WELCOME TO GEORGIA, THE BIRTHPLACE OF WINE In the 8 months of 2016, Georgia has welcomed already 4,247,729 travelers. This number increased at 322,075 compared to the same period of 2015. Sure, the growth on 8.2% is pleasant, but we believe that the tendency will become even better, because now the rtveli (harvest) season has begun, and many travelers will come to Georgia to experience this beautiful tradition live. Another big wine-related event, which is very important for the whole region, is the First Global Wine Tourism Conference, which is organized by UNWTO and the Georgian government on the 7-9th of September. We are looking forward to tell the whole world about our ancient winemaking traditions and invite more people to travel to Georgia and get closer to our viticulture. Georgian history has been intertwined with history of winemaking as long as 8000 years – now it feels like almost forever. The archaeologists have found out that people of Colchis and Iberia (two kingdoms which have been reunited to Georgia) cultivated vines already in the 6th millennium BC. Ancient wine vessels made of clay, bronze and silver, golden wine cups, wine barrels dated to the 2nd and 3rd millennium BC, as well as grape seeds have been discovered during the excavations in the Bronze Age tombs. This is one of the reasons to proclaim our country a Cradle of Wine. Another reason, which makes Georgia so attractive to the modern wine connoisseurs, is its 500 grape sorts, plenty of climatic micro zones where those grapes are cultivated, and unique ancient winemaking technology which is a part of UNESCO Intangible
and buries it in the ground. Topped with a wooden lid, it remains entombed at least during the whole winter. Some vessels remain buried for several decades: if qvevri is really well-made, nothing will harm the quality of wine. From the harvest products not only wine is being produced. Grape pomace is a base for chacha, strong Georgian brandy, which warms you up if you are cold in winter. Pelamushi and churchkhela, natural

The most prominent wine region of Georgia is the most Eastern one, Kakheti, where the largest amounts of grape varieties grow. CHATEAU MERE Every time I want to leave Tbilisi, Chateau Mere springs to mind, not because it is just one hour away, but because of the wonderful environment there- perfect for getting away from everyday problems. I’m not a famous gourmet, but in Chateau Mere my appetite comes alive as here, in the heart of Kakheti, they make such delicious Imeretian Khachapuri that is hard to beat anywhere else- even in Imereti. Their matsoni (yoghurt) is “cosmic,” bringing tears of joy to my eyes when I eat it. However, the main advantage of Chateau Mere is not in its kitchen or amazing swimming pool (or the comfortable

rooms), but in the host – Gia Piradashvili, who decided that integrating into Europe is much more likely though an individual integration program, because returning to Europe together (for Georgians) will take quite a while. Nowhere in Georgia have I met such a helpful owner greet the guests personally, treat them, recommend things and escort them regretfully to the gate when they leave, all tirelessly and with professional love.
TUSHETI If you have time and are not lazy to travel further, from Kakheti you can go to mountainous Tusheti. The road to Tusheti is not comfortable and I’m always amazed at how we Georgians manage to be so gifted yet so unwise. There are plenty of tourists and guests who want to travel to this wonderful place, but there are no regular flights, so the mountains lose numerous potential visitors.
MKINVARTSERI Since I’m pointing out the mountain peaks, of course I can’t not mention Mkinvartseri - I think the most beautiful mountain on earth. Those traveling to Stepanstminda and staying overnight should ask their hosts to wake them up at dawn to see the Mkinvartsveri in all its grace, easily comparable to the Alps or Himalayas, and to write me at dturash@ gmail.com if I’m wrong.

SVANETI Luckily there are flights to Svaneti, but purchasing tickets is a problem, as is finding a spare seat in the plane in summer. However, unlike Tusheti, the road to Svaneti is wonderful and whoever has yet to go there can get to Mestia from Zugdidi in just two hours, where a true wonder awaits. Apart from beautiful mountain peaks, I recommend every Georgian and foreigner to visit the Mestia Museum to make their trip even more pleasantly shocking.
VARDZIA MONASTERY COMPLEX And finally, so that the readers and guests don’t think we only have mountain ranges and peaks, I would recommend that every foreigner (Georgian citizens as well) travel to Meskheti region and visit the Vardzia Monastery Complex and the unique city carved into the rocks. In Meskheti there were unique vine species cultivated on terraces for centuries, some of which are preserved or being restored. I also recommend everyone try the Meskhetian wine...

