The tinsel, the twinkling lights, the tree, the TENSION- oh…the Holidays. The mad-dash of what has been dubbed as ‘the most wonderful time of the year’ can induce high levels of stress. Stress comes in many forms and produces many uncomfortable symptoms ranging from worry and irritability to restlessness and insomnia, anger and hostility, or sensations of dread, foreboding, and even panic! Yes, stress is a Grinch! Don’t want it to steal your Christmas (or any Holiday)? Then get moving!

First, let’s talk about aerobic exercise. According to the Anxiety and Depression Association of America (ADAA) exercise is considered vital for maintaining mental fitness, and it can reduce stress. Studies show that breaking a sweat can be a very effective way to reduce fatigue and increase alertness and concentration.
When stress affects the brain, with its many nerve connections, the rest of the body feels the impact as well. On the flipside, when your body feels good, your mind feels good, and visa versa. Exercise and other physical activity produce endorphins, neurochemicals in the brain that act as natural painkiller. These helpful neurochemicals also improve the ability to sleep. When you are well rested, you are less likely to succumb to stress.

Each year, many of us fall off the fitness cliff somewhere around Thanksgiving, then wait until January 1 to get back on track with our fitness routines. It can be so easy to get caught up in the hustle and bustle of the holidays and forget about our fitness plans. So year after year, we let ourselves have from Thanksgiving until New Year’s Eve to make unhealthy choices knowing (hoping) that come the new year, we will get back on track. I want you to know this pattern does not have to continue. This year, you can do things differently. You can kickstart our New Year’s resolutions early. You can start now!

Now is the perfect time to kick start your New Year’s Resolution. Why? You are going to be ahead of the curve. By not allowing yourself to slip off track from your fitness routine, you'll be able to maintain (or even lose!) weight over the holidays instead of packing on the pounds with all the food at family and friendly gatherings. I understand your time can be crunched this time of year, but staying on track with your fitness program does not have to mean spending hours upon hours in the gym every week and depriving yourself of everything you want to eat at holiday get-togethers. When it comes to your eating habits, one way to stay on track is through portion control. Allow yourself to try a small amount of

each of the foods you want at parties, but limit yourself to one small serving. That way, you get a taste for the food without overindulging and tacking on hundreds of empty calories to your meal. I also suggest using a smaller plate. Using a smaller plate will trick your mind into thinking you have more food than you actually do, which can save you hundreds of calories as well. Finally, try not to arrive to the party hungry, as this also tends to lead to overeating. Instead, try to have a small (healthy) snack prior to leaving so you can resist the tendency to overfill your plate.
Kickstarting your New Year’s Resolution is easier than you think when incorporating exercise. Schedule yourself at least 30 minutes three to four days per week to get your exercise in, and don’t let yourself skip it. Yes, you may have to wake up a little earlier than you wanted, but I promise you it will be worth it! You’ll have more energy, feel better, and be less stressed! For your Kickstart Workout Plan, I have included a resistance training circuit. Circuit training is a form of resistance training that includes exercises repeated in rapid succession with little rest in between exercises. Combining exercises in this fashion bonuses by giving you an aerobic workout as well, keeping your heart rate elevated and allowing your body to burn tons of calories. Completing two sets of 12-15 repetitions of these exercises will give you a total body workout in 30 minutes. If you have more time, simply add an extra set and push yourself a little more.

The Holidays are here! The minute Halloween was mentioned, some among us began stressing. The pumpkins bring turkeys then gingerbread then champagne! Decisions of where to go, how much to spend, gifts, relatives, friends, house guests, what to serve, and visions of that same old table cloth haunt your mind at the oddest times. Relax! You can do this! Put it in perspective!

