In life it is often the smallest changes, which have the biggest impact. Tired of ruining pair after pair of expensive shoes due to wear and tear, one local entrepreneur decided to do something about it. Claire Flowers is the founder and developer of the Claire Flowers shoe line.
It all began after Flowers came up with a design for a better stiletto, one focusing on function and comfort. “I started thinking about all the ways I could improve a pair of high heels,” Flowers said. “Ultimately, I came up with five ways to make high heels better. I couldn’t wait to design the shoes and start wearing them. So, really, I started the company out of necessity!” Flowers did the research, found investors and became determined to change the way women think about high heels. “I feel fortunate that I’m a woman in this business. I think it gives me an edge that my male peers don’t have,” she said. “When I explain my ideas to men, sometimes they don’t get it. But women always understand where I’m coming from.”
The change paid off, her shoe line was a success. Today Claire Flowers heels come in a wide array of on-trend styles in materials such as suede, leather and linen. Heel heights are either 2.5” or 3.5”, both surprisingly comfortable. “I stand by the promise that you can wear these pumps all day without aching feet,” says Flowers. A recent addition to the Claire Flowers collection is the “Lizzy” a stylish sandal debuting in time for summer. Crafted from leather with an elastic band, the “Lizzy” is destined to become a warm weather favorite. “These sandals honestly go with anything,” Flowers says. “This shoe will take you from work right to an evening out.

Once achieving this kind of accomplishment, many small business owners would sit back and enjoy, but not Flowers. She just launched plans to carry a dress line, which she also designed. “I was feeling frustrated with the dress choices in my closet,” she said. “Everything felt season specific or appropriate only for certain occasions. I started thinking, what if there was a four season dress that was truly versatile, like my shoes?” Flowers’ problem solving, creative mind went to work. The result is a color blocked shift dress made of supple garment leather with an interchangeable satin lining.
The genius of this design is in the details. The lining is removable, held in place by snaps at the shoulders. This way it can be taken out and cleaned separately from the dress itself. The lining will come in a variety of colors and prints. “I wore it on a trip last week to LA. Not only did it look great, it’s such a timeless style, but the dress also travels extremely well,” Flowers said. Each dress will be custom made to order in sizes small through extra large. Customers will choose from four neutral leather colors and metallic finishes for the shoulder snaps. “The dress is truly an all year round wardrobe item. I picture it with an oxford and tights during cooler weather. Milder months it can be worn alone or with a blazer. It has so many styling possibilities!”

Claire Flowers seized an opportunity to make a change and it’s one that the former IT consultant doesn’t’ regret. “In the end, I’m really a problem solver,” she says “I use that same analytical brain to take a design challenge and turn it from a problem into an opportunity for something better!” UT

In the recent years, the fitness industry has seen a huge boom in popularity in so-called “mind-body” classes like Pilates and yoga Chances are, you or someone you know has practiced or at least tried Pilates or yoga. Many people (myself included) turn to Pilates and yoga as a way to help balance their mind and body or provide a different kind of workout to change our routine.
WHAT ARE PILATES & YOGA?
Pilates is a series of strengthening and stretching exercises that can be performed with various pieces of equipment (including just the floor!) founded by Joseph Pilates in the 1920s. Pilates emphasizes on what is called the “powerhouse” or the core of the body, and maintaining alignment of the spine with movement of the appendages. According to Shannon Brodlieb, owner of Crossman Pilates, a classical Pilates studio in Clearwater Florida, Pilates is a “system of exercises, either utilizing the mat or specialized Pilates apparatuses, designed to improve
physical strength, flexibility, balance and posture, and help to enhance your mental awareness.”
Yoga has been practiced for centuries. Yoga is an exercise of postures that connects the breath with movement into and out of postures. There are many methods of yoga (27 varieties are currently taught in the United States, according to the Denver Business Journal, www.bizjournals.com/denver/stories/2007/05/28/focus7. html) tailored to different needs or goals. “The method of yoga I teach creates mind-body connection and body awareness in my clients,” says Nicole Dudas, BS, RYT-200, a yoga instructor and owner of Dudas Fitness, a private personal training studio in Weldon Spring, Missouri. She currently teaches 5 classes of yoga each week and finds that it allows her clients to “move in restorative ways without stressing the body, since yoga meets you at your level.”

