With a strong belief in the demand for an essential travel guide about Georgia, my team and I have spent more than six months developing the concept of WHERE – an English language guidebook with the most accurate and, more importantly, regularly updated information about WHERE to Go, Stay, Eat, Drink, Buy. We hope the first issue of WHERE will satisfy the need every tourist has for a better understanding of Georgia’s tourist potential. Andreas Heidingsfelder, General Manager of Sheraton Metechi Palace Hotel shares his personal travel experience in Georgia It was very hard to choose just five destinations to visit in Georgia, as there are so many places to explore in this country. When I travel to foreign countries I try to see those ancient places most particular, unique and characteristic to the country, so I will follow this personal rule and guide you to discover the Georgia I know.

Tbilisi: baThs (abanoTubani) Every country has its own legends regarding how its cities were founded.

Let’s start with Tbilisi’s legend: as it is known, the present territory of Tbilisi was covered by forest as late as AD 458. According to sources, King of Georgia Vakhtang I Gorgasali, went hunting in the heavily wooded region with a falcon. The King’s falcon wounded a pheasant during the hunt, after which both birds fell into a nearby hot spring. When the King and his retinue found the birds they were boiled. King Vakhtang was so impressed with the discovery of the hot springs that he decided to build a city on the spot. The name Tbilisi derives from the Old Georgian word “Tpili” meaning warm. The name Tbili or Tbilisi (“warm springs”), was

therefore given to the city because of the area’s numerous sulfuric hot springs. Abanotubani (District of Hot Springs) is one of the oldest places in Tbilisi, also known as Old Tbilisi. It’s a multicultural area where you’ll find round brick domes of the oldest sulphur baths - Erekle’s Bath. The Orbeliani (blue) bath, with an arrow-like facade and minarets on the sides- is distinguished from the baths located on Abano (bath) street. It is also known as “Chreli abano” (motley bath), as it got its name because of the motley tiles covering the portal. If you don’t have time to enjoy the sulphur bath experience, you


can walk around the narrow streets going up to the Narikala fortress and Tbilisi Botanical Gardens. You can also go for a wander round the streets to discover old Georgian houses with balconies hanging off the mountain. Later, take the weight off your feet on a bench to enjoy the waterfall. Once your energy is back, take a 5-minue walk to the Shardeni district where I’m sure you’ll find the perfect lunch spot in a Georgian or international restaurant.

KaKheTi – sighnaghi Kakheti is known as Georgia’s best wine-producing area. Kakheti is also rich in history: here you’ll find the incredible monastery complex of Davit Gareji, the picturesque hilltop town of Sighnaghi, and many beautiful churches, castles and mansions around the main town, Telavi. On the way to Sighnaghi don’t miss the Monastery in Bodbe with its beautiful colorful gardens and historical churches. I suggest a visit to Sighnaghi, it is known as the town of wine and love, perhaps due to its romantic cobbled streets, carved balconies and wineries. Try famous Georgian wines: Rkatsiteli, Tsinandali, and Saperavi. From the edge of the town, you can find beautiful panoramic views over the Alazani valley to the Caucasus and beyond. Take time to enjoy the beauty of Sighnagi from the distance of the road, but don’t rush away- stay a night or two.

TsKalTubo – PromeTheus Cave naTural monumenT Tskaltubo is located in the Imereti region. The Prometheus Cave is one of Georgia’s natural wonders, with magnificent examples of stalactites, stalagmites, curtains, petrified waterfalls, cave pearls, underground rivers, and lakes. The entrance height of the cave is 3.5-4 m, and it has a width of 7 m. The main entrance to the 60 meter siphon passes the lake, which turns into the river Qumi. I will tell you one legend about this place: Khvamli Mountain is visible from the Prometheus Cave and is the place where legend says that Prometheus was chained. Don’t miss out on a bonus exciting 280 meter boat tour on the underground river in the cave.

ahalTsiKhe – rabaTi Of the Georgian landmarks located in the SamtskheJavakheti region, Akhaltsikhe (Rabati), Vardzia monastery complex, Safara monastery and Vani Caves stand out. This time round I’ll focus on Rabati Castle, located in Akhaltsikhe -the capital and biggest town of SamtskheJavakheti. Since the 13th century, Rabati has been famous for its ethnic and religious diversity and tolerance, in a frontier area where different empires, kingdoms and peoples met. Rabati today still has Georgian Orthodox, Armenian Apostolic and Catholic churches, a synagogue and a mosque within one complex. The Museum, situated on the territory of the former Rabati, is definitely worth a visit- it houses a significant religious cultural heritage: old manuscripts, epigraphic, archaeological finds, numismatics, ethnographic materials, photos and old printed books.

