MUST-HAVES FOR MEN

Trending for the fall season is modern menswear designed in casual, relaxed styles. You’ll see traditional fall colors such as shades of grey, basic black, tobacco brown and classic navy blue. FABABS

I Know You’re in There

Think you can simply crunch your way to a flat, defined midsection? Think again. Obtaining the coveted “six-pack” begins in the kitchen.

We all have abdominal muscles. For many of us, the problem is that we can’t see these abdominal muscles because they are hiding underneath a layer of fat. Therefore, an overall reduction in body fat is necessary if you want to be able to see muscle definition in the abdominal area, and anywhere else. Sure, there are countless fad diets and supplements out there that promise to help you drop weight fast, but many of these are ineffective and unhealthy. The key to weight loss is simple- burn more calories than you take in. Excess calories, regardless of where they come from, are stored as fat. To lose weight, you will need to reduce your caloric intake, and increase your activity level. Increasing your activity level through adding more cardiovascular exercise such as walking, running, cycling, swimming, tennis, interval training, or any other activity you enjoy. Aim for 45-60 minutes of cardiovascular activity at least five days per week. You can also break these activities into shorter intervals, as long as you are getting the recommended 45-60 minutes.

In addition to reducing your caloric intake, and increasing your cardiovascular activities, there is an additional, and equally important component: Strength training. Incorporate strength training exercises into your fitness regimen at least 3 times each week. There are many strength-training exercises

that will strengthen and tone your abdominal muscles, as well as other major muscle groups. If you want to include crunches and sit-ups as part of an overall strength-training workout, by all means, do so. Just be sure to also include a variety of other exercises that engage the core muscles, which include the abdominal muscles, back muscles, and the muscles surrounding the pelvis. A great place to start- the Plank! If you are unfamiliar with what the plank position is, you can ask a trainer to show you the next time you are in the gym, or you can Google search for plank exercises. Plank exercises, such as cross extensions (while in plank position, slowly raise your right arm and your left leg, bring them down, and alternate to raising your left arm and right leg), and plank jacks (quickly jumping your legs in and out while holding a plank position), will help strengthen, build, and tone the core muscles, as well as other muscle groups, and they add a cardio boost as well. Aim to do 45-60 seconds of these exercises, rest for 15-30 seconds and then repeat one or two more times. If 45 seconds feels too long at first, start with 30 seconds and build up. Other exercises that engage the muscles of the upper back, the arms, and legs should also be a regular part of your strength training routine. The bonus of strength training -when you build muscle, you give your

22 | UPTOWN MAGAZINE

metabolism a boost. Therefore, even when your body is at rest, muscle burns a greater amount of calories than fat, so your body will burn more calories around the clock if you increase your lean muscle mass through strength training.

Do not give up when you aren’t seeing the changes as quickly as you would like to. If you expect to see results overnight, you are setting yourself up for disappointment. The purpose of this article is not to provide you with a set of exercises that will specifically target your abs, because you are far more likely to see the results you want, that is, see your abdominal muscles, if you focus on making permanent changes to your diet and making fitness a part of your lifestyle, you will begin to see the effects not only in your mid-section, but all over. As always, you should consult your physician before beginning any new diet and fitness routine,

In addition to reducing your caloric intake, and increasing your cardiovascular activities, there is an additional, and equally important component: Strength training.

and if you consider yourself to be a beginner when it comes to exercising, you will likely benefit from starting out with a personal trainer or coach. They will help you establish a variety of effective and safe cardiovascular and strength training workouts. Many personal trainers and coaches can provide nutritional advice as well, or you can also consult a registered dietician. Remember, fitness begins in the kitchen. Best of luck to you! Remember, it will take time to see results, but the sooner you make these changes to your lifestyle, the sooner you will start to see not only your abdominal muscles, but other muscles as well. Additionally, you will notice an increase in overall energy and improved feelings of well being even before you begin to notice the visible results. With the demands of everyday life, who couldn’t use a boost in the energy and mood department? UT

MIDSUMMER DREAM Wedding

Uptown writer Courtney A. Brown was married to Michael Rowan on July 18th. Theirs was a true midsummer dream wedding in every respect. Here’s how their story began.