Svaneti: Millennial Structures By Tony Hanmer They number about two hundred in all, making this part of the country not just the national or regional, but even the world capital for such things. Some little villages might have just one or two; Ushguli has about 33; Mestia boasts the most, with nearly 70. And their construction dates from about a thousand years ago or a bit more. If you’re looking for Middle Earth type architecture perfectly set in equally awe-inspiring landscapes, look no further than the stone watchtowers of Svaneti.
Other parts of the Caucasus, including north-east Georgia, have towers, too, but of a different type: with four-sided pyramidal roofs. The Svan ones are both taller and wider, with a two-sided roof, originally of slate tiles, these now, if recently renovated, of wood. There is a mathematical formula which each is

supposed to follow: its height should be equal to the perimeter of its square base. Mestia’s set are the standard form, of similar heights, each with only two or three of the semicircular “eye” windows at the top. Those in Ushguli, which dominate utterly by sheer number and no competing Soviet or modern architecture, are much
more varied in height, perimeter length and number of “eyes” per side. There is even a pair of “twin towers” built side by side and touching each other, owned by the Ratianis. All towers here are still owned by the families who built them in those dark ages of this infamously inaccessible place.
This divergence between the towers of Upper Svaneti’s two main rival communities, capital Mestia and highest village Ushguli, does lead to a question or two. Are the former place’s structures older because they were standardized first, followed by boredom with the main form and play with it in the latter place? Or did Ushguli’s older play lead ultimately to the younger, standard forms of Mestia? So much prestige hangs on this issue! As written and oral history seems to be silent on the issue, one must turn to historians of ancient architecture, and other scientists and their chemical analyses of materials, for more certain answers. Until then, the two continue their competition. Deadly serious, it is. Their foundations are deep enough to make them very hard to topple, and the secret recipe of the mortar, which has held those massive lower stones together while languages and peoples came into and went out of existence, has been lost. But the village of Etseri (where this author lives) is riddled with the ruins of such towers, apparently destroyed in the 19th century: either by Russians seeking to “pacify” this last reluctant province of Georgia to enter the Empire or, in a different account, by various Svan clans warring. Which is the more plausible, is unclear at first glance. The Russians certainly would have had more of the necessary explosives to hand. Quite a few of the towers in several towns and villages are accessible to the tourist, usually by guided tour, with inner floors and ladders restored right up to the roof. All are supposed to be scheduled for official, sponsored renovation from the roof down, because those with no protection from the elements are at grave risk of collapse from the irresistible pressure of rain seeping inside cracks and crevices, inevitably becoming ice. One such tower came down entirely on one side in Ushguli between two of the author’s many visits there in the early millennium. No more, please!
There is so much pride, so much seen and unreported history, romance and legend, wrapped up in the tower behemoths, that the beholder cannot easily separate fact from fiction. The tallest of all the Svan towers is supposed to be the one which is part of
the seat of the former ruling family of central Svaneti, the Dadeshkelianis, in Etseri. It is part of their ruined fortress, some walls of which still stand with it. And it was the model for the tower which stands in Tbilisi, at the top of the open-air Ethnographic Museum of Georgian architecture near Vake Park.

Nothing else says so forcefully “Svaneti” like these towers. Not the food, the drink, the song, the dance, or costume; possibly only the Svan language is a local thing older than the towers are, apparently having split from Georgian some four millennia ago. In any season, the towers stand mute witness to generation after generation which has come and gone, lived, fought, flourished, died out, moved on, returned, visited on a whim or after years of longing, stayed a day or settled even from other countries for a lifetime. Javakheti Protected Areas Javakheti Protected Areas include Ninotsminda and Akhalkalaki Municipalities. Numerous lakes can be found on the Javakheti Plateau, among which is Georgia’s largest, Paravani. The highest point of the plateau is Mount Didi (great) Abuli, which is 3,300 meters above sea level. Paravani, Madatapa, Saghamo, Khanchali and Kartsakhi lakes are all natural havens for waterfowl. These local lakes, especially Madatapa and Kartsakhi, are excellent spots for observing cranes and pelicans. The Agency of Protected Areas offers travel routes within Javakheti Protected Areas. These routes include hiking, horse-riding and biking trails. Along the way, visitors will find all necessary tourist infrastructure – a visitors’ center within a museum, signposted information, a travel information center, bird hides and watchtowers, fishing areas and campsites.
KARTSAKHI LAKE
Kartsakhi Lake is a great destination for those who enjoy fishing and bird watching. There is a turn from the road to the carpark near site near the border watchtower, which is a good place for a short rest. The hiking trail from the border watchtower runs along the lakeshore to the Eastern bay of the lake, where you’ll find a nice picnic area.
SULDA WETLAND SANCTUARY
The sanctuary is located 2.4 km from the village of Sulda. The sanctuary offers activities, including bird watching and horse riding.

BUGHDASHENI LAKE The trail runs along the lakeshore at 2,014 meters above sea level on the opposite side of the road. The lake is shallow. The lake’s surroundings are characterized by a large quantity of migratory birds. Picnic sites and a bird watching tower are available for visitors to use.
KHANCHALI LAKE SANCTUARY
Khanchali Lake Sanctuary is situated at 1920-1980m above sea level, within the Paravani River basin (Ninotsminda Municipality). Its maximum width is 2.5 km, and its average depth is 0.5 m. The lake water is fresh and most of its surface is covered by aquatic plants.
MADATAPA LAKE
The route begins in the village of Sameba. Horses can be rented there. The circular trail runs along the Eastern lakeshore. At the foot of Mt. Madatapa, there is a picnic area and a bird hide for bird watching.