svaneTi – TeTnuldi sKi resorT My ‘last but not least’ suggestion is for those who love mountains, skiing and the extreme! Tetnuldi Ski Resort, in the Svaneti region, is the second largest after Gudauri, the most popular ski resort in Georgia. Tetnuldi is a very special Georgian resort with plenty of opportunities to ski; a paradise for lovers of winter sports and winter tourism. The skiing area in Tetnuldi is concentrated on the northern, western and south-western slopes of Mount Tetnuldi (4858 m), at altitudes from 1600 m to 3165 m. After a fascinating Ski Experience, I would recommend trying the extremely delicious hot dish Kubdari accompanied by Rakhi - a strong alcoholic drink distilled from local fruits and berries. Kubdari is a meat filled pastry that originates from Svaneti. It can be made with either beef or pork but the most popular version uses both. It should be made with cut meat, not minced, mixed with Georgian spices and onions. Svaneti also makes a great trip in summer where you can take a ride to Ushguli, part of the Upper Svaneti UNESCO World Heritage Site and considered to be the highest continuously inhabited settlement in Europe – 2410 meters above sea level. The Ushguli Chapel located on a hilltop near the village dates back to the 12th century. Check if flights from Natakhtari Airport (just outside Tbilisi) to Mestia are running to avoid that beautiful but unfortunately long road trip to reach Svaneti otherwise. Enjoy your stay in Georgia! Tbilisi’s Famous Baths: Which One to Choose? By Katie ruth davies Legend has it that King Vakhtang Gorgasali was hunting in the area, shot a pheasant and it fell into one of the natural hot springs. When he found it, it was fully boiled and he decided, based on the hot waters, that the area would be an ideal place to locate a city. The city was named Tbilisi (Tbili = warm).

King Vakhtang moved the capital of his kingdom (then known as Iberia) from Mtskheta, about 20 km away, to Tbilisi at some point in the late 5th Century. Archaeological evidence has found Roman style baths in the city that date as far back as the 1st century. Today’s thermal baths are based on a Persian tradition, most popular at the time of the

original Silk Road when there were 63 baths. This had reduced to just 10 by the period of the Russian Empire, when the baths of Abanotubani saw famous bathers like Pushkin and Dumas. Now there are just five baths in operation. The sulphur baths are a part of Tbilisi’s core identity. High in sulphur and other minerals, with a constant temperature of

38°C to 40°C, the hot waters have long been used as a therapeutic aid for a variety of conditions including skin disorders and arthritis. The naturally spring-fed public sulphur baths have been an essential part of life in Tbilisi for centuries, with citizens spending entire days relaxing there, even throwing formal dinner-parties inside or using the

TIPS: Smoking and drinking is allowed only in the antechambers of the private baths, not within the bath chambers themselves. In communal bath rooms, you may find someone lighting up in the changing rooms but certainly not in the bath chambers themselves. It is unadvisable to drink alcohol during the bathing process and avoid bathing at all if pregnant or if you have a heart condition. Take off silver jewellery as the sulphur water will taint it (nothing an overnight sit in vinegar or soda won’t cure, but it saves the hassle just to take it off before you dip!).

baths as a match-making tool for future mothers-in-law to check out what their sons were getting in their new wives. Alexander Pushkin was one of many famous people to try the warm waters, saying of his experience, “I have never encountered anything more luxurious than this Tbilisi bath.” Located in the Old Town, in the sulphurscented Abanotunbani district, the underground public bath houses can be spotted by the terracotta tiled domes and small chimneys sticking above ground to let out the steam of the rooms below. The oldest is ‘Erekle’s Bath,’ whilst the most recognizable is ‘Orbeliani’ with its façade of mosaic tiles- sadly closed since the renovation works started to open up the river as a tourist spot some years ago. The Abanotubani area is nestled between the Sololaki mountain range and the

Mtkvari River. A few years ago the then-carpark was opened up to reveal the spring-fed river below and a nice tourist spot was made, allowing strollers to walk right to the Tsavkisi waterfall as it spills out of the Botanical Gardens above. A trip to the baths is a must for any visitor to Georgia’s capital. The bath houses offer a variety of services to suit most tastesfrom communal rooms (for the least shy among you) to private bath chambers ranging in size and luxury. Soap up, scrub, wash off and start again, and for a few extra GEL, throw in a ‘peeling’ or massage. You’ll come out glowing, soft, satisfied and having had a little taste of another thing that makes Tbilisi so special. Below, we’ve selected the best of the offerings and provided the details you need to make the choice that’s right for you.

‘Communal rooms’ are separated into ‘Men’s’ and ‘Women’s’. You will not necessarily get a bath in these communal rooms, especially if you’re a woman- you may find just a wall of showers, as in Bath House No.5, which, on busy days, means a bit of push and shove to get your turn under the hot water, only to have to step out of the way while you’re soaping up. Smile and share! You can buy or hire everything you need in the bath house or in nearby mini-markets (one-use shampoo, razors, scrubbing sponges, etc) but it’s always a cost-saver to take your own- and as the 2 GEL towels consist of a sheet of cotton, perhaps your own would be better! There are no hair-driers but sockets are there for your convenience. Most communal rooms have lockers but the key is controlled by the attendant in charge. I’ve never had anything go missing but I would still suggest you leave valuables at home.

baKhmaro baThs You’ll have to head a little way up the hill from the central Aliyev Park to find this bath house, tucked behind the Tiflis hotel. Clean, simple and affordable with a mix

baThhouse no. 5 At almost 300 years old, this is one of Tbilisi’s oldest bathhouses and offers a real mosaic treat inside. The ghosts of communists past can be seen on the placard out front bearing the hammer and sickle. No.5 is right in the middle of the Abanotubani neighborhood. You’ll find standard and lux private rooms here- the top end ones having pools and a sauna, and communal rooms for men and women. Statue Spotter By Katie ruth davies Coming in various sizes- from the giant Mother of Georgia you’ll spot on the hill overlooking the city to the cheeky little Tamada you might trip over as you leave the tourist hotspot of Shardin Street, Tbilisi has much to offer in terms of statues, all of which have a story behind them to open up a totally new educational aspect on Georgia. Each month we’ll be taking you to a few of these statues and giving you the low-down- the kind of information that even your tour guide may not know!

