Jamie Matczak of Green Bay has visited a growing list of nearly 30 countries—many solo—with plans to reach every continent in her lifetime. Known as The Traveling Baker to her social media followers, by day Matczak, 40, is the associate director and continuing education coordinator for the Nicolet Federated Library System. Her thirst for knowledge, and for teaching others, an ever-present theme throughout her career and hobbies. In her job, she coordinates professional development and conducts trainings, workshops and webinars for librarians. In addition to teaching fitness classes and piano lessons for additional income, her career affords her the opportunity to travel internationally when vacation time allows. It’s a passion that took hold in 2009 when she visited Morocco as part of a Rotary International group study exchange.

“I was there for a month with a team of other professionals from the area, and a lot of what we did was visit projects in the area that Rotary had helped fund,” explains Matczak. She says that seeing how some families lived, up close and personal, was a life-changing event. “I remember one day witnessing a man washing his shirt in a street puddle,” she says. “I remember meeting families who had to travel miles and miles to get fresh water to their homes. That was something I had never seen before or experienced. After spending a month there, I knew I had to see more of the world.” Following that trip, Matczak participated in a volunteerism trip to Costa Rica, and followed that trip up with a help exchange in New Zealand and Australia, where work is done in exchange for lodging and food. Feeling ready for solo travel after that, she visited Spain and Iceland on her own, and since then she’s been to Colombia, Panama, Romania, Estonia, Belgium, Bulgaria, Slovenia, Austria, Croatia, Denmark and Germany as well. “I turned 40 in October,” she says. “I think most women, when we’re younger in our 20s, we have that dream of getting married and raising a family, and that didn’t happen for me. <<< SPOTLIGHT CONTINUED FROM PAGE 7 disappointed about it, and dwell on that, I decided I’m going to take this opportunity to travel and see the world, and give back and volunteer and make a difference that way.” Matczak’s travels have led to incredible memories, in addition to an accumulation of tasty recipes from around the world. As one of seven children, she says her favorite holiday memories while growing up on her parents’ farm in rural Pulaski include baking cookies with her mother and sisters. “Once I started traveling and trying desserts and other foods in other countries, I started baking more things from the countries I visited. There is always an interesting story that correlates with them.” Matczak says she loves making Australia New Zealand Army Corps (ANZAC) biscuits, Polish kolaches, carmelitas, Swedish Rosenmunnar, and an Icelandic cookie called hálfmánar. “When I bake cookies or things for the holidays, sometimes I give it away to family, sometimes I donate it to nonprofits … one year I donated [the proceeds from a sale] to Toys for Tots,” she adds. “It’s something I do for stress relief and to give back.” Matczak says that with every recipe and every trip, she strives to further her own education about a location and its people, while educating others about the benefits of international travel.

“I want to learn something new about a place, their people, and about myself,” she explains. “Hopefully when I’m traveling somewhere, I’m representing the U.S. in a positive light, and at the same time, I want people in Wisconsin and the U.S.—either through my Facebook page, or my blogs that I write—to see that other countries are safe. People in these countries are welcoming and friendly, and they want us to visit. I think that tourism has taken a bit of a hit right now, and that’s very understandable. • Keep a detailed itinerary with you and leave one at home. • Listen to the locals. “If they tell you not to walk at night, then don’t do it … I do consider myself to be a strong, independent woman, but this is not the time to show your bravery,” she adds. • Ask your hotel for the approximate costs of things, like taxis and meals in the area, to avoid paying too much. • Withdraw cash during daytime hours, or better yet, make sure it’s inside a bank. • Keep your passport and valuables on you. • Travel light. • Be friendly, but firm. “If something seems too good to be true, you need to walk away or tell someone nicely to leave you alone,” she explains. • Let people help you. “I do believe that most people want to do good things,” she says. “They’ll give you tips and point you in the right direction.”

For me, there’s nothing more exciting than December’s glittering arrival. your health When winter arrives, many of us use the cold weather as an excuse to stop exercising. But “it doesn’t have to be sunny and 70s to have a good time outdoors,” says Curt Hall of the Brown County Parks Department. “We like to say, ‘Get outdoors – the parks are yours.’”

