T long last the sun is shining! We always seem to get our Summer in May and September, so maybe in future years we should bank on these months being our summer, not June, July and August! As always in the September issue, we feature a Summer wedding. This month we focus on the wedding of Rachel and Simon Vick who got married the last weekend in August. Follow their big day from start to finish from the proposal to a whirlwind romance and, of course, their fairytale marriage that took place less than a year after their first date. At Living Wales we were very excited to have the opportunity to sample the food at the Hardwick in Abergavenny. Owner, Head Chef and TV personality Steve Terry offers an outstanding menu coupled with beautiful surroundings and extremely helpful and friendly staff. The lunch that we sampled was simply superb and, as you can see from the pictures on pages 24-26 the execution and presentation of each course excellent. We all like our homes to look great, and with inspirational suggestions on how to transform parts of your home, our interiors on pages 21-24 provides some fantastic ideas. We would like also this month to congratulate the city of Newport on their well deserved win in the ‘Wales in Bloom’ competition. The residents and civic staff work so hard each year to achieve what can only be described as a beautiful display of baskets, flowers and tubs. They also take the lead with recycling initiatives and encouraging school children to take an active part in yearly activities to help make Newport a beautiful city. Finally, as the nights draw in, don’t be dismayed. With plenty going on at our local theatres, there is so much to entertainment and to help ease the burden of dark nights and dare I say it, Winter!

SEPTEMBER 19th-20th THE ABERGAVENNY FOOD FESTIVAL ABERGAVENNY, VARIOUS VENUES THE eleventh prestigious Abergavenny Food Festival takes place on the weekend of the 19th and 20th of September, accompanied by many fringe events organised by Monmouthshire County Council Tourism Department. With many of the town’s businesses holding special Festival Weekend promotions, and this year’s festival features ‘Wales the True Taste’ exhibiting award winning Welsh food and drink, as well as hosting this year’s Awards Ceremony previously held in Cardiff; last year Monmouthshire won the ‘Best Food Tourism Destination’ award. FROM the granduer of Bach’s Toccata and Fugue through to the stormy opening and cathartic release of Brahms’ First Symphony, this is music of both nobility and heartfelt emotion that never fails to communicate with audiences. One of the most eagerly watched violinists to emerge in recent years, Viviane Hagner returns to play Berg’s final masterwork - the tragic Violin Concerto which movingly ends with a meditation on one of Bach’s best-known chorals. On his best behaviour Star of stage and screen, Neil Morrissey has become one of the most popular actors in the UK. Living Wales caught up with the Men Behaving Badly legend. NEIL Morrissey is one of the country's most popular television actors - best known for his role of ‘Tony’ in the hugely popular BBC sitcom Men Behaving Badly, which ran for seven series. Having also acted on stage and screen, he has become a well-known and well-loved personality. Now he makes his touring debut, starring in the stage adaptation of the Oscarwinning film Rain Man, with Oliver Chris from TV’s Green Wing and The Office, and with his old friend, Charles Lawson, adored by millions of Coronation Street fans for his character, ‘Jim MacDonald’. Neil is no stranger to treading the boards and has been in and out of the West End for over 20 years. “Performing on stage is a completely different discipline to television, and it's where I started. I came into acting - I went to drama school - so that I could be on the stage. The television work that followed was a bonus. My first West End play was A Passionate Woman at the Comedy, directed by the late Ned Sherrin, with Stephanie Cole and James Gaddas - followed by Peter Gill's production of Mamet's Speed the Plow at the Duke of York's directed by Rupert Goold with Nat Parker and the very gorgeous Gina Bellman. Of course Michael Grandage's Guys and Dolls was fantastic. Grandage's ground-breaking vision coupled with Rob Ashford's choreography - definitely one of the best choreographers in the world - brought an incredible energy and power to the piece. The experience of performing with a world class 25-piece band belting out the tracks below you was mind-blowing - along with 12 seminaked dancing girls hanging out backstage.” “Now it’s good to get my acting cowboy boots back on for Rain Man. You can't beat the adrenaline-filled fear that comes with live theatre controlled fear of course!” Neil has played a diverse range of parts and the role of Raymond delivers a new challenge. “The goose laid a golden egg when the role of Raymond landed on my doorstep. When the offer came in, I thought it was a great opportunity to get my acting rocks off. It’s a challenge, the film won 4 Oscars and Dustin Hoffman won the Oscar for Best Actor, but the discipline of screen and stage is totally different. We don't have the lavish locations, movie sets and camera angles. We create it all on stage, live. Story is key, and Rain Man is a great story about two estranged brothers and how they rekindle a deep-rooted bond that nobody else can touch. It’s very moving and also very funny.” “Every role that I have played has been completely different. And everything I do is a departure. You've got to keep frightening yourself! It's really important to keep things fresh and new. The character of Tony from Men Behaving Badly was a nice calling card - millions of people watched it and loved it - equally I want to keep exploring new things and I'm confident I can pull this off.” www.livingwalesmag.co.uk
Neil plays the role of Raymond Babbitt, an autistic savant who has been institutionalised for most of his life, the part for which Dustin Hoffman received the Oscar for Best Actor in the 1988 movie. “The character of Raymond is based on a real person, so some of the mannerisms and reactions are actually scripted in the piece, but I will be approaching it in my own way. I am a method actor but I'm not revealing my methods!” “I read up on some of the current medical research into the condition which of course has developed significantly since the late 80s when the movie was made. There are still no concrete answers or explanations, but with the aid of advanced technology, medical research has made great leaps in recent years. Having read about the condition, I then applied this to my character.’ Embarking on a 13-venue tour from August through to the end of November, Rain Man heads to Wales with a week at the New Theatre Cardiff, from 29 September to the 3 October. “Rain Man is my first tour, I guess because the opportunity hasn't really come up before. I'm seeing it as a rock & roll tour - on the road, living out of a suitcase... a roller coaster ride! We’re visiting some great cities – looking forward to Cardiff - and it’ll be very interesting to see how different audiences at each venue respond to the play. Having graduated from the Guildhall School of Drama – where he first met Rain Man co-star Charles Lawson - Neil went on to make his name in numerous TV programmes, ranging from Boon to Roll Over Beethoven, prior to his most popular television hit the BBC comedy, Men Behaving Badly with Martin Clunes, Leslie Ash and Caroline Quentin. “I will tip my hat and raise a glass every time Men Behaving Badly gets a mention. What a fantastic opportunity; a great experience and a great team, headed up by our producer, Beryl Virtue, who was a real tour de force - and John Howard Davies, producer of many British Sitcom greats.” So what’s next for Neil? “I've been commissioned to do a docu-show for ITV to do with the World Cup next year and I also run a pub up in Yorkshire which is doing very well and we now make beer. We have brewed the Blonde (Morrissey Fox Blonde Ale) and the Brunette is coming out in September. We also produce seasonal beers, for example the Aussie IPA, a light-coloured, very hoppy, gorgeous beer.” “I had a very enjoyable time when I was running the pub in Wales. I loved being in Dylan country. ‘The best food town in Wales’ Wales has many places of interest, some historic, others aesthetic, then there's the famous market town of Abergavenny, where you'll find all of the above, plus this year's prestigious Abergavenny Food Festival - A Town with the 'Extra Factor'. F you’re thinking of ‘Takin’ a Trip up to Abergavenny’ in the words of Marty Wilde, then this is an excellent time of the year to do so as one of Wales’ most popular tourist attractions is the annually held Abergavenny Food Festival; but there's much more to this town than just one week of the year. With plenty of places to stay, Abergavenny is situated at the foot of the Black mountains and beautifully placed for the avid searcher of places of historic interest, Abbeys, Castles and Churches, with long walks, mountains to climb, bicycles to hire, and refreshments by the river with views of those intrepid (albeit lunatic) folk jumping off the Blorenge mountain whilst hanging onto a large kite! The fabulous scenery of the Brecon Beacons,Wye Valley and wonderful Brecon and Monmouthshire canal with its colourful barges, boats and canoes are all close by. The town is easily reached via the M50 from the Midlands and within twenty miles of the M4 from the south and west, Abergavenny welcomes many thousands of tourists every year.

