Mi Historia de Empanadilla (My Empanadilla Story) This recipe is from my grandmother, but to be specific, it is a Puerto Rican dish. I only eat empanadillas on special occasions, and I eat them when I go to Florida, where my grandma lives. Since I always watch my grandma make this, I became interested in the Puerto Rican tradition. Whenever my grandma starts cooking this dish, she won’t let anyone in the kitchen--I would say she is very protective of it. I learned this recipe over the years by sitting at the counter watching her kneading the dough, seasoning ground beef, and frying the empanadillas. To this day, I am still not allowed to be in the kitchen while she cooks, but afterwards I get to eat Puerto Rican food with my brother, mom, uncle, and my grandfather. I think this recipe represents me because I really want to carry on my family tradition and because I am proud of my culture.