“Brick, wood and concrete apartments are crammed beside one another, forming a network of narrow, winding alleyways. Some have fresh coats of paint in bright, whimsical colors; others are cracked and faded. The rich aromas of Georgian cuisine mostly hide the gripping scent of sulfur that rises from the springs.”
“In the villages that dot the barren countryside, there are few prospects for young people other than the impoverished farm life of their parents and grandparents. And so they search for meaning elsewhere—often in the extremist brand of Islam called Wahhabism that has been imported to the region.”
“After a few blind turns, we arrived at the heart of an urban residential area, an illogical clutter of buildings that had been stitched together with plywood and sheet metal. Most appeared as though they had been neglected since the Soviet era. Clotheslines hung outside tiny second-floor apartments. Windows were shattered and wooden balconies sagged to a concerning degree. On the streets there were fewer cars, no driveways. Stray cats and dogs seemed to run the place.”

The Caves & Cave Cities of Georgia By Katie Ruth Davies
TOP 5 CAVES OF GEORGIA
PROMETHEUS CAVE Kumistavi Cave, also known as the cave of Prometheus, is located near the Georgian town of Tskhaltubo, 20 km from Kutaisi, Imereti region, in the west of the country. The cave was discovered in 1984 and is the biggest cave in
Georgia. Although only one tenth is open for tourists, it takes about an hour to explore it’s 1000 plus meter route. A 280 meter boat tour on an underground river is also available at times. If you’re lucky enough to be in a quiet and respectful group of fellow visitors,
the cave exploration can be quite magical. The concrete paths and steps are well-laid (it took workmen four years to get it done!), and the multi-colored lighting is something truly spectacular (“Fairy land!” my 6-year-old daughter whispered delightedly). Stalactites, stalagmites, mirror pools, petrified

waterfalls, “bottomless holes,” huge cavernous ceilings and a trip to the lowest point with a river miraculously running through. The guide service could do with developing- little details have to be asked for as there are no signs, and only basic information is given (no fun legends or dark secrets, like the fact the paths were first developed there during soviet times with the intention of making the caves a bunker for authorities to hide out in). Prometheus wasn’t mentioned once on the tour, and although we can guess that that particular legend didn’t take place there, it would at least be fun to pretend and spice up the visit with some “maybes” and “what ifs!” WHERE: Outside Tkaltubo town. From Kutaisi bus station (next to Kutaisi Macdonald’s restaurant) take the minibus to Tskaltubo (წყალტუბო). At Tskaltubo bus terminal/market take a taxi to the

SATAPLIA Established in 1935 to protect the Sataplia Cave and dinosaur footprints found in the area, this small reserve 9 km from Kutaisi was renovated some six years ago. The first stage of the tour sees an enclosed space and a clamber up a staircase with smooth limestone rock below, the three-toed footprints of some 7 species of “Sataplasaurus” dinosaurs left in the rock dated to the Cretaceous Period (165-65 million years ago) clear to see. Then we’re out into the woods,
THE PROMETHEUS MYTHGEORGIAN VERSION The Caucasians have their own version of the Prometheus tale to explain the mysterious Kumistavi cave. Legend has it that Amirani, like Prometheus, angered the gods and was punished. Day and night eagles tormented him by pecking at his liver; however, in contrast to the Greek giant, the cruel gods chained Amirani not to a rock, but somewhere inside a huge cave. That cave is thought to have been Kumistavi.
past a few fibreglass mini replica dinosaurs (the kids enjoyed everything except the fact they could look, not touch and one of the dinosaurs had a nose missing!) and into the short but beautiful caves- a well-lit, sturdy 314 meter-long pathway and beautiful rock formations, including the bulbous “heart” rock in the center. Back outside there is a nice narrow pathway past golden cliffs and woods below- in these very rocks the honey bees used to live (Sataplia means “For Honey,” which the locals used to harvest). The bees moved on long ago. Another gem, if you have the legs, is to walk to the glass walkway which juts out over the edge of the highest point and offers a fabulous view of the valley. The walkway was built during the time of the previous government, as was the glass wedding house above it. Both have fallen into a state of “unlove”- with the slippers meant to prevent the glass from being
scratched often not present and the wedding house closed and dusty. The guide was friendly but impatient to finish the tour and the slower members of the large group we were part of (elderly, overweight and children) often missed the few descriptive moments. There was a simple but interesting museum halfway through- with a dinosaur skeleton and black and white photos of those who originally discovered the dinosaur footprints. Where: 5km from Kutaisi. UPLISTSIKHE The ancient cave city was built on a
rocky bank of the Mtkvari River, approximately 15km east of the town of Gori. Between the 6th century BC and 11th century AD, Uplistsikhe was one of the most important political, religious, and cultural centers of pre-Christian Kartli, flourishing until it was ravaged by the Mongols in the 13th century. A full exploration of the cave city, named “God’s Fortress” will take around an hour. Preservation is clearly not on the list of priorities at present, as can be seen from how degraded the sandstone caves are, but there is something special in the child-like freedom you are given to wander over the rocks as you wish, climbing here and there with no restrictions. Those with no head for heights or bringing children should beware- there are few safety barriers to stop you tumbling over the edge of the mountain or into the random (now empty) water holes scattered around. Nor are their

