Georgia - Cradle of Wine
The wine has been a continues part of Georgia’s history for over 8,000, and Georgian Qvevri (clay wine vessel) wine is included on the list of UNESCO’s Intelligible Cultural Heritage, where more than 500 Georgian grape varieties are also described. Considering the aforementioned, it was no coincidence that on September 7-9, 2016 the World Tourism Organization held-its First Global Conference on Wine Tourism in Georgia. The event was attended by 250 delegates, including H.E. Taleb Rifai, the SecretaryGeneral of the United Nations’ World Tourism Organization.

the RiveR ChoRokhi delta When I have time, I love going down to the River Chorokhi delta at Gonio and exploring the wetlands. When I was a kid, I used to go for walks with my dad; he taught me the names of the birds in my Scottish countryside. I’ve bought some books on local Georgian birds so I can go and learn more about the migrating birds that pass through the regions in their thousands, twice a year. It’s a natural wonder and great fun if you’re in a 4X4 and can get access. When you drive up the valley of the River Chorokhi, you can take any one of the small roads to the left or cross over the bridges and simply explore. You end up heading high into amazing villages that are hidden in the clouds or bathed in sunshine; forests that are lush and green and so many flowers that are recognizable in the west of Europe. Some of the higher pastures remind me of Scotland with their colors and smell.

GodeRdzi mountain pass Having gone to the top of the Goderdzi mountain pass, you descend on your way to Tbilisi. Turning left at the bottom, we chanced upon Rabati Palace, a Romanoff palace, in the spa town of Rabati‌no one had told us; what a trip and what an amazing find in a forest- and all you need is your imagination!
ushGuli A friend and I drove from Batumi to Ushguli. If you go up the eastern track, you pass glaciers, wooden summer villages, and pasture that has never been grazed on by any cattle. At 2,800 meters- unspoiled, massive mountains and skies that leave you speechless. At the end is a small hotel that kicks out a Wi-Fi signal good enough for you to let your disbelieving friends know that you’ve arrived in the highest village in Europe.
david GaReji monasteRy David Gareji Monastery, near the Azerbaijan border, has that tranquility and peace about it that all great ecclesiastical sites have. Rainbow colored rock formations studded with wandering sheep or cows. On another occasion we went off to Kosalari Village to meet the wonderful ladies who make traditional hand tied rugs with natural colors, Georgian wool and patterns that are thousands of years old.

Inside you’ll find a hall of portraits, photos and correspondence, none of it labelled in anything but Georgian. Up the curving red-carpeted corridor, you’ll enter the world of Ilia Chavchavadze- from

Outside you can enjoy a walk in Ilia’s garden- maintained with pine trees and various plants. Pass the stone tower in which Ilia was born (on the second floor during the times of the Chechen invasion, closed now due to internal damage) and visit Ilia’s three-room house complete with furniture, knick-knacks and paintings. The adjacent wine cellar is equal in size to the living area, no surprise in the heart of Georgia’s greatest wine region!
To make the most out of the museum experience, pay for a guided tour (5 GEL), offered in Russian, English and German. WHERE else? Nearby you’ll find the Money Museum and the house museum of renowned theater director Kote Marjanishvili.
siGhnaGhi museum Head up the steps next to the Town Hall and in through a small door in the non-descript white building at the top. First stop is the Neolithic Age- reconstructed pottery items found throughout Georgia. Then on to the Bronze Age and some fantastic character pendants and statu-
ettes, jewelry and glass bracelets. Upstairs is Pirosmani’s Hall- everything you didn’t get to see in Tbilisi- from the famed Easter Lamb to various paintings of Queen Tamar (one of Pirosmani’s favorite themes) and the harvest of his native Kakheti. Back downstairs and you’ll find some 18th – 20th century musical instruments and weapons.
WHERE else? Buy some locally-made churchkhela (nuts in grape jelly) in the square, or handmade felt slippers. Then set off to explore the cobbled streets. Adults- 3 GEL School children – 1 GEL Under 6 - Free

Top 4 Churches in Kakheti By katie Ruth davies Close your eyes and you’ll likely trip over one! Georgian Orthodox churches are everywhere- some new, some ruined, but all special in their own way, usually offering beautiful frescoes and hand-painted icons to admire. As it’s grape-harvest season in Kakheti (my favourite time to visit the region, not least for the colors), I thought I’d take you on a quick look at some of the best churches there.

