EDITOR’S NOTE

T

he older I get the more I realize that I enjoy drinks that thump hard. And I don’t mean with the alcohol content. This is about flavor, a hearty, robust punch that snatches the breath right out of your lungs and washes your mouth in a bite that reminds you that you still have a pulse. It’s IPAs and whiskey neat. Not just any whiskey, but bourbons and batches brewed in double charred barrels. These are for the days when life does its best to press you into the ground, but it doesn’t succeed because you pushed back with a “Piss Off” stare and a fervent display of the bird. And if you’re really lucky, you’ll have that drink in hand as you bite down on the end of a Robusto cigar. Cigars. Now there’s a topic I wish we left space for in this edition of the Flyer. Maybe next year. The point is, as much as I can tango in the conversation of a good ale or brew, it’s a love I don’t keep as my own. Culturally, we adore the stuff. Whether you’re more of a wine drinker, cocktail connoisseur, or prefer your beers in red

solo cups with a ping pong ball swishing around in it, we damn near can’t get enough. Which is sort of the point of this issue, we know it’s a universal love affair and we’re here to celebrate that. BUT. (yes, this is where I act my age and show some responsibility) Being an adult sucks sometimes, but it happens to suck even more when the lack of foresight ruins a life. If you’re going to drink, do with it class and handle with care. And if it’s one of those times to throw down like a savage and make legendary bad decisions, don’t make driving drunk one of them. Is a $10 Uber ride really that bad? Don’t be THAT guy. Or girl. Be the legend, not the asshat. And while we’re on the subject, stop telling your friends where the DUI Checkpoints are and to ‘watch out’. If they have to ‘watch out’ that means they’re probably drunk. AND driving. You’re not doing anyone any favors except perpetuating bad habits. OK. PSA over. Moral of this note, stay classy you beautiful S.O.B.s Now, bottoms up. Cheers.

I

t’s hot. I mean slow-roasting-inside-anoven-while-wearing-a-fur-coat hot. And to top it off, the humidity is packing a punch so heavy it’s hard enough to knock Mayweather onto the canvas. One of two roll-up doors is halfway open and the only breeze drifting through the place is the muggy breath escaping my nostrils. And as I stand, positively melting like the Wicked Witch of the West, I realize that in spite of it all, I’m smiling. The building of 411 Broadway is ripe with excitement. Two massive Letina tanks flank the far wall, patio tables - waiting to be assembled - stack next to the tanks, and vintage wooden barrels huddle in the middle of the room. Sure, it’s bare-bones now, but come October 27th it’s going to be a full-fledged microbrewery and a longtime dream-come-true for Co-Founder, Joseph Soleno. “I’ve been home brewing since I was a teenager. I got my foot in the door with a local brew pub scrubbing floors, cleaning filters, cleaning the tanks and learning the tricks of the trade,” shares Soleno. The enthusiasm radiates through his smile. In fact, there may not have been single a moment Soleno didn’t grin ear-toear while talking about his new venture. Even more, once I get him talking about the process of brewing he about loses me in the dust of palpable anticipation. “We’re going to focus mainly on sour beers. A lot of that comes from bacteria naturally found in oak and micro-flora in the air so we’ll be using oak vessels for fermentation,” says Soleno. If you had to reread that last paragraph, don’t worry, I’ll help fill in the blanks. Sour beers are a category of brews that express a sour or tart flavor. The brewing process for these types of beers typically uses some of the oldest methods in existence. Modern brewing techniques of today use sterile environments to reduce the risk of unwanted yeast strains. It’s important to most brewers to control every stage of the brewing process, but for Soleno, this is where he wants some variation. Sour beers achieve their unique flavors by allowing wild yeast to develop into the brew, and this is accomplished by utilizing open fermentation methods. Soleno further explains, “The difference between a sour beer and a regular beer people are used to these days is that a regular beer uses a yeast strain called Saccharomyces Cerevisiae. You can actually get different varieties of this [to] produce

different flavors but if you look at it under a microscope, it’s the same type of yeast. What we’ll be using is like a symbiotic type relationship between yeast and bacteria. We’ll be using the typical strain that regular breweries use but we’ll also be using different bacteria like Pediococcus, Lactobacillus, and a wild yeast strain called Brettanomyces. If you can balance all of these bacterias just right, you can come up with some really tasty beers.” The two Letina tanks sitting in 411