descriptive signs, so a guide is recommended if you want the juicier details of the place. If you choose to go it alone, make sure to look up when you enter the caves- many of them, including “Queen Tamar’s Throne Room,” have carved ceilings. The exit down the cave tunnel from settlement to river bank is another treat not to miss. WHERE: 15 km from Gori. Buses leave Tbilisi’s Didube bus station for Gori, (the trip takes about an hour), and taxis are available in Gori to Uplistsikhe. Ticket: 3 GEL, Guide: 25 GEL Open: Daily, except Mondays, 10am – 5pm
DAVIT GAREDJI MONASTERY I went in a family Volvo but for the sake of sanity and car longevity, I don’t suggest trying this in anything but a 4x4. We approached from Sagaredjo- heading out into what they call a “desert” but actually a vast expanse of rolling-to-thehorizon grassy hillside- the kind that could easily feature in a horror movie for isolation. But breath-taking nonetheless. Just take plenty of water and snacks with you and make sure the tires are pumped and the fuel tank full! The rocks across the valley from the monastery complex were of a wonderful mixed coloringreminding me of the Painted Desert in the Four Corners, USA. You enter the functioning part of the complex (named Lavra) through a stone archway- drinking water available- and then head down to the courtyard via “hidden” steps to see the renovated church- ladies, make use of the headscarves provided, men, don’t go in if you’re not wearing trousers! There are no signs explaining the history of the caves (though a simple guidebook can be bought in the giftshop), but plenty –disappointing to that natural tourist curiosity-

saying “No entrance.” Lavra, the original monastery, was founded by St. David Garejeli, one of the thirteen Assyrian monks who returned from the Middle East to spread Christianity in Georgia in the 6th century. The monks translated and copied manuscripts here, and there was a renowned school of fresco painting. The monasteries were destroyed by Mongols in 1265, revived in the 14th century and then destroyed in 1615 by Shah Abbas’ soldiers. During Soviet times, the military used the area for exercises and vandalized the monasteries. Another route up a narrow trail by the giftshop leads you around the complex and up to Udabno- a frescoed cave and fabulous views the other side of the mountain. At times the trail crosses the border into Azerbaijan. Three warnings
here- don’t take young kids, smile at the border guards in your best “I’m an innocent tourist” manner, and beware of poisonous snakes! Infrastructure is being added to around the Lavra complex but for the moment the only “café” comes in the form of overpriced drinks from a Coffee Car. We drove back via a dirt-and-gravel track through fields and past old soviet hulks of abandoned factories into Rustavi. WHERE: 2 hours outside Tbilisi/Rustavi. The Things Uniting Us… Britain & Georgia By Katie Ruth Davies Where delves into the historical connections between Georgia and the rest of the world. This month we go back to the 19th century and the Wardrop siblings.
While for many a Brit they are now little-known, almost every Georgian has heard of the diplomat and advocate of Georgian studies, Sir Oliver Wardrop, and his polyglot sister Marjory Wardrop. The Wardrop siblings were born into the Victorian age of exploration and adventure and spent their childhood in Scotland and Southern England reading the inspiring memoirs of prominent explorer of the Caucasus, Douglas Freshfield, and the wonderful legend of Jason and his Argonauts. Both Oliver and Marjory dreamed of travelling to the distant land that stands as a bridge between Europe and Asia: Georgia. Yet it wasn’t until the age of 23, in 1887, that Oliver Wardrop got the opportunity
to visit Georgia. It seems to have exceeded his expectations, motivating him to write a book in praise: Georgia’s chief attraction lies in its people, the Georgians are not only fair to look upon, but they are essentially a loveable people…To live among such gay, open-hearted, open-handed, honest, innocent folk is the best cure for melancholia and misanthropy that could well be imagined. (The Kingdom of Georgia (Extract), Oliver Wardrop, 1888) Marjory, too, was much enamored of Georgia, and with her brother set to learning the language and translating numerous popular works of Georgian literature, including the poem The Hermitby her friend, the well-known Ilia
Chavchavadze,- for which she asked his special permission in a letter written by her hand in the Georgian language. Impressed, Chavchavadze agreed to her request, and then printed her letter on the front page of his newspaper, Iveria. The obvious scholarship demonstrated in the letter brought to the Georgian population a sense of having been newly discovered by the outside world and Marjory’s fame quickly spread. In 1900, Marjory began work on translating Shota Rustaveli’s epic poem The Knight in the Panther’s Skin from Georgian into English. It took several attempts and reviews of the original text before she was satisfied with the quality of her work, which she finally completed