Both Pilates and yoga assist clients with achieving higher levels of stamina and stability. They move the body in ways that require stability of the pelvis and spine, thus strengthening the core of the body and helping clients to achieve new levels of body awareness. With practice, this awareness will continue to increase and become a part of daily life, building stronger movement patterns. According to Brodlieb, Pilates is known “for creating strength without excess bulk, and giving you a sleek, toned body with a flat abdomen.”
The movements in Pilates and yoga can also enhance flexibility and prevent injuries at any level of training. Brodleib states, “Pilates conditions the whole body, even your feet and ankles. Your entire musculature is evenly balanced, with no muscle being over or under trained.” As Dudas states, “yoga meets you at your level.” For someone with an injury or who is looking to build flexibility, the movements and postures can be modified to different levels to allow the practitioner to feel successful and empowered while not overtaxing the body.
Pilates and yoga also help with mind-body connection and balance. The movements and postures involved require a quiet, still, yet focused mind. This can help to relax the mind and decrease anxiety, depression, and stress. Often, clients will leave a Pilates or yoga class feeling restored and relaxed. For some (like me), that restorative, relaxed feeling will last all day after practice.
TIPS FOR FINDING A CLASS
1. Listen to your body. Each person is different and your instructor should help modify movements for you if your body is not able to properly produce it. As Dudas states, “Yoga is not about the shapes you make. Avoid looking in mirrors or at others in the room and instead, notice how you feel.” If something feels off, bring it to the
attention of the instructor and ask for a modification.
2. Find a class that will consistently work for your schedule. The more you can practice Pilates and yoga, the more you will experience the benefits. If you find a class that will work for you regularly, attend the class as often as you can so you can feel the benefits of regular practice. You will feel great after class one, and I promise class two will make you feel even better!
3. Ensure your instructor has the appropriate credentials. Brodleib has been teaching Pilates for 14 years; Dudas has been certified to teach yoga for four years combined with 11 years of personal training experience. Many instructors have been practicing even before becoming certified to teach. Certification helps the instructor to better understand the modality and modifications that should be used for individuals at various levels.
Pilates and yoga are popular in fitness centers around the world, and for good reason. Practicing Pilates or yoga will help you to achieve a balanced mind and strong body while building strength, stamina, and flexibility. Search your area

What makes Greece one of the most romantic European honeymoon destinations? Could it be the dream of strolling through a grove of olive trees with your lover? The whitewashed domed, clean, picturesque towns nestled on the dramatic cliffs? The sound of ocean waves as you dine on superb Mediterranean cuisine? Or could it be that you are standing where you can relax and actually breathe in the history and romance of Eros, the Greek God of Love?
Without a map, understanding the complexity of the geography of the country is nearly impossible! Greece is surrounded on the east, west and south by water and sits east of Italy across the Ionian Sea and west of Turkey across the Aegean Sea. To the South is the Mediterranean Sea and to the north are the countries of Bulgaria, Macedonia and Albania. Included in country of Greece are about 6,000 islands of which only 227 are inhabited. Eighty percent of Greece is mountainous and that includes most of the islands which as most post cards reflect have cities and towns splayed along hillsides and cliffs.
The most popular island for honeymooners in the States is the picturesque Santorini in the Cyclades Islands. This is mainly because the transportation there is easier than to the other islands. After flying into Athens, Santorini is a 45 minute flight. Not all islands have an airport so if you have limited time, Santorini is your best bet. Ferries leave from the port of Piraeus, which is just a short ride from Athens. A high-speed ferry ride to Santorini is only around 5 hours. However, if you want a true Grecian experience, you can take a ferry to other islands which have equally romantic, exquisite resorts, each with its own unique personality and history.
Narrow your research to 2 or 3 islands then see which one measures up to your wants. If visiting as many islands as you can while not having to unpack every day, cruising may be your perfect answer. For example, several cruise companies have 7 day Greek Island cruises. Windstar Cruises offers a luxury yacht experience with less than 300 passengers and offers more private ports and can be the most memorable trip of a lifetime.
For Europeans, who have weeks of more leisure time, the Greek Islands are the perfect vacation. In the hospitality businesses such as restaurants and hotels, English is spoken, catering to visitors. The Greek people are welcoming, fun and accommodating and absolutely delightful. Also, keep in mind the Greek economy is uncertain and giving them your business is a global gift!
Popular islands, just to mention a few, are Rhodes, Lesbos, Hydra (which has no motor vehicles, except rubbish trucks and relies on donkeys, water taxis and bikes) Kos, Paros and Milos. Skópelos in the western Aegean Sea is where the movie Mama Mia was filmed.

