Anyone else ready for a vacation? Seriously, let’s see a show of hands. After a winter like this one, who isn’t chomping at the bit for a no-holdsbarred, sun-and-sand, frou-frou-drinks-up-thewazoo vacation? This issue of YOU is a love letter to all things travel. I hope your mind begins wandering to far off places as you flip through its pages. As your travel daydreams begin to take shape, consider a few travel tips that have worked for me and made my vacations that much better:
• Do your homework. Before you start racking up those frequent flyer miles, do a little research on your destination. Talk to a travel agent or consult friends and family who have been there before. Hit the library and check out online reviews of hotels, restaurants and museums. Understanding your destination’s culture and what it has to offer will pay off immensely. Read Value-Added Vacations (pg. 14) for ideas on how to get the most from your time away. • Schedule spontaneity. Okay, it might sound weird, but this one is important especially for you Type A personalities. It’s easy to schedule a play-by-play when you have a lot of ground to cover, but give yourself an afternoon without an agenda, just to see what happens. You never know the hidden gems you will uncover when you set out with no particular destination in mind. • Keep a journal. Even if you don’t consider yourself a writer, take a couple minutes each day to jot down some experiences from your day. They could be big events – what it felt like to have your dream of climbing the Eiffel Tower realized. They could be small – something sweet you heard a stranger say on the subway. Years from now, you will be reminded of your once-in-a-lifetime experience. • Put the camera down, just for a moment. I’m as addicted to Instagram as the next girl, but sometimes it’s easy to miss the moment if you’re too busy slapping a filter on it. By all means, take pictures. Lots and lots of pictures. But recognize the beauty of experiencing things in front of the lens.

• Live like a local. By far my most memorable travel experiences have been outside the city limits, away from tourist attractions and the swarm of madness surrounding them. Make those obligatory stops (because when will you ever be back?) but carve out time to wander off the beaten path. Just make sure not to wander into any rough neighborhoods – that’s where doing your homework pays off.

Mary Ellen Gillespie, University of Wisconsin-Green Bay’s first female athletic director, steps up to the plate
It’s not at all surprising when Mary Ellen Gillespie reveals she is a Long Island native. Her East Coast accent, as subtle as it is, gives her away. “I try to get home at least once a summer to visit my folks, catch a Yankees game, jump into the Atlantic ocean and get a slice of New York Pizza,” she says, like a true Long Islander wistful for the trappings of home. Although the native New Yorker admits she isn’t sure when she will be visiting
her home state next. Since late November, home has been a University of Wisconsin-Green Bay residence hall, complete with meal plan, where Gillespie eats, breathes and (when she gets a minute) sleeps Green Bay athletics. On November 27, Gillespie officially began duties as the University of Wisconsin-Green Bay’s director of intercollegiate athletics where she oversees a program that consists of 237 student athletes, 16 teams and about 80 staff members and coaches.

“This is an incredibly exciting time,” Gillespie says. “We are entering into March Madness and both of our basketball teams sit in first place in the Horizon League. If our men clinch the championship tonight, that means Green Bay would host the Horizon League tournament and whoever wins that goes to NCAA.” Later that evening, the Green Bay Phoenix men’s basketball team would indeed clinch the No. 1 seed for the upcoming Horizon League tournament after a victory over visiting Valparaiso. This is their first Horizon League title since 1996. This must not be a bad feeling for an athletic director in her first three months on the job. The path that led Gillespie to Green Bay has been paved with her passion for student life and developing college students, particularly athletes. After earning her bachelor’s degree in speech communication from Plattsburgh State University of New York in 1994, Gillespie knew that she wanted a career in a university setting. “I loved being part of a college campus as an undergrad,” she says. “I played intramural sports and was involved with extracurriculars. Thankfully, Gillespie felt the same way. She was drawn to the universityâ&#x20AC;&#x2122;s size (6,500 students, about the same as her alma mater) as well as the athletics philosophy of producing successful students and the people she encountered during the interview process. â&#x20AC;&#x153;I felt really good about it here when I interviewed. I felt like I left it all here,â&#x20AC;? she says. â&#x20AC;&#x153;I let [the search committee] know that I donâ&#x20AC;&#x2122;t just want to be an athletic director, I want to be the athletic director at Green Bay. We can take this place to the next level together.â&#x20AC;? For Gillespie, the next level will consist of utilizing her background in external relations and revenue generation to grow the program. Whether itâ&#x20AC;&#x2122;s fundraising, creative auxiliary events or merchandising, Gillespie feels confident that she and the staff already in place will work together for the betterment of the program.