before a sudden stroke took her life in 1909. To this day her translation is considered as closest to the original. Following the untimely death of his sister, Oliver arranged for the publishing of her translation ofThe Knight in the Panther’s Skin and established, in her honor, the Marjory Wardrop Fund at Oxford University which today preserves over 1,500 items- including periodicals and manuscripts- related to Georgia and its literature. While Marjory died childless, her brother Oliver had three children, the youngest of which, a girl, was born in 1916. He named her Nino, after the 4th century Georgian saint who brought Christianity to the country. On a visit to the Saint’s tomb in Bodbe Church and Monastery, Kakheti region, Georgia, Oliver was presented with a gift to pass on to his daughter: a gold-enamel necklace encrusted with rubies, diamonds and pearls. This beautiful artifact was later donated by Nino to the British Museum where it can still be seen to this day (Gallery 46, Case 23). Following a series of foreign postings, in July 1919 Oliver Wardrop eagerly took the post of first British Chief Commissioner of the Transcaucasus in Tbilisi, offered him by the British Foreign Secretary, Lord Curzon. The government of independent Georgia and its head, Noe Zhordania, welcomed Sir Oliver’s return to Georgia, where he worked on promoting Georgian culture and gathering support from the west for the newly formed country. This is one of the happiest days of my life. I have just returned from a visit to the Prime Minister and the Minister of Foreign Affairs. I told them the Allies recognized the de facto Government of Georgia and Azerbaijan. What I have hoped for 30 years has come to pass… (Letter from Oliver Wardrop to his wife (extract), 12th January 1920) The democratic dream was not to last, however, and in 1921 the Soviet army once more seized control of Georgia.

But, back in Britain, Sir Oliver Wardrop continued his dedication to the cause, setting up the Georgian Society and Georgian Historical Society (1930) which published its own journal, Georgica. He died on the 19th of October, 1948.

Amazing Tusheti By Vazha Tavberidze Secluded in mountains and blessed with otherworldly beautiful landscape, Tusheti is enjoying ever rising popularity as a tourist destination among foreigners. Though part of its charm lies in its somewhat atavistic and anachronistic character, its stands clear that Tusheti will have to embrace modern know-how if it’s to see its immense potential fulfilled. With the internetization courtesy of the Embassy of Belgium scheduled to be completed by the end of this year, Tusheti will see further increase in the numbers of tourists wanting to sleep over. There aren’t yet any brand name hotels up there, so travelers have to settle for local guesthouse operators, many of which, while short of luxuries another big name operator would offer, nevertheless are quite well set up. Add to that the famed Georgian hospitality and you will get to appreciate this option even more. One point- electricity is somewhat a problem, has been for years, along with barely tractable roads. In 2013-2015, the Czech Development Agency installed solar panels and batteries in several Tusheti villages, which actually made most of these family hotel businesses feasible. Daytime electricity? Check. Hot water? Check. Ancient looking family cottage? Double check- every Tushetian’s got one. Willingness to generate solid income, albeit for half a year? Absolutely, yes. So, without further ado, here are some places to stay if you’re going to Tusheti in the near future.

Comfy, well-furnished, with very nice bathrooms and a yard you can enjoy your three-meals-included stay in. The food is prepared nearby and is mostly organic. Electricity and hot water, thanks to the abovementioned solar panels, are available till the very late night hours. It’s in village Omalo, which is a centerpiece of Tusheti from which you can go touring (on horse, mostly) up into more secluded areas, or get down to more populated ones. Rates are usually up for negotiation (as often happens in Georgia) but think about 50-60 GEL per day with 2 or 3 daily meals included.