HISTORY WOW! has Abergavenny got history? - I should say so, and far too much to fully explore in this article. The town's origins go way back to 57-58 AD, but was really established by Hamelin de Ballon, one of the conquering Normans who built the motte and bailey castle in 1087, and a Benedictine Priory which is now the wonderful St. Mary's Church in Monk Street, the sight of which, alone, is worth visiting the town. The castle was where the famous massacre of local Welsh noblemen took place in 1175; it was refortified in stone during the thirteenth century along with many of the town buildings. Another local nobleman was William Herbert,The Earl of Pembroke who supported the Yorkists during the Wars of the Roses; his son, brother, and parents are all buried in St. Mary’s Church, one of the largest Parish Churches in Wales, and which also houses many important mediaeval monuments and wood carvings such as The Tree of Jesse. During the Civil War, the town was on the side of the King, and Colonel Proger who commanded the town’s defences, when threatened by

Parliamentarian soldiers in 1645, blew up the castle so that it should be of no use to Cromwell’s men. In the museum, built on the castle’s motte, which was originally a hunting lodge built by the Marquess of Abergavenny, you can trace the fascinating history of Abergavenny town from Roman times right through to the present. Excavation for the post office revealed the timbers of the 75 AD Roman Fort of Gobannium. Owain Glyndwr attacked the town in 1404 after being let into the Gate in Market street by a female Welsh sympathiser, he ransacked the town, and henceforth Market street became known locally as Traitor’s Lane. WHAT’S IN A NAME? Abergavenny was originally Gobannium which came from the old Welsh or Brythonic - Gof - meaning blacksmith, (there were old irons works in the area) this evolved into Gobannia, meaning ‘River of the Blacksmiths’ and then into Gavenny; hence Abergavenny is the 'Mouth of the river Y Fenny’. From the surrounding areas there are some great names and first up is Llantilio Pertholy, which should be Llandeilo Bertholau which means Parish of St.Teilo, then Bertholau from Perth meaning bush so it seems that Llandeilo Bertholau means ‘Bushy Parish of St.Teilo’. Ysbytty Fields is an obvious Hospital Fields, Llanfoist or Llanffwyst is Church of Faith, and my favourite this month is Llanddewi Skyrrid or in Welsh - Ysgyrid which means ‘Parish of Saint David on the Shattered Mountain’, why shattered mountain? Well it is said that lightening hit the mountain shattering it in two at the moment of Our Lord’s Crucifiction, hence the mountain is also known as The Holy Mountain where a chapel was consecrated to The Archangel Michael. The Skirrid Mountain Inn in nearby Llanfihangel Crucorney (‘Holy Place of the Archangel’) is said to be haunted - oooer! the 19th and 20th of September, accompanied by many fringe events organised by Monmouthshire County Council Tourism Department. The Army will show off their catering skills, and will let you have a go on their climbing wall, and the paintballing range. The Museum will be holding exhibitions, there will be a party and entertainment all day at the castle, the Art Shop and Martin’s Framing Gallery showing, amongst other products, paintings by local artists including Goff Danter, and Abergavenny Film Society will be showing the film ‘A Touch of Spice’. Local churches are pitching in with a Quilt Exhibition at the United Reform Church, Holy Trinity will have a Harvest Festival, and a Flower Festival at Abergavenny Methodist Church. St. Mary’s Priory are offering musical interludes, a vestment display, Harvest Choral Evensong, and Thanksgiving Eucharist, and activities for children. Also for the children is The Eurovision Pudding Contest at the Tithe Barn where children from local primary schools compete for the best pudding, and the Library is running a Teddy Bears’ Picnic and story telling for the under eights. THE TOWN This town is not just a Norman castle and a beautiful old church, but it also has the Borough Theatre, a Town Hall and the eighteenth century Market Hall which is open every Tuesday Friday and Saturday, with stalls of fruit and vegetables, meat, clothes, toys, toiletries and kitchenware and much more, spreading itself across the car park and cattle market; the market also holds regular flea markets, art, craft and antique fairs. Near the post office the town’s first Parish Church, St. John’s, housed the town’s first school founded by King Henry VIII in 1542, and is now a Masonic Temple; the school was moved in 1898 to the Pen-y-pound area. Bailey Park has a childrens’ play area, hosts a Fair and a Steam Engine Rally each year (weather permitting) and is home to the local Rugby team, the park is situated alongside the large car park just across the road from the shopping precinct which leads into the town. Here you will find some, nowadays rare, family-run stores, a tribute to the stoicism of the local retailers who refuse to be overrun by the ‘Big Boys’. One such store is Nicholls, which is an ‘Aladdins Cave’ filled with high quality clothes and gifts, where I recently bought some striking pendants, and a friend’s wedding present from a lovely collection of picture frames. For your wedding outfits, Magic Moments is the only place to go, here you will find a huge selection of stunningly beautiful brides’ and bridesmaids’ gowns with accessories to die for. On the subject of weddings, the chap’s equivalent of the wedding outfit can be chosen from a wide stock available at Retreat Clothing as well as all the latest styles in general fashion, and for your wedding, birthday, anniversary, or - just to say ‘I love you’ flowers there’s the high class Hilary’s Florist. EATING OUT If you like a touch of Spice to your food then the best Asian restaurant in the town is The Shahi Indian Restaurant.With speciality dishes and experience that goes back generations, the Shahi is second to none. For the ultimate dining experience there really is only

one place to go - The Hardwick Restaurant. Owned and run by TV Chef Stephen Terry, is one you will never forget, this is the gastronomic jewel in the crown of Abergavenny, which itself is one of Wales’ brightest gems. Stephen’s use of local produce along with a Michelin Star background makes a visit to The Hardwick and Abergavenny the quintessential ‘Grand Day Out’, why not check it out. ABERGAVENNY QUICK FACTS Abergavenny (Welsh: Y Fenni), meaning Mouth of the River Gavenny,
Abergavenny hosted the National Eisteddfod in 1838 and 1913.
Formerly a medieval walled town for defence, it was originally a Roman Fort called Gobannium.
The Beatles played at the Borough Theatre in Abergavenny on Saturday June 22, 1963, just as they became really famous - 'Love Me Do' had charted at 17 in late 1962 coinciding with their first televised performance in October 1962 and 'Please Please Me' reached number 2 in early 1963.
Reference to a market at Abergavenny is found in a charter granted to the Prior by William de Braose (d. 1211). The right to hold two weekly markets and three yearly fairs, as held ever since, was confirmed in 1657. Abergavenny was celebrated for the production of Welsh flannel, and also for the manufacture, whilst the fashion prevailed, of goats' hair periwigs. Abergavenny is also the home of Abergavenny RFC, a rugby union team founded in 1875 who play at Bailey Park.
Each September, Abergavenny holds a very successful Food Festival throughout the town centre and castle. The 'Knight Bus' in 'The Prisoner of Azkaban' Harry Potter stops at Abergavenny. Population of Abergavenny - just over 14,000

ACHEL aged 38 and Simon aged 36 first started dating in September 2008 with their first date being at the beautiful setting of Cardiff Bay. Within six months of their first date, Simon popped the question during a weekend away in Chester for Rachel’s birthday. Rachel accepted his proposal and they set about making plans for their special day. Being from Newport, Rachel wanted their wedding to take place in her home town and chose the beautiful St Mary’s RC Church on Stow Hill. The church itself was very special to Rachel as it was where all her family were married, christened and confirmed. At 1:30pm the wedding took place and although not a sunny day, the weather held out remaining dry. The bride arrived at the church in a Mercedes S Class and looked stunning as she exited the vehicle in an ivory antique lace gown. The wedding gown was accessorised with pearl earrings and bracelet (handmade by Irene Fowler of Anuccia of Pontypool) and hair and make-up beautifully styled an applied to

