The Filipino diaspora has turned overseas Pinoys into “food ambassadors,” and nowhere is this more apparent than in Dubai, an international expat city in the region where restaurants have opened, rolling out Philippine cuisine on the spread to the delight of the locals and people of other nationalities, Alejandro Castro, executive head chef at OSH Restaurant in La Mer said.
“The migration of Pinoy nationals is something that has happened for a long time, and I bet there is no single country where there isn’t a Filipino community. That’s a way of exposing your cuisine, your flavours to the rest,” Chef Alejandro told Food Trip Magazine.

DUBAI, United Arab Emirates: Saying it’s better to run his own business than be an employee all his life, an overseas Filipino worker (OFW) here, skilled in the physical aspects of setting up a restaurant, has opened a kiosk specializing in grilled chicken offals, including the popular Pinoy street food, isaw – or chicken intestines – where he sells not less than 2,000 sticks a night.
“Katulad ng marami sa atin, sinawaan na rin akong mangamuhan,” 37-year-old Bryan Valencia Pantaleon, who holds a degree qualifying him to be an industrial electrician, told GMA News Online.
(Like many Filipinos working abroad, I also got tired working for other people.)
“Pag namamasukan ka kasi, kahit anong sipag mo, hanggang duon lang din ang kikitain mo, company ang yumayaman,” Pantaleon, a graduate of Bataan Peninsula State University (BPSU), added.
(You’ll never earn enough no matter how hard you work when you’re an employee, only the company gets rich.)
Hailing from Bataan, Pantaleon arrived in Dubai in 2012 on an employment contract, and worked as a general maintenance technician, doing everything from installing electrical lines to air conditioning, carpentry and plumbing at brand name dining venues across Dubai.
Thereafter, he started freelancing while running a commissary kitchen.
‘Inihaw King’
“But as you get older, you’d realize you need to be practical and try other fields. This way, you will learn that comfort and peace are more important,” Pantaleon, who lives with his wife and a five-year-old son in Dubai, said in a mix of vernacular and English.
And so, the decision to open an eatery,
which he named “Inihaw King” (Grill King) and is currently among popular food stalls at the ongoing Rigga Night Market in Deira, north of Dubai.
The kiosk offers everything from grilled chicken head to chicken feet and everything in between like neck, heart, liver and gizzard, among others – just like home. Isaw is the bestseller.
“Sa isaw pa lang po, di bumababa ang benta ng 2,000 sticks every day, pwera pa po yung ibang parts,” Pantaleon said. (Chicken intestine sales don’t go less than 2,000 sticks a night – and that’s excluding other chicken parts.)
Pantaleon said they added other specialties – Gotong Batangas and Lomi Batangas. “Nilakasan ko lang loob ko sa tulong na din ng mga kaibigan kong nasa food industry. Naging successful naman, laging sold out every day,” he said.
Teams
Inihaw King employs seven people, divided into teams with different tasks.
“Almost 24 hours ang operation namin. Sa night market, open kami ng 4:30pm to 2am, pero ang staff pumapasok na sila ng 3pm at nakakauwi ng 4am – paid overtime naman yun syempre.
“Ibang team pa ang sa preparation ng inihaw, maghapon silang nagtutuhog at inaabot pa hanggang gabi; at ibang team pa din ang sa sauces. Yung sauce, wife ko na gumagawa nuon with the help ng kasambahay namin,” said Pantaleon.
(It’s an almost 24-hour operation. We are open at the Night Market from 4:30pm to 2am, but the staff are already there by 3pm and they go home at 4am – of course, they are paid for overtime work.)
(There’s a different team for preparation, and they work all day, sometimes till early evening, putting the offals in sticks. There is another team for the sauces, which my wife handles with help from our housemaid.)
The chicken offals are collected from suppliers across the UAE, Pantaleon said.
Success
This is the second time Pantaleon has participated in the Rigga Night Market, which opened last month for its third year running.
“Naging successful naman kaagad. Napagsama ko ang specialty ko sa heavy kitchen equipment at ang galing ng wife ko sa pagluluto,” Pantaleon said. (In no time, our stall was a success. I was able to fuse my specialty with heavy kitchen equipment and my wife’s cooking skills.)
“Salamat sa Diyos, at sa mga kaibigan ko, at sa wife ko, dahil sa support nila masasabi ko po ngayon ok na ok naman ang business,” Pantaleon said.
