EDITOR’S NOTE I rarely write in first-person, save for this, of course. But it seems like in the age of blogging and social media, first-person perspectives are just about all we see – even aspiring fiction writers have gravitated towards using it. There’s little variety in storytelling unless it’s news, and the written platform is saturated with the first-person perspective. Not that it’s a bad thing, but some variety is nice. So, I always hesitate when I’m presented with the task of writing in that voice. However, this issue called for two reviews of sorts – how could I refuse? Reviews are a funny thing because there’s so much that never makes it to the finished product. I’m limited to a word count that forces me to select only the most essential pieces of my thoughts which can be a grueling process. We, in the media business, call it killing our babies. Extreme? Sure. But that’s precisely what it feels like we’re doing, we have to chop these parts of ourselves from the final version that eventually makes it out to the world – to you, the audience – this thing we slaved over to produce with all the sheer artistry we personally possess. It sucks. Like the whiskey tasting, for example. I had to completely cut out a whole section about how tasting whiskey is akin to developing a palate for coffee or beer … and how Mike, the distiller, had, what I felt, a fun phrase for calling people out on it. He was sliding these shots my way over the bar, all different styles, and strengths, and I was mulling in my brain over

the bite of each drink as I emptied each tiny, plastic cup. I slammed back the bourbon, and Mike laughed in that knowing way – like he had just unearthed an inside joke I should already know, but don’t. He says, “You’re a degenerate drinker, aren’t you? You’ve definitely crossed over.” It was his way of saying that I wasn’t a beginner, that I was looking for punch and depth. That I wasn’t drinking to get drunk – I was drinking for an experience. If you love coffee or beer, you know it all starts with “Ew” as an amateur, then with coffee, you start stupid-sweet with extra cream, and beer… well, it’s all commercial favorites like Bud Light or Coors or anything else a step above tap water. Over time, you look for more out of your beverage, your coffees get darker and more complex, your beers get deeper and more bitter. You’re looking for an experience. Some of us move on to include wine or to become connoisseurs of one specific style of beer, my evolution was whiskey. Reviews are damn near impossible to tell outside the first-person perspective, at least for me, for it’s my filter that all these impressions are being transferred through. With that in mind, when you read these articles of mine, remember that I merely found the first-person perspective the best possible voice with which to adequately express these experiences. And not because I love the sound of my own opinion but out of the hope that it helps paint a picture you’re inspired to see for yourself.

Craft distillery puts Oakhurst in every batch.

avender vodka. Wheat whiskey with muddled cherry and orange, orange bitters, jalapeno syrup, and a dash of club soda dubbed the ‘Firefall Old Fashioned.’ Original menu items created from and for Oakhurst Spirits. They’re on a mission to create rare and one-of-a-kind flavors because flavors are how a craft distiller is going to grab your attention - to give you something you’ve never seen before. They have to if they plan to stand out and thrive. “There was a big hole in the market, so when craft brewers came out, they jumped into that hole right away whereas, with whiskey, there’s not. A [craft distiller] has to work to bring something unique,” explains Mike Benbrook, Owner, and Operator of Oakhurst Spirits. And unique is the word of the day, every day. Benbrook takes to open fermentation, local grains, and barrel varieties during the aging process to create individual, distinct flavors for each of his spirits. But what gives patrons something they won’t find anywhere else is the fact that every drop of Benbrook’s spirits has a taste of Oakhurst in it, literally. Making any sort of alcoholic beverage all starts with a mash. Mash is the groundup grain(s) of choice made by the distiller and is the first step in designing the flavor for whatever spirit the distiller is making; barleys for single malts, corn or wheat for bourbons, and rye for, well, ryes. Fermentation is the next step; the added yeast metabolizes sugars in the mashed grain (wort) and converts them into the alcohol we’re all more famil-