PHOTOS

First, a bit of the couple’s background. Courtney was born and raised in Cincinnati, Ohio and later moved to St. Louis to attend Saint Louis University. She earned her B.A. in in 2007and her M.A. in Teaching from Fontbonne University in 2011. Upon graduation she decided to stay and make STL her home. Michael , a native of Jefferson City, Missouri, also came to St. Louis to attend college. He too decided to stay after graduating from Saint Louis University. Their stars seem to coincide in October of 2006. Courtney said, “We met each other through a mutual friend and attended Soulard’s Oktoberfest.” The rest is history and they became engaged on March 22nd, 2014 at Old Warson Country Club.

Courtney now teaches Gifted Kindergarten at Stix Early Childhood Center in the St. Louis Public School district. Michael received his B.S. in Finance from SLU in 2006. Today he serves as President of Huntleigh Advisors in Clayton, Missouri. Michael is the youngest of Lou Anne and Kenneth Rowan's four children. Courtney‘s parents are Patricia and Alan Brown.

Fast forward to July 2015 with the wedding plans finalized and ready.

Courtney and Michael’s wedding palette was infused with blended hues of coral pink and navy blue, popped with shades of white and sea foam. This summery color theme was inspired

UPTOWN MAGAZINE | 25

by, of all things, a dress! Courtney explained, ” A favorite dress of mine was my color inspiration- it's a navy and coral sheath that I've had for years. I still wear it because it has timeless style and the colors are very flattering. I love navy because it’s such a classic, deep and rich color. Coral screams summertime - my favorite season. It’s fun, bright, and cheerful and pairs so well with navy.”

Courtney’s bridal gown was from Brides By Demetrios in Brentwood, Missouri - an A-line gown with ruching on the front and a v neck. It featured cap sleeves, encrusted with an

intricate silver and pearl beaded design. The back was cutout, and trimmed with the same beading as the sleeves. The A-line skirt was layered in ruffles, and adorned with a floral sash at the waist.

The bridesmaid dresses came from J Crew.” I gave my bridesmaids four various designs to choose from in both long and short styles in chiffon. They could select either navy or coral.”

Wedding bouquets were displayed a variety of pinkish coral hues, with white gardenias. Courtney added, “Gardenias were my grandmothers favorite flower. They were included as my tribute to her.”

Crisp navy and white stripe patterns appear throughout. The groomsmen sported navy suits, white tuxedo shirts, and a variety of navy and coral patterned bow ties. Groom Michael also wore a navy suit with a navy gingham bow tie.

The wedding ceremony was performed at The College

26 | UPTOWN MAGAZINE

Church, Saint Francis Xavier. “We each had five attendants. Being an only child with no siblings in the wedding, I asked Michael's sister, Sarah Rowan, to be my bridesmaid. His brothers David Rowan and Nathan Rowan were groomsmen.”

The beautiful reception for 206 guests was held at Old Warson Country Club. Before dinner, cocktails were served outdoors in mid-afternoon sun. Soall the guests were issued sunglasses, attached with cute coral and navy notes reading "Sun Kinda Love."

Dinner began with the Club's signature Caesar Salad in a crisp parmesan basket, followed by a combination of Petit Filet and Jumbo Shrimp, paired with a twice baked potato, asparagus, and a pesto plum tomato.

The wedding cake was created by The Cakery. It consisted of lemon cake layered with strawberry fruit filling. It was frosted with rich vanilla buttercream in a floral motif with petal edges rimmed in gold - the perfect centerpiece for this Midsummer Wedding Dream!

The following Thursday, the couple left for a week-long honeymoon in Punta Cana in the Dominican Republic, staying at Chic, an all-inclusive, adultsonly resort. UT

CLAYTON

While it might be the business district of Saint Louis, Clayton certainly isn’t just for stuffy suits. Whether you’re a local looking to relax after working that nine to five or a tourist looking for a fun place to shop and eat, Clayton is a great place to spend your evenings year round.

The city hosts several events each month that are sure to please. For the social butterfly, Parties in the Park is a great opportunity to chat with friends and meet new people during the summer. Every second Wednesday through the month of September, Central Avenue transforms into the ultimate party spot, featuring live music and open-air cocktails. The event is free to attend, and local restaurants offer food and drinks.

