has published nearly 200 peer-reviewed scientific papers related to the neuropsychological, cognitive, and temperamental correlations of child ADHD to ADHD genetics. Dr. Nigg, has also coauthored a report linking color additives to ADHD symptoms in children in 2012 in which he reported, “Due to cancer concerns, in 1961 Red dye #1 was banned. Approximately nine years later Red #2 was prohibited after some studies found that large doses caused cancer in lab animals and Red #4 shortly after.” Dr. David Wallinga of the Institute for Agriculture and Trade Policy stated “They are really ubiquitous in this food supply that we have created,” he continued saying that dyes disrupt metabolism functionality, yellow dyes deplete zinc levels enough in some kids to cause hyperactivity. In Britain, warning labels caution that the food may have an adverse effect on activity and attention in children. Britain has also requested that manufacturers replace artificial food colors and flavors with natural alternatives. In Europe, M&M’s candy contains mostly natural dyes, because otherwise they’d be required by law to place a label on the packaging that says “may have an adverse effect on activity and attention in children.” However, on February 5, 2016 the reputable Mars Incorporated, a family owned company with over one hundred years of experience in the candy business, announced that it will remove all artificial colors from its human food products as part of a commitment to meet evolving consumer preferences, according to a press release by the company. The change will take place over a duration of five years. Foods that aren’t red or orange can still include artificial colors such as peanut butter crackers, salad dressings, marshmallows, and even medications you take on a daily basis. Your best defense is to read your food labels carefully and try to avoid, or at least limit eating packaged foods or sweet treats made with these kinds of ingredients.