iar with. There are two ways to handle the fermentation – open top or closed. In other words, total control over the flavor or letting nature do its thing. Benbrook throws down some education for us on this topic, “In the initial fermentation the yeast will become the dominant yeast inside the whiskey but later on, you’ll get bacteria or wild yeast. What they do is give different esters to the alcohol – so if you get a butterscotch ester or strawberry or maple – those are all from wild yeast or bacteria. In beer or wine, the mash is your product, but in whiskey, it’s the alcohol from the distilling process. What we have to do is get the esters into the alcohol – it literally chemically changes the alcohol to give you the flavors. Open fermentation is an invitation to whatever is floating around in the air to come and join the party.” Taking a sip from any of Benbrook’s creations means you’ll also be tasting floral notes purely and distinctly Oakhurst in nature.

Benbrook pulled no punches and was pouring samples of his spirits for me to taste at 10:30 in the morning. To be fair, as a whiskey fan, he wasn’t exactly twisting my arm either. We started light with the vodka and gin. | FRESNOFLYER.COM |

Lavender Vodka

Clear Whiskey – 95 proof

Usually, when I taste vodka I often feel I could light my breath on fire – that sadistic effervescent rubbing alcohol aroma burns like a thousand suns. But that didn’t happen here. It was light and airy, certainly not what I’d usually expect from drinking vodka neat. The lavender was an accent that swept in and kissed the palate before disappearing altogether. Fun fact: the lavender is sourced locally from a woman affectionately known as ‘The Lavender Lady.’ Double fun fact: the ‘Gingery Lavender Gimlet’ cocktail at Oakhurst Spirits is one of their more popular drinks. It’s made with the house lavender vodka splashed with Rose’s sweetened lime juice and ginger syrup, club soda, and a garnish of candied ginger.

It’s clear because it was pulled straight from the still, skipping the barrel aging process. All whiskey is, by default, clear and earns its color from the barrel. Benbrook keeps a few bottles of clear whiskey around, and it’s usually of the variety he’s making at the time – for this tasting, it was rye. The clear rye didn’t clamber out of the glass demanding my attention with its aroma. It was airy with a full-bodied taste that was sweeter than I expected and finished with the trademark floral note. “Initially, when I started, all of my products were clear, but over time I acquired more aging [with the whiskey sitting in barrels] but people like it, I actually have guys who come in and buy a bottle,” says Benbrook.

Gin I’m not a gin expert or connoisseur, and my experience with gin is relatively limited. All of what I can remember about the drink is that it usually tastes like a blended up pine tree in a glass. Benbrook’s gin is more sweet in flavor than it is pine and more bay leaves than juniper. Like the vodka, it doesn’t beat you over the head to tell you what it is. The flavors are more aroma than punch and full of layers, making it a perfect base for cocktails which is precisely what gin is made for.

Rye – 85 proof Next up was the same rye as the batch the clear whiskey was pulled from but aged one year and finished in a rum barrel. It carried the same punch as its clear counterpart but smelled closer to a rum than a whiskey – a first for me. The finish went down without a fight, nice and smooth.

Q

uestion: What’s the first thing that comes to mind when someone mentions Beer? You know, that refreshing beverage folks have been brewing and drinking for centuries. Most of us would probably just think about the social aspects of it, hanging out with friends, enjoying a brew at a ball game, relaxing after work, or just having a cold one on a hot day. For the folks who make it, however, beer is a way of life. You might even say it is their life. These are the people who have invested significant portions of their lives – and fortunes – into brewing beer. On the surface, they look just like average folks. But let the word ‘beer’ slip into the conversation and watch the transformation. Their eyes get a little wider, and their voice rises just a bit as they talk almost lustfully about hops and yeast and temperatures, and utter strange words like Hefeweizen and Kolsch and Hazy IPA. That’s when you know you are in the presence of that unique spirit, “The Brewer.” They are a special breed. They’re also artists and craftsmen spending countless hours agonizing over their creations and seeing to the smallest detail in order to accomplish their mission – of creating delicious beer for the rest of us to enjoy. To get a sense of what motivates these possessed artisans we visited three small, local breweries: The Pine & Palms, Tactical Ops, and Zone 9. They each offered an individual approach to their craft, but each also demonstrated their shared passion – the love of brewing beer!