ChuRChes in kakheti GRemi Included on the UNESCO World Heritage Sites list, this is one of my favourite church-fortresses to visit, best seen around sunset when the red bricks glow. Head up the steps and into the 16th century Church of the Archangels (built in 1565 at the request of King Levan of Kakheti). The beautiful frescoes here have been maintained and cover most of the walls and ceiling. In an alleyway next to the church is a small doorway leading to the museum. It’s 3 GEL for adults, 1 GEL for pupils. The first stone chamber offers a hall of portraits of Georgian monarchs, and a projection onto a bed of sand shows a simple animated film of how Gremi Church and the original surrounding village came to be. In the next chamber you’ll find an old hole-in-the-floor toilet (leaving you to wonder how many royal bottoms partook!) and then you can enjoy a clamber up through the walls. Turn right and you’ll end up in a simple chamber with a mysterious bottomless dark hole and a few old wine-making tools; turn left and you’ll find yourself first in the empty stone chamber above the wine-making tools and also with access to the tower with a splendid view of Gremi village and the Alazani Valley. As with many museums in Georgia, this lacks bilingual labels and description, leaving you to have to imagine the past for yourself.

alaveRdi CathedRal Though huge (at over 55 meters, the cathedral is the 2nd tallest religious building in Georgia after the Holy Trinity Cathedral [Sameba] in Tbilisi) and revered throughout Georgia, this cathedral just doesn’t have the magic of others for me. It was founded in the 6th century by one of the famed 13 Assyrian monks, Joseph Alaverdeli, and stands where a small 11th century church once stood. Maybe it’s the lack of remaining frescoes (on one you can see where the character’s face was deliberately scratched off, most others were white-washed over during soviet times, though there are some 11th-16th century figures peeking through here and there). Still, it is grand and there are on-going excavations digging up tombstones and walls outside. As it is a functioning monastery, most of it is closed off to the public. There is a small gift shop selling the usual icons and beads.
nekResi This is a dedicated uphill hike if the minibus isn’t running, though that walk is made easier by the infrastructural renovations done in recent years. The view on the way up- looking over the Alazani Valley - is spectacular. Once up, you’ll find a stone church- one of the oldest surviving Christian churches (4th century AD, built by King Thrdat, founded by St. Abibos Nekreseli, one of the famous thirteen Assyrian monks); the Blessed Virgin Church (6th-7th century); the two-floor bishop’s palace (4th century); a four-floor tower (16th century); and a wine cellar. Look carefully and you’ll also see steps down to an ossuary, and a grassy area with an old wooden wine press. There is a restaurant near the car park at the bottom.
st nino’s monasteRy By far my favorite functioning monastery to visit. It has expanded hugely in the 9 years I’ve lived here, seeing an entire new cathedral being built- still on-going, so go see it before it’s done to really be able to appreciate the work involved! Landscaped gardens, a well-frescoed church and beautifully painted bell tower await, as does a gift shop offering various churchy goods and small gifts made by the local charity house “Qedeli” which works with the disabled. To the right of the altar in the church you’ll find a tiny alcove, inside which is the white marble tomb of St Nino herself. People pray on their knees here and leave candles as offerings. Don’t linger long- you’ll find a queue behind you! There is a restaurant in the car park. Down a rough unfinished road is St Nino’s Spring (“skaro”) in which the devout dunk themselves three times to cleanse themselves of their sins. A real bone-chiller. Do you dare?
ChuRCh tips: Phones off. Cameras…usually not allowed but you might be able to get a sneaky picture or two. Buy lots of candles to make it up to them. Women should wear head scarves (sometimes provided in the doorway) and cover their legs to below the knees. Men in trousers, shoulders covered.

