Tis the Season of Resolutions! Often when we make New Year’s Resolutions, they revolve around our health. We resolve to make healthier food choices, to exercise regularly, or to learn to manage our stress. We start with great intentions, but somewhere around March or April, our resolve starts to fade and we lose track of the intentions and begin to fall back into old habits. This year, with a few changes, you will be able to keep those resolutions all year long. These tips will help you make 2016 your healthiest yet!
MAKE A WEEKLY MEAL PLAN AND SHOPPING LIST.
In my house, Sundays are our food preparation days. We plan our meals for the week, design our shopping list, pick up only what is on the list, and prepare foods. By planning your meals and creating your
shopping list, you will be less likely to purchase the processed, unhealthy foods at the grocery store that we find so tempting when walking around aimlessly. Bonus tip: Try to stick to the perimeter of the grocery store when shopping for your groceries—that’s where most of the healthy and less processed foods are found!

You can find healthy swaps for your favorite restaurant recipes, healthy recipes using your favorite foods, or search for special dietary requirements all in one place! By trying a new healthy recipe each week, you’ll be adding new flavors and options for your meals, so you don’t get bored with the “same, old chicken” recipes anymore! This will help keep you interested in what you are eating and more likely to continue your healthy eating all year round.
SCHEDULE EXERCISE ON YOUR CALENDAR.
Exercise plays an important role in reaching your health and fitness goals. By scheduling exercise on your calendar, it is much easier for you to see where exercise fits in and keep the appointment. Find what time of day is better for you: are you a morning exerciser, a lunch-break exerciser or after work exerciser? Each person is different, and as long as the time works for you and you stay consistent, exercising any time of day is the “best” time for you! It does not have to be hours of exercise: 30 minutes per day, most days of the week is enough to see health benefits in most people.
TRY A NEW EXERCISE EACH MONTH.
Adding variety to your exercise (much like your meal planning) can be a great way to stay motivated in your routine. Trying a new exercise or type of exercise each month will benefit you in several ways. The new exercise can challenge your body in new ways so you will see better and quicker results. This can also keep you interested in your exercise program so you won’t get bored. Bonus tip: Track your results this year. Tracking how much your body and fitness level have changed will keep you wanting more! Have a personal trainer at your local gym complete your body fat and circumference measurements about once per month to make sure you are still on track to reach your goals.

When we tell others about our health and fitness goals, we are more likely to stick with it because we know others are expecting us to. This can definitely help keep you motivated when you want to slack off! You can even challenge your family or friends to a friendly competition to see who can stay the most consistent with their healthy lifestyle. Exercise and health is always more fun when we share it with others.

Henderson’s curiosity in executive protection started in 1984 with an interest in law enforcement through The Boy Scouts of America’s explorer program, turned into a career as an officer and detective assigned to homicide and undercover narcotics. It was during this time Henderson met numerous government protection agents who suggested he go into the private sector. Their experiences gave him the idea of starting up his own high-end protective services company. He traveled to many places throughout the world to attend special-security training schools. He returned to St. Louis equipped with the necessary security expertise, but couldn’t obtain a business loan or clients. With steady perseverance he started networking for contacts across the country and finally was offered his first security job –working in countries like South America & Asia! He’d only just begun.
Fast forward twenty years. Today St. Louis based PRA has grown to become a highly respected private protection agency. PRA’s clients range from high net worth individuals and families to highpowered executives, authors, stalker victims, athletes, entertainers and political figures. who they are and that they are with a person who could be of interest. That’s what we call a security or bodyguard. This is not true. We work hard to dispel the Hollywood image of The Bodyguard. In reality our corporate and high net-worth clients and their environments don’t require dark sunglasses or radio ear pieces. Our agents dress similar to their clients allowing them to blend into the background. In most cases–you would never know who or where they are.” Most people underestimate the degree of advanced work that goes into protection before a client ever leaves the comfort of their home or office.
Henderson not only works out in the field for PRA, but regularly conducts seminars and public speaking engagements. “Our focus is to educate people on the topics of security type concerns such as workplace violence & active shooter, human & sex trafficking, custom security issues and techniques. We show ways to be prepared and mitigate risk– how to implement emergency plans and assess risks and threats. We scout out hotels, meeting rooms and restaurants in advance, amongst a multitude of other operational techniques. It’s a peace of mind that allows them efficiency and focus on their business or family.”
Some advice for the home front, “I encourage all my clients to have an emergency plan in place with their family or friends. Should something happen, how will they contact each other? If phones are out where should they rendezvous? Is there a safe place they can go in case of an emergency? These are key elements we teach our kids for a house fire. Unfortunately, most people aren’t prepared for a natural disaster, riot or unforeseen criminal act that reduces the safety of their livelyhood. Improving our thoughts on safety first is how we begin to combat a world of unknown acts of violence.”

