It is never easy naming a restaurant and on this occasion I wanted something that represented our menu that is inspired by historic British gastronomy, so I searched for a name that had a bit of history, but was also fun. ‘Dinner’ fit the bill perfectly. In the past, the main meal -dinner-was eaten at midday, before it got too dark. But affordable candles and, later, gaslight saw dinner shift. By the mid-1800s people were dining later. People working in the cities were taking a ‘lunch’ to work and having their main meal at 5.00pm when they got home,

while in rural areas the main meal was still taken at midday. Even today, depending where you are in the British Isles, ‘dinner’ might be served at lunchtime, suppertime or, indeed, dinnertime! This made ‘Dinner’ the natural choice for its typically British quirky history and linguistic playfulness. If nothing else, I hope it’s easy to remember. The restaurant interior has been conceived as a subtle, elegant portrait – contemporary and innovative, yet


mindful of tradition. The dining room features floor-toceiling glass walls, giving diners a view of the kitchen and its unique pulley system. Modelled after a version used by the royal court, the pulley’s rotate the spit on an openfire. The ivory-painted walls are decorated with custommade porcelain wall sconces in the shape of antique jelly moulds. Originally from Dorset, Ashley Palmer-Watts’s love of food began with his love of the countryside and his familiarity with the seasons and exceptional produce of

Head Chef in 2003. Since 2008, he has been the Executive Head Chef for the Fat Duck group. Ashley currently heads up the kitchen at Dinner by Heston Blumenthal at the Mandarin Oriental, Hyde Park. His creative eye for detail coupled with a great enthusiasm for research and British ingredients have enabled him to create the unique menu of historically inspired British dishes with Heston Blumenthal for the new restaurant. He continues to oversee development at The Fat Duck, The Hinds Head and The Crown Pub in Bray.

After leaving school, he started to work at Le Petit Canard in Dorset where he learnt the fundamental disciplines of the kitchen whilst spending most of his free time visiting producers and suppliers. Ashley joined Heston Blumenthal at The Fat Duck in Bray in 1999 when it had just received its first star. Within two years, he was promoted to Sous Chef and he became

CHICKEN LIVER MEAT FRUIT Makes One Terrine

Recipe:

Mandarin Jelly Ingredients 45g leaf gelatin 500g mandarin purée 80g glucose 0.4g mandarin oil 1.5g paprika extract

Chicken Liver Parfait Ingredients 100g finely sliced shallots 3g minced garlic 15g sprigs of thyme, tied with string 150g dry Madeira 150g ruby port 75g white port 50g brandy 18g table salt 400g chicken livers (trimmed weight) 240g eggs 300g unsalted butter, melted Instructions Place the shallots, garlic and thyme in a saucepan with the Madeira, ruby port, white port and brandy. Set aside to marinate for 24 hours. Heat the marinated mixture until nearly all the liquid has evaporated, stirring regularly to prevent the shallots and garlic from burning. Remove from the heat and discard the thyme. Preheat the oven to 100°C. Fill a bain-marie with 5cm water and place in the oven.

Instructions Place the gelatin in cold water to soften. Gently heat the mandarin purée and glucose in a pan to combine. Add the softened gelatin and stir well until dissolved. Remove from the heat and add the mandarin oil and paprika extract and stir well. Pass the mix through a fine sieve and reserve in the fridge until required. To make the Fruits Using a spoon, fill dome moulds with parfait, ensuring there is enough pressure to create a completely smooth surface. Level off the tops so that they are flat and cover with Clingfilm. Gently press the Clingfilm directly onto the surface of the parfait. Place in the freezer until completely frozen. Gently de-mould the parfait domes. Place on a board with the flat sides facing upwards. Very briefly run the flame of a blowtorch over the flat side, being careful to only just melt the surface of the parfait. Join two halves together and compress using a square of Clingfilm. Wrap well in Clingfilm and place back in the freezer until required. Gently push a wooden cocktail stick into the middle of the rounded surface and re-wrap until all the parfaits are complete.

Preheat a water bath to 50°C. Sprinkle the table salt over the livers and put them in a sous-vide bag. Put the eggs and the alcohol reduction in a second sous-vide bag, and the butter in a third. Seal all the bags under full pressure, then place in the water bath for 20 minutes. Remove the bags from the water bath. Combine the eggs, alcohol reduction and meat in a Thermomix and blend until smooth at 50°C. Slowly blitz in the butter and blend until smooth. Pass the mix through a fine sieve using the back of a small ladle. Pour into a terrine dish and place in the bain-marie and cover the bain-marie with aluminium foil. Cook the parfait until the temperature in the centre reaches 64°C. Remove from the oven and allow to cool. Refrigerate for 24 hours before serving.