Music lovers can head to Oak Knoll Park August 23 and September 27 for Musical Nights. Visitors can bring their own food and drink, spread out a blanket or lawn chairs on the grass and enjoy music from local artists. Country band Whiskey Morning is set to perform in August, and awardwinning musician Javier Mendoza will close the year’s

lineup in September.

For the art enthusiast, the Saint Louis Art Fair is a must-see. Artists from across the country display their work in ceramic, fiber, mixed media, photography and even metalwork. Children can explore their creative side in the Creative Castle, while adults can stroll the streets of Clayton and view the artwork and enjoy food and refreshments from local vendors. The event takes place 5-10 p.m. September 11, from 11 a.m. to 10 p.m. September 12 and from 11 a.m. to 5 p.m. September 13 in downtown Clayton.

Foodies can enjoy a number of events all year, from Food Truck Sundays every second Sunday during the summer in Shaw Park, or Clayton Restaurant Week. The Restaurant Week event involves several Clayton restaurants, which offer

special courses for one week only just for the event. Guests can stop by participating restaurants and enjoy food and drink at a discounted price.

If you find yourself in Clayton for the holidays, the city offers several special holiday events. Visitors can practice their figure eights in Shaw Park’s ice rink or take a carriage ride through the city streets. With light shows and champagne strolls, Clayton promises a fun time for holiday travelers. Check out claytonmo.gov/Special_Events.htm for details when the holidays hit.

The city is also unveiling a new event 1-5 p.m. August 29. Craft on Tap, located on Forsyth between Central and Meramec, will feature craft beer samplings from local brewers like O’Fallon Brewery, Earthbound Beer, Public House Brewing Company and more. Local indie talent Letter to Memphis will provide live music. Tickets are available for $35 online at craftontap.brownpapertickets. com, or for $45 the day of the event.

But Craft on Tap isn’t the only new addition to the city of Clayton. The whole city is looking toward the future. The 2010 opening of the Centene Building showed great promise for city development, when the building was completely leased after only 15 months. Now, the city has added new additions to the skyline with a new building at 8500 Maryland and at 25 N. Central. The new buildings will be a change from the offices that existed there previously and will offer retail spaces as well as residential areas.

African artist Steven Gregory’s piece, “One of Us,” depicts a bronze stylized elephant on a blue tricycle. The Chapman family and Barry-Wehmiller recently made a $7 million donation that will go toward park maintenance, but the majority of the donation will be used to build Shaw Plaza in the north corner of Shaw Park. Though the plans are still in the development stages, designs include an entryway complete with a fountain, garden and tables, as well as improvements to the crosswalk entryway to the park at that location.

Construction is expected to begin in early 2016.

Clayton area visitors also can enjoy a new concept in public space – a “parklet” on Central Avenue in front of BARcelona restaurant. Occupying only two parking spaces, the parklet offers 24-hour seating for passersby, or an outdoor eating area for surrounding restaurants.

One spot visitors will definitely want to hit to get their early morning sugar fix is Vincent Van Doughnut. Located on Central Avenue next to BARcelona, this local bakery serves fresh, home-made, high-end donuts starting at 6 a.m. Tuesday through Friday and at 7 a.m. Saturday and Sunday. The store closes once all donuts are sold, so head in early if you want to be sure to get your coffee and donuts before work.

Other new restaurants include Pizzino Pizza, an Italian eatery on Wydown that features freshly made pizza, panini, soups and salads. Or order delivery and get hot Italian

food brought right to your door. For an upscale dining experience, check out 801 Fish, a seafood restaurant located in Carondelet Plaza. Though it features a changing menu based on seasonal markets, restaurant-goers can enjoy caviar, a raw bar and shellfish platters with wine pairings and cocktails.

After dinner, shop around at one of the district’s stores and boutiques. For the perfect accessories, browse through Clayton Jewelers, located in Carondelet Plaza. The store offers in-house repairs as well as designer jewelry and watches, and if their wide selection doesn’t meet your needs, customers can create custom jewelry for that one-ofa-kind statement piece.