MONKEY FACE ORCHID
This species of orchid , aptly named the Monkey Face Orchid ( Dracula Simia ), was created after Mother Nature decided to do a bit of monkeying around! These rare monkey orchids only grow in the cloud forests of south eastern Ecudor and Peru at elevations of 1000-2000 meters on the side of the mountains. Scientific name “Simia “ refers to the monkey face and “ Dracula “ refers to the two long spurs that hang down like fangs. This kitchen has a really unique design. The room had once been a living room! An addition to the house created a new living room and kitchen gathering space, much larger than the previous kitchen. The result – a lovely new kitchen with a white and gray color scheme.
The original space included a window where the Wolf 48” range is now. The range backsplash is of glass mosaic tile. The remaining backsplash is made of handmade white ceramic field tile. Spice pullouts are positioned on either side of the range. Mountain White Danby marble countertops provide beauty and strength. Cabinetry finished in White Cap paint is used on the perimeter. Base cabinetry has been bumped out
for added interest at range focal point.
Sahara Glass cabinets were used to maximize the natural light from the remaining window and maintain a feeling of openness.
The island draws you into the room. It was done in sterling silver with a glaze, chosen as a gray contrast to all the white tones. The whole effect is that of a furniture piece. It brings out the subtle veining in the Danby marble beautifully. It also allows more useful storage space as well.

Palm Beach FLORIDA!

Palm Beach, Florida! This is the home of the rich and famous, Kennedy’s Winter White House, Donald Trump’s 62,000 sq. ft. mansion turned club, which originally had 58 bedrooms, 33 bathrooms and three bomb shelters, Rush Limbaugh’s $26 million house and Rod Stewart’s 12 million dollar home. Palm Beach has everything money can buy! Great beaches, museums, shopping, parks and the perfect places to see and be seen!
For those who have not yet discovered this affluent haven, it can be confusing. The incorporated town of Palm Beach is in Palm Beach County. Palm Beach is the easternmost town in Florida located on a 16-mile long island. Lake Worth and West Palm Beach are just across the Intracoastal Waterway. When folks refer to Palm Beach, many are referring to all three cities and some are referring to that and the surrounding area. The famous Breakers Hotel, The Flager Museum (also known as Whitehall), Trump’s Mar-A-Lago and Worth Avenue are all in the city of Palm Beach while West Palm has the
Norton Museum of Art featuring artists such as Picasso and Monet, the Emerald Dunes Golf Club, and an abundance of shopping malls. City Place is the most know and offers shoppers a European flair!

The climate is tropical rainforest and though it doesn’t have a dry season, when winter comes, you couldn’t ask for a nicer place to be. The average temperature in the winter has a high of 76 degrees. As I write this in the first week of December, the temperature is 77 degrees!
How did this affluent vacation spot come to exist? Around 1872, Major General William Jenkins Worth fought in the Second Seminole War on the east coast of Florida. To honor his

ability to clear away the homes and souls of the unfortunate previous residents, the area was named “Lake Worth”. When an equally unfortunate ship was washed ashore in 1878 full of coconuts, the enterprising settlers planted them as well as some 15,000 pineapple slips and developed a thriving business. Naturally, the name of the place changed to the much more appropriate “Palm Beach”. By 1894, Henry Flager, the Standard Oil Tycoon built his Royal Poinciana Hotel. In 1896 he brought the railroad in to town and opened the Palm Beach Inn which later became The Breakers in 1901. These events helped set the stage for Palm Beach to become the ultimate destination for the rich and famous and home to mansions, shopping, restaurants, golf, fashion, and unique architecture.
You can still take a train to Palm Springs though it’s one tedious journey! Fly into LA, take a train to Fullerton and then a bus ticket to Palm Springs or simply fly into either one of two airports. Palm Beach Airport is about 3.6 miles away from the city. The next closest airport is Ft. Lauderdale only about 44 miles away. Choosing a hotel will not only be dependent upon your budget but also your interests.