Stretching over an area of more than 100 hectares, the park includes a windfall of attractions, rides, eateries and much more. While it may be hard to get your head around the place on your first visit, we have put together a special mini-guide for you to make the most of your trip there.
how to Get theRe Do not drive to the location! Instead head to Chonkadze Str. and take the Funicular Railway up the mountain. A one-way ride costs 2 GEL, so a total 4 GEL will bring you back safely. Note: At the Funicular Railway and in the park itself payment is only accepted with the Mtatsminda Park Plastic Card, which costs 2 GEL.
wheRe to eat 1. The Funicular Restaurant is not only one of the best restaurants up there, but is

It is currently divided into 4 sections- steak bar ‘Chela,’ pastry cafe ‘Puri Guliani,’ a lounge-bar, the historical restaurant ‘Funicular,’ and a huge event hall. Whichever you choose, you’re sure to be satisfied. 2. With a soothing atmosphere and tasteful music, Cafe Orangery has its doors wide open for guests. Free Wi-Fi is accessible and you’ll also be able to drink the famous “Lagidze Waters.” 3. Located within the children’s zone, Cafe Carousel offers natural drinks, cold ice-cream and numerous other sweet treats for you and your kids.

We suggest you visit the Haunted House, ride around the entire park in the “Happy Train” and definitely take a ride on the giant Ferris wheel for the most stunning view of Tbilisi City!

All in the Details… By katie Ruth davies Georgia has plenty to offer in terms of statues and sculptures, all of which have a story behind them to open up a totally new educational aspect on Georgia. We aim to take you to a few of these statues, sculptures and other architectural treats, giving you some titbits of information that even your tour guide may not know! This month, in recognition of the recent passing of great Georgian sculptor Merab Berdzenishvili, we’ll be focusing of his five best sculptures.
kinG david the BuildeR
This bronze statue of one of Georgia’s greatest and most successful kings was placed in Rose Revolution Square (then known as Republic Square) in 1997. In 2007 it was moved to Dighomi and if you’re off to sight-see in Mtskheta or shop in Tbilisi Mall, you’ll catch a glimpse as you speed by along the highway.
the muse Stood demurely outside the Tbilisi Concert Hall on Kostava Street, this bronze lady with a thread of theater masks in 1971 attracted the same amount of negativity as the recent Kutaisi Bagrati cathedral did for its original garish green color. Now that green has dimmed, but is no less bold in its appearance.

monument of viCtoRy Situated in in Marneuli, Kvemo Kartli region, the Monument of Victory was designed by Berdzenishvili in 1975. It symbolizes the Marabda Battle of 1962 when the Iranian Safavid army defeated a Georgian force. The Georgian Army consisted of twenty thousand men. The banner of the Georgian army was entrusted to the Nine Kherkheulidze Brothers who died defending their country with their mother and sister, becoming heroes of the Battle of Marabda. Some historians call this statue “Georgia - the mother.” It is a bronze sculpture of a woman who stands on a pedestal, and two children ahead of her holding a sword. It received the State Prize of the USSR in 1976.
GioRGi saakadze Put up in 1988, this statue is situated in the square of the same name. Giorgi Saakadze (1570-1629) was a Georgian politician and military commander who played an important but contradictory role in the politics of early 17th century Georgia.
fatheR of the soldieR You can find this monument devoted to the victims of World War II as part of the Military Glory Memorial complex in Gurjaani, Kakheti region. It opened on May 9, 1978, symbolically coinciding with the anniversary of Victory Day over Nazism. The monument was based on the 1964 film of director Rezo Chkheidze, ‘Father of the Soldier,’ which tells the tale of a father who goes to the Front to be with his wounded son, describing a father’s devotion to his child and unconditional love that helps him overcome all barriers and hardships in the midst of war.

By vazha tavberidze While in Tbilisi, be sure not to miss the exhibition of the largest collection of works by primitivism painter Pirosmani (Niko Pirosmanishvili, 1862–1918) at the Georgian National Museum Dimitri Shevardnadze National Gallery. The self-taught Pirosmani is the greatest painter this little country in the Caucasus has so far produced and the Georgians are immensely (and justifiably so) proud of the man who put them on the world map of great painters.

