Howdidyouget yourstartmakingsushi?
When Istarted, people wanted to know if Ihad aCaliroll. Iwas defi antatfirst.I wanted to make what Iwantedtomake, butI have found middle ground.
Ilearned aton at Uchi, but alot of my knowledge wasaccumulatedfromthere, ChinoLatinoand Rock-N-Sake.Inthe year anda halfI’vebeen workingsolo, Ihave learnedtechniquessoIcan come up with sauces.I come up with my ownnew dishes everyweek

Iwas afood runneratthe restaurant when Iwas 17.I didthat fora fewyears, and Iimpressed thecrewbecause Iwas theonly food runnerwho wasn’t aguy and Iworkedreally hard.I askedifI could learnhow to make sushi, and though they likedme, they said no They were like,“It’s acareer, and we worked really hard to learn how to do it.” Buttheylet me starttrain ing. They letmestart practicing
At Uchi in Denver, Ireally uppedmy game. That’s whereI hadtoworkthrough theranks.I’d come in earlytomakericeand be therookie showing everybodythatI was workinghard, carrying around thesushi rice, whichwas heavy. I moveduptodifferent stations to aposition like asouschef. Iwas just under theIchi, whichmeans No.1 in Japanese Imade alot of sashimi and crudos. Uchi is also whereIlearned to make nigiri fast, like it was flying outofmyhand We’d have linesout thedoor forhappy hours on Tuesdays and Wednesdays
Oneofmyrecurring dishes is atomato “tofu” that Ilearned in Minneapolis.I take heirloom toma toes and blendthem with Usukuchi soy, alittlericevinegar and agar agar, which is like agelatin made from seaweed.Itturns into this lushjello, butitholds itsshape, so youcan cut asquarethat’sa perfectlittlebiteoftomato.I top it with tobiko. Iliketodosakepoachedshrimpwhich Iserve with adashi vinaigrette. Another dish of mineisgalia melon and lemon cucumber gazpacho, which hasa togarashitorched scallop, spiced toastedpepitas, mint, Thai basil, oliveoil and lime
This wine has aromas of fresh redapples, honeyand whiteflowers with elegant and rich flavors of toasted nuts and citrus. Oneofthe purest expressions of this typical Burgundian grape.
GRETAREIDGOTHOOKEDON JAPANESE CULTURE whilegrowing up. During her time at theUniversity of Minnesota, she worked at arestaurantwith asushi bar and eventually startedtraining to make sushirolls and nigiri pieces. After graduating,Reidmovedbackto NewOrleans, and though she’s done work with school kids, like organizingan“Iron Chef” style cookingcompetitionatEdible Schoolyard, she’sfocused on startingher ownsushi business. PAIRINGS: Roasted salmon, shellfish or creamycheeses.

Iliketostart (anomakase) withlighter, citrusyflavors andmovetoheavier andmore intenseflavors.
GRETAREID: Iwas always interested in sushi and Japanese culture.Iwas abig animenerd. Peopleinmyfamily made funof me forlikinganime