weddings complement the whole outfit. Of course, where would the bride be without the groom, and Simon certainly looked the part in his Kenneth Cole black suit, shirt and pure silk pink italian tie. Simon was accompanied by his best man, Marc Childs, and his two Ushers Peter and Paul Buckley, Rachel’s two younger brothers. As well as a best man, there was also a Best lady in attendance, Claire Anderson the couple’s friend, and not forgetting Lily Buckley a very adorable flower girl, and the family’s only grandchild. The bride walked down the aisle on the arm of her father David Buckley and under the watchful eye of her mother Dorothy, holding a stunning bouquet of antique pink and ivory roses with pearl stems to the traditional Bridal March by Lohengrin-Wagner. The colour theme of pink and cream was carried throughout, with the Groom, Best Man and Ushers wearing pink button holes, and the church and the Priory, where the reception was held, was tastefully adorned in pinks and creams. Following the beautiful and moving ceremony where the hymns Morning Has Broken and Give Me Joy were sung, husband and wife Simon and Rachel walked back down the aisle to A Midsummer Night’s Dream by Mendelssohn. The happy couple and their guests then made their way to the Priory in Caerleon for their wedding reception. The Priory was chosen as the couple often frequent this beautiful hotel, renowned for its great food and fantastic wine, with friends at weekends. Throughout the wedding ceremony and into the reception and night function, wedding photographers Karl Baker and Dave Powell of Kapow Photography unobtrusively took photos using a very relaxed approach and without any of the shots appearing ‘too staged.’ The Priory was decorated using scented rose and ivory tea-lights

weddings and scattered with fresh sweet peas picked on the morning of the wedding from the Groom’s mum’s garden. These gave a beautiful scent throughout the room and were also used to adorn the three tier wedding cake and 120 cupcakes handmade by Jackie Vick. The guests sat down to a wonderful wedding lunch with a menu prepared by the hotel owner Miguel. There was a choice of starters that consisted of Goats Cheese Salad, Melon or Vegetable soup, followed by a choice of Rib Eye Beef, Roast Lamb, Herb Crusted Cod or Roasted Red Pepper Lasagne. All the main dishes were served with a choice of seasonal vegetables and potatoes. The dessert was the magnificent wedding cake and the iced cupcakes all handmade and served with coffee and of course plenty of red and white wine throughout the meal. Following the reception, the wedding party were treated to wonderful evening entertainment courtesy of local band ‘No One Knows.’ They played covers by the Killers, Kasabian, Kings of Leon and Stereophonics and played ‘One Day Like THis’ by Elbow for their first dance. This song was chosen as it was a song that they had heard when they first started dating and simply fell in love with it. The band and the choice of music certainly went down well with all the guests who danced the night away right into the small hours of the following morning. The happy couple then stayed the night at the Priory in their ‘Blue Room’ and although they didn’t go straight away for their honeymoon, they have planned a fantastic trip to Australia for Christmas and New Year,. Here they plan to visit friends in Adelaide before travelling around this vast county for a month sounds absolutely fantastic!