To dress up your house as well as your ensemble, visit Wilson Lighting on Brentwood Boulevard. This family-owned company helps you find that perfect accent to your home. The store boasts several different fully-

furnished showrooms, giving shoppers the full effect of the décor. Or check out Garden Party and David, a newlyopened business on Maryland Avenue that offers floral arrangements, home décor and even wedding planning. Want to look great for your anniversary cruise or find beachwear for your next vacation? Look no further than Crescent Coast in Carondelet Plaza. The store offers fashionable outfits for all ages to get you beach ready. Not only is it a great place to find beach clothing, but shoppers can also enjoy refreshments and watch the Cards play on the store’s television in a complete shopping experience. From jewelry shopping and fine dining to parks and summer festivals, Clayton offers much more beyond the office space. Traffic on the streets may be heavy during rush hour, but after hours the Clayton district keeps its sidewalks bustling with people who don’t want to leave the excitement. UT

Art Fairs in St. Louis!

St. Louis loves art. Not only do we have a FREE art museum, the City Garden and Laumeier Sculpture Park, universities and churches and art galleries which open their doors to patrons and offer collections, both contemporary and noncontemporary, we even have a dog museum! When September comes around, local towns have fall festivals which feature artists displaying their work along with other fair activities. In Clayton and in Maplewood, we have two very special Art fairs, the St. Louis Art Fair and Schlafly Bottleworks “Art Outside” . The only negative feature of these two marvelous fairs is that they occur on the same weekend, Sept 11, 12 and 13th but the good news is that you can attend both while you are in that “artsy” mood! Both are free!

This is the 22nd year anniversary of the St. Louis Art Fair which is brought to us by Cultural Festivals, a non-profit organization. The fair takes place in Clayton’s business district and exhibits fine art, live performances, activities for children and showcases some of the top restaurants, with crowds of approximately 130,000 people. The Art Fair also includes local not-for-profit

art organizations who are able to display their wares for extra income. According to Greg Lawler’s The Art Fair Sourcebook, the Saint Louis Art Fair was ranked in the top ten art fairs and festivals in the nation! This year, 145 artists are selected from a jury pool of approximately 1,300 applicants. Categories of art exhibits are ceramics, drawing and pastels, fiber, glass, jewelry, metalwork, mixed media,

painting, photography, printmaking, sculpture and wood.

St. Louis Art Fair’s jurors this year are Baltimore’s photographer Christos Palios, sculpture character artist Kina Crow from Pittsburgh, Liz Lidgett from Des Moines who is an art advisor and curator and appraiser, our own Nancy Newman-Rice the Eleanor Lawler Pillsbury Professor Emeritis of Art at Maryville and Stephen Wicks from the Collections and Exhibitions Department of the Knoxville Museum of Art who travels as a guest curator, juror lecturer and writer.

Free parking is available at certain garages and surface parking lots in Clayton and the meters will be free starting Friday morning. Check out the bus and Metrolink!

Schlafly Bottlework’s art fair is called “Art Outside” and features art from over 50 contributors based here in the St. Louis area! Not only can you enjoy the work of the local artists, but local bands, local food and of course, locally made beer! Started in 2004, Schlafly decided that as a successful, artisan local brewery specializing in making craft beer, they would focus on helping to promote other St Louis area talents. Giving a venue to less main-stream artists, while offering food and introducing their tasty beers and ales, has been highly successful and a great

boon to the community. The flavor of the fair is more colloquial with fewer attendees than the St. Louis Art Fair, the art is more affordable then Clayton’s and perhaps a more relaxed atmosphere. You will likely get a chance to talk to the artists and discuss their work one-onone which is a great bonus. Art Outside also has jurors judging the works.

This year’s jurors are Angela Malchinonno who works in drawing, print and print media and teaches at Washington University, sculpture and found object artist Sarah Frost, Sara Hale, Claire Richardson, Ron Buechele, who is an artist and former police officer and owner of the Mad Art Gallery, Ben Jones and Ryan Frank.

When arriving, watch the parking signs in Maplewood. The city has plenty of side streets and lots. Once again, take advantage of the bus or car pool.