KarTlis deda You can’t miss her- just look up. There she is- standing on the hill near Narikala Fortress above the Old Town. She was put up there on Sololaki Hill in 1958, the year Tbilisi celebrated its 1500th anniversary. Prominent Georgian sculptor Elguja Amashukeli designed the twenty-meter aluminium figure of a woman in Georgian national dress. She symbolizes the Georgian national character: in her left hand she holds a bowl of wine to greet those who come as friends, and in her

right hand is a sword for those who come as enemies. You can get a closer look by heading up on the cable car from Rike Park or taking a walk via Narikala Fortress or the longer route through the old streets up past the glass complex belonging to Georgia’s ex-Prime Minister, billionaire Bidzina Ivanishvili.

of the river, you’ll see Metekhi Church at the top of the sheer rock cliff. In front of it you can meet King Vakhtang Gorgasali, the founder of Tbilisi as the new capital of Georgia. King Vakhtang moved the capital of his kingdom (then known as Iberia) from Mtskheta, about 20 km away, to Tbilisi at some point in the late 5th Century. The statue of Vakhtang Gorgasali was created by Eluja Amashukeli and built by T.Kandelaki and D.Morbedadze. The statue was made in 1959 and installed in front of Metekhi church in 1967.

Tamada Before you cross the river, let’s head up Shardin Street to have a toast with the Tamada (Toastmaster). This sweet little character- with parts polished lovingly but those posing for photos, is based on a 7th century artifact found in Vani (Imereti region, Western Georgia). He was sat with his drinking horn in 2006 as a symbol of the ancient history of Georgian winemaking.

Now have a wander around the renovated streets packed with restaurants, bars and street cafes. Work your way to the river and the white-and-glass pedestrian Bridge of Peace (where you’ll enjoy the beautiful people-sensitive lighting at night).

ronald reagan Across the Bridge of Peace is Rike Park.

Let’s head on over and grab a seat with Ronald Reagan. There he is- as big as life, sitting on the bench, legs crossed, ready for a photo with you. Make sure you bring some jelly beans! The statue of Ronald Reagan, 40th president of the United States of America, was installed in 2011. The statue was sculptured by A.Monaseridze and designed by M.Maisuradze.

mimino Now let’s take a walk up the hill and into the old district of Avlabari. Where you’ll find the the funny and endearing Mimino composition which was set up in Avlabari Square (near Sameba Cathedral) in 2011. Mimino is a 1977 comedy film by Soviet director Georgiy Daneliya starring

Vakhtang Kikabidze and Frunzik Mkrtchyan. Anatoliy Petritskiy served as the film’s Director of Photography. The Soviet era comedy won the 1977 Golden Prize at the 10th Moscow International Film Festival. The Mimino Statue was designed by Z. Tsereteli and built by V.Beridze and D. Kalandarishvili.

Svaneti:

Out of this World

By Tony hanmer According to the classical 19th century Georgian writer Ilia Chavchavadze, if you haven’t seen Svaneti, you can’t really claim to have been in Georgia. Pity the many Georgians, then, who can’t make this claim! Its roads, museums and watchtowers renovated, its ski resorts up and running long after those elsewhere in Georgia have melted, Svaneti is Georgia’s faraway ancient fortress. With around 200 magnificent stone watchtowers over a millennium old, Svaneti feels straight out of a Middle Earth province. Its people, the Svans,

have their own language, distantly related to Georgian but incomprehensible to non-Svan Georgians, with four dialects and no fewer than eighteen vowels among them. While they now number less than 1% of Georgia’s population, the Svans are justifiably proud of having been mentioned by ancient Greek writer Strabo in his Geography of about two millennia ago as being capable of raising an army of 200,000. If the Mongols were here at all, they say, it was for no more than a year, the place

was so inaccessible in the Middle Ages. So much so that the national treasure was sent here for safekeeping many times over the centuries of Georgia’s woeful times of invasion from all sides. And most of that wealth remains: in the museums of Mestia and Ushguli, and scattered throughout the village churches of the region, each with its key-keeper. Linguistically and in gold, Svaneti truly is the old treasure storehouse of Georgia. If the multiple invasions by Turkic and Persian forces have mixed with and left their mark on the lowland Georgian


population, the Svans, again due to their inaccessibility, have retained much more of a European look, sometimes startlingly so in red hair and blue eyes. Although there are many village and town Orthodox churches here, some of great age, the local animism has remained a force to be reckoned with, never really replaced, partly syncretistic. The Svans have their own ancient gods and goddesses, such as Dael, or Dali, their own feast days and rituals, and their own music and songs, with fantastic harmonies and a couple of instruments found nowhere else in Georgia, and their own dances and costumes, too.