However, because the paperwork is just as intensive as the that for the brewery, it’s still another 6 to 9 months in the making. Although part of the original plan for 411 Broadway, they found that the process could hold them in limbo for an additional year before getting the clearance to open. So, instead of making everyone wait, they opted to start with the brewery first and then

sight. “Brewing is a lot of science, but a lot of it is actually art. The ability to express myself through brewing is pretty rewarding; then to have people try it and actually enjoy it, that’s what’s really gratifying,” Soleno shares. After all the years of cutting his teeth on scrubbing floors, cleaning tanks, and brewing for others, he’s ready to step out on his own with the support of his family and his original brews carving the path ahead. Craft beer is a love affair. Between the drinkers and the makers, everyone can agree that the fandom is real. Get ready, because 411 Broadway Ales & Spirits is about to bring yet another unique and original experience to the Central Valley. Broadway Ales & Spirits are actually open top fermenter tanks. The floating lids allow the air to penetrate the brew so that microoxygenation can occur. Letting go of some of the control in the brewing process is what makes open fermentation both exhilarating and unpredictable. Some brewers find the unpredictability risky and traditionally opt for a more predictable outcome. Joseph Soleno isn’t intimidated, on the contrary, he’s been working long and hard for this opportunity. “As soon as I turned 21, I enrolled at UC Davis for their fermentation science program; I learned most of the art there. Afterward, I was picked up by Rogue Ales & Spirits in Oregon where I learned a lot about large-scale brewing. And then I did a stint at Dust Bowl, then went to Sequoia and now, Riley’s [Brewing Co],” he continued. Soleno also has the support of his family who has taken up business with him in 411 Broadway Ales & Spirits. Daniel Soleno, Joseph’s father, will be taking on domestic and international sales. Joseph’s twin brother, Joshua, handles the graphic design and marketing with the help of

incorporate the distillery later. And do you know what they have planned for the distillery? Brace yourself. Absinthe and akvavit. Go big or go home, right? They also have plans for whiskey and non-aged spirits like gin and vodka. But you’ll have to keep in touch with them for the official launch dates on those. The space inside 411 Broadway’s building will be largely dedicated to production due to the positive response they’ve already received. For the sit-down crowd, there is also a 4,000 sq ft space behind the building that will be used to establish a beer garden. The team is launching a Kickstarter campaign in order to raise the last of the funds needed to finish renovations and decor. The campaign will offer rewards like a VIP invite to their soft opening one week before their grand opening. The Kickstarter campaign will be announced on their Facebook page as soon as it launches. Parking has been a common question for the brewery; the team has been working with Fresno PD and the Downtown Fresno Partnership on the topic of safety. If that isn’t a confidence builder, then maybe free parking will be; there isn’t a meter in

LAMBIC: A mixture of typically 2 or more beers, this brew is a Belgian Wheat. Typically brewed in the winter as the summer months produce unfavorable organisms that can spoil the beer. Fermentation occurs in chestnut or oak barrels. Traditionally aged for at least year and upwards to several years. Many Lambics include fruit accents like cherry and provide a dry/cider flavor. Types of Lambics include Gueuze, Mars, Faro, Kriek, and Fruit. FLANDERS: Belgium ale packing a moderate to strong sour taste. This beer favors heartier fruit flavors like raspberry and oranges finished with spice in the red ales while brown produces notes of raisins and plums. Considered the most ‘wine-like’ of all beers. GOSE: German wheat beer with strong salty characteristics due to the use of sea salt and coriander, and also a punchy lemon sourness. Contains low hop bitterness complemented with a dry finish. BERLINER WEISSE: German wheat beer with minimal color which gives its name ‘Berlin White’. Low alcohol content of about 3%. Sour flavor is one of the more subtle out of all the sour beers. AMERICAN WILD ALE: American take on the sour beer profiles, but without any defining rules that guide this brew as a particular style. Sour notes are that of a barnyard and earthy characteristic, which can be strange yet interesting. Most appreciated by those with an acquired taste.