(I am thankful to God and all the people around me, including my wife. Because of their support, I can say that the business is doing very well.)
Pantaleon said they have been looking for place to set up their own restaurant. “Wala akong makitang maayos na puwesto, may maayos man, hindi naman practical – mahal, business-wise,” he said.
(We could not find a spot that fits our requirements; others are too expensive, business-wise.)
He said he will keep his commissary kitchen running and do freelance interiors and maintenance work. “Pahinga muna ang F&B (food and beverage) business during the summer,” he said, not discounting a return to the Rigga Night Market when it reopens next year.
(I’ll give our F&B business a rest during the summer next year.)
There are 21 food stalls and 40 clothing retail outlets at Rigga Night Market, which enjoys a footfall of up to 4,000 people on a regular day, organizers said. It will run till May 31 next year.

AFilipina architect, who tried her luck in the city on a visit visa years ago, and now runs her own firm with major projects under her belt, has ventured into something new but familiar – gastronomy.
“My family loves eating out, and we also design food and beverage (F&B) restaurant projects,” Evangeline M. Monjardin, who hails from Imus, Cavite, told GMA News Online.
This at hand, Monjardin did the next best thing there was to do: “I aspired to have a restaurant of my own.”
And so was born Desert Wok, an IndoChinese fusion dining venue in Jumeirah Village Circle, a gated community south of Dubai.
“Hindi ako nakiki-alam sa loob ng kitchen during cooking. Pero ako ang nagtsecheck ng quality of food naming, pati timpla ng sauce. I’m on the operations side,” Monjardin said.
(I am not involved in the actual cooking but I check the quality of food, including its mixture of sauces.)
House bestsellers, she said, include sweet and spicy Crunchy Beef, Chamba Chicken, a semi-dry dish with cashew nuts in sweet and chili sauce, and a range of Hakka Noodles – stir-fried and available in different styles like Shanghai, Cantonese and crispy chop suey.
Franchise
Apparently capitalizing on Dubai being an international expat city boasting a melting pot of various cuisines from around the world, Monjardin said she
is looking at expanding her restaurant business.
“We are working on expanding to more branches and having the restaurant out for franchising,” Monjardin said.
She added: “Dubai is popular for having a vast variety of international cuisines – from street food concepts to fine dining gastronomic experiences. Eating out is an essential part of Dubai’s busy life, either going on a meeting in a cafe or having a weekend brunch with family and friends. So, the F&B sector keeps developing new ideas that will cater to everyone’s need.”
Desert Wok, which has up to 15 employees, has a dining area that can accommodate 20 customers. It also does takeaways and deliveries.
“Around 65 to 70 percent of the sales is from deliveries,” Monjardin said.
Beginnings
Monjardin, a graduate of Far Eastern University (FEU) with a degree in architecture, arrived in Dubai on June 28, 1995; brought to the city by his father, who himself is an architect.
“My father took me to Dubai so I could support our family while, at the same time, being able to practice my profession,” she said.
Five years later in June 2000, Multiline Design & Contracting LLC, a design consultancy and contracting company was formed, with Monjardin as managing partner.
“Other expats here in the UAE believe in the talent of Filipinos, most especially
in the field of design and architecture. I, myself, coming from a family of mostly architects, have succeeded in impressing other nationalities with our craftsmanship,” Monjardin said.
Monjardin said she does continuous research on the latest design trends. “I do more on running the business. But once in a while I contribute to the preliminary concepts, then let my designers develop the ideas where they can deliver more,” she said.
The architectural firm, which currently has 75 staff and workers, employs architects and interior designers, including those from the University of the Philippines (UP) who, Monjardin said, have been highly commended by clients.
Representing the Philippines, her younger brother won the grand prize in an architectural design competition in France – the Fondation Jacques Rougeries – in 2017.

The Filipino diaspora has turned overseas Pinoys into “food ambassadors,” and nowhere is this more apparent than in Dubai, an international expat city in the region where restaurants have opened, rolling out Philippine cuisine on the spread to the delight of the locals and people of other nationalities, Alejandro Castro, executive head chef at OSH Restaurant in La Mer said.
“The migration from of Pinoy nationals is something that has happened for a long time, and I bet there is no single country where there isn’t a Filipino community. That’s a way of exposing your cuisine, your flavours to the rest,” Chef Alejandro told Food Trip Magazine.