Pine & Palm owner Roger Noguera does it all

Chief cook and bottle washer are appropriate ways to describe Roger Noguera, owner, operator and brewmaster at the Pine & Palm Brewery. This graduate from Fresno State’s Entrepreneur Program does it all with pride, panache, and an artist’s passion as he brews, cleans, tends bar and balances the books at his Fresno brewery. His typical week is 6 ½ day marathon, beginning Monday & Tuesday with paperwork and servicing sales accounts. Wednesday is about getting everything ready for the week and running the bar at night. Thursday he brews. Fridays he cleans the tanks then runs the bar again that night. Saturday he’s back to the bar; and finally, on Sunday, he pops in to check on things, then goes back to bed. All for the love of beer!

His journey into professional brewing began with the simple desire to drink beer. “My buddy got into it in college, and he got me into it after graduation,” he said. ‘Then we just did it. It was fun to make our own stuff up and drink way too much. It was a good summertime activity, hang out by the pool, drink beer and swim.” Things might have gone on this way if economics and that entrepreneurial spirit hadn’t kicked in. They home brewed until they decided that it was too expensive, “We did the math, and we saw that if we could do 30-gallon batches and we could sell three kegs to accounts, then we could get free beer for ourselves.” That idea evaporated when Fresno County told him he couldn’t have a home-based brewery. So he did the entrepreneur thing again, ran the numbers and decided to launch his own enterprise. “I looked into the used market on beer equipment, and it holds 95% of its value so. I figured big capital is secured. If I had to sell it, I could sell it for basically what I paid for it and be OK.” With that, he found a space, bought the equipment and did most of the installation himself. “Yeah, I’m kinda handy,” he says.

He now brews about 200 gallons a week for both in-house and distribution customers. He has a few regular rotating beers, like the blond ale, the porter, and the 69 double IPA (a big favorite). But he mainly brews what he calls 1-offs. “I’m always trying something new,” he says. “I Like making the kind of beer that I like to drink – the styles that I want, playing with flavors that I want, always trying to do something slightly new. Pushing myself to do new beers that are different and better than the last ones that I’ve done before.” Roger also experiments with different aging technics. He recently put up an imperial stout in bourbon barrels, so the beer will pick up the oak and whiskey flavors and build up the depth. “It’s much more mellowing,” he says. “It blends the flavors, the chocolates come out more, and the beer becomes more harmonious with itself.” All of this blending and brewing and searching for unique flavors can be directly attributed to the rising interest in craft beers. “People just want better beer,” he says. “Just like they started wanting better food.” To accommodate this demand and se-

Single Malt – 89 proof This batch started its journey in a rye barrel, but Benbrook didn’t like the direction the flavor was going so he moved it to a wheat barrel which “flattened” the overall taste and eventually moved it to a brandy barrel for at least 3 months. It “rounded it out and finished it off nicely.” The single malt was a full body flavor, rocketing things up a notch.

Bourbon – 101 proof Ah, the bourbon. My favorite. The 101 proof is a visible indication of the muscle in this whiskey and to me, is like drinking my favorite coffee black. It’s unapologetic, full of kick and profound in its wood-like notes. “[This is] a 4-grain. One of the things I don’t really like about big corn bourbons is that they have kind of an oily finish to them and this doesn’t, this has more of a floral finish,” explains Benbrook.