Pirosmani also happens to be the most expensive Georgian artist to date. It took the former Prime Minister of Georgia, Bidzina Ivanishvili, almost $1.5 million to acquire Pirosmani’s ‘Arsenali Hill at Night’ at Christie’s Auction House last year, which he then donated to Georgia’s National Museum.
“While he is rightfully considered one of the greatest primitivism painters of the world, limiting his scope with just one label doesn’t do him proper justice as an artist,” says Eka Kiknadze, Chief Curator at the National Gallery, while discussing Pirosmani’s life and works.
The billionaire went on to make a winning offer of £629,000 (about $917,000) at Sotheby’s Auction for another Pirosmani painting, ‘Roe Deer Drinking from a Stream,’ which he also donated to the Museum. Recently, nine of Pirosmani’s paintings were added to the permanent collection of Georgian Art at the National Gallery, on display as of 23 August.

Both are fascinating, though neither Pirosmani nor his public would necessarily have agreed with that assessment. Indeed, we are talking about a man who, despite literally living under a staircase and content with painting the walls of Tbilisi’s various taverns and inns, was, alongside the French genius of Paul Cezanne, one of the first to boldly experiment with dimensional perspectives in painting. And while Cezanne, at least in later years, was considered a bona fide master of

his art, Pirosmani’s professional fame and career amounted to a sole exhibition and wariness from a wider audience, which, as Ms. Kiknadze aptly puts it, “was unable to comprehend the greatness of those paintings of lambs, deer and village folk.” However, while certain naivety and lack

of influence is a trademark of Pirosmani’s style, his art is anything but simple or one dimensional. Full of intricate nuances, there is a lot going on in some of his paintings, and while the genre differences are easy to spot, one cannot help but think of Pieter Bruegel when looking at what is Pirosmani’s most popular painting ‘Rtveli in Kakheti.’
“There are lots of things happening on this canvas,” the curator explains. “A whole array of activities taking place at the harvest festivity, most probably inspired by the painter’s own childhood memories.” Another trademark of Pirosmani’s art is how most of his single character paint-
ings portray the archetypes of themselves – The City Cleaner and The Fisherman, while probably having real life prototypes, are not individuals, but embodiments of their professions. The details, while hinted at, are always underscored. This applies to most of his scenery, too, in which he skillfully portrays the Caucasian melting pot that was Tbilisi in the late 19th and early 20th century. Like many of his profession before him, Pirosmani also struggled to get the acclaim and recognition his talent deserved from his contemporaries. Reduced to working for Dukhan (Oriental-style taverns in Tbilisi) owners for food, Pirosmani was shunned by elite society, his works deemed “low-class.” “It’s safe to say that Pirosmani may have forever remained in obscurity had it not been for the Zdanevich brothers and Dimitri Shevardnadze,” Ms. Kiknadze says, going on to tell the story of how a Polish artist and poet, Ilia Zdanevich, and his brother, Kyril, revealed Pirosmani to the world outside Georgia and, along with fellow artist Michael Le Dantiu, were the first foreigners to truly gauge the scope of his art. Yet another great contributor was Dimitri Shevardnadze, the founder of Georgia’s first Artist Society, who went to great lengths to secure much of what we now know as Pirosmani’s art legacy. Obscure as his life might have been, no story about Pirosmani is complete without the tale of his great love- that of Margarita and a thousand roses, a tale which has achieved cult status over the years. The broke, yet immensely proud, painter was fascinated by a young French dancer who came to Tbilisi in 1905. It is said the charmed Pirosmani gifted his love literally thousands of red roses, a gesture that would become the source and inspiration for many a romantic poem and song. The happiness was short-lived, however, as Margarita soon left for Paris (the story implies that it

happened after she discovered the not-sofragrant financial situation of her painter-lover), leaving Niko filled with anguish and sorrow. A testament to Pirosmani’s passion towards the French woman, however, is here for all to see- the portrait of ‘Actress Margarita’ is one of Pirosmani’s most well-known works.