A tough act to follow at the Hardwick The Hardwick in Abergavenny, well what can I say? Words really cannot describe what a wonderful place this is to dine, relax and enjoy outstanding food and excellent service, so here goes! WORDS Anne-Marie Smith PICTURES Nick Clarke ON entering this beautiful building, you are greeted by an atmosphere of tranquility coupled with a feeling of something very special. The exposed beams and slate floor and soothing background music all add to the unique ambiance. All the ingredients that help to make diners feel special without being too pretentious and stuffy. Head Chef and owner Steve Terry has become more well known in recent years due to his television appearances, and of course for working with the great Marco Pierre White in the early days of his first restaurant Harvey’s. After Harvey's Steve went onto Le Gavroche working under the direction of Michelle Roux junior before moving to Scotland as Souse Chef at The Breaval Old Mill. From Scotland, Steve moved back to London to open The Canteen in Chelsea Harbour for Marco and Michael Caine. It was at The Canteen he was awarded his first Michelin Star at the tender age of 25. www.livingwalesmag.co.uk
Following a spell at London’s Coast Restaurant and a time travelling to France, Australia and North America, Steve came to Wales to work at The Walnut Tree in February 2001. He remained there for two years, where he won a Michelin Star, once again. Steve returned to London for a short time before taking up consultancy at the Pear Tree Inn at Wiltshire. It was whilst commuting from home in South Wales to The Pear Tree that The Horse & Jockey Pub came on the market which was in need of a new lease of life. With the help and support of friends and family The Hardwick was born within four weeks of purchase. Since his time at the Hardwick Steve has enjoyed great success with appearences on BBC TV’s Great British Menu. In his first year on the show he won through to the final and his stunning salmon dish wowed the worlds top chefs, proving Steve had arrived among the global culinary elite. head-to-head with another Welsh Chef, James Sommerin before returning home to concentrate on what he loves most - cooking. On our arrival at the Hardwick, the Maitre De, Lloyd very efficiently and quickly showed us to our table and presented us with their lunch time menu. As I expected, the choice on the menu was plentiful, but not too overwhelming. You could chose either from the Al La Carte or the lunch time menu that offered 2 courses for £17.95 or three courses for £21. With help and assistance from Lloyd we finally made our selection from a host of mouth-watering options. Whilst we waited for our starters to arrive, we were treated to Fresh Bread with Netherend Farm Salted Butter and Gerbino, Sicilian Extra Virgin Olive Oil (£0.95). This was served on a wooden platter giving a nice rustic and unique way of serving fresh bread. The Starters I chose the Welsh Rarebit on Pressed Ham Hock with Parsley, Shallot Salad and Mustard Cream (£7.95). Sometimes words cannot express how delicious or outstanding something is, and in this case I have to say, I am literally quite stuck for words - well almost! Of course I have tried Welsh Rarebit before - on many occasions in fact, but no other variation has tasted quite as wonderful as this. The melted cheese mixture was served atop the ham hock and tasted divine. However, what really made it for me was the mustard cream. This was served on the side and was a perfect accompaniment to the Welsh Rarebit. I am normally not a huge lover of mustard, but this
was so creamy and not overpowering, I could have eaten a whole bowlful of it. The meat itself was very tasty and the whole dish was a more than satisfying starter - I couldn’t wait for my main course! My dining companion Nick opted (after much deliberation) for the Scallops with Chiritzo sausage. A beautifully executed dish that tasted great individually as well as together. As Nick commented, “the fish and sausage tasted great individually, but together, they were a match made in heaven.” Very often scallops are over-cooked, but here Steve cooked the fish perfectly proving he certainly knows his onions pardon the pun! The crisp salad with a squeeze of lemon accompanied this wonderfully fresh dish to divine perfection. The Mains To me, nothing could beat what I had just eaten how wrong could I be! My main course of Roast Wild Sea bass with Gremolata, Deep Fried Polenta, Viola Aubergine & Courgette Caponata, Shaved Fennel & Rocket Salad (£19.75) was truly something else! I