Gingerbread Cupcakes For the cookies: 1 stick butter 8 ounces sour cream 2 cups all-purpose flour 3/4 teaspoon baking soda 1 1/2 teaspoons ground ginger 1 teaspoon ground cinnamon

1/4 teaspoon ground cloves For the frosting: 8 ounces softened cream cheese 1 stick softened butter 1/2 teaspoon pure vanilla extract 1/2 cup sugar

Preheat oven to 350 degrees F. Line a muffin pan with paper liners. Combine butter with sour cream in mixer. Meanwhile, sift flour, baking soda, ginger, cinnamon and cloves into a small bowl. With the mixer on low speed, slowly add flour mixture to butter and sour cream mixture until smooth. Divide batter into muffin pan liners. Bake on middle rack of oven for 25 to 30 minutes. For the frosting, mix cream cheese, butter and vanilla in a bowl. Add sugar and mix until smooth.

Roasting Tips

There are all sorts of fancy cooking methods for meat, but one of the most tried and true is the simple roast. Especially good for large cuts of meat, the basic roast will leave your meat juicy and tender. Be sure that your meat is at least 2 inches thick. The meat depends on its own juices to provide some of the flavor and extra juiciness, so roasting too thin a piece can be counterproductive. The steps to a perfect roast: • Place the meat fat side up on a rack in an open roaster; • Do not add water, as the meat will use its own juices; • Insert a meat thermometer into thickest part of roast when the cooking time is nearing the end; and • Allow the meat to stand for 15 minutes before carving.

Cookies With the Kids

Cooking is a holiday tradition that should be enjoyed by people of all ages — even the kids. And depending on the age of your children, there are plenty of cooking activities to which they can lend a hand this year. All it takes to get them involved is some clean hands and plenty of patience on your part. You can assign different tasks to your children depending on their age. This will help keep them organized and focused on their own specific roles. It also will ensure that the appropriate jobs are being handled by the appropriately aged children. Mixing and beating, for example is probably not a job for your 2-year-old toddler, while adding sprinkles to cookies may very well be. Here are some ideas of how you can involve your children in the cooking process, depending on if they’re younger (ages 2 to 5) or older (ages 6 and above).

Younger Children

Youngsters love cracking eggs. And as long as you’re there to supervise to make sure they’re not ingesting them, this can be a fun, educational experience for your toddler. You also can enlist your youngest children to pour ingredients into a mixing bowl after you have measured them out. The most fun step for children of any

age may be frosting the desserts, so step back and let them have a little fun. Other roles can include: • Rolling cookie dough into balls; • Flattening the cookie dough balls with their fingers; • Rolling balls of cookie dough in sugar; and transferring cookie balls onto a baking sheet.

Older Children

If you trust your older children to use hand-held electric mixers, they can help you take care of this step while you combine other ingredients. You may want to step in when the time comes to add messy items such as flour, sugar or softened cream cheese. Here are some other roles that are perfect for the grade-schooler: • Stir in chocolate chips, raisins or other ingredients; • Cut out cookie shapes from the rolled dough; • Unwrap and press chocolate kisses into the tops of cookies; • Frost and decorate cookies by themselves; • Dip cookies in melted chocolate or drizzle the chocolate over the cookies; and • Pipe frosting features on gingerbread men and other desserts.

One of the more significant decisions holiday hosts must make is choosing what to serve when guests arrive for holiday dinners. Holiday dinners are often more extravagant than the run-of-the-mill dinners families eat on ordinary weeknights. Crafting a special dinner requires both planning and prep work, and there are some ways to make the experience go more smoothly.

What’s cooking?

Culture often dictates which meals are prepared. Many popular main courses involve pork and poultry, as baked hams and roasted turkeys are especially popular during the holiday season. But regardless of history, hosts should consider which foods appeal to the greatest number of guests, then plan the dinner around these items. Also, if

you’re ’ kknown ffor a particular l dish, d h go ahead and make that, even if it’s a less traditional holiday meal. Another savvy move is to choose foods that can be prepared in advance. If you’re hosting a houseful of guests, steer clear of foods that require individualized attention or must be cooked and served promptly, like a risotto. Homemade Dinner Rolls H

for Those With Gluten Allergies

oliday dinners vary depending on the household, but certain staples seem to pop up no matter where you sit down to enjoy your holiday meal. Dinner rolls are one such staple, as few things supplement a hearty holiday meal better than freshly baked homemade dinner rolls. Men and women with gluten allergies may want to avoid traditional dinner rolls, but holiday hosts can take steps to ensure everyone gets to enjoy dinner rolls regardless of their dietary restrictions.