Ever since Jason and Medea met up with the bronze giant Talos (Remember the “ Jason and the Argonauts” movie?) Crete, the largest of the Greek Islands, has been popular destination! With plenty of sightseeing, the port city of Chania has a variety of beautiful hotels, restaurants and shops. Try the La Maison Ottomane which is a three suite luxury hotel only 350 feet from the Venetian Harbor. Perfect for honeymooners!
Corfu is the capitol of the island of Corfu and has a distinct Venetian influence. Wonderful hotels with many amenities will make your honeymoon a relaxing healthy experience! The Corfu Mare Boutique Hotel is right in the city and offers yoga, dance, cycling and sauna in a great fitness area and has a small dining area and bar perfect for romance and relaxation!
The island of Kos in the southeastern part of the Aegean Sea has great beaches and gorgeous scenery. My favorite all-inclusive resort there is Mitsis Blue Domes where our family had Mediterranean classic meals, swam in the salt water pools, took a ferry to visit an active volcano and had walks on the beach at night with a view of the constellations that were beyond anything we had ever seen before.
When visiting, remember that the Mediterranean climate has a wet mild winter and hot, dry summers. Temperatures are highest in July and August and the water is still chilly in April.
Late May is when the ferries begin their most frequent schedules and the tourist season gets into the grove with visitors going to the beach in late May and June.
Regarding the beaches, we must mention the fact that the European beaches are a bit different than the States. Throughout Europe, you'll find that women sunbathing topless is widely accepted and on some of the islands, there are full nude beaches. If you are concerned, ask your hotel ahead of time about the status of clothing at their beaches. Don’t ask if the beaches are family friendly because that doesn’t mean it’s not a nude beach. Beaches around churches, businesses and municipal beaches are usually fully clothed.
With the sandy, tan beaches, dramatic cliffs and landscapes, lemon and olive trees, culture, history, the cuisine and especially romance, the Greek Islands will give you all the ingredients for your perfect dream honeymoon! UT

I started my cooking career at Marriott Hotels. That was the first kitchen that had an Executive Chef, and was a professional kitchen not just a chain restaurant.
From there I went to work for Pat Hannon at Patrick’s restaurant. That is where I met Wiley Thompson. He was a former Marriott chef who took me under his wing. He got me to start school and become a chef’s apprentice. I helped open up several restaurants for the Hannon’s before moving on. In order to further my culinary knowledge I started working for private country clubs. There I honed my skills and increased my knowledge on the science of food. Now at Lester’s, we want to bring the freshest possible entrée to the table. That is why we do it all in house including baking our own bread daily. Not too many free standing restaurants are willing to go that extra mile to ensure the quality of freshness.

Chef Wiley Thompson. He is the one who encouraged me to go to school and developed my skills.

People who are always late to something, not just work but social events also. If I tell someone I will be somewhere at a certain time, I will be there. I expect the same consideration.

FREEKEH TABBOULEH WITH LIME MARINATED SIRLOIN OVER FLATBREAD

When the warm weather arrives many of us tend to eat lighter fare, but oftentimes that leaves us feeling hungry later. In order to satisfy both, I created this Freekeh Tabbouleh with Lime Marinated Sirloin over Flatbread. It’s perfect – light, tasty and filling, without making you feel stuffed.
If you’re not familiar with Freekeh (pronounced freekah) it’s wheat that is harvested while young and green. It’s roasted over an open fire, then the straw and chaff are burned and rubbed off. The grain on the inside is too young and moist to burn, so what you’re left with is a firm, slightly chewy grain with a distinct flavor that’s earthy, nutty, and slightly smoky.
Freekeh is considered one of the ancient grains, and because it’s high in fiber it keeps you feeling full longer, which is ideal if you’re trying to lose weight. This whole grain is full of essential nutrients such as selenium, potassium and magnesium, and like quinoa it is an excellent source of protein.
I decided to add my Grilled Lime Marinated Sirloin for extra protein to top off the Tabbouleh and place all over flatbread. This dish is ideal for brunch, lunch, and dinner. Dressed lightly with lemon juice, red wine vinegar and a drizzle of extra-virgin olive oil it makes for a satisfying meal, lovely presentation if serving guests, and perfect for a BBQ.
TABBOULEH:
• 1 1/3 cups Freekeh
• 2 lemons, halved
• 1/4 cup extra-virgin olive oil, plus extra to coat lemons
• 1 bunch flat-leaf parsley leaves, chopped
• 15 oz. baby heirloom tomatoes, halved
• 1 Tbsp. red wine vinegar
BEEF & MARINADE:
• 2 ½ lbs. boneless sirloin steak
• 2 large yellow onions, cut into wedges
• 1/4 cup fresh lime juice
• 2 tsp. sea salt
• 3 Tbsp. Extra-Virgin Olive Oil
• 2 1/2 tsp. fresh ground pepper
• 1 pkg. Naan Flatbread
DIRECTIONS:
1. BEEF & MARINADE: Stir together lime juice, 2 tsp salt, and 2 tbsp. olive oil in a small bowl.
2. Add steak to marinade and toss to coat. Set aside for 30 minutes to several hours to marinate in refrigerator.
3. Toss onions with 1 tbsp. olive oil.
4. TABBOULEH: Place Freekeh and 2 1/2 cups of water in a saucepan, bring to a boil. Cover, reduce heat and simmer approximately 20-25 minutes. Drain, if needed. Set aside to cool.
5. Brush cut lemons with olive oil.
6. TO GRILL: Remove meat from marinade, and pat dry. Add freshly ground pepper. Grill steak 3-5 minutes per side (medium – medium/rare). Allow to rest 5 minutes - thinly slice.
7. Grill onions in a grill basket approximately 20 minutes or until tender. Transfer to a cutting board. When cool enough to handle, chop onions into 1-inch pieces.
8. Grill lemons, cut-side down, 3-5 minutes until charred.
9. PLATE: Place Freekeh in a bowl with parsley, tomato, vinegar, olive oil (up to 1/4 cup), and juice from charred lemons.
10. For each individual serving, set flatbread on a plate, top with a mound of Tabbouleh, onions, then sliced Sirloin. Serve.