Several dishes of Svan origin are nationally famous. The best of these is kubdari, the delicious spiced meat pie which can be considered their main food. Svan salt, too, mixed with a great variety of local herbs, has a flavor all of its own and is always present at the table here, to sprinkle with the fingers wherever one desires. As the region is too high for serious grape growing, Georgia’s famous culture of wine has been supplanted partly with one of chacha or araqi, locally distilled “moonshine,” which can vary in taste and power from mild to head-banging. But the supra, the Georgian feast table with its rituals of toastmaster and speeches, remains in full force. There are two main locations which dominate in Svaneti, Mestia (its capital) and Ushguli (Europe’s highest village at over 2200 m). But one will be richly rewarded by a drive or a walk through any village here, and there are many, each with its own glorious high Caucasus

landscapes, many with towers and all with friendly locals to show the visitor around or offer hospitality as needed. In spring, the place starts greening up at last after up to half a year under snow. Summers are mild and it never gets anything like as blisteringly hot as the Georgian lowlands can, with evenings even cooler. Autumn shows off the fantastic color changes of the many deciduous trees; and winter, the longest season, offers the best, highest, most spectacular winter sports in the whole country. The difficulties of reaching Svaneti and risk of being robbed by bandits at gunpoint belong firmly in the fading past. It is more easily accessible, and safer, than ever before, for groups of any sizefrom many down to one, and mode of

transport: small plane or helicopter, private car with or without driver, tour bus or minivan, horse, bicycle, motorbike or foot. Its campsites, guest houses and hotels have multiplied in both quantity and quality, and its people are ready to show you around in a variety of languages. While this is not a day trip location, it is one not to be missed, to be planned for in any proper tour of Georgia.

So Hard to Choose, So Much to See! By Tony hanmer

a looK aT mT. ushba This can take your breath away, and it shows many different faces depending on one’s angle. The villages of Etseri and Becho favor the “edge on” look with the south peak obscuring the north; Latali shows you more of a 45-degree angle; and Mestia, Mulakhi and K’ala give it to you straight on, the twin peaks, differing in height by only a meter, side by side. If the clouds aren’t making you crazy, this mountain will stun you.

a svan waTChTower Again, these can be seen and explored in many places: there are something like 200 of them in Svaneti, huge, stone, and ancient, from 1000 to 1500 years old. Etseri has only one, that of the former rulers of the region, the Dadeshkelianis, but it’s reputed to be the tallest of them all. Becho, Ipari and K’ala have a few each. Latali and Lenjeri have quite a lot, as does Mulakhi. Mestia has the most, nearly 70; and Ushguli has about 33, with the greatest variation in height and number of “eyes”, or windows, at the top. Many of the towers are accessible with a guide, all the way to the top, sometimes even out onto the roof, and offer unique places from which to view their villages and the surroundings.

mesTia museum In a world class setting, the crowning exhibition space of Svaneti hosts most of the region’s treasures, many of which were actually sent to then nearly inaccessible Svaneti from Mtskheta and Tbilisi when Georgia was under attack over many centuries. Gold and silver chased or painted icons, ancient handwritten books, wood- and stonework, ethnographic items from the region, and the best collection of works of the great 19th century photographer, Vittorio Sella. main museum, ushguli Set in a unique short and squat watchtower in the hamlet of Chazhashi, this museum offers more of what the one in Mestia has. Having said this, its collection is still fascinating and utterly unique, and neither of the two should be missed if one is in both locations.

The summer one can be reached by a short but steeper hike almost right up to it from Chazhashi hamlet, or from the side, a gentler but longer walk. It has one complete tower at one end, a partly remaining middle one which the intrepid can climb inside, another ruined tower at the other end and huge thick walls. Also, if the weather is on your side, from the top of the middle tower stub you can see all of Georgia’s highest mountain, Shkhara, and most of Ushguli, in one magnificent view.

mTaTsminda ParK Located 770 meters above sea level and stretching over a territory of more than 100 hectares, Mtatsminda Park combines shops, restaurants and noisy attractions with serene places where one can fully relax. However, its main asset is the stunning view of the city, making it the perfect place to snap a few photos. You can even get married there! Tip: Pay the Funicular Restaurant Complex a visit and try the gooey donuts. You might not want to go to Mtatsminda Park in cold weather. Don’t drive here- take the Funicular Railway up the mountain.

vilnius sQuare Right in front of the lower station of the Funicular Railway is a small, quite park named after the capital of Lithuania. There you can find a small children’s playground and a fountain to keep you cool during the hot summer days. Tip: Beside the park there’s a very nice social cafe-gallery called ‘Rhea’s Squirrels’ launched by a union for people with disabilities. The food is delicious and you can also buy handmade souvenirs there.