cannot praise this dish enough. I judge a good restaurant by its Bass dish and on eveidence of this, you will be hard-pushed to find better in the Monmouthshire countryside. The fish was perfectly cooked and the herb condiment (gremolata) certainly enhanced the flavour. Although I was a bit dubious about the Polenta, I was pleasantly surprised by its flavour and wouldn’t be adverse to trying this again in the future. to a wonderful meal that wasn’t too heavy and extremely satisfying to the taste buds. As a die hard meat eater, Nick couldn't resist the Grilled Loin of Local Pork with Creamy Haricot Beans, Sprouting Broccoli, Spinach, Pancetta and Dandelion (£17.95). The slices of pork were nestled on top of a delicious salad and vegetable selection which looked very colorful and appealing to the eye. You certainly will not leave the Hardwick hungry and the pork dish showed exactly why. With four good size pieces of pork and crispy bacon this dish was more than ample. The saltiness of the pork blended beautifully with the spinach and, with the buttery sauce and beans, the dish was rich and satisfying. In a word - awesome! The Desserts Finally, with very little room left we chose our desserts. The Valrhona Chocolate, Nut and Raisin Brownie with Malted Milk Ice Cream, Amedei Chocolate Mousse, Peanut Brittle and Halen Mon Salted Caramel Sauce (£7.50) and, White Peaches in Local Honey with Panecotta. Both desserts were absolutely delicious. I was particularly taken with the fresh and palate cleansing peaches surrounded by warm honey, whereas Nick preferred the rich Brownie - the evidence of which was our empty plates. Conclusion Following our meal, Steve Terry came over for a quick chat. He is an extremely pleasant fellow and www.livingwalesmag.co.uk
amenable to talk to and very passionate about his work and his customers. “In a lunch time we average around 60 covers and we are usually full to capacity. We will shortly start work on a muchneeded extension on the side of the building as well as creating eight 5 star restaurant rooms where guests can stay and enjoy a home-made fantastic breakfast. The rooms and extension will have to meet my standards and I expect them to be of a standard that I would be happy with," said Steve. When we talked and expressed our gratitude at his food and menu choice he simply said, "I want to give my customers plenty of choice and food that they are happy with. Produce is my inspiration, that’s what motivates me. Produce has to be first class and I buy Welsh produce wherever possible," said Steve. Steve Terry's passion for food is more than evident at the Hardwick, but he manages to express this in a way that appeals to anyone who enjoys exceptional food in a wonderful and unpretentious manner. The Hardwick is most definitely a hard act to follow.

This is an absolute classic and a must-try for anyone learning about malt. Currently the 1990 vintage. The Macallan's benchmark excellence is nowhere more evident than in the 18 Years Old. Light Mahogany in colour, a nose of dried fruits and ginger with hints of vanilla and cinnamon. On the palate displays rich dried fruits, spice, clove, orange and wood smoke with a finish full dried fruits and sweet toffee, with a hint of ginger and wood smoke. Like its younger brother, the 10 year old, this fine single malt is top of the pile when it comes to quality, and in my top 5 all time greats. At £80 per bottle it is certainly a special occasion drink and I have it in very good faith is one of Theatre Producer Cameron Mackintosh’s (Les Miserable & Phantom Of The Opera) favourites, well he told me himself!!
Welsh Cider
ROSIE’S RAMPANT RAM 7.2% www.bluebell.uk.eu.org LAST month we sampled Rosie’s Wicked Wasp by cider maker Steve Hughes in Llandegla near Wrexham. This month we try another from the same producer, Rosie’s Rampant Ram Rum Cask Dry Cider. In 2004 Steve began planting a cider orchard and they now grow 44 different varieties of apple. This cider is produced from 100% scratted and pressed apples and Rosie the Jack Russell checks the orchard every day! Steve won CAMRA Bottle Cider Champion 2006 with Rosie's Triple D which has also won 3rd as Dry Cider at the Royal Bath & West 2007. The Rampant Ram, Rum cask cider from Llandegla is a potent 7.2% though very surprisingly fresh and easier on the palate. The Wicked Wasp in last month’s issue was a typical scrumpy and maybe an acquired tasted but the Rampant Ram is far easier and a more pleasant drink with an extra fruitiness making this very palatable indeed. This fruity and fresh cider is definitley one to try.

