In addition, the Dairy Princess and Miss Farm Bureau will be crowned at 9:30 a.m. Each farm family who has hosted a Breakfast on the Farm event gets to put their own spin on the morning. In the Orth family’s case, they will be offering two yoga sessions at 8:30 and 10:30 a.m. My son, Nick, is a certified yoga instructor, Maxine Orth said. Every farm family is a little bit different and they all bring something unique and that makes it worth coming back every year. It’s breakfast and a whole lot more, said Becky Salm, president of the Manitowoc County Dairy Promotion Committee. The Orth family is proud to show off their herd of 710 mature cows and 640 heifers. Some of them are farmed at a different location, said Steven Orth. We also have all the baby calves here that are on milk. We raise the baby calves from one day old to three months and from there they go to the heifer farm until 21 or 22 months of age and then about 2 months before they calve they come home we want them to get home that early so they can adjust. With a herd that size, Steven Orth said that on
average they have three calves born a day. So it’s a very good chance there will be a new addition born during Breakfast on the Farm, he said. The Orths also own or rent 1,490 acres of land. In addition to family, they employ 11 full-time and 2 part-time helpers to assist in the three times a day milking schedule and other farm duties. Their farm produces 61,000 pounds of milk per day which goes to the Baker Cheese Factory in St. Cloud where it is transformed, in Maxine Orth’s words, the best string cheese. Their farm boasts modern technology including milking meters that measure each cow’s daily milk production, as well as each cow’s health; a GPS-led seeding program; specialized feed, and ultrasound detection for herd pregnancies. Everyone will see when they tour
the farms that we really focus on cow comfort it’s very important for milk production to keep the cows comfortable, Steven Orth said.
Steven Orth, co-owner of Orthland Dairy, talks about the expansions and technology upgrades the property has seen throughout the past few years including tunnel ventilation, which is now is used in the freestall barns and milking parlor to help with climate control.
And according to Scott Gunderson, Manitowoc County Dairy/Livestock Extension Agent, it’s also very important for the general public to understand what modern day farming is all about, and it is why Breakfast on the Farm is so important. It’s all about education to show what modern day agriculture is all about. Farmers are very, very bright people. They have to know so much about so many things. It’s astounding, Gunderson said.

PB and J Bars MAKES 2 DOZEN BARS
ingredients: 1 1/2 cups graham cracker crumbs 1/2 cup roasted peanuts, finely chopped 1/2 cup (4 ounces) butter, melted 2 8-ounce packages Wisconsin cream cheese, softened
1 14-ounce can sweetened condensed milk thinly sliced 2 eggs 2 teaspoons vanilla extract 1/2 cup smooth peanut butter 1/3 cup raspberry, grape or strawberry jam
Directions: Preheat oven to 350˚F. In medium bowl, combine graham cracker crumbs, peanuts and butter; press into bottom of 13 x 9 x 2-inch baking pan. In mixing bowl, beat cream cheese until fluff y. Slowly add sweetened condensed milk, mixing until smooth. Add eggs and vanilla; mix well. Remove 1/3 cup batter to small bowl; set aside. Add peanut butter to mixing bowl; mix well. Whisk jam into reserved 1/3 cup batter; mix well. (Mixture will appear speckled.) Pour peanut butter batter evenly over prepared crust; spreading carefully with spatula to create even layer. Drop rounded teaspoons full of jam mixture over peanut butter batter. Use knife to gently swirl jam mixture to marble peanut butter batter. Bake 35 to 40 minutes, or until set. Cool bars slightly before refrigerating to cool completely. Cut bars into 2-inch squares and store in refrigerator.

Cut 1/2-inch slices from each end of baguette. Using long thin knife, work from both ends to hollow out loaf, leaving 1/4-inch crust all around. In small bowl, combine cream cheese, pepper, olives, parsley and thyme. Stir in Italian cheese blend until well combined. Working from both ends, use spoon to fill baguette with cheese mixture, packing tightly to fill. Wrap baguette in plastic wrap and refrigerate at least 2 hours or up to 8 hours before serving. Baguette makes one large sandwich or may be cut crosswise into slices to serve as snacks. *You may substitute another olive variety.

ingredients: 4 ounces Wisconsin cream cheese, softened 1 cup (4 ounces) Wisconsin aged cheddar cheese, shredded 1/4 cup jarred pimientos or roasted red peppers, drained and finely diced 1/4 teaspoon cayenne pepper 1 stalk celery, diced 8 slices Italian bread
Directions: Place cream cheese in bowl of food processor; process until smooth. Add cheddar cheese, pimientos and cayenne pepper; process until combined. Place 4 slices bread on flat work surface. Spread each slice with one-fourth cheese mixture; top with remaining bread slices. Wrap each sandwich with plastic wrap and chill up to 8 hours before serving.
