My view is that members of the Cermac Consortium, whose products and technologies are present in almost all of the world’s markets, have risen to this challenge for some time. Cermac brings together companies that have focused on quality, innovation and product personalisation that responds to clients’ more varied requirements, their aim being to offer solutions both in countries with projects to modernise the fresh produce system (from the planting of trees right up to product storage and packaging) and in more advanced countries where state-of-the-art technology can respond fully to the levels of productivity and quality that buyers and consumers demand. We are firmly convinced that ‘technology bears good fruit’ and that the goodness of those products on our tables is the direct result of research carried out in nurseries, care taken with trees and plants, selection of harvested product, storage with absolutely no chemicals and, finally, packaging that offers enhanced protection. Fresh fruit and vegetables sales will grow when shoppers are able consistently to buy the best quality, and that means growers and others in the supply chain must choose post-harvest solutions that can help them achieve this goal. This is the key message that Italy’s leading suppliers of post-harvest technology solutions needs to be learned by the fresh fruit and vegetable supply chain. Where investments have been made in these technologies higher fresh produce sales have resulted. “If Italy is to grow its exports over the next several years then growers need to understand that we can only do so by ensuring we deliver the very best quality fresh fruits and vegetables,” said Paolo Bruni, president of CSO, the organisation that unites many of Italy’s most important fresh fruit and vegetable producers. “Our technology sector is among the finest in world, it’s just that our growers need to recognise the impact these technologies can have on their future prospects.” Bruni was speaking at Expo Milano 2015, the World Fair which took place in Italy’s commercial capital under the theme of the world of the future and attracted many millions of visitors in the few months its doors were opened through the summer and autumn. He was one of a series of senior fresh fruit and vegetable industry figures to meet in Milan at a technology seminar hosted by Cermac, Italy’s association of leading fresh produce technology manufacturers.

The chief executives of leading companies such as Unitec, Graziani, and Fruit Control Equipments, as well as the packaging specialists Infia, say producers across the world who have invested in their technology systems are now reaping the benefits. For example, Chile’s leading cherry growers have seen their sales boom thanks in part to their invested in sophisticated post-harvest grading technology supplied by Unitec which has helped them supply the best fruit to quality-conscious buyers in China; Fruit Control has supplied state-of-the-art controlled atmosphere systems to apple growers in India who are now better able to market their fruit at the top of the market; growers have invested

Italy’s leading fresh fruit and vegetable producers recognise the requirement for investments of this sort. They admit that their sales have lost ground to their competitors in the last two decades because they have not been as quick to modernise their supply chain infrastructure. Among their major European rivals, it is in Spain where the lessons have been learned more quickly; and Italy has seen its export share suffer as a result. At the same time, large grants from the European Union have helped the newest member states such as Poland to modernise their production sector, giving them a competitive edge over the Italians too. “Italy needs to grow its sales in new markets,” CSO president Paolo Bruni told Cermac’s quality-through-technology seminar. “It’s our mission in the coming years to grow our sales substantially abroad. In Italy we’re very fortunate to be able to count on the support of some of the world’s leading suppliers of the best fresh produce technologies. It’s high time we made more use of them.”

The post-harvest sector is often under the

magnifying glass of mass media and public opinion as a result of fraud, adulteration and counterfeiting in the food business. Unfortunately, this always has a negative impact on the business. Yet it hides the fact that, beyond these regular scams, food all too often continues to be treated with chemical products, sometimes with little regard for the health of the final consumer.

In the last few years, while products used for decades and regarded as toxic have been banned, others have been introduced that have the ‘advantage’ of delaying or even blocking fruit’s ripening process. This has made producers and exporters very happy, because the aesthetic quality of their products is unaltered, but much less so consumers who want fruit that is healthy and really know about fruit. All of which, at times, leads to disaffection among consumers, who, once they’ve bought a product that is lacking in flavour, won’t buy it again because of that initial ‘swindle’. In the past 15 years, our company has been working to introduce techniques that allow fruit to be stored without the use of chemicals. Such techniques are related to the use of controlled atmosphere, namely the variation of gas percentages inside rooms used to store such products. By removing almost all of the oxygen – doing so entirely is impossible – and dynamically controlling all of the gas levels (oxygen, carbon dioxide and nitrogen), it’s possible to extend storage times just as you would by applying chemical products. This application, known as dynamic controlled atmosphere (Swinglos®), allows apples, for example, to be stored for more than 10-11 days in perfect conditions and using less energy than other technologies do. By using the Swinglos® protocol, the fruit itself develops a protection against the most common physiopathologies, thus avoiding deterioration of the fruit and allowing it to ripen at the desired rate. The Swinglos® system, which is the result of our company’s research and experience, has been successfully applied thousands of times in many countries of the world. It means the real taste of an apple, a pear or a kiwifruit is preserved, eliminating any doubt about having bought a product that is only visually beautiful and attractive, but lacking in flavour. Our mission, in this case, is to make the products less of a burden (by which we mean use less in terms of raw materials), while at the same time increasing levels of mechanical durability. The goods themselves are travelling more and more frequently from one part of the world to another, at an increasingly frantic rate and on journeys that are becoming more and more stressful. In the same way, this packaging shouldn’t end up being particularly heavy or cumbersome. For our work, this is fundamental. During these last few years, on specific demands for cornerboards and strapping, we have succeeded in reducing the use of materials by as much as 30 per cent, at the same time increasing their performance in terms of mechanical strength by the same margin.

