When autumn arrives, it’s my favorite time of year. (The same can be said of spring, however.) If you’re looking for some “nesting” ideas, this is the issue for you. Institute of Technology wrote recently to ask if it could turn hundreds of personal garments she donated into an exhibition about her style. â&#x20AC;&#x153;She said, â&#x20AC;&#x2DC;Yes, itâ&#x20AC;&#x2122;s fine, as long as itâ&#x20AC;&#x2122;s high-quality â&#x20AC;&#x201D; Diana Vreeland style,â&#x20AC;&#x2122;â&#x20AC;? recalled Valerie Steele, director of The Museum at FIT. Throughout her years, Bacall hadnâ&#x20AC;&#x2122;t forgotten the fashion editor who plucked her from a Seventh Avenue showroom floor and delivered her to Hollywoodâ&#x20AC;&#x2122;s door via the pages of Harperâ&#x20AC;&#x2122;s Bazaar at age 19. And next spring, Steeleâ&#x20AC;&#x2122;s museum â&#x20AC;&#x201D; with the help of FIT graduate students learning how to curate â&#x20AC;&#x201D; will fulfill its promise in a show focused on five designers who helped define Bacallâ&#x20AC;&#x2122;s subtle seductiveness, her sophisticated mix of classic femininity and raw masculine authority in fashion.

Lunch in no time As families settle back into the school routine, parents must take the lead in setting a schedule. That might mean bedtimes and waking times, helping kids get a good breakfast and making sure bags are packed and ready for the day. It also means making sure there is a plan for lunch!

For many, packing your childrens’ lunch is a good way to make sure they are set up to get the nutrition they need during a time period of the day when you’re not around. Of course we want to pack healthful options of our young ones, but what about you? You take the time to make sure your children have what they need, but do you do the same for yourself? This column can help ensure that you have what you need to refuel at lunch time.
Back to basics: You really can’t go wrong with the traditional sandwich. Picking 100 percent whole wheat bread adds some fiber, and also provides necessary carbohydrate energy. Typically whatever you choose to put inside the sandwich provides the protein. It’s a perfect combo. With so many options (ham, turkey, peanut butter, leftover chicken) you can pack this more than once a week and not get bored. Spruce it up with a variety of veggies, mustard or low-fat mayo.
Leftovers: Not always a realistic option for kids if there isn’t a microwave at school, but a fantastic option for adults. When you’re done with dinner the night before, pre-pack what’s leftover in containers. Nothing is easier the next morning than pulling that out of the fridge, sticking it right in your lunch bag, and hurrying out the door.

Re-purposing: This gives you some freedom to be creative, which is something you’ll appreciate in terms of providing variety, and something your kids will like too. Leftovers don’t just have to be leftovers – make them into something else! For instance, instead of sending plain cold chicken, perhaps roll that up in a whole wheat tortilla with cheese and veggies. Had eggs for breakfast yesterday? Well that can work as lunch too; just chop up some veggies, add a little cheese, a little bit of ham, and re-heat the whole thing for a tasty meal. You can also let your creative juices flow with salads. You really can’t mess up a salad as long as you’re careful about your toppings. Go heavy on all sorts of veggies, and lighter on the dressing. Even better if you add a protein like chicken, tuna or hard-boiled egg whites.
Don’t forget the extras: Most meals need accompaniments to give us a satisfied feeling. Make smart decisions here. Good additions to your lunch (and your kids’ lunches) are things like fruit, veggies, string cheese and whole-grain crackers. For a sweet note, try adding light yogurt or low-fat chocolate pudding.

Interior designer She loves a creative challenge By Karla Swita For Daily Herald Media
When Sara Haumschild, 31, enters a room, her eyes immediately scan for patterns and textures. “These elements create interest and dimension, and without them, rooms can feel plain and flat,” she said. Making interiors inviting and exciting is a passion she can’t leave at the front door. When buying her first house, a 1936 bungalow on Wausau’s east side, she said she felt like a kid in a candy store amid the outdated interior. “It had shag carpeting and dark paneling, but I could see past that to its potential,” she said. Haumschild, an interior designer, has a flair for breathing new life into homes and businesses with a “no limits” approach to her business, Inspired by Design. “I love it when people put my creativity to the test,” she said. “I like the challenge of showing them what possibilities exist within their spaces.” Currently, the majority of her work is managing kitchen and bathroom remodeling projects. Before working her magic with the right mixture of layout, colors, flooring, fixtures and furniture, Haumschild plays the role of an educator. She holds a Bachelor of Science degree in interior architecture from the University of Wisconsin-Stevens Point and is a Wisconsin registered interior designer and member of the American Society of Interior Designers. With over a decade of residential and commercial design experience, she’s found that many people need help understanding the realities of the design process before they can get to the creative part. In other words, remodeling is not always what you see on TV.