HOTEL TSASNE This one’s in Omalo, too, and is bigger and slightly more advanced than most of Tusheti’s family guesthouses. Apart from having a whopping 14 rooms (big for Tusheti), Tsasne offers its visitors tours on horseback (or by car, if you’re happy to miss out on some things really worth seeing) in all three valleys of Tusheti. This is a good one if you are in Tusheti with your family as you can turn the hotel into one big home. Also suited for corporate gatherings and such. Rates are similar to Shina.
TUSHURI KOSHKI (TUSHETIAN TOWER) CONTACT TEL 599 272265 Also in Omalo. Now what makes Koshki special is that it’s a real Tushetian Tower turned into a hotel! That’s right – those tall gaunt buildings you’ve seen in the pictures. And alongside this unique feature, Koshki offers also other luxuries available in Tusheti. My tip would be to enjoy Khinkali in your room at the very top while gazing into the great white nothing (or everything!) that is the Caucasus Mountains.
TUSHETI NATIONAL PARK & THE ALAZNISTAVI TOURIST SHELTER You absolutely have to go there. The park was named one of the “12 best places you’ve never heard of” by BudgetTravel in 2011 not only for its rich biodiversity but also for its aesthetic terrain, hamlets, old defense towers, cuisine, and folk culture. A testament to the astounding amount of work carried out by the Georgian Agency of Protected Areas. Not only is it a great place to visit and sightsee, you can also get all essential information about Tusheti at the Visitor’s Center. WHERE: The Park is 205 kilometers from Tbilisi. The 85 km Omalo-Alvani highway is in hilly terrain and is difficult to drive. The visitor center to the parks and reserves of Tusheti is located in

Much of it is unofficial, and may be free because you are the first person to inquire; other possibilities will all be minimally priced, on a scale depending on whether you want to use any

THINGS YOUR MOTHER WOULDN’T COOK KHASHI THE (capitalization intentional!) hangover cure. Personally, this dish of floating fat and bone does NOT appeal to me, but many Georgian men swear by it. Some say this dish originally comes from the East, created by peasants for the Muslim fast of Ramadan. When the poor killed their cattle and sent the good meat to the homes of the rich as ordered, they were left with the animals’ innards, heads and hooves. So the poor took these parts, put them in large pots and boiled them to make a nutritious broth ready for the daily post-fast feast. The Georgian version takes around 24 hours to prepare- from cleaning the bones to boiling it all down. Milk is added to make the broth a more appealing color. Add crushed garlic and drink down a shot (or two) of vodka, and you’ll be all set for the day!
GHOMI Ghomi is a traditional Georgian dish from the western region of Samegrelo, made with cornmeal and slices of cheese put in the hot mixture to melt before eating. I’m not a fan- I find it rather tasteless and it reminds me of baby-food, but it is a respected dish and so should be tried at least once!

CHAKAPULI A summer refresher and one of my favourites, but unusual-tasting for most Western palettes for its over-use of the aromatic herb tarragon. Chakapuli is a traditional Georgian dish from the Kakheti region, eastern Georgia, made with lamb and white wine, handfuls of herbs, including tarragon, and the spicy fruit ‘Tkhemali’.
LOBIO This dish always reminds me of one of my father’s musical gems: “Beans, beans, the musical fruit; the more you eat, the more you toot!” Music to the ears it may not be, but an experience for your taste buds, it will. Boiled red kidney beans with fried onions and crushed Blue Fenugreek and coriander – this hot pot of filling goodness usually comes with a serving of fresh mchadi (cornbread).
JONJOLI I am not one for anything pickled and my mom knows it, hence I put it on this list, not least because I heard top British Chef, Martin Blunos, raving about it on his last visit to Georgia. Basically pickled flowers from the locally-growing Jonjoli bush, once prepared in the necessary vinegaroil-onion-coriander concoction, they make a great appetizer and best suit fried dishes and the above lobio.

Located in central Tbilisi, patrons will have little difficulty in rolling down the hill to Rustaveli Avenue to make use of the street’s metro station or public transport, unless they feel the need to hail a taxi. DIVE BAR As the name suggests, the floors in this bar are not made of jade marble, nor are the staff graduates of the Jeeves school of service. NAUKA A tiny cafe-bar tucked into the corner of a park, it is pleasant to sit outside in the summer sunshine and sip Budweiser, enjoying the feeling that takes over after one’s third drink, the feeling that anything is possible and if everyone would just agree with you then you’d be a celebrity in no time at all. Bean-bag chairs are provided on the grass for visitors who want to discuss their latest screenplay, break out a guitar, or talk about ‘90s culture. As in many other places, imported beers are more expensive, but deals are offered to those enthusiastic enough to buy three or four cans at a time. Advanced drinkers should beware that the Mtkvari River is a bare fifty meters away, and although the city looks lovely from the river bank, falling in is not recommended as not everyone can hope to emulate the success of the heroic penguin who escaped the zoo flood disaster of June 2015 and turned up in Azerbaijan. PAULANER BROTHERHOOD A bar-restaurant serving Georgian food and European beer in the heart of Saburtalo, sports fans can enjoy watching sport channels on the Brotherhood’s two televisions, while guests who dislike sport will invariably find their eyes drawn to the screens anyway. Though the beers on offer are principally German, Belgian lagers such as Leffe are also served, giving hangovers that European feeling of continental optimism; to this end, the Brotherhood is recommended for anyone willing to pay a little extra to enjoy a roaring morning-after headache.
DIVEXFABRIKA Seeing as Tbilisi already has a Dive Bar, it did not take long for the management to decide that what this city needed more than anything else was another one, the principle difference being that DIVEx (or ‘New Dive’) has a stage and is situated in an old abandoned factory which will soon be gentrified into something containing a large hostel, boutique shops, cafes, and more. Serving similar drinks at similar prices to its sister bar on the other side of the river, Dive’s loyal clientele populate this latest incarnation of their favourite watering hole, swaying gently from side to side as they phone their friends and encourage them to visit. In addition, an old fallout shelter sits beneath the bar and runs the length of the factory. Although it could be used for parties, if Kim Jong-Un ever runs out of Emmental cheese and feels the need to launch a nuclear strike against the planet, humanity might find itself being repopulated by foreign hipsters and Georgian liberals, all invariably happy, and all invariably drunk. QVEVRIS By Katie Ruth Davies In its search for a wine market beyond Russia, Georgia has been reviving the ancient method of wine-making in Qvevris- much to the delight of many a country around the world. Various commercial wineries in Georgia export Qvevri wines abroad, and some winemakers in Europe and America have also begun making their wine in them. In 2013, UNESCO added the traditional Georgian method of making wine in Qvevris to its list of intangible cultural heritage. So just what is a Qvevri?