vaKe ParK Opened in 1946, Vake Park covers a huge territory of more than 200 hectares. Apart from amusement attractions, huge central fountain and bicycle lanes, you’ll be able to see the memorial of World War II with the centerpiece the ‘unknown’ soldier. Tip: Take a peak through the glass façade of the Vake Park Mediathek, arguably the best library in Tbilisi.

dedaena ParK Dedaena means ‘mother tongue’ in Georgian. The park got its name from the 1978, 14 April demonstration opposing the new constitution plan, created by the Supreme Council of the Georgian Soviet Socialist Republic, which included the removal of Georgian as the country’s national language. On sunny Sundays, the park hosts weekly Flea Markets, where you can buy numerous vintage-style souvenirs, books and even clothes. Tip: If you do decide to visit Dedaena Park, take your bike or skateboard with you.

riKe ParK Located on the left bank of the River Mtkvari, Rike Park is a picture-perfect place. You can take a stroll along the Bridge of Peace, take the cable car up to Narikala or take pictures with Ronald Reagan’s statue. Tip: Don’t visit Rike Park in the scorching heat as there are not yet enough trees to shield you from the sun.

Since renovation of the building, the gallery now consists of eight exhibition halls, a souvenir shop, a laboratory, a warehouse for storing temporary exhibitions, and a study hall. The project was developed by the Portuguese architectural company Ainda Arquitectura. PERMANENT EHIXIBITION The exhibition showcases works by distinguished 20th century Georgian artists - NIKO PIROSMANASHVILI, DAVID KAKABADZE, LADO GUDIASHVILI AND SCULPTOR IAKOB NIKOLADZE. The Signaghi Museum was founded in 1947 as the Museum of Local Lore of Kiziki and in 2007 it was merged with the Georgian National Museum. The building was fully repaired and new security systems were installed. The renewed collections of the museum currently number 60,000 exhibits.

The rich collections of 19th-20th century self-educated artist Niko Pirosmanashvili’s are one of the main features at the Signaghi musuem. Pirosmani was born in the village of Mirzaani, in Kakheti. His early works represent the culture of this region, known for its beautiful landscapes and winemaking. His distinctive works are of paramount importance not only for Georgian culture, but for global art.

In 2009, the Signaghi Museum hosted works by Pablo Picasso followed by an exhibition of paintings by western European artists in 2010. The Museum is currently hosting several permanent exhibitions.

LADO GUDIASHVILI’S ARTWORK AN EXHIBITION PRESENTING THE SECOND PHASE OF THE ARTIST’S CREATION, IDENTIFIED BY AN EMPHASIS ON PICTORIAL AND PLASTIC VALUES.

According to legend, one day King George III went hunting with his companions and brought his little daughter, Tamar (soon-to-be King Tamar) along with him on the road. Once the field sport activities started, Tamar was left unattended and got lost in a cave. The King and his attendees immediately began the search, calling out – “Where are you Tamar?” Tamar heard their loud cries and shouted “I’m here, uncle!” (In Georgian: Aq var dzia!) That’s how one of the most significant places in

Georgia got its name. Vardzia is a cave monastery located approximately 30 kilometers south of Aspindza on the left bank of the River Mtkvari, in the region of SamtskheJavakheti. It dates back to the 12th century, when it was excavated through the slopes of the Erusheti Mountain. which is famous for its series of wall paintings, including the portraits of King George III and King Tamar. However, Vardzia is not the only cave monastery in the region. An even older complex – Vanis Kvabebi (English: Vani’s Caves) lies 3 kilometers east of the Erusheti Mountain. It dates back to the 8th century and consists of several maze tunnels, 2 churches and a special defensive wall which was built later, in the 13th century.


Currently included in the tentative list of UNESCO’s World Culture Heritage, Vardzia frequently tops Georgia’s must-see attractions lists, alongside the Khertvisi fortress, which is located just 15 kilometers from the landmark. Khertvisi fortress served as the central defense building of Meskheti region back in the 10th-11th centuries. It was destroyed by the Mongol army in the 13th century and was later occupied by the forces of the Ottoman Empire during the 16th century. After 300 years, Khertvisi fortress was reclaimed by the joint Russian-Georgian army in 1828. According to legend, the fortress was attacked by Alexander the Great in the 4th century B.C., however, the credibility of the story is highly doubted by Georgian historians. As of 2016, the landmark is also included in the tentative list of UNESCO’s World Culture Heritage. Dig in to those Dumplings! By Tim ogden Khinkali is not only a favorite Georgian food amongst locals and foreigners alike; it is a quintessential part of the country and culture. The dumplings are synonymous with the country itself: as the hamburger might evoke images of busy Americans dashing through fast-food restaurants or diners, and fish and chips bring to mind battered cod and greasy chips in newspaper eaten in a rainy English town, khinkali conjures pictures of strong beer, raucous laughter, full bellies, and impromptu singing and dancing. Eating khinkali holds a special place of its own in Georgian social culture. Attempting to consume the dumplings incorrectly can even constitute a mild faux pas, especially if one makes use of any cutlery; khinkali must be eaten by hand (social customs aside, this also prevents a messy plate). Sucking the juices out of the dumpling after an initial bite prevents the khinkali from bursting, though the thick doughy stump at the top is generally not eaten and is left on the plate. In some social circles, leaving the stumps on the plate is part of a friendly competition as to how many khinkali one can eat. Generally filled with pork, beef, or a minced meat mix of both and supplemented with herbs or spices, khinkali can also be filled with cheese, potatoes and mushrooms during fasting periods, which allows vegetarians to also enjoy a cornerstone of Georgian cuisine.