of writing stories, Bryan Haynes paints them. His award winning artwork depicts the history of Missouri’s early settlers, its frontiersmen, and historical figures. These colorful characters inhabit landscapes full of curving hills, forests, farms, waterways, flora and fauna.
“My artwork exists in this landscape – just waiting for interpretation.” His strong sense of history helps in creating his unique paintings and murals. “I’m constantly inspired by the people who worked this land.”
Bryan’s style is likened to that of 1930’s Regionalist artists - Thomas Hart Benton, John Steuart Curry and Grant Wood. Their common theme was rural nostalgia in the American heartland.
An idyllic workplace lends inspiration as well. His studiohome is tucked away inside a secluded wood in Labadie. It’s the perfect setting for Bryan to create what he’s so famous for — those sweeping landscapes of Missouri.
In his own art book New Regionalism, Bryan wrote, “The Missouri landscape has a hand in suggesting the shapes and contours of storytelling in this style.” He described the process, “Using the tools of the commercial art trade, I have learned over decades to create emotion and create feeling. I began to realize that in order to capture the beauty and character of this region most accurately, my compositions required altering and exaggerating objects to convey specific emotions, rather than copying a photographic reality.”
His amazing career spans 36 years.
Bryan Haynes was raised in Kirkwood within an art loving environment. His parents shared their love of art with Bryan and his siblings at a young age. "As a kid, I poured over my father’s extensive art book library and began to draw and paint when I was about 5. Any idea of being a professional artist didn’t really take form until my late teens when I sold portrait drawings to some local families."
Following high school, Bryan studied art at the University of
New Mexico, and in 1983, he graduated from the Art Center College of Design, Pasadena, CA. His talent quickly brought him work as a freelance commercial artist in Los Angeles for Warner Bros., Universal Studios, and Capitol Records. His commercial career advanced with illustrations in national magazines, international advertising campaigns, CD covers, posters, and book covers from Agatha Christie to the cover of Scarlett, a sequel to Gone With the Wind.
While in California, Bryan met his German born wife Petra and moved back to St. Louis in 1989. They have two grown daughters, Micah and Demi.
Much sought after, Bryan’s paintings are presently exhibited at Kodner Gallery, OA Gallery in Kirkwood, American Legacy Gallery in Kansas City, and Manitou Gallery, Santa Fe, NM.
Recent corporate and institutional commissions include murals and large scale paintings for Arrowhead Stadium and the KC Chiefs, The Kauffman Foundation in Kansas City, The Missouri Botanical Garden’s permanent collection, The Westward Expansion Memorial Museum at the Arch, Novus International Inc., and the Danforth Plant Science Center.
Additional patrons include Disney, Estee Lauder, Toblerone – Switzerland, IBM, Nike, Sony Music Corp., Anheuser-Busch, plus numerous private collections.
Bryan’s awards include New York Society of Illustrator’s Awards, Graphis Magazine Switzerland Awards, The Society of Illustrators-New York awards, Print Magazine Awards, and Communication Arts Awards.