Dinner Rolls Makes 18 rolls 4 tablespoons granulated sugar 2 cups warm milk (about 110 F) 2 tablespoons active dry yeast 3 cups gluten-free all-purpose flour 2 teaspoons xanthan gum

4 teaspoons baking powder 1 teaspoon salt 2 extra-large eggs 1⁄4 cup neutral-flavored oil such as rice bran or canola 2 teaspoons vinegar, preferably apple cider Melted unsalted butter for brushing

Brush 18 standard muffin cups (one 12-cup pan and one 6-cup pan) with melted butter and dust with tapioca flour. In a small bowl, whisk 1 tablespoon of the sugar into the warm milk. Whisk in the yeast to dissolve. Set aside to proof. The mixture will get foamy. If your kitchen is warm, the mixture will foam quickly, so watch it to make sure it does not overflow the bowl. In a medium bowl, mix together the all-purpose flour, xanthan gum, baking powder, salt, and remaining 3 tablespoons sugar. In the bowl of a stand mixer fitted with the paddle attachment, beat the eggs on medium speed until foamy, about 3 minutes. Add the oil and beat for 2 more minutes. Reduce the speed to low, add the vinegar and beat to

combine. Add the yeast mixture and beat to mix. Add the flour mixture and beat to combine, then increase the speed to medium-high and beat for 3 minutes longer. Distribute the dough equally among the prepared muffin cups and fill them about three-quarters full. With a sharp knife that has been dipped in tapioca flour, cut a deep slash in the top of each roll. Dip the knife in flour before each cut, and don’t worry if a little extra tapioca flour is left on top of the rolls. Preheat the oven to 375 F. Let the dough stand in a warm, draft-free place to rise until doubled in bulk, about 40 minutes. Brush the top of each roll with melted butter. Bake until the tops are a nice golden brown, about 20 minutes. If they start to brown too quickly, loosely tent the rolls with aluminum foil. Remove the rolls to wire racks to cool. If you are serving them immediately, it’s nice to put them in a tea towel-lined blanket to keep warm.

Maybe you’re part of a holiday care package giving organization. Either way, if you’re new to sending one, there are some requirements you should be aware of to make sure it gets there safely. You should be selective about exactly which items you plan on sending overseas. There are customs issues and security regulations that must be considered by when it comes to shipping packages to members of the military.

What to Send

Trees for Troops

W

hat better way to brighten a day than to send a real Christmas tree? Last year, Trees for Troops provided them to more than 18,000 military families and troops across the world. The organization has delivered nearly 200,000 trees since its 2005 inception and uses FedEx to deliver to more than 60 military bases in the United States and overseas. Every year, volunteers help organize, box and load thousands of trees that are shipped to United States armed forces members in all branches of the military and their families. Members of the National Christmas Tree Association and many state and regional Christmas tree associations take on this project as a way to show their appreciation for those who serve in our military. The organization provides free, farm-grown trees that are of the highest quality.

smaller items and be stacked inside of larger bins to keep everything neat and organized. Zip-top storage bags are also handy for ornament hooks and other small trinkets. • Find cushioning material. Fragile ornaments will need to be packed in some sort of soft wrapping to prevent breakage. Tissue paper, newspaper, old dish towels, and even faux polyester “snow” can be used to line bins and boxes. Label accordingly so you can isolate the breakable items. • Start with the tree. If you have a live tree, this should be the first item you remove. The longer the tree dries out, the bigger the mess it creates. Take down the lights and spool onto an empty paper towel tube or package into individual plastic bags to avoid knots and kinks. Thread a tree bag over the top of the empty tree and scoop around the bottom to contain as many pine needles as possible. Drag the tree outdoors and dispose or recycle according to neighborhood collection guidelines. Vacuum up any fallen needles. If you have an artificial tree, take the same steps, but store the tree away for next year.

• Divide your home into quadrants. You likely use the same decorations in the same places each year. To make decorating easier next year, dismantle holiday displays and pack them up according to specific areas of the home. For example, store all picture window decorations in one bin and label thusly. Continue to store decorations according to the room where they are hanged. Items that are used strictly for outdoors can be grouped together and stored in the garage. • Use a gift wrap organizer. Underthe-bed storage containers are ideal for storing gift wrap and assorted accessories. You also can use a hanging shoe organizer to store bows, tape and name tags. Wrapping paper rolls also can be stored horizontally over rafters in the attic or garage. • Be especially careful with candles. Pack candles separately from other items, as candles must be kept in a relatively cool area so they do not melt when temperatures rise. • Keep an empty bin handy. Use this bin to store any gifts or decorations you buy throughout the year. This way you won’t forget where you stashed them.