A veritable labyrinth of tables, booths and private rooms, this underground restaurant manages to be simultaneously cavernous and cosy. One hall has a stage at the end of the room, allowing customers to enjoy traditional live music and watch as Georgian diners, infused with beer and patriotism, take to the dance floor and exhibit a famous national talent. The jolly noise of music and diners enthusiastically guzzling beer and devouring the dish for which the restaurant is named contribute to an atmosphere that manages to be hearty but not overwhelming. Even in the loudest room the booths maintain a feeling of privacy, but quieter areas in the multi-floored restaurant can be occupied at need. As the name suggests, this restaurant produces some of the finest khinkali of various types in the city, but a host of other dishes (Georgian and otherwise) are also on the menu. This restaurant is named for the happy story of a Tbilisi restaurant owner who always kept a table free for impoverished people to eat at for free, a mark of the legendary Georgian hospitality. Located near the Dry Bridge and the city’s Flea Market, Zahar Zakharich is notable for its own variants of khinkali.

Located far from the city center close to the airport, visitors to this restaurant all agree that the journey is worth it. The interior décor is an aesthetic reminder of Georgia’s mixed heritage; the pale walls and soft blue colors are highly evocative of the eastern styles of Turkey and Persia, and not the kind of interior design typically found in Georgian restaurants. Specializing in eastern Georgian cuisine (specifically the wine-region of Kakheti), this restaurant boasts a wide and varied menu. While its khinkali ranks highly, multiple trips are recommended; the khachapuri, barbecue meats and soups are among the best. Though the restaurant is not as large as others in the city, traditional dance and music performances are sometimes put on, a spectacle that no visitor to Georgia should miss. Many foreigners often complain about service standards in Georgia, but Kakhelebi’s waiters are professional, attentive and friendly. While khinkali is generally made of a beef-pork mince, Zahar Zakharich offers a number of types favored by its customers. Khinkali made with lamb is rare (though not unheard of), and this restaurant’s lamb khinkali has proved popular with guests. The mushroom and coriander khinkali is another favorite not often found elsewhere. The khinkali itself here is marginally smaller than those served in other restaurants, but with a higher proportion of filling within, a testament to the many and varied ways in which one of Georgia’s favorite dishes is made. A restaurant named for the classical name of Tbilisi and an appropriately classical Georgian appearance within, though its exterior resembles a European gastropub. Tradition is mildly broken by Tiflis in its serving of Czech and German beers, which are relatively new but popular additions to the country’s beer menu.

A cafe-restaurant which serves as living proof of Tbilisi’s 21st century Bohemian culture, the colorful interior, classical European furniture and popularity with Georgia’s liberal youth hardly suggest that khinkali is even served here. Amo Rame, however, like Tbilisi itself, is full of surprises.

While there is a surprising variety of décor within, all are in unmistakable Georgian styles, from the initial entrance and main restaurant to the event hall used to host parties and supras. The menu in Tiflis is not dissimilar to many other Georgian restaurants, but its fair prices render it easily affordable while the quality of food easily surpasses that of Georgia’s many restaurant chains. Though the menu mostly consists of European dishes, Amo Rame produces its own khinkali with a distinctive style. Unlike most other khinkali, Amo Rame’s dumplings lack the usual prominent stump, and instead have a shorter, squatter appearance with a thin-to-thick exterior which leaves the meat within clearly visible; this is due to Amo Rame using more traditional methods, which today are more often found in Georgia’s mountainous and rural regions rather than in its city restaurants. While the quiet conversation of young Georgian people or foreign expatriates is markedly different to what one would normally associate with a khinkali meal, as with everything else about Amo Rame, its different nature only makes it more appealing. Today, the city is widely renowned for its quasi-Bohemian culture, and as food is such a quintessential part of Georgian life, its restaurants have been duly affected. A host of eateries serving dishes imbued with a mix of Georgian and European influences are now a staple part of Georgia’s culinary scene.

fusion resTauranTs in Tbilisi Culinarium Owned by celebrity chef Tekuna Gachechiladze, Culinarium was originally a cookery school that only opened as a restaurant twice a week. Due to its popularity, this ratio has now been reversed, with the restaurant now only offering cooking classes on Mondays and Tuesdays. Tekuna Gachechiladze endeavoured to make the restaurant as homely and cosy as possible, and the interior design is a testament to her intent. Chefs open the fridge sat near the large communal table, and diners can watch the cooks at work in the corner of the room. The casual nature of the establishment does not guarantee professional waiting service, however; indeed, on arrival it is difficult to know

This restaurant takes its name from its layout, the Georgian word for a yard flanked by a residential building on three sides. It is difficult not to be impressed with Ezo; its use of fresh ingredients bought and brought from Georgian farms is evident in the taste of the food (its beef dishes, meatballs and soups are particularly noteworthy), and prompt and friendly service makes a pleasant contrast with other restaurants in the country. European food with Georgian spices, and Georgian dishes made in a European style contrast nicely.