Cheese Soufflé INGREDIENTS 1 tbsp flour 1oz butter 1/2pt milk, warmed 2oz finely grated parmesan cheese or 1oz each of parmesan and gruyère 4 large egg yolks 5 large egg whites salt and freshly ground pepper cayenne pepper METHOD 1. Prepare the basic mixture by stirring one generous tablespoon of flour into 1oz of butter melted in a heavy saucepan. Gradually add just under 1/2pt of warmed milk, stirring until your mixture is quite smooth. Let this sauce cook very gently and slowly, stirring frequently, for close on 10 minutes. Now stir in 2oz of finely grated parmesan cheese (or if you prefer, 1oz each of parmesan and gruyère) and then the very thoroughly beaten yolks of 4 large eggs. Remove the mixture from the fire, and continue stirring for a few seconds. Now add a seasoning of salt (always to be added after the cheese) and quite a generous amount of freshly-ground pepper, plus if you like, a scrap of cayenne. This basic mixture can be made well in advance. 2. When the time comes to make the souffle, preheat the oven to 200C/400F/Gas6. Have the shelf placed fairly low in the oven, and a baking sheet on the shelf. Butter 1 1/2pt souffle dish (the size is important). 3. Whisk the whites of the eggs, in a large scrupulously dry and clean bowl, until they stand in peaks on the whisk and look very creamy. Tip half the whites on top of the basic mixture. With a palette knife cut them into it again, slowly rotating the bowl with your left hand, lifting rather than stirring the whole mass. Add the remainder of the whites in the same way. All this should take only a few seconds and as you pour the whole mixture, without delay, into the dish, it should look very bubbly and spongy, but if the whites have been overbeaten or rammed into the main mixture with a heavy hand, it will already begin to look flat. With a palette knife, mark a deep circle an inch or so from the edge, so that the souffle will come out with a cottage-loaf look to the top. Put it instantly into the oven. 4. As to timing, it depends so much upon the size and type of both the oven and the dish that it is misleading to give precise details. I can only say, as a general guide, that in the oven of a representative domestic gas cooker, this souffle is perfectly cooked at 200C/400F/Gas6 in 23 to 35 minutes. www.livingwalesmag.co.uk

The movie has its share of vomit scenes and erection jokes, and is really nothing more than a coming-of-age story. There is a mixture of pleasing performances and the bittersweet delight will stay with the viewer long after the midway goes dark.

Welsh songbird ready to rock Cerys Matthews will soon be releasing a new album and embarking on a tour across the Principality. Mike Took spoke to the Welsh songbird. CERYS Matthews has just finished her afternoon DJ slot on the BBC’s 6Music station and she’s on her way home. As home is split between Pembrokeshire and London, she’s sat in the back of a black cab that’s stuck in traffic on the West End. “It couldn’t get any more glamorous could it?” she jokes. Cerys’ forthcoming album, Don’t Look Down, is another bilingual homage to her love of the blues and folk music – recorded on both sides of the Atlantic with Cerys and collaborator Mason Neely on production duties. With a UK tour to coincide with the release and news that she’s to become a mother for a third time, Cerys is eager to get things moving, “You have some questions for me, right? OK, fire away then…” Did you always want to be a musician from a young age? I couldn’t envisage doing anything else to be honest – whether I was making a living from it or not. It just brings out incredible emotions in me the way I act, the way I feel. Some people feel the same way about reading, cooking or long distance running – my thing just happens to be music. You spent years trying to make it and then broke through with International Velvet – was it all a bit of an anti-climax? Looking back on it all I just wish I’d spent more time appreciating the moment and what we (Catatonia) had achieved. Having 30,000 people come to see us at Margam Park was completely mental, I couldn’t comprehend it. We had Ian Brown on the under card – the guy was in the Stone Roses for God’s sake! I think there were times when we all just got caught up in the media frenzy. We’d be flying to places like Japan and be totally oblivious to what we were actually doing and how big it had all got. George Bernard Shaw was right - youth is wasted on the young. You turned 40 earlier this year. How did you celebrate? Myself, family and friends had a tri-city celebration between Luton, Nashville and New York. We went to see Les Paul at the Iridium Club in New York – he died a few months after that show. He was such a pioneer and to still be playing live at 94 was unbelievable. I’d loved to have worked with him. Is there anyone else you’d like to work with? I haven’t got a burning desire to work with anyone in particular – I’ve been lucky enough to work with a lot of amazing musicians, people like (Super Furry Animals’ lead singer) Gruff Rhys. My producer for this album, Mason Neely, is a genius. He guided me through the recording process and it doesn’t get any easier as you get older, she laughed. Mason’s worked with artists such as (Nashville band) Lambchop and (soul singer) Candi Staton so his production skills couldn’t be any more varied. He manages to get every bit of soul out of me, she chuckled. You’ve decided to release your forthcoming album Don’t Look Down in both Welsh and English - why? I’d already released a mini-album in Welsh and English (Awyren = Aeroplane in 2007) but wanted to push myself further. As far as I’m aware, www.livingwalesmag.co.uk
this is the first time a full length album has been released in both languages on one disc. I travelled between Providence, Rhode Island, Nashville, Seattle and London during recording. I don’t have a set itinerary but I always record my vocals in the studio in Nashville – there’s something beautifully authentic and traditional about the place. You’ll be about six months pregnant when the tour starts in October - any cravings on the road? I don’t have any extravagant requests for the rider on tour – as long as I’ve got plenty of tomatoes, jalapenos and pickled cabbages I’ll be fine. The rest of the band can have whatever’s left over (laughs). I’ve been on tour before with something small inside me so I know what to expect. Your show is going to be split into two full performances – so it will be the equivalent of playing 22 gigs in 14 days? I know that but I’m ready – the boys are ready too. I’ve been so lucky to hand pick the musicians I want to work with on this record. It’s always good to have choice. I think I’ve gone through about 21 drummers in my career. That all sounds a bit Spinal Tap doesn’t it? (Laughs) Yeah I guess it does! I love that film. Maybe we could replace the drummer for every tour date and see if people notice. What do you think of the current influx of female-fronted bands? I’m not overly fussed on them to be honest. My show on 6Music allows me to play the kind of music I want to hear and hopefully my listeners want to hear as well. A chance to think a little bit about the music and its origins from folk, bluegrass and the contemporary stuff it’s influenced. You recently presented a show on the Welsh singer Dorothy Squires - how much of an influence has she had on your character? BBC Wales approached me about making the programme so I can’t claim it was my idea to highlight such a colourful Welsh performer. I wasn’t aware of Dorothy before that but having looked back on her life I can see why they chose me to present the programme. I have to be careful about how I answer this (pauses), I guess we shared the same passion for life (laughs). Her final years were spent living as a recluse in the Rhondda – such a sad end for someone who used to be one of the countries biggest entertainers. On the rare time you have a day off what do you get up to in Pembrokeshire? I’m split between London and Pembrokeshire at the moment but the first thing I do when I get back to West Wales is climb up a mountain. As soon as I’m on the way down I’m into the local pub for a drink. What’s your poison these days? It’ll have to be a sparkling water for now! SEPTEMBER 2009 Living Wales