n two years’ time, downtown Fresno’s craft beer scene has experienced momentous growth. Two established and flourishing breweries – Tioga-Sequoia Brewing Co. and Full Circle Brewing Co. – have cemented themselves as not only downtown anchors, but game-changers in the craft beer world. Over the course of the next few months, three new breweries will open up in downtown Fresno – HOP PK, 411 Broadway Spirits & Ales, and Zack’s Brewing Company. These five breweries will form a community focused on advancing

Fresno’s craft beer scene and expanding the newly-formed Brewery District. Encompassing downtown’s distinctive energy; these breweries represent a spirit you’ll find along Fresno’s streets, with flavors you can’t get anywhere else. In March the Downtown Fresno Partnership (DFP) announced the Downtown Fresno Ale Trail as an experience completely unique to downtown Fresno. Designed for locals and visitors alike, the Ale Trail will be comprised of these five craft breweries, and will officially open this fall. So, grab a drinking buddy, maybe

even a hiking buddy, and join in for this authentically Fresno activity. Start by picking up a passport at one of the five breweries; visit each stop on the trail tracking your travels and collecting a stamp. Once you have them all, turn in your passport for a limited-edition Downtown Fresno Ale Trail prize. And, if you can’t wait to test out the trail, catch a sneak peek at the Fulton Street Party, happening October 21. This event will feature a car cruise, exclusive pop-up shops, drink and food specials from Fulton restaurants, live music and

hen it comes to weight loss and fitness goals, the key is consistency. The secret isn’t hidden in a special diet, training regimen, or gym; it’s all about not stopping. It’s very common to see someone start their journey by eating healthy, going to the gym, becoming more active and over 2 months, lose some weight. Then, they stop working out and gain the weight back. Why? The answer is simple; they lacked consistency. Let’s take a deeper look at what went wrong. What’s better? To lose 20 pounds in 2 months going 100 mph in the gym only to gain it back as soon as you stop? Or to go 50 mph for 12 months, lose those 20 pounds or more, and keep them off forever? Sometimes, the desire to achieve that goal is what ends up holding people back. Here’s another important question; how long did it take to put on the weight? Weeks, months, years? How many meals during that time were unhealthy? How many hours were spent sitting down? When those numbers are properly looked at, it’s obvious that it didn’t happen overnight. Expecting the body to change drastically in 8 weeks, and to stay that way, is very unrealistic. The human body can change a lot in 8 weeks, but if it was treated poorly and beaten down, eventually it will say “no more” and revert back to the starting point. So, instead, it’s better to start slowly and to build good habits, making sure to continue building on those good habits over time. If you’re not sure where to start, try this: Drink water instead of soda or juice. If it comes in a sealed bag or sealed box, it isn’t real food, stay away from it. Move daily for 30 minutes and most importantly, eat vegetables with every meal, like grandma always said.

Ingredients: Serves 6 6 Italian sausages, cooked 1 package puff pastry 1 egg, slightly beaten 1/2 cup marinara sauce 1/2 cup grated Parmesan cheese Preparation: Preheat oven to 450 degrees. On a floured board, roll out the puff pastry until 1/6 inch thick. Wrap each sausage in a piece of the puff pastry. Add a few drops of water to the egg. Seal the roll and brush the egg wash over each roll. Spray a cookie rack with non-stick spray. Place rack on a cookie sheet. Place the sausages on the rack and bake in oven for 20 minutes or until the puff pastry is golden brown. Let the sausage cool to room temperature. Slice the sausage into rounds about 1/8 inch thick. Arrange slices on a serving platter. Place a dollop of the marinara on the sausage rounds and sprinkle with Parmesan cheese Heat rounds in the oven until the cheese becomes soft. Whiskey

