Thanks to the indigenous fauna, the Payoya Goat and Merino Sheep from Grazalema make this activity possible preserving tradi-
tional recipes from our ancestors. In addition, they run a workshop where you can follow the same method to make cheese with recyclable material according to environmental criteria. These cheeses have been awarded numerous international prizes.

Winery Experience With an experience for over 20 years, Cuesta La Viña Winery tends to organic farming, because one of its objectives is to recover traditional farming practices. In fact, most of the farming work is carried out by using draught animals and traditional farming implements. According to the time of the year,
the activity can involve cutting bunches of grapes, grape harvesting or pruning followed by a tasting of 2 or three glasses of different wines accompanied with tapas from the area. In addition, as an extra option, visitors can blend their own wine and take it home as their own production and labelling.

It can be carried out in the closest surroundings of the hotel itself, or in the streets of old town Grazalema, Villaluenga, Benaocaz or Ubrique.

It is a team and individual activity. Participants must follow an itinerary indicated on the map provided to them before the route. Previously, basic indications on
orienteering are given. During the route a surprise robbery takes place and the participants have to change their planned route and watch how the group copes with the adversities.

The Via Verde de la Sierra (the Sierra Greenway) runs along the old Jerez - Almargen railway track with a privileged location and restored for tourist use. The cycling route starts from Olvera and takes us through places of cultural and natural interest such as the Peñón de Zaframagón Natural Reserve (home to the largest colony of
Griffon vultures in Andalusia) and next to the “Chaparro de la Vega” (13 metre-high Holm oak proclaimed Andalusia’s Natural Monument in 2001). In 2009, the Via Verde de la Sierra was awarded the Prize for the Best European Greenway.