He added: “About three years ago, I got to know about kecap manis, (which is) Indonesian in origin, but is widely used in homes and kitchens in the ‘Pinas.
“Recently, Mang Tomas was a revelation for me, and a new tasty way of saucing your ‘bellychon’, rather than a pre-made apple sauce. In the city, many Filipino restaurants are opening, or have been open for years.”
“The next step lies in the hands of brave individuals to take this to the global scene.”
Diverse
On the other hand, Chef Alejandro said Ecuadorian cuisine is “so diverse, that it is so difficult to define it.”
“We have 24 different provinces, and the cuisine from each is unique. It’s like having 24 different kitchens within a restaurant. They vary in altitude, type
of vegetation, weather, microclimates, products. It’s undefinable.
“I’m 35 years old and probably have tried just 35% of what my country has to offer in terms of food,” he said.
Meantime, Chef Alejandro, who had worked at different Hyatt properties in Dubai for more than three years, said that while there are “cool” trends “to dig into since they educate you about new products or techniques,” there are also those that are “just marketing stunts to make noise.”
“And I’d rather do things that make sense, not noise,” he said.
Journey
Sharing his life’s journey, Chef Alejandro said he “didn’t know very well” what he wanted to do when he finished high school.
“I just knew that an office job, though comfy, wouldn’t make the cut. I remember to always be interested in the cooking shows on TV, but wasn’t much of a cook. My grandma and my dad are great cooks, but never saw it as a career option,” he said.
“Eventually I went to the university, where I studied for four years only to be bored and frustrated by a lot of the classes (that have proved to be super useful now). The fun started once I started working, first in a couple of restaurants in Ecuador, and then Australia was the wake-up call that showed me this was what I wanted. Finally, 3 1/2 years with different Hyatt properties in Dubai and now OSH.”
Hard work
Chef Alejandro said he saw a chef’s job as a “’fun’ activity to be paid for.”
“Eventually you realize that’s not all fun and games, but very hard work, planification, imagination, coordination, building people skills, empathizing with your colleagues, really caring about each of them, keep learning, and staying humble while being proud of what the team has accomplished.
“All of that inspired, and keeps inspiring, me,” he said.
Plans
Chef Alejandro said OSH will be having its winter menu with a lot of new vegetarian options, “not because of market trends, but because we have been able to create some delicious dishes that happen to be vegetarian.”
“There will also be a lot of fish and seafood that I hope our diners at OSH will appreciate. We are entering the festive season, so we need to create our December menus, and our classic New Year’s Eve Gala Dinner set menu. Next year is full of work and exciting things to come,” he said.
OSH is authentic restaurant and lounge with a modern twist of Central Asian and contemporary Uzbek cuisine.

DUBAI, United Arab Emirates -- This city, like bottomless iced tea, has endless stories of expats, who have tried their luck and made it.
Among them is that of 49-year-old Warlito “Lito” Sevilla, who hails from Guihulngan City, Negros Oriental, a place the population of which is just big enough for one of Metro Manila’s biggest barangays. How he made it in Dubai is an interesting story.
These days, Sevilla, who wasn’t able to complete secondary education due to poverty, is busy in the kitchen, dishing up meals for the mostly Filipino customers of Kusina Natin ‘to, an all-day dining restaurant in Satwa, where he is head chef.
Satwa is a residential area and among Dubai’s Filipino enclaves.
“I only studied till second year high school,” Sevilla shared in fine conversational English.
“But that did not hinder me to (go for) what my love is. My humble beginnings pushed me to follow my dreams, and that is to be a chef by profession.”
Sevilla, who arrived in Dubai 13 years ago, said it all began when he was 14 years old in 1987 – at about the same time he was in second year high school.
“I have a relative – uncle Felix – who owns a restaurant in our place. He got me to work there as he needed someone to assist him in the kitchen,” Sevilla said. And so began his journey.
“Uncle Felix taught me how to cut veggies and meat. I worked also as a dishwasher. One day, he told me to cook. As I always watch him cooking, I tried preparing a dish. And it turned out great,” narrated Sevilla.
That compliment elated Sevilla. “I felt really happy when he said: ‘You are a fast learner. You have the skills for cooking. Someday, all the things that I have taught you about cooking will be your craft.’
“I just smiled,” he said.