You may think that going to someone’s house is the answer. Let someone else do all the work so you can just pop in, drink, eat and go home to your private hide-a-way. You can but you will be sorely missing out! Hosting a great party is all what the holidays are about! You are welcoming friends and family into your home, sharing and showing how much you value and appreciate them. It’s a joyous, wonderful thing. Have fun! Remember, when you are the host, you can make the party the best event ever! Make it easy on yourself with a few tips!
1. Choose a theme! Themes are impressive. Rather than have a hodge-podge of Christmas things you inherited and have used for 45 seasons, themes help you still utilize them while expanding your holiday horizons! Use your imagination. Color Themes like “A White Christmas” a red and white “Candy Cane Christmas” or “Silver and Gold”! Would you like an elegant tuxedo “black and white” New Year’s? Other themes might be a “retro” holiday party. (Then you can display your 1955 pink feather Christmas tree if you really feel the need) or “A Winter Wonderland” filled with wood and pine cones!
2. Light some candles! Not only do they give romantic, festive, cozy, indirect light, the scented ones will make all the difference! Colored candles or colored glassware with white candles can be strikingly beautiful. If you don’t like the scented candles, use fragrant plants like eucalyptus or pine decorations.
3. Take your glass ornaments and put them in a lovely clear glass bowl on your table! Centerpieces that are too tall
can inhibit conversation.
4. Decide if you would like a sit-down dinner or a cocktail party. Either can be quite elegant or casual. Sit-downs require timing and more work for the host. Buffets are easy and guests can help themselves. Have a self-serve cocktail bar so all you have to do is replenish the ice bucket! Better yet, have a festive house drink pre-made. Your “signature cocktail”, handed to them the second they walk in, is a wonderful, welcoming surprise! To wind down the party, you can serve hot cider or mulled wine that has been warming in a crockpot or cooker emitting a sweet spicy aroma through the house!
5. Have hors d’oeuvres and dessert stationed throughout your entertainment area with veggies, figs, dates and nuts. Small Christmas Trees decorated with edible cookies are great light deserts! Have some on a gluten free tree with little candy canes as after dinner mints. Your guests will appreciate helping themselves and you will find decorating the trees easier than baking large desserts that many people choose not to eat anymore.
6. Play the perfect background music which will set the mood you would like for your guests. Whether it’s Bing, Frank, Bach or a Yanni Christmas CD, your gathering will be “In The Mood”.
You can do this. You can make the Perfect Holiday Party while relaxing and enjoying yourself at the same time. A little imagination, some candles, color, and thought can make your special evening an occasion to be remembered! Happy Holidays! UT

Welcome to Fiji! BULA!

When asked the subject of this issue’s travel article, I was barraged with questions. Fiji? Where the heck is Fiji? Why would anyone want to go there? Who lives in Fiji and what do you call someone from Fiji? Fijense? OK. So Fiji is not one of those popular, convenient travel destinations like L.A. Hawaii or the Bahamas but read on, oh inquisitive travel reader, and you will understand the lure of these coconut palm covered islands!
The Republic of Fiji is in the South Pacific, about 1,300 miles northeast of New Zealand and 2, 880 miles east of Australia. The country is composed of over thousands of little islets, big islands and all sizes in between. Only about 332 islands are big enough to hold humans and 106 actually house them. Around 87 percent of the folks (which only number around 860,000) live on the two major islands, Viti
Levu (means “great land” ) and Vanua Levu (which seems to mean more like “the land where our society and culture lives”.)
To fly to Fiji from St. Louis, you will most likely fly to L.A. The flight to Tahiti from Los Angeles is about eight hours and 15 minutes, while in comparison.. the flight from LA to Nadi takes 10 hours and 45 minutes.
Fiji was discovered around 1640 by Dutch explorer Abel Tasman. Captain Cook (of the Cook Islands) visited in 1799. Very soon the European missionaries and whalers arrived. At one point, laborers were brought over from India and some Chinese and Australians arrived as well as other Polynesians who joined in the mix. This resulted in a kind, friendly, wonderfully loving people which makes Fiji a welcoming, captivating destination.

The capital, Suva, is on the southeast coast of Viti Levu and if you include the bordering nearby cities, has a metropolitan population of 330,000 people. Many of the workers in Suva actually live in the nearby town of Nasinu. Viti Levu is mountainous and full of forest and rock with fewer residents.
Only about 332 islands are big enough to hold humans and 106 actually house them.
The town of Nadi (pronounced “nandee”) is the big tourist town since the international airport is located 5 ½ miles north. Nadi offers shopping, souvenir stores and restaurants with Fijian, Indian, Chinese and Western dishes that make you grateful and even more appreciative of the multi-cultured society. You may find some talented street musicians and other fun entertainment along the main street to help fill your senses before you enter the many
shops. If you are a vintage traveler, you may be one of those who love to talk down prices with the merchants. It’s not nice to try and bargain here like you might in different islands, however, some of the smaller shops may participate if you find that sort of thing a challenge.
No matter where you travel in the world, always be careful of buying souvenirs as many are not hand-crafted

and are imported but Fijians (yes, that’s what you call someone from Fiji) do sell some locally made handcrafted items or at least items that are true to the culture. Kava bowls (The traditional hand carved wooden bowls with inlay, symbolic of peace, are from a drinking ceremony where a bowl with water and crushed pepper root is passed around to folks seated in a circle) and masi (which is cloth), and cannibal forks (which sound despicable but most are beautifully crafted and traditional though thankfully not utilized in the same way.) Chiefs and priests weren’t
supposed to touch food with their hands and they would eat the enemy as a symbol of victory, thus the artistic cannibal fork. Masks are sold but from my understanding have nothing to do with Fiji as their folks didn’t wear masks. Although true black pearls supposedly only come from Tahiti and the Cook Islands over 2,000 miles away Fiji is one of its closest neighbors, so the pearls are in the offering. Deciding where to stay on the islands may depend on your desire for privacy and spirit of adventure. If prop planes, sea planes, helicopters, speedboats, ferries or small