We found five fresh, fun ways to stay active after the snow flies. After all, says Claudia Torres, owner of Green Bay’s T Spot Yoga & Fitness, “It’s never too late to try new things.” 1. NIGHT SNOWSHOEING – “Snowshoeing is a great winter activity,” says Jason Petrella, park ranger at the Barkhausen Waterfowl Preserve. Hiking trails, normally closed at sunset, are open until 11 p.m. during snowy months to “see the park in a different light – or no light at all.” Petrella recommends dressing in layers, wearing waterproof snow boots and bringing a headlamp or flashlight to look for nocturnal animals. Snowshoes are available for rent ($4 per adult) from noon to 3 p.m. weekends, or by appointment. The Barkhausen website (www.browncountyparks.org) will have updated trail conditions and information on naturalist-led night hikes later in winter, Petrella says. 2. FAT TIRE BICYCLING – Think you can’t bike in the snow? Think again: The Reforestation Camp in Suamico is offering year ’round rentals of fat tire bikes that are designed for softer terrain, says Hall, supervisor of the Adventure Park at the NEW Zoo. The camp regularly grooms a 5.3-mile loop through the woods; check the Brown County Parks website for trail conditions. Bikes are rented weekends from 9 a.m. to 4 p.m. when the trail is open at $10 per hour or $25 for three hours. You don’t need special shoes, Hall says – just wear hiking or lightweight snow boots over wool socks, bring plenty of water and dress in layers of wicking material. HEALTH CONTINUED ON PAGE 18 >>>

That’s the concept of aerial yoga, which is practiced in large, silk hammocks where “you can do a lot of poses that you can’t do on the ground,” Torres says. “It’s easy to perform. You can relax, stretch and play – you kind of become a kid.” While anyone can practice aerial yoga, Torres recommends starting with an introductory workshop. Class schedules, descriptions and prices are available online (www.thetspotyogaandfitness.com); wear comfortable clothes – no flared pants, buttons, zippers or jewelry, Torres says. 4. ICE SKATING – Put a spin on winter fitness at the De Pere Ice Arena or Cornerstone Community Center, both of which have indoor public skate times ($4 admission) and offer skate rentals ($3). “Ice skating is a life sport,” says Cornerstone manager Don Chilson. “People of all ages and all abilities come out for the public skate.” Wear long socks and gloves, and bring your own bike helmet. Prefer outdoor ice? Bring your skates to the new skating/hockey rink in Howard’s Pinewood Park, which should open in early January, says Jon Rupno, the village’s director of leisure services. There’s free admission and a warming station on evenings and weekends. 5. ADULT DANCE CLASSES – “Adults get nervous to try things sometimes,” says Amanda List, who teaches beginner and intermediate dance classes at Jenstar Yoga & Dance, De Pere. But there’s no judgment inside the studio where, she adds, “the weather is always pleasant.” Even students who have no rhythm or previous experience enjoy List’s classes that combine cardio and strength with flexibility – plus memorization of fun

Everyone has that one impossible person on their holiday shopping list. A relative who already has everything. A friend who insists she doesn’t want anything. Christmas shopping can be an exercise in exhaustion … unless you are shopping in just the right place. This year, instead of fighting the mall crowd or wasting hours browsing online, I took a stroll through the shops on Broadway in Green Bay and was delighted to find a perfect present for the most impossible person on my list – my sister who lives overseas. St. Norbert College MBA program ST. NORBERT COLLEGE’S MBA PROGRAM ENTERS ITS SECOND YEAR STORY BY MEGHAN DIEMEL | PHOTOS BY MIKE PETERS Long a bastion of success in higher education, St. Norbert College’s newest endeavor – its Masters of Business Administration program – is in the midst of the second year of instruction. Started in the fall of 2015, St. Norbert’s MBA program has 64 admitted students to date, and was made possible in large part by a monetary gift in 2014 from Pat Schneider. Schneider’s husband, the late Donald J. Schneider, graduated from St. Norbert and later served as president, CEO and chairman of Schneider National in Ashwaubenon. Her generous $7-million-dollar donation established the Donald J. Schneider School of Business & Economics, and helped found the MBA program. In just one year, the program is growing toward its enrollment goal. “Our goal is to begin capping at 100 students, because it is really important to our faculty to keep those smaller classrooms,” says Brenda Busch, associate director of graduate recruitment. “It’s a huge component to the success of the students.” The groundwork to bring the program to fruition began in 2012, but it was something that had been discussed for several years by faculty and partners in the business community. “It was a combination of internal forces and external requests for having an experience like the MBA program added,” explains Busch. St. Norbert’s partners in the business community

