SPICE OF LIFE Sauces, rubs, spices and Strib Wings. By: Lisa Talley

‘Made with Love’. It’s a sentiment that floats around anything made of rich quality. Sometimes it’s a carefully knitted sweater, other times it’s a unique piece of solid oak furniture, but if you’re like Stephanie Stribling - owner of Strib Wings - it’s about the food coming right out of your kitchen. Strib Wings is the label in which Stephanie creates a myriad of flavors for unique and original BBQ sauces, rubs and even mustards… but with a delectable signature kick. It was her love of spice that gave her love of cooking the jump to start Strib Wings back in 2007. The idea to start her own brand of sauces and rubs came from one of life’s proverbial shutting of a door. Stephanie had originally been working on her career with the Fresno Police Department when the idea was born. She had been injured on the job to such a degree that it prevented her from being able to go back. It would have been no surprise that hearing this sort of news for anyone would be a devastating blow, but Stephanie decided to look for a window instead. “When life shuts a door, it opens a window.” She turned to her next love outside of law enforcement, which was cooking and began stirring things up. Stephanie’s talent in the kitchen proved to be more substantial than she imagined. Which was no doubt inherited from her equally talented mother. Her first hot sauce, ‘Smoke ‘N Blazes’ was a smash hit with her family and friends, and this inspired her to take things a step further. With encouragement and a little help, Strib Wings was born. Now Stephanie sells her numerous concoctions online and ships them to various parts of the world. “It’s always exciting to see where we will ship to next!” The 2 chili peppers in the Strib Wings logo is a telling sign that heat and spice plays a big role in many of Stephanie’s creations. But lucky for those who don’t have the necessary,

semi-masochistic pallets to withstand the spiciest of spicy flavors, Strib Wings is equipped with plenty of non-spice varieties. “We have a nice range of flavors from great flavor with no spice, to a ‘rip-your-tongueoff’ heat with flavor,” says Stephanie about her range of products. “For those that are not into the heat factor, I would recommend our ‘Smoke House Sweet’ BBQ Sauce. This is a wonderful blend of brown sugar and molasses, making it sticky sweet. It is a thick and heavy sauce that tastes like candy. Those that know my products refer to it as “your wimpy sauce” when they can’t remember the name.” Not to say that you’re a wimp simply because you’re not a connoisseur of spicy food, but being willing to subject yourself to intense heat takes a certain level fearlessness the hotter you go. Outside of the BBQ sauces, there are plenty of rubs that don’t contain any spicy heat at all. “[The] Monterey Seafood Rub (which surprisingly is Fantastic on ribs!), X~Treme Garlic, Cocoa Pork Rub and Kickin’ Chicken are just a few that can tickle the taste buds without burning the tongue,” Stephanie offers. But what if you’re looking for a really versatile sauce that also holds a little kick? Stephanie has the perfect solution. “Our Raspberry Chipotle Sauce is a BBQ sauce, it is full of flavor and has a small amount of heat. The blend is perfect to use as a BBQ sauce for chicken, pork or fish or use it as a dipping sauce for egg-rolls. I like it on vanilla ice cream, salads or in my brownies.” Now, for the spice lovers… “Up the rung of heat brings us to the ‘Kona Coast Bourbon’ and ‘Espresso Sauce’. It’s an onion based sauce with bourbon, espresso and a jalapeño kick. It is not super hot, but has a wonderful and unique flavor. This is our least sweet BBQ sauce,” says Stephanie. In 2009 Strib Wings won the Hot Pepper Award for their

sauce ‘Too Hot BBQ’. It’s a deceiving little sauce that pulls you in with its sweet brown sugar and molasses taste, but then lays down the law on your taste buds with a chipotle and ghost pepper combination. It would probably be best to start small and work your way up. Or, go big or go home. Your call. Strib Wings loves spicy food, so of course they have something for even the staunchest of fans. Stephanie gives an overview of some of her hottest sauces to date, “If you REALLY want to make your nose run, get some hiccups and the like, cleanse your pallet with either our ‘Triple Death Hot Sauce’ (it comes with a skeleton on the bottle for added caution) This Gourmet mustards by Strib Wings sauce has a cayenne base with chipotle, habanero and ghost pepper layering. It kicks out the gate, then smolders into a nice glow. This sauce’s only rival would be our No Joke Jolokia Sauce. This is currently our hottest sauce made up of pure ghost peppers with only a small amount of honey, onion and garlic to round the flavors.” Like any good cook, these recipes were derived from the tried and true process of trial and error. Or in Stephanie’s case, kitchen warfare in the battle of the spices. The 2 chili peppers in the Strib Wings logo were not only to signify the Rubs, seasonings & ‘I’m A Jerk’ sauce element of spice in her recipes, but of the team work of her then husband and herself. The love of cooking and sharing good food with others was mutual. Together, they sought out unique combinations to make great tasting, and spicy foods… it also happened to turn into a bit of friendly competition in the kitchen. “I think the competition made us both better. Some things we made were just ridiculous, but we tried to eat [the dishes] anyway so as not to let the other think we failed. One time, the “creation” was just beyond what either of us could handle. We laughed so hard we cried, our noses were running and we were trying not to wipe our eyes with pepper oiled hands,” shares Stephanie. These days, the Strib Wing team is made up of Stephanie and her 10yr old son as she passes down the same love of cooking her own mother shared with her. As Stephanie continues to create, he’s right next to her cooking, experimenting, and learning the business. Currently, Stephanie is working on securing a food truck so that she can sell her products, and great foods that go with them, locally and more often. Straight From the Farm to Your Kitchen With Abundant Harvest Organics