If golfing is your thing, you can choose from a bevy of courses either on the resort or very nearby and some hotels include access to certain courses as an amenity. I asked them to fill us in on their favorite reds and best sellers. The answers were not only informative, but at times, poetic and certainly inspires one to open a bottle, relax and enjoy and really sit and taste.

John: 2012 Teso La Monja Romanico Toro at $13.99. From Toro in southern Spain, the grape is Tempranillo, a black Spanish grape. Wine critic Robert Parker says it tastes like a $50 wine. A purple wine with blackberry and bouquet garni (which means “a bundle of herbs”).
John: 2013 Alias Cabernet Sauvignon California is less than $10.00 a bottle with a bouquet of black fruit, baking spices, and vanilla! Before connoisseurs of fine wine snub me for mentioning, read the reviews!
Matt: A Pinot Noir from the county of Burgundy, a 2012 Meo-Camuzet Richebourg for $1,999 (on sale for $1,799!) and the 2005 Chateau Latour for $1,499, a Bordeaux grown on the southern border of Pauillac, France that has a smooth black currant taste.

Chef Jim Fiala grew up in the St. Louis area and was first introduced to fine dining at age 13. “My parents took me to Tony’s.” Whenever the family traveled, they dined at Michelin guide restaurants. Fiala earned a finance degree from Southern Methodist University in Dallas.in 1988 Fiala joined Clipper Cruise Lines and took a kitchen job. He fell in love with cooking and thus began his career. In 1991 he enrolled in the California Culinary Academy. Upon graduation he accepted a job offer from Chicago’s Spiaggia. In 1994, Fiala gained more experience working in NYC ‘s restaurant Daniel. On his return to St. Louis in 1998 he opened The Crossing. As The Crossing grew into a fine dining destination, Fiala established a more casual version of The Crossing. Acero in Maplewood. His philosophy is “every meal a great meal.”
How did The Crossing get it's name?
The Crossing got its name in a very simple way, a cross of French and Italian food. Also another way would be based on my favorite book by Cormac McCarthy called The Crossing
Where do get your inspiration from?
Inspiration flows from my farmers when I receive products from people that have poured their life into animals vegetables, and they deliver those products to my door. Often times I love to eat locally here in St. Louis or in larger cities around the country, or even lately I find inspiration thinking outside the box and try going in a new direction.
Which celebrity or famous person would you like to cook for?
Probably top one to have would be Bob Dylan because he's somebody that's so thoughtful and so understanding of the human condition and he's had so many different experiences, different phases of his life, that I think I would love to get down to what makes him tick. Others would be any of the chefs I've worked with during my life. What have they learned, what are they cooking, thoughts on the industry, futures in our business, family struggles.
Who do you mentor?
My idea of mentors is that you are always mentoring, wether at home, at church at work. Am I helping people be better?
I am being mentored by my staff, my family, the church, even my mailman. People surprise me with kindness, love, selfishness, greed, selfishness and a myriad of other traits that challenge me daily.
Do you have a secret ingredient?
Anchovies are my favorite whether white ones, salted ones, Italian or Vietnamese fish sauce, I am in heaven.
What is your favorite meal to cook at home? Risotto. End of story.

ROASTED TOMATO BASIL SOUP
Serves 6-8

• 3 pounds ripe plum tomatoes, cut in half lengthwise
• 1/4 cup plus 2 tablespoons good olive oil (EVOO)
• 1 tablespoon kosher salt