INFIA Keeping a lid on things by Matteo Camillini

Amid tough trading conditions over the

past year, Italian fresh produce packaging specialist Infia has delivered a notably robust performance. Here, the company’s commercial director in Italy, Matteo Camillini, explains how it is approaching the current market. While the past year has not been easy for the packaging sector, Infia was poised to close 2015 in the black: during the year’s first ten months of trading, we registered a significant increase in turnover compared with the same period of 2014, despite what I would describe as ‘turbulence’ caused by the cost of raw materials cutting into profits, particularly in June and July. However, it seems, being able to sell to customers in more than 80 countries around the world has certainly helped us keep a lid on that phenomenon. Italy is among the world’s leading countries when it comes to producing fruit and vegetables, but for some time now in meetings with clients, be they small or larger in terms of structure, we often get a very negative impression: low prices aren’t even enough to cover the grower’s cost, fresh produce consumption is falling and there’s an excessive dependence on promotions, not to mention the lack of a level playing field caused by imports from countries where legislation and costs are very different. Fortunately, however, we do encounter some very professional cases where, thanks

to the productive and commercial choices they have made, the companies have managed to free themselves from the simple logic of selling on price. What characterises all of these producers, what they share, is basically an ability to differentiate themselves: they are able to marketing existing brands and geographical designations or even to create new ones that, in a short space of time, have found a strong appeal in the market. These examples of success are sometimes linked to varietal innovation, but far more often they are based on an ability to supply valuable products that are easily recognised by the end consumer: anyone who buys a good product for the first time at the point of sale will almost always return to buy it again. So the possibility of having an easily recognisable brand becomes a strategic variable in the campaign’s success. At Infia, we believe there are still a lot of Italian products that – as we often hear repeated at various industry conferences – could offer the fresh produce sector real wealth if they are marketed as they ought to be. Taking the notion of homologous produce as a starting point does not pay; they need to bring out the distinctive characters of what they are selling on the market: the quality, the history of those who create the product with passion, its beneficial properties and naturally its excellence. Our success over all these years has been based on a capacity to create products en masse, but above all to be able to offer those innovative, useful solutions to clients first and enable them to

differentiate themselves in the market. All of this is done through branding, by applying a logo on the punnet, or simply by using new types of punnet that have revolutionised the way in which the fruit is presented. There are dozens of examples we could point to, from the first punnets with bubble wrap to those that allow a single-layer of strawberries, or the clamshell style of punnet and much more besides. Our efforts, meanwhile, are all focused on creating quality packaging that can be personalised and customised, so that they can convey and promote the product’s uniqueness and ‘dress’ it adequately to create the additional value it deserves. This is why we continue to invest and build our pack range, allowing them to be customised with printing, labels and handles made from the same material. Direct printing on the punnets is a technology that adds enormous value because it allows you to place your own brand directly on the consumer’s table or in their fridge. We can supply punnets with labels applied to the sides or the lids. Among other things, we are the only company that produces and sells punnets with handles that don’t contain metal staples, something which is more in keeping with the fresh produce contained within, as well as being completely recyclable. _C

Sorting and grading

UNITEC How can you add value to the fresh produce supply chain? by Angelo Benedetti

For decades, many fruit producers focused

their investments almost exclusively on increasing per-hectare yields and on research into new varieties to attract the consumer, with the natural aim of increasing returns.

In my view, boosting returns is possible and indeed the right objective, but it can be achieved via other new routes that lead us to shift the focus of our attention away from our product and towards the end consumer, in as much as they are the one that really benefits from our work. The real issue centres around a need to change the strategic vision at the heart of the fresh produce sector. A change that will firstly lead us to understand the various requirements of different types of consumer, and consequently to develop a quality, coherent and varied offer that responds to those different needs and cultures.

In a word, when it comes to quality, it’s all about differentiation.

Differentiating on quality means offering product categories that have been designed on the basis of specific target consumers’ requirements. Offering products of differentiated quality means offering the right product to the right target, to the right consumer. For example, it’s only by offering fruit with ‘perfect’ shape and colour that we can provide the right answer to those who want to create a centrepiece using fruit that is aesthetically excellent; and only by offering fruit that is ready to eat in three days, or between two and four, that we will satisfy those who don’t do their shopping every day. It is through this new approach that we can create conditions that satisfy the consumer and maintain that satisfaction in the long term, laying the foundations for strong customer loyalty and restoring the market’s faith, thanks in time to a quality, coherent offer.

How to achieve better quality? To address the issue at hand, therefore, we believe that technology – and in particular technologies that allow you to select in terms of quality – can be an important tool for fresh produce companies, bringing about this strategic change in order to satisfy consumers in the long term.