Oakhurst Spirits products are found in the local market, typically at bars and restaurants: The Vineyard Restaurant and Bar in Madera, Oakhurst Grill, the Narrow Gauge Inn in Fish Camp, the Oak Room and the Golden Chain Theatre. Unfortunately, us Fresnans and South Valley folk have to wait a little while longer to get Benbrook’s creations in our neighborhoods. Getting a bottle means getting it from the source, as there aren’t any retail options to purchase from – it may be a bit of a drive, but you’ll get to meet the distiller yourself as you partake in a tasting. “Everything is made here, bottled here, I have a mill, I grind my own grain – plus, people get to talk to the distiller,” Benbrook adds. Tastings occur on the regular, but the once-a-month events bring an entirely different experience. Local wineries will pour some wine, food trucks park out front, and live music takes place in the garden-like patio. We try to keep our beers moving. A beer should last no more than a month. That keeps it fresh. Keeps it new.” You might think that someone who is immersed in beer almost 24x7 would look for another beverage to relax with after work - maybe someone else, but not Roger. “When everyone leaves, and I lock the door, I pour myself a beer - that signifies the end of my day,” he says, then adds as an afterthought, “Oh, and then there’s the other one when I get home on my couch. That’s when it’s finally over. “

Just fresh grains to get that biscuity, malty flavor from the beer.” Which has led to some interesting experiments, especially with the stouts. “Our stouts are kind of the backbone here,” says Brett. “We just did a toasted coconut stout – a bourbon, vanilla, maple syrup stout - a peanut butter chocolate stout and a regular oatmeal stout – they’re all based on The Basher – that’s the basic oatmeal stout. “Basher” by the way was the name of the C-130 aircraft Carlos was assigned to in Iraq. “When they were looking for a name for the stout, I told them about my ‘Basher,’ and that’s how it got its name,“ he said. The other beers at Tactical Ops also have military handles. There’s Valor IPA, Bunker Brown, Boot Camp Pale Ale, Recon Red, and the Blonde Bomber, dedicated to the B-17 crews of WWII. It’s all part of that effort to honor those who served. “We do have a lot of vets that come in,” says Carlos. “From Vietnam to my generation. It might be like therapy. They know we’re all vets that work here, so they’re comfortable. We tell stories back and forth. It’s a great little vibe.” But it’s not just the vets that are enjoying the beers at Tactical Ops. “People from all over the world are finding us,” says Brett. “They see it’s a brewery and want to try it out.” Bottom line – it’s a social thing. “People just want to come in, relax and have some fun,” says Carlos. “That’s what beer is all about.”

It’s a family thing That’s how the crew at Zone 9 Brewing Company in Clovis looks at it. The four owners Brad Edmonds, Dave Maur, Sean Wolfe, and Richard Benevedes have been making beer together since 2009 and have brought their families along for the ride. What began as a modest brewing-in-the-garage pastime has now blossomed into a full-on business run by the four men and their wives. “We all do something here,” says Co-Owner Sean Wolfe. “It’s a very collaborative effort.” On any given day clients can expect to see owners and wives on hand to keep the business running – in their spare time. “We all have full-time jobs. The wives all have full-time jobs. We all do something here on top of what we all do every day,” he says The tradition began in 2009 when they brewed their first beer in Brad’s garage. The routine started with the guys meeting lunch and a couple of beers at Sequoia Brewing Company, followed by a trip to buy supplies (and a couple of cigars), then back to the garage to start brewing. “We’d brew all day, and the families would come over, and we’d BBQ, “ said Wolfe. “That was our fun.

people know there are several breweries in the area, they’re more inclined to go to that area and skip around and try them all.” To further emphasize the point, he described the cooperative nature of local brewers. “Any time we get the chance we collaborate. We want to work together. When other brewers come in, we’re always talking about brewing. We talk about business. We talk about recipes, about the process. It’s a very friendly environment.” There may be plans for growth in the future, but at this point, the Zone 9 families are grateful they’re still getting to do what they love. “We are very thankful for our customers and our distribution partners that have helped us with our success here.” Says Wolfe. “Without them we’re nothing. Without the great beer, we’re nothing. Festival-goers were invited to peruse 3,000 pieces of vintage gear and exchanged their own clothes for a new look. The swapped pieces were then washed in LG washers and dryers onsite and put back into the closet for another attendee to choose. Feel Good Vibes Fresno-based band, The Morning Drive, brings the funk, blues, and rock to get you dancing. By Lisa Talley | lisa@fresnoflyer.com