When I was a little girl I loved having soup for lunch. My favorites were Campbell’s Tomato Soup with milk or Chicken Noodle paired with a round grilled cheese sandwich.
We had what was called a Toas-tite. You’d lay a piece of bread on one side of this contraption, place a couple slices of cheese on the bread, top with another slice of bread then seal, removing any bread extending outside of the orb, then place on the burner to toast. The end result was an incredible grilled cheese sandwich with the center swelled up making a nice hot gooey cavity of cheese.
When I moved out of my parents’ home I confiscated the Toas-tite to go with my soups.
Now that the weather is getting cold again I’ve been in the mood for Tomato soup, but a healthier version with less sodium and fat, without sacrificing flavor. Tomato Basil Soup is ideal. It not only hits the spot, but is comforting and soothing to all that indulge.
My recipe calls for roasting garlic. If you’ve never roasted garlic you’re in for a treat! The end result: A sweet, soft, garlic - not harsh. Squeeze the cloves into the soup; with leftovers, spread directly onto a baguette slice for a delectable treat. Roasting the tomatoes and garlic, then blending the remaining ingredients with the final touch of a balsamic drizzle make this soup stellar!
• 1 1/2 teaspoons freshly ground black pepper
• 2 cups chopped yellow onions (approximately one large yellow onion)
• 1 head of garlic, roasted, (drizzle with EVOO and wrap in foil)
• 2 tablespoons unsalted butter
• 1/4 teaspoon crushed red pepper flakes
• 1 (28-ounce) canned plum tomatoes, with their juice
• 2 cups fresh basil leaves, packed (1 large container)
• 1 teaspoon fresh thyme leaves
• 1 quart (32oz. or 4 cups) chicken stock or water
• 1 teaspoon balsamic vinegar
DIRECTIONS:
Preheat the oven to 400 degrees F. Drizzle tomatoes, with 1/4 cup olive oil, salt, and pepper.
Spread tomatoes in a single layer on a baking sheet and roast for 45 minutes along with a head of garlic drizzled with EVOO, and wrapped in heavy duty foil. Once cooked, set aside to cool. Peel skins off tomatoes, discarding the skins.
In a deep stockpot over medium heat, sauté onions in 2 tablespoons olive oil, butter, and red pepper flakes for 10 minutes, until onions start to brown. Add canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet, along with squeezing out 6 cloves of roasted garlic into the pot. Simply squeeze the skin and the softened garlic pops out.
Bring to a boil and simmer uncovered for 40 minutes.
Using an immersion blender or upright blender, puree to your desired consistency. Add Balsamic Vinegar. Taste for seasonings. Serve hot or cold. Enjoy!!

KATHY LAWTON BROWN
One Classic Lady

athy Lawton Brown’s melodic voice is heard daily on the Radio Arts Foundation - 107.3 FM, 96.3HD2 and RAFSTL.org. Besides being a popular host on St. Louis’ only classical music station, she is also a professional singer with a vast musical background.
It all began in high school. Kathy said, “I attended Villa Duchesne and Ladue High School. I loved to sing, but intended to become a veterinarian.” However, in her senior year, fate intervened when she auditioned for the MUNY Opera chorus. “It was the MUNY's 50th anniversary. Imagine – at 17, sharing the stage with show business legends like Ethel Merman, John Raitt, and Florence Henderson.”
She went on to obtain a B.A. in Music from Rollins College in Florida. “I figured I could always switch to science (that vet thing again), but I wanted to study voice.” She worked regularly with the Florida Symphony Orchestra, and sang for Disney World’s 1971 opening.
After graduation, she returned to St. Louis to sing at the MUNY. “My career really took off when I got a call to audition for the USAF Band in Washington. I was selected to be principal contralto in the elite Singing Sergeants.” Kathy was one of the first three women in the USAF Band (1973-76). It was here Kathy met her husband David M. Brown, principal flutist in the US Air Force Concert Band. “My most notable performance was Narrator in Kurt Weill's Ballad of the Magna Carta during the Bicentennial. It was performed in the rotunda of the Capitol Building and broadcast world-wide.”
She later received her M.M. from James Madison University in Virginia, began a career teaching voice in colleges and universities, and continued performing in the DC area, including the Kennedy Center.
Her repertoire includes opera, oratorio, musical theatre and jazz. Kathy has performed throughout the U.S., and in Canada and China. She has been guest artist with prominent local choral, orchestral and chamber ensembles such as the Saint Louis Symphony, Arianna String Quartet, and the American Kantorei. Let's not omit Cardinals and Rams games, and the White House.
Kathy worked several years at KFUO-
FM – Classic 99. In her present broadcasting job at RAFSTL, she creates many of their commercials and truly enjoys doing interviews. “There are so many interesting -compelling -- stories out there. As St. Louis' "Voice for the Arts" it's critical that RAFSTL honors and recognizes all those who contribute to our marvelous local cultural fabric. This includes the entire spectrum, from visual to performing arts, literary arts to architecture.”
Other interests include composing, cooking, needlepoint – most anything creative. “I enjoy working with dogs. Our Golden/Saint Bernard mix, Diego and I were a T.O.U.C.H. therapy team for children with disabilities, and for kids in a "safe house” shelter.
A proud veteran and member of American Legion Post 404, Kathy is also a Rotarian and serves on the board of the St. Louis Children's Choirs. "I love participating in anything that uplifts, inspires and makes the world a better place."