How lucky we St. Louisans are that we can experience two distinctly wonderfully different art venues on the same weekend! So go out and appreciate what St. Louis has to offer! For times and further information: St. Louis Art Fair see web site www.culturalfestivals.com and for Schlafly’s “Art Outside” see http://schlafly.com/ events/calendar/2015/09/11/art-outside/. UT

MAPLEWOOD

THE NATION’S FIRST GREEN DINING DISTRICT

Maplewood is quite a place to discover these days with offerings from great events to shopping excursions to experiences at award-winning restaurants. Dining at one of these fine establishments is indeed a great pleasure but while you are inevitably going to be enjoying a fine meal, it may make it taste even better is to learn about that many of Maplewood’s restaurants are St. Louis Earth Day’s Green Dining Alliance (GDA) members.

The GDA developed member practices to include banning indoor smoking, not using Styrofoam products; participating in Single Stream Recycling; phasing in CFLs and/or LEDs; and setting waste reduction goals. Maplewood became the nation’s first Green Dining District when 25% of the businesses joined the GDA. The area stood out as a natural model for a district

with a high walkability score and concentration of independent businesses in the 7200 and 7300 blocks of Manchester and the 2700 block of Sutton.

You can take your own self-guided tour of the Green Dining District with our digital tour guide available at cityofmaplewood.com/gdd. But let’s take a quick tour of the

district now starting with Schlafly Bottleworks, a longtime supporter of St. Louis Earth Day’s GDA. The Schlafly Bottleworks is a beehive of activity that includes the Schlafly Farmers Market. Of course, there’s lunch, dinner and beer.

Water Street Café is known for its delicious food and specialty cocktails. The establishment is family owned and operated. You will often find Water Street’s chef at the Schlafly Farmers Market.

Nationally recognized, award-winning chocolate, need we say more? Kakao Chocolate is home to famous sea salt caramels but they have an entire store filled with delicious confections often made with products from area businesses.

Foundation Grounds serves organic food made with love. Breakfast and lunch menus are available in this friendly neighborhood coffee shop.

Great Harvest Bakery offers hearty flavorful breads made fresh daily. The bakery partners with many local businesses and you will find delicious combinations of ingredients baked into their products.

The Post Sports Bar is an award winning sports bar that has embraced sustainability. The Post serves their fare in a vibrant atmosphere lit by LED lights.

While you sip delicious teas, hot or cold, you should know that Traveling Tea has a GDA 5-star rating which means an exemplary performance for enhanced sustainable practices. What’s fresh and in season? Whatever the time of year, Pie Oh My! is baking it into a pie. Sweet and savory, you will find mini pies to quiches to pot pies.

The newest member of the Green Dining District is Stone Spiral Coffee and Curios. They serve wonderful locally roasted coffee and a menu ranging from beverages to baked goods and savory offerings. There’s always something going on here whether it’s a coffee meet-up or live music.

Sustainability is a thread that weaves through many other Maplewood businesses. The architectural firms of Hellmuth-Bicknese Architects and the Architectural Design Guild utilize green building criteria. Cowell Engineering is an active member of the Missouri Gateway Chapter of the US Green Building Council and supports sustainability practices in their field. Shur-Way Auto Body is the first "green" body shop in the Midwest. Shur-Way has been using environmentally safe products since 2007, they are constantly pursuing better performing and safer products to stay on the cutting edge. You will find them at 3540 GREENwood, that should be easy to remember! UT

STAYING POWER

Classics That Never Go Out Of Style

Here we present ideas for a timeless look that will stay in style forever. Your home need never look outdated if you add the right art, antiques or traditional pieces, lighting fixtures, rugs and window treatments. Here are designs, styles, materials and colors considered to be classic, and sure to leave a lasting impression.

For this project, the homeowners wanted to create a modern state-of-the-art showpiece kitchen in a truly historic and nationally celebrated home. Known as the childhood home of American literary icon T.S. Eliot, this 1910 Federal Revival home is registered as a national historic site. The homeowners were particularly mindful of this special legacy and wanted to respect the home’s heritage, while updating the interiors to function in the 21st century. To fulfill this goal, motifs, details and materials from other portions of the house were replicated and incorporated into the design.