A

horn section. These guys have a horn section and a song with a saxophone/ guitar battle as its solo – who does that anymore? The Morning Drive, that’s who. It’s Saturday night, and Fulton 55 is buzzing with energy. I arrive somewhere around 9 o clock - right when the opener takes the stage - with my camera, and notebook in tow expecting to find a table to hunker down and jot down my thoughts during the Fresnobased group’s performance. Foolish. I come around the entrance - that little cattle-maze hallway the venue built to keep fans from overwhelming the ticket counter - and find the crowd backed up all the way to the bar. At 9 o clock. For the opener. Forgive me, but Fresno is the city of lastminute people, in my experience, local shows typically won’t know the full turnout until at least 10:30. But I digress. In an email sent to me from Singer, Daniel Silveira, he charmingly wrote how The Morning Drive’s music appealed to even his 90-year-old grandmother who cut a rug right at the front of the stage during their

CD release party. It’s one thing to read about it, it’s another to see it in person. The approachability is undeniable, they have a universal sound, it was evident – there were hipsters and mature professionals, a few metal-heads, and dare I say, grandparents relaxing with a glass of wine at a back table. It was a broad spectrum audience with one thing in common; the music. Funk. Blues-rock. Folk. It’s hard to imagine they left anyone out with their buffet-style display of writing prowess which included trombones, a violin, trumpet, and yes, the saxophone. And there was no mistaking the amount of fun they were all having – the energy, the enthusiasm was palpable. They performed like a cohesive unit all riding the same wave. Guitarist, Alexander Stanley III, plays like a jazz musician – laying down complex lines effortlessly. Bassist, Brian Tritch, handles his bass as if he’s on the edge of some math metal breakout, but then grooves counter melodies like a true funk artist.

Their album, Another Song About [Your Name], does as great a job in capturing the live energy as a studio recording can. A standard studio session for a local band typically means one musician in a room at a time, a metronome ticking away the tempo over a pre-recorded track of the instruments recorded before them in a pair of headphones. The separation often changes the vibe and energy of the song. The Morning Drive opted for something different. “We [chose] a live recording method for the major instruments; drums, electric guitars, bass guitar, and saxophone were all tracked simultaneously in one large, open sound-treated recording room at JSM Studios in Sanger. We then individually tracked the more sensitive instruments such as vocals, violin, cello, and mandolin,” shared Silveira about their recording process. The real magic will always remain in the live performance for any band who cuts their teeth on the club circuit. And lucky for

fans, they really can take a piece of that magic home with them in The Morning Drive’s album thanks to the option of recording the foundation of the songs together in one room. Another Song About [Your Name] opens with “This Is How I Fight,” which serves as a sort of introduction to the album with its long intro and spoken-word style open eventually finishing with a rock presence. However, if you were looking for a more straightforward and proper introduction to this band, the recommendation (in this order) would be “The Ones That Got Away,” “She Wants The Sax,” and “Bide Your Time.” “The Ones That Got Away,” has all the funk. It’s upbeat, fun, and Silveira tackles vocals with some of that 90s hip hop nostalgia. This song is the invitation that not only gets show-goers out on to the dance floor but to stay there. “She Wants The Sax” - the walking bass line as the open is irresistible. It’s so much ‘70s soul jazz. There is undeniable skill, absolutely, but the attitude at which they approach this song is what steals the show. And c’mon, that sax solo battle with the guitar? *melt* “Bide Your Time” is a personal favorite. There are a few other songs that could arguably take this slot, but it was chosen based on its languid blues approach. The beginning feels somewhat like The Black Crowes during the early 90s and then shifts into something like Los Lonely Boys – leaving behind the trappings of a standard A/B song structure. It’s a little bit of a wait, as their next big local show won’t be until October 20 at the Bitwise South Stadium in downtown Fresno.