Sevilla said he owes what he has become, to his uncle.
Looking forward, Sevilla said he plans to someday go home for good and run a restaurant just like his uncle Felix did.

Among them is Chef Avinash Mohan, who left a convenient corporate life to blaze a trail in the culinary world.
“I have always wanted to bring my soul food to the world,” Chef Avinash tells Food Trip Magazine.
Chef Avinash, who headed Emaar’s hospitality and catering operations at the recently-concluded Expo 2020 Dubai, decided it was finally time to go solo following his career-defining stint at the global event.
Aching to deliver “rare recipes of Indian cuisine…in its original form,” Chef Avinash, who hails from Kerala, opened Cochin Harbour Restaurant in July 2022, to satiate his cravings for the next level, answer the existential question on his reason for being, and be happy about it, if you will.
“Running restaurants has been something which I had done all these years,” he said. “Now, running my own place has given me an added enthusiasm and greater joy.”
Namesake
Cochin Harbour Restaurant, located in Karama, is namesake of a major city in
the coastal state of Kerala.
“Cochin is the amalgamation of all cultures in Kerala, being the hub of business in the state. The cuisine here is a melting pot of all cities in ‘God’s own country.’ Above all, this is where my home is. Thus, the name and the inspiration behind the food,” said Chef Avinash.
“We are focusing on seafood specialties, thus the ‘Harbour’ factored in.”
By official accounts, there are more than one million Keralites in the UAE. Kerala has often been referred to as “God’s own country.”
“We see Cochin Harbour as our home, and with that thought, we are definitely having a steady increase in the guests coming to our home,” said Chef Avinash.
Famous dishes
Kerala’s cuisine, he said, is a beautiful union of the unique touch of the state’s very own culture along with Arabian, Malabari and French influences.
“From ‘Sadya,’ which consists of a wide array of traditional vegetarian dishes made during any special occasion, to non-vegetarian dishes, foods from Kerala is varied and full of flavours, which is not found anywhere else in the Indian subcontinent,” said Chef Avinash.
Some really famous dishes from Kerala are the Karimeen Pollichathu, a fish dish prepared in an eccentric way with rich spicy flavours; Prawns Masala made with shallots, black pepper, coriander and curry leaves; and Kulathoor Vazhailla Neymeen, a very unique dish where Kingfish is cooked with coconut milk as well as spices then served on a banana leaf.
Others include Nadan Kozhi Varutharaccha (Kerala Chicken Curry(, which is made with roasted coconut, spices, red chili to ensure spiciness, also traditionally served on a banana leaf and toned down with fresh coconut milk; Puttu and Kadala Curry, one of the most famous breakfast among Keralites usually savoured with kadala curry, a Kerala version of Black chickpea curry; and Beef Fry with Malabar Parotta, one of the most traditional and famous dishes in Kerala where beef is cooked with spices and then slowly dry-fried on a pan till its dark brown in colour.
Cochin Harbour Restaurant has a total seating capacity of 36 guests indoors and 12 outdoors. The culinary team is composed of 15 members.
Chef Avinash arrived in Dubai eight years ago and joined Address Dubai Marina to be its executive chef. From there, he moved to Palace Downtown as culinary director, then on to EXPO 2020.

Jaffer Bhai’s, the Biryani King of Bombay, inaugurated their newest outlet in Dubai on Tuesday, November 29, ahead of UAE’s 51st National Day celebrations.
The over-the-counter Quick Service Restaurant (QSR) concept in the South Market food court at the Gate Avenue of Dubai International Financial Centre (DIFC) is the four-decades-old legacy group’s third establishment in the UAE after their oldest and flagship restaurant in Karama, and a second one in Al Barsha.
“This is also by far our most significant step forward considering the concept of the kitchen and the pan-Asian, panEuropean/American clientele it will serve,” said Moin Jaffer Mansuri, the second-generation owner of the chain that first began operations in 1973 in Mumbai before coming to the shores of Dubai in UAE in the nineties.
“So, this is our first truly global restaurant with a very localised look, making us a glocal outfit. We have
consistently been voted one of Dubai’s best restaurants for biryani, but there’s more to us than our dum-cooked rice and meat legacy, and our specialist team at DIFC outlet can’t wait to showcase it by catering to everyone, including the resident upmarket executive foodies with a more refined palate and everyone else that loves a hearty workday lunch,” he added.