ROCKY MOUNTAIN'S Estes Park

My father had tales of life on the Colorado drylands where he could see beyond the wide prairie to the blue and white Rocky Mountains in the distant western sky. Not till he was in his twenties was he first able to see the magnificent rocks, towering pines, rivers, lakes and wildlife in Estes Park that were previously only in his imagination.

Around sixty years before Dad saw Estes Park, Joel Estes officially settled Estes Park in 1859. Others soon followed due to newspapers and photographs which vividly depicted the incredible scenery, bountiful hunting and plentiful fishing which seductively drew a dude ranch, cabins, and endless tourists.

Estes Park is nestled at the edge of Rocky Mountain National Park above an area which has grown to be called the Front Range. This is the land at the foot of the eastern side of the mountains from Cheyenne down to Pueblo, including such cities as Denver, Ft. Collins, Loveland and Colorado Springs. From St. Louis, United, American, Frontier and Southwest easily fly to the Denver Airport and Estes Park is only approximately 85 miles or so away. Driving from St.

Louis, you only have a few turns! Go 70 west to Hwy 25 that goes north along the Front Range and turn left on Hwy 34. The drive is amazingly easy until you get to the Rocky Mountain curves and canyons along the Big Thompson River so make sure your vehicle has power and excellent brakes!

The summer is crowded with tourists unlike the higher elevation towns which have the most visitors in the winter, packed with skiers. Souvenir stores, taffy, candy, eateries and boutiques line the main drag so parking can be a challenge, restaurants can be full, camping and lodging unavailable unless you plan ahead! Make your dinner and lunch reservations when possible. Of course, book your accommodations well in advance. Camp or RV spots included! Also, reserve horseback riding, tram

48 | UPTOWN MAGAZINE

tickets, or an other activities that you might enjoy to guarantee you have space.

No matter what kind of activities you and your family prefer, you will find something fun to do in Estes Park. Shopping, exploring the trails, taking the tram which takes you to Prospect Mountain where you can befriend chipmunks, greet elk and deer which will actually walk down the mountainside. Visit the town, and, of course, fishing, horseback riding, mountain biking and rock climbing. Drive into the park and see mountain goats, sheep, otters and incredible vistas. Take a tour! Private and customized wildlife and nature tours and safaris of all kinds are offered! Birdwatching, wildflower walks, photo safaris, hikes and in the winter, snowshoe trips might be your style. Fright Nights with campfire and s’mores, catered BBQ’s for groups, and treasure hunts, llama pack trips can be unforgettable experiences with tour companies who offer unique ways of seeing this beautiful country. Rocky Mountain National Park is open 24 hours a day year round and you can enter or exit at any time. (If you spend the night, it must be in a designated campground site with a valid permit.)

No matter how hearty you may consider yourself, one can easily overlook the effects of being way higher in the sky then you were in St. Louis! You are well above 8,000 feet. If you have watched a Rockies/Cardinal game you will know that the hit balls will travel farther in Coors Stadium. The air is thinner and the ball has less resistance. So do you. You have less air to breathe, depending on where you live. You could be breathing half of the air that you do at home when in the mountains. Driving up through the Rocky Mountain National Park, you can have the shortness of breath, feel dizzy, nauseous, and very tired. This is altitude sickness and along with the dry air which can give some folks nose bleeds, you really need to pay attention. Stay hydrated and make sure you have lots of bottled water or water containers that you can constantly refill when you have the opportunity. Protect your skin as you are closer to the sun!

Accommodations are everywhere! Cabins, retreats and cottages line the Big Thompson Canyon which leads up to Estes Park. Hotels, motels, campgrounds and RV parks are abundant with local supply stores along the way. You most likely have heard of the Stanley, the impressive century old white mansion-like hotel which has been featured on most supernatural investigating TV programs. The Stanley was Stephen King’s inspiration for the “Shining”.

The YMCA of the Rockies is a well-established familyfriendly retreat that welcomes groups, individuals, families and offers a variety of activities, clubs, crafts and plenty of things to do right on the property. Not only is it a great place to stay, the Y offers summer jobs away from home and great training for those about to leave the nest!