If there are two words that describe Pirosmani best, we would choose unique and sublime. Head over to the National Gallery to witness it for yourself – Pirosmani’s magic is best appreciated up close. Tbilisoba By nino Gugunishvili Tbilisoba is an annual festival held over several days in the month of October in Tbilisi.
I might be idealizing my own childhood memories now but no matter whether I attended it or not, the anticipation of Tbilisoba was something like waiting for Christmas. Although it has considerably changed its format in recent years, trying to move out of the soviet aesthetics and attempting to have more in common with European city festivals, for me Tbilisoba

is related to the authenticity of Georgian folklore, to its villages and regions that for the duration of the festival flood Tbilisi with the full offering of their wares. October 28th 1979 is the date Tbilisoba was officially held for the first time. After a pause during the 90s it was then re-launched in 1995, ever since bringing
up to a week of carnivalesque spirit to the capital city. Tbilisoba is also often called an autumn harvest celebration, since different regions of the country bring their products to the city, which fills with the delicious aromas of freshly made Churchkhela, (traditional Georgian
candy made of nuts coated in grape jelly), Pelamushi (made of pressed grape juice) and Mtsvadi (roasted skewers of mutton or veal). And grapes, grapes, grapes everywhere!

Tbilisi’s Hidden Gems: Georgian National Museum Giorgi Chitaia Open-Air Ethnographic Museum From a blog by tatiana Remneva
Arriving in Tbilisi for just a couple of days, guests rarely get a chance to go beyond the borders of the ancient fortress and the districts around Rustaveli Avenue. However, this does not mean that there’s nothing interesting to see apart from what you can find in the Old Town. Once such place, and one of the

gems of Tbilisi, unfortunately tends to go highly unappreciated by both locals and tourists, but it is now yours to discover: The Open-Air Ethnographic Museum. The Museum sprawls over 50 hectares in the greenest part of the city between the massive Park Vake and Turtle Lake, one
of the best Tbilisi spots for walking and exercise. The Museum was opened in 1966, on the initiative of renowned Georgian Ethnographer Giorgi Chitaia, who took great pains to gather not only the collections of household interiors and
agricultural equipment, but also houses themselves, brought from the regions and reconstructed on the museum territory. Architect L. Sumbadze came up with the idea of dividing the territory into ten zones, half of which would represent eastern Georgia, the other half western,
each offering an insight into various regions of the country. Until the mid-1990s, one could approach the territory using the cableway, which brought visitors to the furthermost point from where they could start the tour down through the Museum. The cableway is currently undergoing renovation works and is expected to reopen soon but due to a many-year break, the upper parts of the museum were all but abandoned, the paths cracked, the hawthorn bushes taking over, and some of the houses now stand boarded up. Nevertheless, wonderful examples of architecture from mountainous western Georgia can be found there, including houses from Racha and mountainous Adjara, with carved balconies and filigree woven corn stores. And if you climb to the very top of the Svanetian tower, an amazing view opens up for you over the city and the green Turtle Lake. The Museum exhibits examples of architecture from various eras, starting from the very simple “darbazi” type houses featuring a single room shared by