Archaeological digs in the southern Georgian region of Kvemo Kartli (at Dangreuli Gora, Gadachrili Gora and in
the village of Imiri) found evidence of grape pips and Qvevris dating back to the 6th millennium BC. The villages of Atsana in Guria; Makatubani, Shrosha, Tq’emlovana and Chkhiroula in Imereti; and Vardisubani in Kakheti are traditional Qvevri-making areas, with the know-how having been passed down the generations since ancient times. The clay used to make a Qvevri must be carefully chosen, as its characteristics affect the wine’s mineral content.
HOW? To make wine in a Qvevri, the grapes need to be pressed and the juice poured in along with the grape skins, stalks and pips. The Qvevri is then sealed with clay and earth and the juice left to ferment into wine for at least five to six months before being decanted and bottled. The mash of pips, skins and stalks is then taken out and distilled into clear brandy (known as Chacha- not to be drunk lightly!). The empty Qvevri is then washed, sterilized with lime and re-coated with beeswax, ready to be filled again. In the past, various sized Qvevris were also used for storing brandy, grain, butter, cheese and a variety of other perishable foodstuffs,
although in Georgia they have always been primarily used for wine-making. Such large ceramic storage vessels are made in many countries, but only Georgia, Spain (vino de tinaja, vino de pitarra) and Portugal (vinho de talha) use them for wine-making. Qvevri wine is said to be rich in tannins, needing no chemical preservatives to ensure its long life and superior taste.
KVEVRI OR QVEVRI? The Georgian language has two ‘k’ sounds: ქ (a normal ‘k’, like in English) and კ (harder sounding). The word kvevri (Georgian: ქვევრი) is spelled with a

normal ‘k’, but when Georgian is typed on a standard keyboard the key allocated to ‘ქ’ is actually the ‘q’ key; Georgians therefore spell the word with a ‘q’ in English. This misleading spelling can now be seen used in many official publications, including those of UNESCO. In 1971, Georgian director Irakli Kvirikadze released a comedy film short on the theme of Qvevri. In it the main character Gogia buys a new wine vessel but his daughter accidentally breaks it. The man they call to fix it then seals himself in, leading to comic complications. Find it on Youtube- worth watching even if you don’t speak Georgian! Grab a Chacha By Katie Ruth Davies No, it has no relation to the Cuban dance. In fact, it’s more likely to knock you off your feet than get you up and dancing on them!
Chacha (Georgian: ჭაჭა) is a strong spirit, a Georgian version of Grappa, made of the grape pomace left after making wine. It is 45-60 percent alcohol and you’ll find it being drunk at many a Georgian celebration and feast. Many Georgians make Chacha at home in a mini still. By the American definition, it qualifies as “moonshine” but unlike the American variant, distilling chacha is not illegal in Georgia and many families continue the tradition. It is made by distilling the grape pomace (parts left over after wine removal- skins, pips, stalks etc) in a container for one month. A metal vat is then filled with pomace and old wine (vinegar), and a spouted lid put on. The elongated spout of the first vat then runs downwards through a metal cooling vat (usually a tin bath) filled with water, and ends in a thin “dripper” tube which will drip the alcohol into a glass jug or bottle. All connections are well sealed, a fire is lit under the metal vat containing the pomace and when it boils, the alcohol begins to drip out. All that’s left to do is drink it! Many Georgians claim that Chacha is a remedy for a number of ailments- from colds and hangovers to indigestion and aging! We say give it a try, but drink with caution!