Estes Park is awe-inspiring. We go because of the natural beauty, reminding us of our choices, of how we live, the serenity of the forest, majesty of the mountains and the connection we have to all of life and the responsibility we have to our own environment. Estes Park will bring closer to yourself, to the earth and maybe expand your view in more ways than one. UT

LENTIL & BBQ CORN SALAD WITH CILANTRO LIME DRESSING

In-Home Culinary Classes

INGREDIENTS:

• 4 cobs of corn, (3½ cups kernels)

• 1/2 cup dry, whole, black caviar lentils, rinsed

VickiBensinger

at home with In-Home Culinary Classes

I’ve never been a fan of lentils. However, I changed my tune after being served Canadian Lentils at a culinary conference in March – devouring a plateful. For years I avoided this tiny grain legume without further investigating other recipes, because of an awful bowl of soup I had eaten. So upon returning back to St Louis, I purchased a package to prepare.

Unlike beans, lentils do not require presoaking – just rinse and pop them in water. Lentils come whole or split. Typically for every cup of whole lentils, add 2½ cups of unsalted water. This will yield 2½ cups of cooked lentils. Split lentils only require a 2 (water) to 1 (lentils) ratio, yielding 2 cups of cooked lentils, and less cooking time.

It’s important to use unsalted water, since salt hardens and toughens lentils.

Lentils are high in folate, potassium, iron, manganese, fiber and complex carbohydrates, while they’re low in fat and calories. They’re naturally gluten-free, and have a low glycemic index. Plus their resistant starch content makes them suitable for a diabetic diet. Since they’re high in protein, it makes them stellar for those with an active lifestyle, and heart smart too, since they’re naturally low in sodium.

I hope you’ll try this Lentil & BBQ Corn Salad with Cilantro Lime Vinaigrette – it’s outstanding, but don’t stop there! Start replacing lentils in other recipes you prepare calling for rice & other grains. You’ll be amazed how it transforms each dish.

• 1 cup (1 medium size) red bell pepper, diced

• 2 Tbsp. green onions, sliced

• 1 Tbsp. jalapeño pepper, minced, seeds removed

• 4 Tbsp. lime juice

• 1 Tbsp. lime zest

• 3 Tbsp. fresh cilantro, chopped

• 2 Tbsp. canola oil

• 1/2 tsp salt

• 1/2 tsp fresh black pepper

DIRECTIONS:

1. Preheat your grill to 400°F.

2. Place rinsed lentils in 1 1/4 cups boiling water. Immediately turn heat down to a simmer and place lid on pot leaving a slight opening for venting. Simmer for 20 minutes. Remove from heat. Lentils should have a slight bite to them - not too soft. Place over strainer to remove any excess liquid. Allow to cool.

3. To prepare corn, rub with oil, and season with salt and pepper. Set on grate and cook over medium heat with BBQ lid down for 15-20 minutes turning every 4 minutes. Remove from grill and set aside to cool. Once cool enough to handle, cut off kernels. Toss kernels with lentils, peppers, and onion.

4. In a small bowl whisk jalapeno pepper, lime juice and zest, cilantro, canola oil, salt and pepper together and toss with corn and lentil mixtures.

5. Serve warm or cold.

Notes:

• I used black caviar lentils but green or red lentils would work as well.

• It's best to use whole lentils for salads rather than the split lentils. The latter are best for pureeing.

Anne-Marie Berger Senior Producer/Director at KETC-TV

Hers is a familiar voice and face on St. Louis’ Nine Network (Channel 9) KETC-TV. Anne-Marie Berger is the creative talent behind many of its most popular programs including, D onnybrook , L iving S t L oui S , and S taytuneD .

Anne-Marie produces Nine’s popular series American Graduate, a public media initiative addressing the dropout crisis. She explained, “It focuses on issues and solutions affecting the success of youth in our region.”

Her other productions include Your Stories: St. Louis Remembers World War II, and the documentary Start to Finish: Running the St. Louis Marathon. She commented, “By far my largest project was Homeland, a three part series focusing on immigration in America. It aired nationally on PBS.”