are also welcomed into the classroom to speak with students in MBA classes. In addition to their expertise, a board of visitors composed of distinguished business and organizational figures from throughout Northeast Wisconsin complement the instruction students receive from Schneider School faculty. As a program of St. Norbert, Busch says its values are rooted in the Norbertine practices of “communio” and “localitas.” Communio means students are called to live in relationships that strive for high standards, while localitas means they are committed to serve the needs of their communities. “The MBA program really hits on those two values, because we know we’re shaping that next level of leadership in Northeast Wisconsin,” she says. “Through our curriculum and our partnerships with the business community, these values are woven into the MBA experience.” Busch, who graduated from St. Norbert in 1993 and completed the masters of liberal studies program while working full-time in 2013, understands the questions potential students may have about commitment and cost on a personal level. She enjoys helping people see an MBA is possible for anyone willing to put the work in. “I tell them to take it one step at a time,” she adds. “Apply, and then if you’re admitted, start with one class and keep the ball rolling. When people become involved in the MBA program, it is life-changing. Rustic Luxe by Nicole Kornowske, interior designer with Kimps Ace Hardware in Howard Three sizes of rust-colored metal snowflakes inspired this design by Kornowske and co-worker Debbie Ross, who added traditional greenery, pops of red berries and sparkly white trees – plus the silver leaf star ornaments “for a little flair,” Kornowske says. Her favorite component? A metal star garland draped over a collection of birch branches and red twigs. To imitate this look, combined distressed metals with flameless LED candles, coarse fabrics such as burlap and twine and perhaps a vintage piece – like Kornowske’s own family sled. Metal Merriment by Sue VanDenElzen, owner of Thornberry Cottage, Howard When designing the entryway of this Victorian home, VanDenElzen drew inspiration from the crystal accents in the windows. The decorative pieces in copper and brass not only compliment the colors in the entryway, they are also in keeping with the style of the season: “Metals are huge,” she says. The spray-painted branches tie in with the metallic ribbons and shiny reindeer, as well as the copper garden spheres. VanDenElzen also added curls of copper wire into the wreath. To try this look in your own home, VanDenElzen recommends starting with the color of your door’s hardware for one of the metallic tones, then choosing a contrasting color. Under the Mistletoe by Nichole Campbell, owner of Petal Pusher, Green Bay Only natural greenery went into this festive look, Campbell says. For the shape, she drew inspiration from the bamboo trellises and gray planters that she’d used earlier in the season, and then added the tall shepherd’s hooks, decorative ribbons and bundles of “mistletoe.” “Real mistletoe is not very cute,” Campbell says. “This is actually white snowberry,” a plant native to Wisconsin. She also used the snowberry in her wreath along with cedar branches, magnolia leaves, seeded eucalyptus and northern sea oats. Hanging amaranthus adds the pop of festive color without being overly Christmas-y, Campbell says. “It’s not something you have to take down immediately after the holiday.” If you are experimenting with this look, Campbell suggests using a variety of green hues. She says to arrange the stems while they are fresh and then hang them outside “where they essentially freeze-dry.” These hearty plants don’t mind the cold: “They’re going to look so pretty covered in snow.” Wreath base, handmade at Petal Pusher, starts at $50 36 | www.greenbaypressgazette.com/you | NOVEMBER 2016

OUTDOOR DECORATING TIPS: • “Wisconsin winters can be wicked,” VanDenElzen says. Metal containers should be weighted down inside with bricks or sandbags before you start decorating. • Not all decorative pieces can withstand a Green Bay winter, Ross says. Some fabrics, such as burlap, won’t tolerate the snow – you might need to bring them inside at night.

• “Start with what you have,” suggests Campbell. Take cuttings from a shrub in your front yard and use them in a wreath to create a natural, cohesive look.

• Delicate berries and garlands will likely need to be replaced after a season or two, Kornowske says. VanDenElzen likes to work with indoor/outdoor berries that tend to be more durable.

• Use a rug that won’t stain or fade; VanDenElzen recommends a doormat that absorbs water into its coils so snowy footprints won’t be tracked inside.

• If you have a storm door, you might need to rethink having a “big, showy wreath,” says VanDenElzen. There’s just not a lot of space between the doors.

• “Not every element has to cost money,” adds Ross, who loves to decorate with branches found in her back yard. • Consider decorating for the season, rather than the holiday, Campbell suggests, to avoid feeling the winter blues during “that time in January when you take down your tree and everything is sad.”

A commitment to volunteerism carved the path for Peggy Pitz, Manitowoc Symphony Orchestra’s (MSO) executive director, to take on the role in 2015. After retirement, Pitz moved back to her hometown from Milwaukee and began volunteering with the MSO—first selling tickets, then as a board member—16 years ago. “I grew up in a family where giving back and volunteering was talked about and practiced,” says Pitz, 67. Pitz, who is known as everyone’s favorite “auntie,” has three siblings who blessed her with 10 nieces and nephews. She lives in the home her father, the late owner of McMullen and Pitz Construction Company, had built in 1929. For the everdriven Pitz, “I can’t” isn’t in her vocabulary.