hiskey, or whisky; depending on where you get your supply, is a spirit whose name is derived from the ancient Gaelic language meaning ‘Water of Life’. This distilled spirit has a complex and intricate history, which is just another way to say boring. Let’s face it if you wanted to read about the history of whiskey you’d Google it in your spare time and probably already have. The same goes for making whiskey and all its various flavors. No, let’s talk about something more important. What whiskey is used for, how it’s classified and what to be aware of when buying it. First and foremost, let’s begin with classifying our whiskey. Whiskey has four distinct categories with the first being dog piss, or Well Whiskey, as it’s called in the common tongue. It is a harsh brew, and by that I mean it has a very unpleasant beginning, middle, and after taste. Typical symptoms of stewing your mouth in this type of yak spit do include but are not limited to, an extremely hot burning

sensation from mouth to the throat to the stomach, scorching sinuses, a strong desire to throw your glass, and an overwhelming need to overthrow your current government. What is this dog piss made of you ask? You mean besides the anguished tears and broken dreams of orphans and widows? It’s made from cheap grain. The absolute cheapest that whiskey makers rank as barely legal to sell. It’s made in massive quantities at less than reputable distilling and bottling facilities which may or may not participate in fair and legal hiring practices and follow few if any, hygiene standards. The distilling, bottling, and labeling of this product fulfill the bare minimum of qualifications to be called whiskey as well as safe enough for consumption. There are high amounts of coloring and artificial flavoring added to make this product look and taste like something you would voluntarily put in your mouth. When should you consume this vile product? Typical events include divorce (if

the settlement didn’t go your way), breakups (bands or relationships) if you have less than $21.67 in your checking account, the death of a friend, family member or pet, and tax time. Where is this brew typically found? First of all, you don’t find it, it finds you. But in rare cases, you may get a glimpse of a bottle at your local bartender’s rail rack or perhaps covered in a thick layer of dust in some run down bodega. The labels and names sometimes change from location to location, but it’s all the same. Consume at your own risk in limited quantities and always with a mixer over ice. Moving up the ladder we have our next sector of whiskey; the standard shelf. This shelf typically holds the more popular brands such as Jack Daniels, Maker’s Mark, Jameson... etc. These are the sturdy ‘StandBy-Me’ distilled spirits. They are made by people who have standards when it comes to purchasing grain, distilling mash, aging, bottling, and packaging. Each of them has cultivated a following from parts of the world by creating a taste that the masses can enjoy. Some of these spirits do still have coloring and flavorings added, but in far fewer amounts than the aforementioned Well Whiskey. Typical events for consumption of the standard shelf whiskey include the first drink of the weekend, second drink of the weekend, game-night with friends, Mondays, anytime you want to drink with dignity and self-respect, and finally, when you want to taste something that isn’t drowning in mixers and ice. Now, climbing up the next rung in our ladder we come to the small batch or craft whiskey brands. Craft whiskey is selective about everything it does from top to bottom. From the grain to distillation to bottling, it has all been carefully crafted to create a distinct experience when consumed. Coloring or artificial flavors are hardly found, if ever, in craft whiskey. These spirits are typically done with as a little processing as possible to give the whiskey a more mellow and natural taste. Because of this, most craft whiskeys are extremely smooth and deliver the taste of alcohol with very little harshness. In fact, any harshness at all is probably there by design. Typical events of consumption include family celebrations, sports team championships, first