Beautiful Valley parklife In Wales, we are fortunate to be home to some wonderful parks and open spaces, many of which are right on our own doorstep. ONE such park is Pontypool, known locally as the People's Park. This expanse of ground covers 64 hectares and includes some wonderful features. As well as a newly designed children's play area and beautiful bandstand, the park is also home to Pontypool RFC. If sport is something you enjoy, then Pontypool park offers a variety of activities, including the dry ski slope, tennis courts, putting course and bowls as well as a series of walks, one of which includes links into the Brecon Beacons National Park. On top of all this, the park boasts several historical features including the Italian Gardens, Ice Houses, Folly Tower and Shell Grotto. The Grotto was built around 1829 as a summerhouse and enjoys stunning views across the open countryside and the Severn Estuary. The Shell Grotto and Folly Tower are open weekends and bank holidays from May until September, 2 - 5pm, but the main Park is open all year round. PARC BRYN BACH A drive onto the Heads of the Valleys Road (just off the A465) is Parc Bryn Bach. This beautiful park is set in 340 acres of mixed grass and woodland and has a 36-acre lake as its focal point. The Park offers something for all, whether you are strolling or cycling

around the lake, having a picnic or barbeque with the family or participating in the many adventure activities available at the Park. Ideally situated on the doorstep of the Brecon Beacons and Black Mountains, the Visitors Centre and Bunkhouse accommodation offers an ideal base for cyclists and walkers to explore the rich heritage, beautiful countryside and wildlife it offers. A recent addition to the park is its 9-hole, par 3 Golf Course. The course boasts outstanding views of Tredegar and the Sirhowy Valley to the east and Rhymney Valley to the west which provides a picturesque backdrop for a course that is custom-designed for players at all levels. At Parc Bryn Bach, there really is something for everyone to enjoy and participate in. PARK CWM DARREN A picturesque country park tucked away in the Darran Valley, two miles north of Bargoed. A tranquil setting that allows you to meander peacefully through woodland or hop on a bike using their network of cycle paths and scenic trails that will take you deeper into the historic landscapes of the northern Rhymney Valley. The lake is one of the main features that has been drained, de-silted and re-filled to create an open water area and a wetland area for wildlife. This recent work improves the appearance of the lake, makes it a better habitat for wildlife and those wishing to fish in the park. Other works around Park Cwm Darran included the upgrading of 5km of cycle routes to tarmac surfaces, and the construction of a ‘trim trail’ exercise/assault course along the lakeside. Newport In Bloom
Blooming wonderful once again! Newport has done it again! Winners of Wales in Bloom for the 11th time and all down to the hard work and commitment of Newport City Council and its residents.