Born and raised in Des Peres, Anne-Marie attended St. Joseph’s Academy and graduated with her B.A. from Loyola University in New Orleans. She went on to earn her Master’s in Media Communications from Webster University.

Anne-Marie explained, “Directly out of college, I was hired as an Associate Producer for WYES, the PBS member station in New Orleans. A few years later, a producer opportunity opened back home here at KETC, so I applied. I can’t believe this August will mark my 15th anniversary at Nine!”

As television producer, Anne-Marie is in full charge of processing her shows. “Donnybrook allows me to have fun in the control room and Living St. Louis gives me the opportunity to get out into the community, meet some amazing people and visit parts of our region I’ve never seen.”

Her hands-on approach to projects has put her literally in the cockpit. “I’ve had many opportunities to participate in once in a lifetime activities because of my career at Nine. Years ago I flew in the Red Baron stunt plane- upside down and nose diving to the ground. Following that thrill, The St. Louis Soaring Association took me for a ride in a glider at 3000 feet altitude. But the absolute coolest experience was when I flew out to the USS Stennis in the Pacific Ocean. My photographer,

Scot Page and I landed on the aircraft carrier and where we spent 36 memorable hours. The funny thing is, I actually have a slight phobia of flying!”

Reflecting upon her friend Martin Duggan of Donnybrook fame, Anne-Marie said, “Having the opportunity to work with the late, great Martin Duggan on Donnybrook was truly a gift. Martin exhibited that perfect combination of professionalism and wit. His experience trumped mine by decades and quality, but he treated me as an equal, respected me as a director, and gifted me a cherished friendship. Martin Duggan was a legend in his own time.”

Anne-Marie has received nine Mid-America Emmy® awards and a National Association of Black Journalist Salute to Excellence Award. She currently serves as the Executive Vice-President and the Awards Co-Chair for the Mid-America Chapter of the National Academy of Television Arts and Sciences (EMMY).

This busy lady still manages to enjoy family life. Anne-Marie resides in Maplewood with her husband Cesar Moreno and their three year old daughter Sofia. “Nothing is better than time spent with my family. When you have a three year old and work a full time job that requires irregular hours, quality time with my little sidekick and husband rank high on my lengthy to-do list.”

Yes, Anne-Marie may sometimes be flying high, yet she remains St. Louis’ down to earth hometown girl. UT

The first and only doughnut food truck in St. Louis now has a store in Clayton at 40 N. Central Avenue. Vincent Bryan Marsden began creating doughnuts in his home in 2010. With the encouragement

of family and friends who served as original taste testers, Vincent, his brother-in-law Will Saulsbury, and his father Bill Marsden formed Vincent Van Doughnut, and purchased their food truck, Clyde, a 1960 Grumman Olson. You may recognize Clyde from Food Truck Friday’s, or from outside The Pageant after shows, or possibly from Cooking Channel’s Donut Showdown, where Vincent Van Doughnut earned the title of Premiere Winner in season two. Due to the growing popularity of the doughnuts, the company opened their first brick-and-mortar location in March of this year. These doughnuts, handmade from scratch each day, are truly edible works of art. Tantalizing flavors, such as Cheesecake Cookie Crumble, Chocolate with Coffee, Vanilla Mascarpone with Raspberry, and Lemon Lavender will satiate a variety of palates. If that hasn’t quite piqued the interest of your sweet tooth, the shop also offers a variety of home made pastries, including home made pop tarts. If you prefer savory to sweet, Vincent Van Doughnut has the perfect muffin for you. “The Rebel Within” is a muffin that combines bacon, shallot, and mixed cheese, with soft-boiled egg in the center. Other muffins are also available, with flavors changing on a rotating and seasonal basis. Want to improve your status around the office, or become an instant favorite at the next event you host? Vincent Van Doughnut offers delivery or pick up for events and parties. Can’t make it to the store? No worries- Clyde will deliver fresh donuts to you. The store is open at 6 am Tuesday-Friday and at 7 am on Saturday and Sunday, and does not close until the last donut is sold. Once they’re gone, they’re gone…until the next day’s freshly made batch is up. Visit the website at www. vincentvandoughnut.com, or call 899-9500 for more details.