cruisers are not your thing, you may want to stay on the main island of Viti Levu. Do try to experience as much of this breathtaking country as possible!
Accommodations in Fiji range from a Bure (a bungalow of sorts with thatched roof) to resorts and hotel high rises. The great thing is that Fiji does offer all-inclusive or where hotels include meals but not drinks. Where you would like to stay will depend on your mobility, your desired activities and of course your budget. If you want to spend all your time in the ocean, you may want to go to a different island
than Viti Levu. Those gorgeous beaches you crave, perfect for diving with clear water, coral and fish and fantastic resorts can be found on the Mamanuca and Yasawa islands just a ferry ride away.
Wherever you stay, check out the tourist entertainment which your hotel or resort may even offer. Attend the Kava drinking ceremony, the Fire-walking, the feasts, dances and singing and the underground oven lovo feasts.

True, you can never go wrong with bubbly. Aside from celebratory occasions, more sparkling wines are popped open during the holidays than other times. Sadly though, we often toast with sparklers before rather than during dinner. We seem to forget that champagne and other sparkling wines taste great with fabulous food. In fact, their low alcohol levels and effervescence go extremely well with rich flavored dishes.
First a note on what is true champagne. U.S. regulations forbid the term “champagne” on any wines not actually produced in the Champagne region of France. But it’s a fact that sparklers produced in California compete very well both in quality and affordability with true French Champagne.
Uptown asked Jason Main, co-owner of The Wine Merchant, Ltd in Clayton, to explain.
“The true difference comes down to France's commitment to excellence. Now I'm not saying California doesn't have stunning sparkling wine! It's just that France has very strict laws to govern what can be labeled Champagne. This means that all French wines labeled as Champagne are authentic and typically the greatest. They are made with only Pinot Noir, Chardonnay and a lesser known grape Pinot Munier. They only come from vineyards within the Champagne region. This ALSO means that any non-French wines labeled "Champagne" are frauds. The method for producing French Champagne takes a minimum of three years, and many are aged for much longer. In the U.S.A. we have no production, regional or grape requirements. Some are as flavorful as their French counterparts, but the quality from producer to producer can vary greatly.”
Every meal is worthy of some bubbly. Jason advised us on selecting the right food friendly sparkling wines for all holiday occasions.
“Go American! They're crowd pleasers with their generous fruit and full body. The main points to look for on a bottle of non-Champagne bubbles are one of the following terms: méthode champenoise, traditional method, or méthode traditionnelle These are the terms high quality American producers will put on their label to illustrate they are using the time honored techniques employed in the Champagne region.”
For the Thanksgiving feast Jason said, “My favorite American sparkler is from a Napa winery, Domaine Chandon (they also own Dom Perignon in France!). Their multivintage cuvée is called Etoile and it's truly stunning. This brut (dry) is a home run with turkey and all of its trimmings. I personally prefer the brut rosé version of Etoile with ham and scallop potatoes as a nice alternative (or in addition to) to the classic turkey.”
Christmas gatherings offer the perfect occasions for true Champagne! Jason concluded, “Simply put, nothing pairs with food like Champagne. Some of our personal favorites are a style known for its richness and body called blanc de blancs (100% Chardonnay) with smoked fish and lobster. Another favorite known for its crispness and intense fruit is blanc de noirs (100% Pinot but still white wine!). It goes especially well with rich, pungent cheeses. Champagne is also great with truffles and foie gras. Really it's the only wine I know of that can work with appetizers, main courses and deserts.”

INGREDIENTS:
• 2 cups unsifted cake flour
• 1/2 tsp. baking powder
• 1/4 tsp. salt
• 2/3 cup unsifted powdered sugar
• 1/2 tsp. raspberry (or flavor of choice) extract
• 1/2 tsp. (or more if desired) Red gel food coloring (or color of choice)