Khachapuri is a traditional Georgian dish of bread filled with cheese, best eaten while hot and fresh out of the oven. There are several types of Khachapuri in Georgian cuisine from different regions of Georgia: Imeretian (Imeruli- cheese inside), Adjarian (Acharuli/Adjaruli- cheese and semi-raw egg), Mingrelian (Megruli- cheese in and out), Abkhazian (Achma- soft lasagne-like layers with cheese), Gurian (Guruli- cheese and egg inside), Ossetian (Ossuri- potato and cheese inside), Svanuri (kubdari- spicy meat), Racha (Rachuli- bacon and cheese), Penovani (puff pastry with cheese).

Churchela look like candles- and I know of people who have immediately tried to light them when given them as a present! A string of nuts (most commonly walnuts or hazelnuts) is dipped in a thick hot mix of flour and grape juice and then hung up to dry. Various different grape varieties are used, red and white, meaning that you have a lot of choice from sweet to sour. And there it is- a long-lasting treat perfect for snacks, parties, long journeys and novelty souvenirs!

Imeruli (Imeretian) Khachapuri from the western Georgian region of Imereti is one of the most common. A round flat ‘pizza’ style- it is stuffed with Imeretian cheese comparable to a mix of feta and mozzarella.

For an appetite on the go, you can do no better than a Schawarma. While not exactly Georgian, it can be found as easily as Khachapuri and is just as popular. Choose from spit-grilled chicken, pork, beef or a mix, add your choice of fillings and sauces, get it wrapped up in a sheet of lavash bread and voila!

Tklapi come in a multitude of colours and tastes and can most often be found laid out underneath the hanging churchela (see above). Tklapi is puréed fruit, spread thinly onto a sheet and sun-dried on a clothesline. Sweet versions include apple, apricots, peaches and churckhela juice. Sour includes some apple and the Tkemal (sour) plum.

The bar regularly organizes pleasant evening events where guests can meet winemakers. I attended the Nikalas Marani (which belongs to Zura Mgvdliashvili) evening and it was truly exceptional. Apart from unique wines and family-made dishes, the evening was set in a very warm and friendly environment, accompanied by tasteful music presented live by the winemaker himself with his friends.

g.vino g.Vino (6 Erekle II Str.) brought wine bars in Tbilisi to a whole new level. Here you’ll be offered wines that meet your exact demands. The best Tbilisi has to offer, g. Vino has top wines, delicious food and wonderful service. The fantastic atmosphere in the heart of Old Tbilisi brings positivity which stays with you right to the very end of your travels through Georgia, and beyond.

PilPil Pilpil (114 Agmashenebeli Ave.) is a relatively new venue and I think in future it will become one of the hot spots for natural wine tasting in the city- the idea is right and its potential is huge. The interior design is wonderful in the lower part of the restaurant (in the cellar). It was set up with the aim of making high quality natural wines even more accessible and here you can taste a number of cask wines. Last time I visited, I tasted the Golden Rkatsiteli and Otskhanuri Sapere. Apart from natural wines you can also taste warm vodka, which perfectly suits Tushetian Khinkali. The restaurant renews its menu periodically and offers less well known Georgian dishes from various regions- a true taste discovery!

What to drink: any wine offered in the bar is the best as each of them is carefully chosen to satisfy the taste of any wine lover. My favorites are amber-color wines and it is hard to say which is the most outstanding as all of them are interesting in their own way. Some are experimental, made without Chacha (residue) and some are traditional and left to ferment in Chacha longer. It all depends on your mood...

The Underground World of Georgian Wine Grab your drinking horn and learn about this fascinating region! By hannah walhout When you arrive at passport control in the Tbilisi airport, a border agent checks your documents, gives you a once-over, and hands you a bottle of wine. I’m not actually sure if this is always the case, but it was when I landed in the world’s self-proclaimed “Cradle of Wine” this January. The region we call Georgia has seen a lot of change in its millennialong history: an early move from Zoroastrianism to Christianity, golden ages of empire and military strength, foreign incursions from Mongols, Ottomans, Safavids, and Russians, contested borders, uprisings against the USSR, corruption, and periods of economic depression. One thing, though, has remained constant since the beginning – the traditional qvevri method of winemaking, so old and so Georgian as to be added to the UNESCO list of intangible cultural heritage in 2013. This wine is so much a part of their heritage that the wine bottle at the border is an official initiative by the Ministry of Economy and Sustainable Development. And the label of the wine bottle at the border contains facts about Georgian history. To be clear: it’s not a history pamphlet with a few words about wine – it’s wine, with a few words about history. Georgia is an unassuming country, perhaps notable to US observers mostly as the birthplace of Stalin and as the David against Russia’s Goliath in the South Ossetia conflict. But there is a lot more to it

The method is named after its crucial element, the tool that separates it from any other mass-production winemaking: the qvevri (also spelled “kvevri”), a large, oblong, earthenware vessel in which wine is stored and aged. Just as with wooden barrels, the clay used in these qvevris affects the taste of the wine; the mineral content of a qvevri from one village might differ significantly from that of another. Qvevri quality is considered so essential that their production is now entrusted to a small number of villages, whose natural resources and ancestral knowledge are considered worthy of the task.

than that – Georgia contains no less than 22 microclimates that make it a mountainous, forested, sulfurous, snowy, beachy, vineyard-covered thumbprint of a nation. Several of these microclimates are in the Kakheti region, an agricultural area and the epicenter of Georgian winemaking today. It was here, and in other areas across the southern region, where neolithic Georgians first tinkered with their now-legendary qvevri method. The qvevri is so distinct that, at most restaurants and bars in the capital, the wine list will be divided into “Georgian Technology” and “European Technology.” This is serious stuff.

