raft beer was a term that barely existed and was likewise barely understood for many a decade, but all of a sudden, within the last few years it’s all anyone can talk about. Microbreweries took off like a shot and it’s been raining delicious brews ever since. We now have more options, more variety, more flavor, more creativity and more intimacy with our beer than ever before. We get to enjoy a wealth of options with our IPAs, Pilsners, Lagers, Stouts, Porters and Ciders… and if you’re sitting in a unique place like 559 Local, you’re enjoying that drink with the ones who made it themselves. Located in the heart of Old Town Clovis on Pollasky and 4th, inside a historic building, is the tasting room for Clovis’ only microbrewery, 559 Local. Where most breweries are catering almost selectively to a more hipster, contemporary crowd, 559 Local is doing things a little differently. There’s a legacy to be felt as soon as you pass through the door, 559 Local is family owned and operated, so what you see when you walk in is a combination of real family items and mid-century inspired design. “I want you to feel like we’ve invited you in to our home,” says brewmaster, Rhett Williams. From the three tone paint to the Edison lights above the bar and all the way to the real grape trays from Cheryl Williams’ childhood hanging on the walls, you’ll feel like you’re peeking in on 100 plus years of family history. With a legacy like that, it’s no surprise ‘559 Local’ was the name they chose to call their craft. A commitment and love for the area is not only evident in their name but also evident in their brews sporting titles like ‘Fig Garden Stout’, ’Clovis Independence Ale’ and ‘California 559 IPA’. They’re even working with Wawona Frozen Foods, a local company focused on growing and freezing fresh fruits, to help create some additional flavors. ‘Wawona Strawberry Ale’

and ‘Wawona Peach Ale’ are crafted using strawberries or peaches that are grown locally and picked only when they’re in season. If you hold a glass of either against the light, you’ll find their coloring closely resemble that of their namesake. Choosing one particular beer to start with can be a bit of a dilemma, but the beauty about 559 Local’s establishment? It’s a tasting room and all you have to do is ask. Rhett or Cheryl will pull down a Tasting Wheel and begin filling the slots with 4oz glasses, each filled with one of their brews and presented with a diagram to give the taster a little background to the beers and their flavors. If you fall in love with a specific beer, you can even take it home with you in the form of a Growler (jug) or Bomber (bottle). Taking home a 559 Local beer is also taking home a little bit of the Williams’ family history as each bottle tells a story, sharing the inspiration behind each of the different brews and what makes them so unique. If you do take any of the bottles home with you, don’t throw them away! Because of their custom design, 559 Local encourages people to bring them back. Doing so gets you $1 off your next one, so be sure to hold on to those bottles. 559 Local possesses a passion for family, the Central Valley and brewing to such an extent that it’s immediately present within moments of walking in to their tasting room. After endless hours of crafting, brewing and driving from San Francisco to pick up the bottles, to San Luis Obispo to have the labels custom fired directly on to those bottles and then all the way back to finally bottling the brews, Rhett still finds that there is nothing quite like handing a fresh glass of 559 Local beer to a patron and watching them sink serenely in to the flavors. But it’s not just about enjoying a good beer, it’s about a shared experience on a personal level… like big get-together with family you

1 tsp baking soda Vanilla Cream Cheese Frosting 1 lb room temperature butter (4 sticks) 1 lb cream cheese 3-4 cups powdered sugar 4 Tbsp vanilla

Directions To make these red velvet cupcakes with stout, preheat oven to 350°F and line two muffin tins with paper liners. In a small bowl, thoroughly whisk the Double Chocolate Stout, cocoa powder and vanilla. Add the shortening and sugar to a stand mixer and beat well until combined. Add the eggs one at a time, beat well between additions. Add the beer mixture and salt—beat until well combined. Mix in the flour and buttermilk (alternating) while the mixer is at low speed. Do not over beat. In a separate small bowl, mix the baking soda and vinegar. Gently fold into the batter.

Ingredients

Chocolate Cake 1/4 cup Double Chocolate Stout 2 tbs unsweetened cocoa powder 2 tsp vanilla extract 1/2 cup vegetable shortening 1 1/2 cups granulated sugar 2 large eggs 1 tsp salt 2 1/2 cups sifted cake flour 1 cup buttermilk 1 tsp distilled white vinegar

Distribute the batter evenly among the muffin cups, filling the cups the ¾ of the way. Bake for approximately 20-30 minutes or until a toothpick inserted into the center comes out clean. For the frosting, use a mixer to combine the cream cheese, butter and vanilla. Add the powdered sugar in batches until well combined. Cool on rack before applying frosting. Garnish with mint and berries (optional). Step back, admire your creation and enjoy!