“Nothing is broken here, but it’s a young institution and there are certainly some things that need to be tweaked,” Gillespie says. “From a funding standpoint, that’s where we will make the greatest impact.” Gillespie is the eighth person and first woman to hold supervisory responsibility for intercollegiate athletics in the 44-year history of the Green Bay program. Being named Green Bay’s first female athletic director is a significant appointment that Gillespie doesn’t take lightly, although she doesn’t feel that it comes with additional pressure. “I take it seriously because there’s a small group of us. Fortunately that’s been changing a little bit. There’s been several women over the past year to 18 months who’ve been hired into Division 1 athletic director roles. They are people I’ve looked up to, people who have mentored me.

“For me the pressure I feel is I want to make that group of people proud, those who helped me get to where I am,” Gillespie says. “I think it’s great that more and more women are getting involved in athletic administration. I’m incredibly honored to be part of that.”

workout in before the day takes off. She likes to be at her office early to get started on answering emails and phone calls, especially if it’s a day with back-toback meetings. Gillespie has a hand in everything from big picture goal-setting, planning and budget management to day-to-day tasks such as ensuring the department has the needed athletic equipment and uniforms. Often, Gillespie doesn’t call it a day until 10:30 at night. Going to her athletes’ games is a priority, regardless if they are in the evening, on weekends or even holidays. “Anyone who wants to work in athletics knows it isn’t a job, it’s a lifestyle,” Gillespie says. “If I am not traveling for work, I made the promise I will be at our student athlete events. They need to know that I support them and I’m their biggest cheerleader.”

Take advice from someone who knows – there are several locations that make great picks for cost-effective spring-break destinations, says Rose Gray.
Travel tips to keep you from breaking the bank Coming off one of the most “memorable” winters in recent history, many minds are turning to vacation planning. Before you make what you believe is the best choice for your budget, however, make sure you follow the advice of travel industry professionals.
Rose Gray, manager of business development for vacation sales at Fox World Travel, Inc., said the first thing you need to remember is flexibility. “There are certainly off and low seasons,” she explains. “If you’re going to go to Europe, for example, their high season is typically June, July and August. If you can avoid that, there will be savings. “If you are hard and firm on dates, and it just so happens that the particular package that you were looking at sold out of its discounted spots, you’re also not going to get the best value at that particular time,” Gray adds, “so if you can move your dates around a bit that’s going to help as well.”

“Cancun/Riviera Maya is always a good bet,” says Gray. “From Milwaukee there are nonstop charters every day of the week until Easter. And there are tons of all-inclusive resorts, many of them that cater to families.”