The name is taken from the name of the sacrificed wine in old Georgian language, made from the best grape. In order to get such grape, the owners, together with French experts, cultivated vines and grew the vineyards in the Tsinandali area. Besini produces the highest quality wines through a harmonious combination of the ancient traditions and modern technologies. Shumi is one of the best wine producers in the country. During the wine tour, guests may visit the vineyard and the museum and participate in the grape harvest. The Veranda includes a tasting-room, a wine shop, a traditional ‘tone’ oven and an ethnographic corner.

owns vineyards. It also owns land in Mukhrani Valley in Kartli, and produces wine from the Rkatsiteli, Mtsvane Kakhuri, Kisi, Saperavi, Tavkveri, Chinuri and Shavkapito varieties of grape.

Gvirabi (which means tunnel in English) is carved into the rock of the Caucasus Mountain Range. The tunnel was opened in 1962 for the World Wine Congress. In the beginning, it belonged to the government and wine from the entire Kakheti region was stored here. Nowadays, it is the Winery Khareba cellar, used to age wine. The constant temperature 12-14 degrees, with around 70% humidity all year round, creates the ideal, natural conditions for wine to age in French oak barrels, as well as to store bottled wines for extended periods. The tunnel consists of two main parallel tunnels and 13 smaller perpendicular ones. The total length of the entire tunnel is

ALAVERDI MONASTERY Address: Village Alaverdi, Akhmeta, Georgia TEL 596 10 04 34 The wine cellar of Alaverdi Monastery is one of Kakheti’s most distinctive cellars. Located within the monastery territory, on the site of the historical wine cellar (8th-10th centuries), it was recently rebuilt. The cellar includes a classical wine hall, a large 6th century Qvevri warehouse, an ethnographic corner, a tasting room, and a souvenir shop.

Georgian Spices – The Performance of National Cuisine By Irma Kakhurashvili No-one knows for sure when the first spices were used in cooking in Georgian dishes but today it is impossible to imagine the specialties of Georgian cuisine without those flavors. In the Tbilisi of my childhood, on the noisy territory of the Deserters’ Market, you would often see sellers of dry spices; cheerful grannies with constant suntans and colored headscarves, selling coriander and saffron in wooden cups the size of small vodka glasses which you were not allowed to bargain for. You may still come across such grannies in the agricultural markets of Tbilisi but the aromas of those colorful spices do not have the same sharpness they had before. This is why I would advise real gourmands to buy spices not in the city markets and supermarkets but in Georgian villages themselves. It is known that spices were brought to Georgia from the East and quickly became well established. The most popular spice is coriander- it suits a wide variety of dishes and is the leader in the cuisine of all regions of Georgia. It can stand a moderate winter and can be harvested all through the year. Seeds of dry coriander, in combination with other spices, suit meat and walnut dishes. Fresh coriander seeds squashed with garlic make sauces incredibly tasty and dry seeds go well with the pepper sauce Ajika. The crown of the Georgian table is trigonella, which can also be seen in African and Argentinean cuisines, used together with dry spices. The sharpest flavored trigonella can be found in Samegrelo. Compared to coriander it needs more care – growing and keeping it requires special techniques. Satsivi, baje (walnut sauces), and pkhali (dishes with different types of greens) are unimaginable without it. Svanetian salt also includes trigonella. Dry wild basil adds a special taste to Georgian meat dishes. We should not forget the pennyroyal of magic taste, which grows in many places in Georgia, often wild. Laurel also grows in the wild
and its leaves can be well kept all through the year. When speaking about meat dishes, we should also remember caraway. It is very good for fatty dishes as it helps food digestion. It goes very well with Khinkali, Shila, and Svanetian Kubdari. Caraway is good in combination with red and black pepper. Certain spices divide Georgia geographi-

And there is no set rule; cooks often decide the amount of spices to use in this or that Georgian dish based on their visual consideration and intuition. It’s gaining in popularity and color choice and the design comes in all forms (not just as a pretty covering for your coffee or dinner table), including scarves, coasters and lampshades. radze, design professors at the Academy, focused on restoring the original, long-forgotten textile technology and now, together with other artists, regularly display their works at exhibitions across the globe, as well as in their Tbilisi studio La Maison Bleue.
The modern versions can be seen in craft exhibitions worldwide, but the oldest original samples date back to the late 17th century- cotton tablecloths painted in various hues of blue and used as dowry and for ritual and celebratory purposes by all social classes. In the eighteenth century, artisans began creating printed textiles using woodblocks with decorative engravings- ornamental motifs symbolic of the Georgian culture, such as plants, animals, knives, forks, Eastern elements, garlands, and patterns. Popularity for the Blue Tablecloth reached

another peak in the 20th century when Georgian factories turned it into an aesthetic symbol of the country. But in the 1990s those factories were forced to close as a result of the collapse of the Soviet Union and production of the Blue Tablecloth all but stopped. In 2010, despite the fact that the country was still in no position to re-open its factories, the Tbilisi State Academy of Arts launched a research laboratory named Lurji Supra (Blue Tablecloth) to study the now century-old technique.