She also warns that interior designers aren’t all as egocentric as they might appear on TV, even though “some of them are pushy and give the impression that their way is the only way to do things,” said Haumschild, who aims to make her client’s wishes the priority. Jane Graham Jennings, executive director of the Women’s Community, found that Haumschild knows how to please a crowd when working on the new Women’s Community facility in 2011. “Part of the challenge she dealt with so well was balancing the opinions of so many different people. The design and color scheme was determined by a committee, and the committee members did not necessarily agree. She was able to hear all the opinions from everyone and incorporate various ideas,” said Graham Jennings. “Her product knowledge was helpful and allowed us to understand why a particular idea would better meet our needs. She just took all the ideas with grace and then brought back examples for the committee to see why one color scheme would feel warmer.” Another environment where Haumschild creates happy faces is right in her own home. Four-month-old daughter Morgan’s room has walls of orange, fuchsia and gray stripes dotted with dragonflies. The ceiling centerpiece is a beautiful chrome drum light fixture with dangling crystals. It was the inspiration for the nursery. She recommends selecting one outstanding piece to build a room’s décor around. In a living room, she might start with an area rug or artwork, and in a kitchen, a granite countertop might be the starting point. Of course, one room where she has little influence is husband Jason’s man cave. “I’m not allowed to touch it. It’s the only room where he says he has full rule,” she said.

The trouble with cured salmon? We tend to treat it like, well … a treat. Gravlax — as cured salmon is known by its Nordic name — generally is made by dry-curing fillets of salmon in a blend of sugar, kosher salt, fresh dill and a variety of other seasonings. The process extracts moisture from the flesh of the salmon, producing a smooth yet meaty texture and a wonderfully salty-sweet flavor. It’s also ridiculously easy to make. While you pay a premium for ready-to-eat cured salmon, you can make your own for not much more than the cost of the salmon itself. And the only equipment you’ll need are a food processor (for making the cure) and a zip-close plastic bag. And obviously you’ll want to buy the very best and freshest salmon you can find. Once you have the salmon, it’s as simple as grinding together the curing ingredients, rubbing them on the fish, and refrigerating it. A couple of days later, you enjoy smoked salmon.

Classic gravlax Select a 2-pound, center-cut fillet of salmon that is at least 1 inch thick. Any thin ends should be trimmed to keep the salmon as uniformly thick as possible. While the salmon can be cured with the skin on, we like to trim it off. The salmon will need to be handled with care once the skin is removed, but it makes the finished product easier to slice. It also allows the cure to penetrate more evenly. To remove any small bones from the salmon, start by rubbing your hand over the flesh, moving against the grain. You’ll often find a short line of very thin bones sticking up. The easiest way to remove them is to grasp them with tweezers and gently tug them out. Start to finish: 3 days Servings: 16 1 cup sugar ⁄2 cup kosher salt

In a food processor, combine sugar, salt, dill seeds, fresh dill and pepper. Pulse until dill is well chopped and the mixture combined. Spread the mixture over both sides of salmon. Place the fillet in a large zip-close plastic bag. Close the bag, then place on a baking sheet to keep the fillet flat, and refrigerate for 36 to 48 hours. Flip bag every 12 hours to redistribute curing mixture.

Remove the salmon from the bag, scrape off the seasoning mixture, then pat it dry with paper towels. If you have trouble brushing off the seasonings — or find the taste too strong — you also can rinse the salmon under cool water, then pat it dry. To serve, slice the salmon thinly against the grain of the flesh.

“You don’t have to go all out in every area,” Stella said. “Whether it’s painting or flooring, I like to pick one focal point to draw attention to.” He specializes in lighting design, and says there’s a fine line between having too much or too little light in an area. He doesn’t over-do it, but tries to keep it simple. “There has to be a balance between light and dark,” he said.
Taking a minimalist approach, Stella tends to gravitate toward neutral or earth tones and textures such as stressed wood. “I like the natural aspect of things,” he said. “I like clean crisp lines. I’m a very visual person.” Decorating tip: Plan ahead before starting any decorating project and allow plenty of time. “Plan as much as you possibly can,” Stella said. “Do the research and plan things out. We like to make sure of everything before we start a project.” Stella recommends fully researching a project and consulting a professional as soon as possible.

“We do a lot with computer mock-ups now, and you can get an actual vision of the room before you proceed,” he said. “Make sure you are getting what you want.” Favorite room design: A kitchen remodel with a southwestern flavor done for a couple’s Rothschild home. A breakfast bar built around an existing wall separates the kitchen from a dining room, extending the backsplash into the dining area. The homeowners chose to keep the original raised-panel oak cabinetry, and Stella complimented the wood by replacing the old cork flooring

with a porcelain tile that resembles a maple wood plank floor. “You want that contrast between the lighter oak cabinetry and the darker floor,” he said. Other unique features of the kitchen include a white dry erase board added above a desk area, under-cabinet lighting and a serpentine rail-lighting system. “The biggest challenge was adding the lighting,” Stella said. “We chose to do the rail system. The nice thing about it is it’s low voltage, and with the rail system, you can bend it. It’s a lot more stylish.”

But for non-locals, the first meal of the day can be a bit of a letdown. Breakfast in Italy is a stand-up affair: You crowd at the bar, scarf down a stale pastry and a shot of espresso, and in five minutes flat, the day has begun.

Once you’ve had your fill, explore the area. Far from the tourist hordes and grand sites, Pigneto is a place where a different version of Rome emerges. A traditional working-class neighborhood of crooked low-rise apartments, Pigneto has undergone something of a creative renaissance over the past decade as artists and immigrants flocked to the area and a new nightlife district flourished. Browse the open-air market of flowers and fresh local produce on Via del Pigneto in the morning, stop by Lo Yeti, one of Pigneto’s bookshop cafes, catch an art film at Kino cinema or sample the neighborhood’s best gelato at Fattori.