KINGSBURG, CA - It is not difficult to see the surrounding land, but it’s often overlooked that food is grown on either side of the highways and freeways driven every day. Many Fresno residents have fruits and vegetables as neighbors and others live only a few miles away from them; but at least once a week everyone still drives to a store to buy their groceries. What if you knew who grew the potatoes or apples you bought at The store? Well, Dennis Rosales has brought produce from surrounding organic farms together in one location for residents of Fresno and Clovis to pick up. Dennis has been providing this service for the last seven years, and recently has changed his location to Kristina’s Natural Ranch Market. Abundant Harvest Organics (AHO) in Kingsburg is where the produce, from four-tosix farmers, is gathered, boxed, and delivered weekly to Dennis. AHO is a farm-share delivery service and each week subscribers place an order of produce and within days that same produce is picked from a certifed organic farm and delivered to their city. Alongside their weekly delivery box, subscribers can now add-on bulk produce, ready-made meals and desserts, dried or fresh herbs, raw milk, pastured eggs, and many more organic products. It is truly a one-stop shop for

organic grocery shopping. Abundant Harvest is run by the Peterson Family who wanted to provide nutritional food free of pesticides and is designed for consumers to know exactly where their food was coming from. For this reason every box comes with a newsletter providing the names and emails of the farmers with the produce they provided for the weekly share. Te Peterson Family also provides weekly insight to Uncle Vern’s life, a character Vernon created to share his experiences. His stories go beyond his farm experience and also venture to offer encouragement and at times religious guidance. Vernon Peterson, also known as “Uncle Vern” by his subscribers, is Owner of Abundant Harvest Organics. He and Dennis met in 2000 at a church in Kingsburg. A year before launching AHO, Vernon explained his concept to Dennis and Dennis saw it as an opportunity to help family farmers with whom he attended church. Soon after getting started, Dennis was one of the very frst Community Hosts with only 25+ subscribers. Te numbers kept growing until he reached his current 40+ subscribers. Each week the box is built by Vernon’s wife Carol and Vernon’s son Erik to provide a variety of fruits, veggies, and herbs. From there

the produce is picked, packed and sent out to subscribers, all within days of hanging on vines, trees, or dug in dirt. “Tere’s a lot that goes into making Abundant Harvest Organics work, but for us it’s the relationships that matter; the community of people we’re informing about a farmer’s life and where their food is coming from; with our Abundant Harvest Kitchen it’s about providing delicious organic food for busy people. I feel like we’re all connected by what we serve at our dinner table,” says Heather Mondello. Dennis believed in this tough market being more convenient would allow him to host more people so he bought a truck and delivered to various communities. However, in the last few months, he’s realized he could no longer keep traveling around and began looking for a location where people would come pick up their produce. As time has it, Kristina’s Natural Ranch Market was looking to have some of Abundant Harvest’s product in it’s store. In no time the store became the new drop off site, though Dennis adds, “[He is] currently in discussions with several other businesses where [he] can make deliveries available to a larger portion of Fresno/Clovis subscribers. One ideal location would be Guliano’s Fruits, Nuts & Veggies so people in Oakhurst may have a convenient place to shop us.” Abundant Harvest Organics also has Abundant Harvest Kitchen. 3 Simple No-Bake Brunch Hacks

(BPT) - In the heat of summer, a homemade brunch can seem like a daunting task, but don’t let that stop you from entertaining. Everything from scrambled eggs to pancakes to coffee cake require a hot oven or stove and can weigh heavy in your stomach on a hot day. When the last thing you want to do is turn on the oven or eat a heavy meal, follow these easy no-bake brunch hacks to keep cool and have a delicious brunch on the table all summer long.

Made-to-order smoothies Summer calls for fresh, seasonal produce whizzed into a chilled smoothie. Choose a few recipes ahead of time and give guests the option to select from the ingredients available. For a more filling smoothie, add protein powder, oats or peanut butter. Hint: Skip the tedious task of cleaning the blender between each smoothie by borrowing blenders from friends and family so each recipe has its own. Plus, multiple blenders allow the option to blend more than one smoothie at a time.

Bagel bar with toppings Guests will love this hands-on approach to brunch, and hosts will love this hands-off approach to entertaining. Simply plate a variety of bagels and fill the table with cream cheese and pre-sliced toppings like fruits, veggies and herbs. Hint: Trade regular baking cream cheese for something you can feel good about sharing with your family and guests: Arla cream

The laugh-out loud fall to the floor comedy variety show that has featured local standup comedians such as Danny Minch, Kevin Tienken, Chris Garcia, Johnny Pineda, Richard Lee, Ricardo Duran, and Eric Trevon Chattom is on its way back to you television. The comedy variety show has also featured musical performances by some of the Central Valley’s most talented musicians including Geoff Thurman Band, 2 Love or 2 Hate, Acoustic Highway, The Jacktones, Heavyfoot, Eve’s Burden, Outside the Wire, Anglia Greenwood and Larry Keyes Band. Sick Wit It has also had the privilege to showcase local actors such as Ryan Hanson, Brandon Mallard, Derek Burns, Chris Perez, Geoff Thurman, Eric Chattom, Simone Weber, and the multitalented Sick Wit It crew.