dates, finding out that you’re not the baby daddy, promotions, vacations, and finally, whenever you can afford it. Bottles typically range from $35 to $70 for a standard size. Craft whiskey is an investment for those looking to drink for the purpose of flavor and experience. It’s something meant more for the special occasion and over exposure would cause it to lose its gravitas. The best way to experiment in the world of craft whiskey is through whiskey tasting festivals and events where a variety of vendors come with a plethora of samples to try either neat or in cocktails. Lastly, we arrive at the highest shelf; the ultra craft and the limited editions. Ultra craft whiskey is craft whiskey on steroids. Everything is just like craft whiskey only better, but in most cases not by much and certainly not enough for the average person to appreciate or enjoy. You’d have to have a refined pallet that has been developing for years to truly enjoy an ultra craft whiskey. If you drink every day for taste alone and have an overly saturated bank account then you may one day develop a pallet refined enough to appreciate the ultra craft. Until then, leave it to the professionals and rich douche bags. Typical reasons or events for drinking an ultra craft, you’re an elitist prick with a huge ego, divorce (when the settlement goes your way) if you literally love to taste whiskey every day, winning the lottery, winning your personal injury case, retirement, and when someone else bought it. Typical bottles of ultra craft whiskey go for $75 to $125 for standard bottles. I did mention the limited editions as being part of the ultra craft spirits, but the only difference between the two is that one is collectible and the other is not. I’ve sampled a few collectible bottles of whiskey and to be honest, I found them to be less than or equal to many craft spirits. In my opinion, they aren’t worth what they’re being sold for. One final note for you, my reader, and that is if any of you contend that Fireball Whiskey is something truly great I would urge you to find professional help and then call your parents. Tell them you’re sorry, for everything. Now if you excuse me this bottle of Woodford Reserve needs some tending to.

Fresno Cactus & Succulent Society Club Show & Sale Announced for September By Carole Grosch

nyone who likes unusual plants will want to attend the Fresno Cactus and Succulent Society (FC&SS) annual Show & Sale the weekend of Sept. 9 & 10, 2017. It will be held at the Clovis Veterans Memorial District (CVMD), 808 Fourth Street in Clovis. Hours for the event are Saturday, 9 am-6 pm and Sunday, 9 am-4 pm. For the first time, there will be a judging of show plants. This is a very popular event where visitors have the opportunity to see some strange and exotic-looking plants. Admission is free, boxes are provided for purchases and club members are eager to provide assistance, answer questions and give growing tips and advice. “We’re very excited to hold our event in this superb venue,” says club president, Sue Haffner. “Our club members

have been working hard to present a great judged show for the public, as well as a comprehensive plant sale. This will be the largest cactus and succulent show held in this area since our club hosted the Northern California show way back in 1984.” There will be plants familiar to local gardeners as well as very rare plants only obtained from specialty dealers. very unusual quality plants will be on display and for sale as well as an exhibition of show plants. There is something for both the novice and the collector to see, to buy and to learn. Twelve vendors will be offering plants and pots for sale. Payment in the form of cash, credit or check will be accepted; all growing advice is free. “I love the sale,” says plant lover, Laura Watkins. “The prices are a bargain and I always see something new. I’ve learned a lot. Succulents are my favorite… it’s hard to choose!” Because each vendor brings a large plant supply, the displays are constantly being replenished, guarantying an excellent selection throughout the entire weekend. Club members will help guests carry purchases to their vehicles. The purpose of the show is threefold: To advance the knowledge of cacti and succulents, their habitat, and role in nature; to further the appreciation of these fascinating and unique plants through display to members and the general public; to produce better growers and better plants by identifying and recognizing superior plants. Guest judges are Barbara Coelho, Rob Skillin, Nick Deinhart, and David Tufenkian. Recognized as experienced growers, they have taken instruction in

judging through Cactus & Succulent Society of America (CSSA), the national organization with which FC&SS is affiliated. Judges work in teams of two. One team evaluates cacti, the other succulents. Judging will begin at 8 am Saturday, during which time the show room will be closed. Visitors will see the show plants, along with a tag giving the plant name and the exhibitor’s name and any ribbon or award that has been won. In the Novice and Advanced classes, plants are judged against other plants in the same class, which means that there is always a first place ribbon. In the Open class, which will be for professional vendors only, plants are judged against perfection, which means that a first place ribbon may not be awarded. FC&SS Club meetings are held on the first Thursday of each month at the Deaf and Hard of Hearing Service Center, 5340 North Fresno Street, Fresno.