Gently melt the mandarin jelly in a saucepan and allow to cool to room temperature. Remove the Clingfilm and dip each ball of parfait into the jelly and stand the sticks into a piece of Oasis covered in Clingfilm. Place in the fridge for a minute then repeat the dipping process. Dip a total of three times, then gently remove the cocktail stick and place the balls onto a tray covered in Clingfilm. Place a lid over the tray and leave in the fridge to defrost for at least 6 hours. Once defrosted, gently push the top of the ball using your thumb to create the shape of a mandarin. Place a stalk and leaf in the top centre of the indent to complete the fruit.

Recipe: For the Pickled Lemons Ingredients 150g water 100g chardonnay vinegar 50g sugar 2 Amalfi lemons Instructions In a pan over a gentle heat, mix the water, vinegar and sugar together. When the sugar has dissolved, remove from the heat and allow to cool. Thinly slice the lemons, discarding the seeds and place into the pickling liquid. Place in the fridge for at least 48 hours before using.

To Cure the Mackerel Ingredients 25g light brown sugar 75g table salt 20g lemon zest 10g lime zest 10g coriander seeds 2g black peppercorns 2 fresh mackerel Instructions Place the sugar, salt, bergamot and lime zest, coriander seeds and peppercorns in a food processor and blitz until finely ground. Gut and fillet the mackerel. Run the tip of a sharp filleting knife down either side of the pin bones and bloodline in the centre of each fillet and gently remove this area by pulling it away with a pair of fish tweezers.

For the Lemon Mayonnaise Ingredients 36g egg 20g Dijon mustard 180g arachide oil 10g Chardonnay vinegar 2g table salt 40g lemon juice Instructions Combine the egg and mustard together in a bowl. Gradually incorporate the oil, whisking continually to emulsify. Add the vinegar, salt and lemon juice and mix well. Refrigerate until required. For the Garlic & Anchovy sauce Ingredients 75g garlic cloves, peeled and de-germed 4 x 300g semi-skimmed milk for blanching the garlic 200g semi-skimmed milk 8g Panko Japanese breadcrumbs 50g anchovy fillets 42g olive oil 15g lemon juice mayonnaise (from above) Instructions Cover the garlic with 300g milk and add a dash of cold water. Bring slowly to a simmer then drain and rinse the garlic under cold running water. Return the garlic to the pan and repeat this process three more times. In a pan, cover the garlic with the 200g of milk and bring to a simmer. Allow to cook until the garlic is very soft and the milk has reduced in volume. Remove from the heat and pour into a jug. Blitz using a hand blender until smooth, then add the breadcrumbs and anchovy fillets and blitz again until smooth. Whilst blitzing, slowly add the olive oil and lemon juice then pass through a fine sieve. Weigh the garlic and anchovy mix, add 30% of the total weight, of mayonnaise and mix well. Refrigerate until required.

Spread the bergamot cure on to a tray and place the fish fillets on it, flesh-side down. Cover with clingfilm and refrigerate for 2 hours. Rinse the fillets under cold running water to remove the cure then pat dry with kitchen paper. Place a non-stick pan over the lowest possible heat. Wipe the bottom of the pan with a very thin layer of olive oil. Place fillets one at a time skin-side down in the pan and apply gentle pressure by hand to ensure that every part of the skin is in contact with the surface of the pan. Cook for approximately 10 seconds or just enough to soften the skin. Remove from the pan and place fleshside down on a tray lined with greaseproof paper. When all the fillets have been cooked in this way, place the tray in the fridge to cool the skin down. To Smoke Line a barbecue fish clamp with the meadow hay. Place the fillets in a single layer on the hay and cover with more hay before closing the clamp. Either place onto a lit barbecue or set the hay alight and allow to burn. Remove the fillets from the hay, cleaning off as much of the bits as possible, and set aside. To Serve Baby onions, peeled, blanched and cut in half Seasonal leaves Endive leaves, blanched for 5 seconds and cut in half 25g olive oil 25g lemon juice When ready to serve, cut each fillet into four pieces. Spread a tablespoon of garlic and anchovy sauce on each plate and place the mackerel pieces on top. Garnish with the onions, endive, pickled lemon and seasonal leaves. Whisk together the olive oil and lemon juice and drizzle a little around the dish before serving.

Italian builder Wally has kicked off it ‘megayacht’ motor yacht line with the construction of the “WallyAce” model -the design was introduced some time ago- of which a few units on the 26-meter variant are in build. There are two variants so far, the 26-meter (86-feet) and the 36-meter (118-feet). The WallyAce 26-meter model is was launched in 2012. This variant is expected to mount twin CAT marine engines, CAT C12s with 350-horse power each allowing her to run to 12-knots. She is not a speedster because