Working with your travel agent, says Paradise Travel and Cruise owner Kelly Van Scoyk, is integral to getting the most value for your money. They have insight as to which hotels and resorts offer additions like free nights and free breakfast. “When you book a hotel packaged with airfare, you can have access to deals that aren’t available to the general public,” she explains. “Hotels can have a rate they aren’t publishing publicly, and airlines may have a fare they aren’t making available to the general public, so combining the two can be a good deal. All-inclusive hotel packages in Mexico or the Caribbean can be a great way to control expenses. Some resorts even have offers where kids stay and play for free.” Similarly, says Gray, traveling with a tour company can be a great option. “The tour company has negotiated air fare, hotel rates, prices for excursions, etc.,” she explains. “People think if they do it themselves it will be better value. That isn’t always the case; you don’t have the buying power a tour company has.” Gray adds that when you’re with a tour company, they also have V.I.P. tour access – meaning no daylong wait times for destinations like the Sistine Chapel. Give thought to the modes of transportation you use on vacation, adds Gray, as they also have cost-effective choices. “If you are taking taxis, privately scheduled limos – that’s a very expensive proposition,” she adds. “There are certainly some advantages to that, because of speed and comfort. But many cities have great public transportation systems, whether it’s domestic or international. Many of those cities also offer passes for their public transportation, available for pre-purchase, which can include discounted entrance to museums and attractions.” When looking for a place to eat, dining locally can also help control costs and can provide a once-in-a-lifetime experience. “One of the best ways to save money while traveling is to eat locally,” advises Van Scoyk. “Try to find restaurants that locals frequent as opposed to tourists. Not only will the prices be lower but the food will also be more authentic.” The same thought applies to entertainment. Explore the museums and parks for discounted rates and also visit those sites that are free at your destination, like New York City’s Central Park or the Villa Borghese gardens in Rome, adds Gray. And perhaps the most important advice is to rely on your travel agency in times of need, both during and after the vacation, she continues. “You’ve got a safety net,” she says. “Not only when you get back if you have a problem, but the voice of a travel agency is going to be much louder than you as an individual traveler.”

When traveling for business from city to city, it’s easy to get out of your normal routine – but that’s not reason enough to drown one’s sorrows in a plate of french fries. It’s important to stay consistent even when on the road, says Ashley Packard, general manager of Get In Shape for Women in Green Bay. She states that working out for 30 minutes can help improve cardiovascular health, provide more energy, improve brainpower and mood, and ward off viral illness by activating the immune system.
Warming Up Now that you’ve been convinced to step away from the room service menu, Packard says that jumping jacks, high knees, mountain climbers – anything that gets your heart rate up – is a great place to start your warm-up. Push-ups: Works the chest and triceps 3 sets, 10 reps each 1. Lie on the f loor face down and place your hands about 36 inches apart while holding your torso up at arms length. 2. Next, lower yourself downward until your chest almost touches the f loor as you inhale. 3. Now breathe out and press your upper body back up to the starting position while squeezing your chest. 4. After a brief pause at the top contracted position, lower yourself downward again for your repetitions.
Variations: If you are new at this exercise and do not have the strength try performing the exercise against the edge of a desk instead of the f loor.

1. Stand with your feet hip-width apart, and place your hands on your hips. 2. Put your shoulders back, lift your chest, and pull in your abdominal muscles. 3. Lower down, as if sitting. Bend your knees while keeping your upper body as straight as possible, as if you were lowering yourself onto a seat behind you. Lower yourself as far as you can without leaning your upper body more than a few inches forward. Tip: Don’t allow your knees to go too far forward. They shouldn’t stick out past your toes. 4. Straighten your legs, being careful not to lock your knees when you reach a standing position. 5. Repeat the movement. Tip: Stretch your arms out in front of you for added balance during squats.

So when I begin to toss items into my suitcase, I’m immensely inf luenced by where I’m heading. As you begin to circumnavigate the globe, you too may find that your explorations and adventures will have a beautiful affect and end result on your wardrobe and sense of style. But for now, let’s set ourselves adrift on a voyage that takes us to four perfectly different and equally exquisite worlds and, most importantly, let’s focus on what we might wear on those travels both near and far.

Miami is where I’ll head to feel the warm sun on my skin. This getaway offers a chance to unwind on the beach, sand in between your toes and palm trees swaying in the breeze. And then later, a picturesque candlelit dinner overlooking the ocean. In Miami you can show a little more skin and this neon leopard print feels f lirty and beachy to me. It’s even perfect for slipping over a bikini and heading to the boardwalk. Sparkly sandals and piles of bangles add a touch of glitz.