the whole family, in the center of which was the hearth which heated the space. In the lower part of the museum area, which is active, you find a range of houses which exhibit traditional household artifacts. The staff of the museum dresses in national costume and can artistically tell you how the people once lived. There are a number of handicraft workshops for the youngest visitors, where they can learn how to forge a nail, make pottery or knit the traditional Georgian kilim. There is also a wine cellar (marani), where you can learn about Georgian wine-making over the centuries. And if you go further up to the Kakhetian house, you will be amazed by its incredible cone-shaped roof, which served as both the heating pipe and the source for light. Here you can learn how to bake traditional Kakhetian bread- after trying it you will never want to eat anything else! From here you can enjoy a view of the new districts of Tbilisi and the clouds
grasping at Mount Zedazeni in the north. Sit a moment with your face turned to the wind and the sun, and breathe. I come to the Museum over and over again, and each time find something new. I like seeing how the seasons change here, how the grass burns out and the trees lose their final leaves, or how the snow falls when in the city it’s
raining, how the almond trees blossom or the native grasshopper hops from one blade to another. You can come here for a nice picnic or listen to the music from modern Georgian artists who hold concerts during the annual folk-festival Art Gene. The place is wonderful for
children. Many refer to this place as “Georgia in Miniature”, but I see it more as a mountain village which has adopted within itself all the various characters of our small country Georgia. museum of soviet oCCupation Georgia has a long history of being occupied by neighboring powers. The Ottoman, Persian and Russian empires all left scars and dark legacies on the country, but no national wound is more keenly felt than the occupation of Georgia by the Soviet Union. As the Russian Empire collapsed in the waning years of the First World War, Georgia snatched independence from the chaos and established itself as an independent republic. Sadly, the country’s freedom proved to be short-lived when, after just three years, Moscow once again turned its attention to Georgia. Recent world events such as the war in Ukraine or the brief conflict between Russia and Georgia in 2008 take on even greater poignancy as visitors view the archive documents, photographs and videos of Georgia’s forcible incorporation into the Soviet juggernaut. If one wants to understand the fierce Georgian attitudes towards freedom and independence, a visit to this museum is a must. Although the country’s economy has benefited from its Caucasian setting as a link between East and West, it has also been historically targeted by neighboring empires for its strategic location. Nevertheless, the State Silk Museum gives a fascinating insight into the history which gave the old trade route its name, with collections and exhibits that cannot fail to capture the imagination. The memorial house museum of the famous dance and ballet master Vakhtang Chabukiani was founded in 1992 and presents his personal items: furniture, his library, and piano, given to the museum by niece of Chabukiani, Tamar Gordoni. The exposition hall displays photos depicting the childhood and acting roles of the maestro, divided thematically. Here, you can also see his stage costumes and, at the end of the hall, there is a small stage with a life-size size photo of Chabukiani taken during one of his dance moves. The museum preserves up to 6,000 exhibits, of which 550 items are displayed in the permanent exposition.