EACH year, the city of Newport has entered this prestigious competition which encourages local people and communities to work together ensuring Newport is a more pleasant place to live, work and visit. The dedication of the residents is tantamount to the success of Newport achieving Wales in Bloom and now of course their entry into Britain In Bloom. The hard work is an annual process and one that involves schools, communities and residents taking an active interest in their environment and surroundings by actively becoming involved in environmental initiatives as well as planting and taking a pride in the city's many parks and open spaces. As well as glorious hanging baskets, floral arrangements and beautiful gardens, Newport also plays host each year to their now famous pandas. The Pandas Kim, Billy and baby Poppy return to their Malpas Road home each year and cause quite a stir amongst the children as well as people who drive past them on their way into Newport. There are also the Puddler ducks who take up residence on the High Cross roundabout and of course the numerous hanging baskets and flower boxes that adorn the roads, pavements and shops throughout the city. Next year is a big year for the city of Newport. In 2010, they will play host to the prestigious Ryder Cup. With this in mind they are already turning their attentions to Newport In Bloom 2010, and the theme for many of their floral arrangements being golf and America. The hard work and planning has already started and as always, Newport City Council will be relying on the local residents to take an active part. "Without the people and communities of Newport working hard all year round, our annual success would not be achievable. With Newport playing host to the Ryder Cup next year, we need to start the process now and make 2010 our best year yet. We are of course keeping our fingers crossed for this year for our entry into Britain In Bloom, but plans are already underway for next year. It is an annual process that involves a lot of time and dedication and without everyone getting involved, it wouldn't be possible," said David Morris, head of Newport City Countryside. As you can see from the list of winners and the number of categories for the annual Newport In Bloom, Newport certainly leads the way in helping to make Wales a desirable destination. Osbourne Lodge Nursery This beautiful nursery located on Osbourne Road in Pontypool is owned and managed by Nikola Masters who clearly loves her job and, more importantly, children. THE nursery has been open for over twelve years and during this period has seen many changes. “I always wanted to convert the upstairs, but had to wait for the cinema to go before I could start any of the planning process,” said Nikola. Once the upstairs became vacant, the task of refurbishing took almost a year before it was ready - and the wait was worth it. Having someone to mentor and guide me through every step of the way has been of great benefit. I’d definitely recommend other businesses to go for it. It has been a huge help.” Another business that has benefited from HOVIP support is Scan & Collate Limited. Our involvement through HOVIP has been to help Scan & Collate Limited set up a new tele-sales team, and whilst it is early days, the company is seeing some very positive results with all targets exceeded in the first month.” Phil continues, “The Project Implementation Assistance we can offer is very practical support in any area of the business. 60 businesses across all five local authority areas have been helped to date on projects ranging from re-branding, website development and lead generation campaigns to relocation proposals, service development and key account management. The application process is quick and simple with minimum red tape. The high calibre support, from experienced professionals who are also business owners, is very focused with outcomes agreed with the participating business at the start of the project, other resources co-ordinated and benefits monitored both during and after the project.” Another example of how HOVIP support has helped a business is Torfaen-based Peter Hughes Media Relations. “Through HOVIP we now have a very clear focus on the future direction of the business.” said Peter. “Since the project started we have taken on two major clients and are in final negotiations with a third. I’m very excited about how the business will develop over the next year. I can’t imagine any new developing company not using the HOVIP services.”

DANCE CRAZY! NOW, I don't mean to sound like a party pooper, but I really dislike the new craze that is happening at weddings. Bride, groom, bridesmaids etc., dancing down the aisle to ridiculous songs. You only have to take a look at u-tube to see people making fools of themselves on their big day. I don't mind if they want to have a bit of fun during their first dance, by choosing a song that they can enjoy and be silly to, rather than opting for a more meaningful or romantic song, but what I don't like is when they make a mockery of their special day. The craze seems to have really taken off since a couple did their own rendition of 'Dirty Dancing' as their first dance and it was shown on the news worldwide. Since this, couples have tried desperately to out-do this by looking completely idiotic (and dragging their friends into this farcical charade). The worse and most cringeworthy is the couple who danced down the aisle to Chris Brown Forever. They had lots of bridesmaids and ushers etc., all of whom had to perform on their way down and all had to wear sunglasses. Some of them were quite good and in time with the music, whilst some of the party looked uncomfortable and totally out of sync with the music. Why did they feel that they had to do this? I know churches are trying to encourage younger people into church, but is this the right way to go about it? In my view it is simply making a mockery out of church and marriage!
FOUR WEDDINGS Continuing with the wedding theme, I have been watching Four Weddings. For those of you who haven’t watched the show, it is about four people who are getting married and each of the contestants acts as a judge at each other’s wedding. Unfortunately, what one person likes, is not necessarily to every ones taste. For example, one of the brides might choose to get married in a meringue style dress, whilst another might choose something well, shall we say a little less ‘in your face.’ Anyway, each bride judges and gives marks out of 50 for each aspect of the wedding, e.g. venue and dress etc. At the end, the bride with the highest score wins a honeymoon. Last week, the show took on a new level by a ‘one-off’ celebrity four weddings. Wow, was this an unsavoury piece of viewing. Nicola, ‘I’m A Celebrity’ model who married an no-bit footballer really showed herself up as a real nasty, bitchy person who slated everyone’s wedding and even refused to follow the dress code of Black and White at Sandra Dickinson’s wedding, declaring that she would wear what she liked. To top this off, she left half way through Sandra’s wedding declaring that it was ‘boring!’ How rude and how ill mannered. Nicola of course thought her wedding was the best, but in my eyes she really showed herself up for what she is – a nasty bit of work. Unfortunately, Nicola won the competition, but fortunately the prize was a donation to charity – perhaps in this case, it’s a shame there is not a charity which runs courses on how to educate people in good manners! www.livingwalesmag.co.uk
SHAME ON YOU! FINALLY, and on a more serious note – the release of the Lockerbie bomber. I’m not going to go on about this for long as I think public opinion speaks for itself. What on earth were the Scottish government thinking when they released him? Would Westminster sanction a similar move should Ian Brady or the Yorkshire Ripper become seriously ill? After all, they are all responsible for horrific crimes, with the Lockerbie bomber killing hundreds of people and of course we are all very aware of the crimes committed by Brady and the Ripper. The British Government has passed the buck and said it was the decision of the Scottish parliament, however, it would take a fool to believe they weren’t under pressure from number 10 to do in order to gain brownie points with the soon-to-be-wealthy Libyan government. Life in my opinion should mean life and for any of the above to be released is an absolute disgrace. As many of the families in Scotland have voiced doubts about Megrahi's guilt and think of him as a scapegoat, it seems that they have already been asked what they think-so although there are probably loads who think the opposite, the question's already been researched. For these reasons I would leave the last words as ‘Shame on you’! SEPTEMBER 2009 Living Wales