Improve your money savviness at Money Smart Week Women’s Financial Seminar at Brown County Central Library on Saturday, April 12 from 9 a.m. to 1 p.m. The Brown County Money Smart Week Committee, Brown County Library and Brown County UW-Extension have partnered with individuals and organizations to provide free programming for the public that is related to financial literacy during Money Smart Week, a public awareness campaign designed to help consumers better manage their personal finances, occurring April 5 – 12. “Instead of having scattered events around town, we decided to have a women’s financial seminar at the library,” says Bobbie Kuehn, Brown County Library East Branch coordinator. “The aim is to focus on women and financial literacy.” Eight different 50-minute sessions, each covering a unique stage of a woman’s financial life, will take place at the Brown County Central Library in the lower level meeting room. From managing credit and investing to understanding estates, wills and trusts, women will be able to get the information they need to make better financial decisions. A session titled “How to turn your Passion into a Business” will feature a panel of local female entrepreneurs sharing tips on how to be a successful business owner. Portable Power Snacks Easy eats to keep you fueled on all your adventures By Amelia Compton Wolff The car is packed. The playlists are loaded. The gas tank is full. The only thing left? Stocking a cooler with tasty, and healthy, treats to keep hunger pangs at bay so you can focus on fun and not on the next gas station snack stop. This travel-friendly grub will keep at room temperature, but avoid leaving any edibles in a hot car for too long â&#x20AC;&#x201C; although we have a feeling that wonâ&#x20AC;&#x2122;t be a problem. 28 | www.greenbaypressgazette.com/you | march 2014
Crunchy Indian Spiced Chickpeas 1 15-ounce can chickpeas (garbanzo beans) 1 tbs olive oil 1/2 tsp curry powder 1/2 tsp garam masala 1/2 tsp ground cumin 1/4 tsp garlic powder 1/4 tsp sea salt
Directions: Preheat oven to 425 degrees. Line a baking sheet with tinfoil. Rinse chickpeas and pat dry with a paper towel. Discard any skins. Toss chickpeas with oil and spices in a large bowl until evenly coated. Spread chickpeas on foiled baking sheet and roast for about 40 minutes or until the chickpeas are a golden brown. Stir once or twice during roasting. Remove from oven and cool completely before eating. Store in an airtight container or bag. Good idea: Taste a chickpea before roasting to make sure they are spiced to your liking. Feel free to try adding additional spices or create your own combination.

Peanut Butter & Oat Energy Bites 1 ½ cups old-fashioned oats 2/3 cup shredded coconut ½ cup peanut butter ½ cup honey 1 tsp vanilla extract ½ cup chopped almonds 1 tbs chia seeds
Directions: Preheat oven to 350 degrees. Spread oats and shredded coconut on a parchment covered baking sheet. Toast oats and coconut for 15 minutes or until slightly browned. Let cool. Meanwhile, warm peanut butter and honey in a saucepan over low heat until blended. Toss oats, coconut, vanilla, almonds and chia seeds in a bowl. Pour peanut butter-honey mixture over dry ingredients and mix thoroughly. Let chill in the refrigerator for half an hour or the freezer for 15 minutes. Once chilled, roll into 1 inch balls. If mixtures feels too dry, add a little more honey or peanut butter. If it feels too wet, add a few more oats. Makes about 20 balls. Keep chilled or at room temperature. Good idea: Experiment! Load these bites with your favorite nuts, seeds, dried fruit or even a few chocolate chips.
Sriracha Kale Chips One bunch organic kale 1 tbs Sriracha sauce 2 tbs olive oil Sea salt to taste
Directions: Preheat oven to 350 degrees. Wash kale and dry completely with towel. It’s important that the kale is completely dry or it won’t crisp. Remove the stems and tear leaves into bite sized pieces. Whisk Sriracha and olive oil together. Place kale in a bowl and slowly drizzle with Sriracha-olive oil mixture. You might need to do this in several batches depending on the size of the bowl. Toss to coat leaves evenly. Add sea salt to taste. Good idea: Be careful not to oversaturate the kale. Each piece should be shiny, but no oil should be pooling at the bottom of the bowl. Less is definitely more! Lay kale on a baking sheet in one, even layer. You may need two baking sheets. Bake about 12 minutes or until outer edges are crispy. Adjust baking time as needed. Let cool and enjoy!