It’s hard to believe the holidays are upon us. This is my favorite time of year to cook, and gift homemade treats.
Aren’t these cookies fun? They remind me of the Whirly Wheel toy, happy and whimsical. In fact, they shout out “celebration,” making them perfect for this time of year.
There are several steps to this recipe, but it’s simple to prepare – not intimidating, as it appears.
These Raspberry Pinwheel cookies aren’t just pretty and fun to look at; they’re crisp and buttery, with a hint of raspberry flavor. Create these, OR, change the color and flavor to suit your taste. Best of all, bake only what you need, keeping the log in the refrigerator, or freezer until ready to use. Be warned, they’ll disappear quickly!
• 2 1/2 sticks unsalted butter, cold
• 1 tsp. vanilla
DIRECTIONS:
• 2 tbsp. unsifted cake flour
• 1 1/2 cups multi-colored nonpareil decors (I used Wilton jumbo sprinkles)
1. Combine flour, baking powder, salt and sugars in food processor, processing briefly to mix. Add butter in pieces; process with on/off bursts until mixture has consistency of cornmeal. Add vanilla, and process until mixture forms a ball.
2. Divide dough into 2 equal portions, returning one portion to the food processor. Add raspberry extract, food coloring, and extra tablespoons of flour. Process until incorporated.
3. Roll each portion of dough between sheets of waxed paper, approximately11 × 8 1/2 inches by 1/8 inch thick. Leave dough between sheets and slide onto a baking sheet. Refrigerate until firm, for 2 hours or up to 3 days.
4. Remove dough from refrigerator. Pour the nonpareil decors into a shallow rectangular dish (9 × 13-inch pan).
5. Peel off top sheet of waxed paper from both doughs. Brush vanilla dough lightly with water. Using the waxed paper, lift the strawberry dough and flip it onto the vanilla dough so they are stacked. Press with fingertips to seal the two doughs together. Remove top sheet of waxed paper and trim to even edges.
6. When dough is just pliable (but still cold), roll up (beginning with the long side) jellyroll style. As you begin to roll dough into a log, gently curl the edges with your fingertips to avoid getting air pockets.
7. After forming dough into a log, throw away waxed paper. Gently lift log on top of nonpareil decors in the dish, and roll until log is completely coated with decors. Wrap log in plastic wrap, and refrigerate until firm enough to slice (from 4 hours to a week, or freeze for up to 2 months; defrost in refrigerator overnight before slicing).
8. Heat oven to 325°. To bake, slice log into 1/8 - to 1/4-inchthick cookies and bake on parchmentlined baking sheets for 15 to 17 minutes, until cookies are no longer shiny on top, and bottoms of vanilla portion are golden

Swingin’With A Star— DEAN CHRISTOPHER

Local entertainer Dean Christopher shares more than Dean Martin’s first name. Onstage he actually sings and swings like Dino and other members of the legendary Rat Pack.
Multi-talented Dean has been in show business for over 30 years - working in theater, film, and TV productions. How then did Dean Christopher evolve into a classical crooner of hits from yesteryear?
Voice talent runs in his genes. “My family is originally from The Hill. My mother had a lovely singing voice, as does my sister Cathy, but I’m the only one in the family that was crazy enough to pursue a career in this business.”
Dean’s family later moved to South County where Dean attended Affton High. He then caught the acting bug. “My first stage appearances were there –"Lil’ Abner" and the school variety show. After graduation, I took a year of college theater classes, and then I trained on the job. ”Dean’s career began at St. Louis clubs like The Sting, The Speakeasy and the Playboy Club, with an act consisting of vocals, comedy and impressions of personalities and singers.
Dean moved to New York in the early 80's. “I trained there in theater arts at HB Studio. I sang, did comedy and emcee work for companies such as Boeing, and AT&T, and at clubs Catch a Rising Star, Chilies, and Don’t Tell Mama.” He even made appearances on popular soaps - All My Children, One Life to Live and Another World.
Moving back to St. Louis in 1986, Dean soon became quite familiar to theater audiences. He worked with Stages, The New Theatre, Theatre Factory, and The Black Rep. At The Muny, he played Mr. Cellophane in “Chicago” for which he received the Critics Theatre Circle Award for Best Supporting Actor in a Musical.
His favorite stage roles include Nathan Detroit in “Guys and Dolls”, Herbie in “Gypsy”, and the title roles in “Barnum” and the Yeston/ Kopit "Phantom." Dean has also done numerous radio and television commercials and is winner of the Marconi Award for Best Male Voice Talent.
In tribute to the kings of cool, Dean has developed an entertaining one-man show in classic Vegas style. He focuses on the music of The Rat Pack, Bobby Darin, and the like. Dean’s admiration for these singers inspired him to return to his roots as a night club/cabaret performer. “I still love acting, but producing my own show and numerous singing gigs keep me busy. I want to keep this music alive.” Dean also wrote the title song for his CD “Swingin’ with the Best”.
On a personal note, Dean is married with one daughter. “My wonderful wife of 35 years is Victoria Churchill, an actor/ director/educator. We met while performing on the Goldenrod Showboat. Our daughter, Julia Mackenzie, is a musical theatre major. She toured for 13 months with Sesame Street LIVE and has performed with STAGES. Poor kid, with a mom and dad in the business, she just couldn’t escape it.”
This past October, fans packed the Gaslight Theater Cabaret for Dean’s tribute to Dean Martin. He later appeared at The Sheldon to sing Sinatra tunes with the Route 66 Jazz Orchestra.
This holiday season, Dean’s Classic Vegas Christmas show will be performed on Friday, December 11, 7:00pm at the St Peters Cultural Arts Centre; and again on December 12, 2:00pm at the Wildey Theatre in Edwardsville.
