Editor’s Note

W

e do some pretty cool things here in the Valley, but we take the cake when it comes to food. *ba da dum chh* But in all seriousness, we’re a stones throw away from where most of all our ingredients are being grown, giving us an unheard of high standard of what’s considered ’fresh’. We’re also in one of the most culturally diverse locations in the entire country.. which gives us an entire spectrum of unique flavors and fusions to dive into. When people say that all there is to do here is “Eat and drink,” they’re missing something kind of important… we don’t eat because there’s nothing else to do, we eat because it’s an event to be acknowledged, savored, and appreciated. This issue of the Flyer serves as a bit of tribute. We wanted to throw as many locally owned restaurants and eateries at you as we could, which is why you’re seeing a lot more lists in this edition as opposed to the usual articles and/or spotlights. These lists are a combination of both fan-favorites and us not being able to decide who to cut… there are a ton of fan-favorites out there, more than what we could include, and it made us realize something very important; we need more pages! We’ve got some insanely talented chefs in a myriad of kitchens, and they’re cooking up new things all the time. In fact, I’m sure that on top of the things we know

we couldn’t include this time around, there are even more eateries popping up out of the woodwork ready to rock the socks off its patrons. But we’ll have to catch them next year. Yes. We want to make this a regular thing… an annual thing. This time next year, we’ll plan on adding a few more pages and a few more restaurants that spotlight those amazing cooks, and talk about the special kind of magic our particular food culture has. So here’s where I tell you to get in touch with us and go on and on about how you’re an integral part to the Flyer. (you really are) But if we’re going to make sure we put the spotlight on all the right places, we need to hear from the people… i.e. you. Because realizing that we are missing out on having what could have been a beautiful dessert section is a damn shame. A damn shame. But we forgive you. Just don’t let it happen again, OK?

Mental Health Matters by Cynthia Callaghan

D

ear Flyer readers, just a gentle reminder to you all to email me with your mental health questions. Really. You can’t really shock me. Or bother me. Here is a question that I received from someone

Question: What is the connection between trauma and mental health problems?

Answer: Trauma is the response – emotionally, physically, spiritually, mentally – to something life altering. This might be the experience of war, a car accident, losing someone you love, a disaster, a serious illness or any other of the many horrible, painful, frightening things that can happen in this life. (for me, watching the 11:00 news is so disruptive to my sleep, that I garner my new elsewhere.) PTSD, or post-traumatic stress disorder, is a real thing. And here is a factoid about trauma that is so fascinating to me. Trauma is stored in the brain non-verbally. What that means is that we remember the incident on a ‘sensual’ level. We can recall the smell of something burning or cooking, or the color of the shirt they were wearing, or the tone of their voice, but when we are pressed to remember what actually happened step by step or word by word, we blank out. Words cannot even describe how sad or scary or overwhelming the whole thing was. But our body remembers. And it can and will remember if something happens that reminds us later. If we suffer from traumatic symptoms and we cannot sleep, then a cascade of events happen. Our body and mind are stressed beyond what is healthy. We cannot function. Or cope. And yes, counseling helps. Other things help too. But we must be kind and compassionate with ourselves, too. Someone recently told me, after my mom died, that I would have to find my ‘new normal’ and this helped me immensely to realize that while trauma changes us and changes our brain, we can get back to a more balanced state, but a new and different state. Veggie omelette with country potatoes

N

ights spent drinking will yield mornings desperate for recovery. A true statement since the first batch of mead was discovered, brewed, and enjoyed. And what aids that recovery? Comfort food, lots and lots of comfort food. There are many fine choices which can satiate a morning hangover and The Waffle Shop on the Fig Garden Loop has plenty that are being served up the right way. The country decor inside is as warm and charming as the staff who greeted our party of four at the door. As we take our seats we promptly order coffee, and before I can unroll my silverware from its napkin shroud, it’s quickly brought to the table with a selection of familiar creamers. And it’s not long before we’re all ready to order. Well, most everyone, I was still having a hard time choosing just one thing from their menu. Fortunately, the waitress was not only patient, but helpful because what she said next made my decision really easy, “It’s not listed on our menu, but we do have Chicken and Waffles.” That was it. Chicken and waffles, for me, is the perfect combination of savory and sweet that tantalizes the senses. The rest of our table orders 2 different kinds of omelettes, one is all veggie paired with country potatoes and the other is Mediterranean style with hash browns, both with a side of biscuits and gravy (included in lieu of toast). The remaining member of our table opts for an order of eggs over medium with ham along with hash browns and also a side of biscuits and gravy. And at about 12 - 15 minutes later our food arrives and all the dishes

look spectacular. Everything looks perfectly cooked, proportioned, and fresh. Nothing appears greasy or watery like something prepared from frozen ingredients and it all smells wonderful. I take a bite from the first of the four pieces of fried chicken stacked on top of the giant waffle they arrived with, and to be perfectly honest, it was much better than anything I was excepting. The batter surrounding the chicken was the first thing I noticed, it was light, crisp, and full of flavor from the house-mix of seasoning. And the chicken inside? Hot and juicy. Each bite and each piece was just as good as the last, a sign of excellent preparation and use of simple ingredients. The waffle was crisp, sweet, and moist, making it just as good with or without the syrup and the remarkable thing about this waffle was that it didn’t soak up the syrup like a sponge, as is the case with most waffles, keeping it from becoming soggy. Looking at the other delicious plates at the table, I decided that I have to sample some of them. I snag a few bites of the biscuits and gravy and find that

the perfectly dense biscuits and gravy the biscuits are similar to the waffle, they don’t absorb the gravy in a way that turns them to mush. Instead, they’re dense without being dry, holding shape and flavor with the gravy which is seasoned without being overly peppery. Last, I sample a bite of the country potatoes and they’re excellent. Crisp along the edges, tender in the center, with what tastes like a proprietary blend of salt, cumin, paprika, and garlic seasoning. This was the kind of breakfast that makes nights out on the town worthwhile. It’s a breakfast earned by those who survive the night, whose sirens call them to dance and drink the hours away till the break of day… or some other truly taxing odyssey that can bring a person to the brink of madness. And it made appreciating this meal all the better. The Waffle Shop is located at 4025 W Figarden Dr. in Fresno. The New Ensemble Presents Classic “Hedda Gabler” The New Ensemble’s ambitious production of the classic by Henrik Ibsen opens August 11.

Fresno, Calif. – The New Ensemble (TNE) presents “Hedda Gabler” at the Strasbourg Theater at Fresno Pacific University from August 11 to August 20th, 2017. Written by Henrik Ibsen, “Hedda Gabler” is a classic of 19th century drama filled with passion and desperation, and features an unforgettably flawed, fiery central character. This unique version is adapted by acclaimed American playwright Jon Robin Baitz (“Other Desert Cities”). One of literature’s most complex and compelling anti-heroines, the beautiful and intelligent Hedda (Brooke Aiello) yearns to escape her marriage to a man she finds numbingly dull. Suffocated by the expectations and limitations of the world, she tries to fulfill her aimless desires by manipulating the fates of those around her – no matter how dark the outcome. First produced in 1891, Ibsen’s masterpiece shocked European society; now, 126 years later, it continues to challenge audiences. “The problems people face in Hedda’s world haven’t been left behind in the Victorian era,” says director Heather Parish. “It is a deep dive into issues of wealth, courage, weakness, reputation, rebellion, hopes and dreams, and the effect that all of these have on