A few key elements unite the various techniques of traditional Georgian winemaking: grapes are placed in a wooden press and stomped by foot, the juice is decanted into an open qvevri, and the pomace is added on top so that the qvevri is around ¾ full. Fermentation occurs in an open qvevri using only wild yeast – this is the OG natural wine. After the first stage of fermentation, the qvevri is loosely capped with with a clay disc, and then fully sealed with wet clay when fermentation is complete. After 3-4 months of aging, the wine is ready for storage and bottling. The specifics of the winemaking process vary from region to region; in Kakheti, for example, the must and pomace are left together for 6 months – whereas in Imereti, only some pomace is left in, and then


removed before the second stage of fermentation. The vessels are buried underground for temperature stability, or inlaid into the floor of a home or farmhouse to allow easy access for testing and tasting. Entering a larger Georgian winery, you realize that there are tens of thousands of liters of wine under your feet. One winemaker I visited pointed down and mentioned, casually, that the massive qvevri below contained 5,000 of the best liters he had ever made. The countryside is peppered with vineyards and winemaking operations, large and small. And it’s not just villa-style wineries – on the road through the Tsiv-Gombori mountains, you can pull over in any small town and get yourself some homebrew red. The old man at the ubiquitous roadside stand will hand you bread to distract you, while he runs to his shed and returns with a full 1L fanta bottle of Saperavi (the star local grape) for 2 USD. Winemaking and drinking aren’t just business here – they’re good old fashioned family values. Not every family makes their own wine, but most every family has a horn, or kantsi. Plucked from the skulls of goats, rams, or oxen, drinking horns are a cherished part of traditional Georgian social and family life. And of course, ceremonial drinking vessels pair well with pomp and circumstance; the Georgian toast-making tradition is one of the most flamboyant and beloved examples of drinking ritual in the world. A toastmaster, or tamada, is a mainstay at weddings, feasts, and parties. The tamada draws upon a vast knowledge of codified toasts, folklore, and songs and poetry about winemaking.

It’s no wonder that people make so much time for these wines in their daily lives – Georgian wines are special. The taste is utterly distinct, the variety an exciting surprise. Reds are discernibly stony and often incredibly tannic, while whites are thin but refreshingly citric (and the ambers pleasantly supple). Wines are named either for microzone appellation or the grape used; there are around 525 distinct grape varieties indigenous to Georgia, 45 of which are in consistent commercial use today. Popular wines include the dry reds Saperavi and Mukuzani, semi-sweet red Kindzmarauli, and dry whites Rkatsiteli and Tsinandali.

If you’re lucky, you can also sample a personal favorite: “green” wine, a light, crisp, grassy white named for Mtsvane grapes (meaning “young and green” in Georgian). According to a Tbilisi wine bar owner, hipster winemakers have focused increasingly on various Mtsvane varietals in recent years – there are as many different types of Mtsvane grapes as there are microclimates, making them appealing

If you get your hands on some, whites pair well with dishes that feature walnut sauce, used liberally in Georgian cuisine. Both red and white are nicely complemented by any stinky, salty cheese – ideally the distinctly Georgian sulguni. Grab your horn, make a toast to this national treasure, and drink up!

Finding Georgian wines in some parts of the US can be tricky, though importers are increasingly interested. A few notable brands are Schuchmann, operated by a German expat; Shumi, who export an excellent wine-brandy-chacha blend called Zigu; and Pheasant’s Tears, with an excellent amber Rkatsiteli. Old Tbilisi produce a range of all styles, both dry and sweet, and are particularly adept at a semi-sweet Alaverdi.

Don’t Leave Tbilisi Without Buying… a TradiTional blue TableCloTh The oldest remaining samples date back to around the end of the 17th century- cotton tablecloths painted in various hues of blue. In the eighteenth century, artisans began creating printed textiles using woodblocks with decorative engravings, symbolic of the Georgian culture. The blue tablecloths produced by Georgian factories in the 20th century became an aesthetic symbol of the country. But at the end of twentieth century those factories in were forced to close as a result of the collapse of the Soviet Union and production of blue tablecloths stopped. In 2010, despite the fact that the country could still not re-open its factories, the

Tbilisi State Academy of Arts launched a research laboratory named Lurji Supra to study the now century-old blue tablecloths. Founders Tinatin Kldiashvili and Ketevan Kavtaradze, design professors at the Academy, focused on restoring the original, long-forgotten textile technology.