The exposition includes his piano, photos of famous people, sketches created for Abesalom and Eteri, Daisi, and Latavra, scores for the same operas, the tail coat of the composer, stage costumes of Abesalom and Eteri, and a unique collection of folk instruments. As well as Toidze’s diverse genre-paintings and graphics, the museum also contains paintings and graphics by Irakli and Giorgi Dolidze and sculptures by I. Nikoladze and others.

Nikoladze, his remaining artworks were purchased by the government, and the other half was donated by his family members. Today, the house-museum’s reserves include 114 sculptures.

The Georgian Guest House Culture By katie Ruth davies If you, like me, prefer to go local when traveling- to hear the stories from the people living them rather than from a brochure, then the typical family guest house is for you. Choose carefully,

however, because there’s “roughing it” and really roughing it! If you’ve come to a nice village and you want to stop for the night, pop into the nearest shop and ask for an “ojahuri sastumro” (family hotel). In most cases you’ll be directed to the nearest friend or relative of the shop-keeper (or they’ll even get in the car with you to take you there) who has a spare room going- sometimes part of their house, sometimes especially

typical price in a touristy area starts at 30 GEL per person per night (discounts for longer stays), while in a lesser-travelled settlement you can stay for around 10 GEL pp/pn. Check if they have hot water/
heating/air-conditioning/firm mattresses and anything else you see as essential. Also ask if breakfast is included and if not (most likely not), get that agreed on from the outset, too. There is nothing like waking up to fresh cows’ milk or any products made from it (cheese, butter and yoghurt [matsoni]), fresh eggs, fresh baked bread, just-picked tomatoes and grapes and Georgian-grown tea…and then wandering around the garden and seeing with your own eyes where it all came from. Breakfast shouldn’t cost more than 10 GEL per person. Most guest house owners will happily sit and chat with you (Georgian, Russian, rarely English or German) and reveal the lesser-known secrets of the community or culture. They will even take your children on a tour of the “farm” and offer them sweets while you enjoy your morning coffee under the grapevine. Grab a… Georgian Snickers How to Make Churchkhela By katie Ruth davies Churchkhela is a traditional candlestick-like (yep, some people- like my grandmother- have actually mistaken them for candles!) sweet made by dipping a long string of nuts in grape jelly and hanging it to dry. And now’s the season for making it! blender to ensure that the mixture is absolutely smooth. Add 2 L of badagi to a deep cast iron pot and gradually add the flour-sugar-badagi mix. Heat on a high temperature. The trick here, and a real testament to the devotion of many a Georgian housewife, is the non-stop vigorously stirring. Bring to the boil. Reduce the heat and continue to stir for 8-10 minutes so it thickens enough not to drip off your spoon. Now for the double dunking Grab the top end of the thread and lay the nuts into the pot of tatara. Keeping hold of the thread, push the nuts deep into the jelly with the wooden spoon. Then pull them out and hang them on your broomstick to dry. If you can get out into Kakheti (the biggest wine region) to give some DIY Churchkhela a go, definitely do! If not, you can read about it here as you chew on a city-bought Churchkhela of your choice! First sort out your nuts Thread 25 shelled and de-skinned nuts (halved walnuts or whole hazelnuts- 2-3 minutes in a hot pan will do the de-skinning trick) onto a thin piece of string. Knot the ends. Leave the nuts to dry in the sun to prevent mold. NOTE- Locals often hang

the “nut stings” on a broom handle to make transporting easier. When they’re sun-dried, get your grape jelly (tatara) going NOTE- this is for ONE coat of tatara, but you will need TWO coats, a few days apart. Add 300g flour and 3 tbs sugar to a bowl. Gradually add up to 500 g of badagi (boiled grape juice) and mix with a wooden spoon. Once the flour, sugar and badagi are mixed with a spoon, use an electric

tRaditional GeoRGian sweets ChuRChkhela Churchkhela - a long candle-shaped candy consisting of a string of nuts dipped in grape jelly (tatara) and dried in the sun. Two of the Georgian regions are particularly well-known for different types of Churchkhelas: Imereti and Kakheti. Churchkhelas from Imereti are traditionally much thinner and exclusively made with nuts. Kakheti region is famous for Churchkhelas that are thick and full of walnuts. But it’s purely a matter of taste as both are delicious and energizing!

Svaneti: Outstanding By tony hanmer I once put together an exhibition of my photographs for the opening of Focus Cafe in Tbilisi. They knew that I lived in Svaneti, so the twin themes had to be this region and food, for the setting. I was able to come up with quite a few images from my years of coming, going and staying in Georgia’s highest, furthest region.
Perhaps, if you know Georgian cuisine at all, you might not think that Svaneti is the best place to find a great number of local specialties. Quick, how many Svan dishes can you name? “K’ubdari”, the meat pie, right? One or two others involving potatoes and cheese, and that’s about it. A blood sausage which, in my opinion, is best stayed away from unless you’re already a fan of such things. But let us mix the pot a bit deeper and see what else turns up.

honey Honey... made from a huge variety of high-mountain wildflowers, reputed to be the best in all of Georgia. My own neighbor has more than sixty beehives. They say that you have to be a person of good character to keep bees; they can tell. On bread, cakes, in “matsoni”
(homemade yoghurt), in tea, truly exquisite. A super-food for its micro-ingredients and health benefits.
svan salt Svan salt might have been on your original quick-think list, but I’m talking about the real thing, not what you can buy
in Tbilisi markets, which simply do not have access to the right herbs. And anyway, here it comes in many different varieties, including a green one called “bebias marili” (grandmother’s salt), found in Ushguli. All the versions are, of course, salt-based, and their very aroma always
transports me back here from anywhere else in the world when I smell it. The ingredient list for the salts is quite long, and includes herbs found nowhere else, including some whose names I have been told only in Svan, not even in Georgian. Perhaps a botanist could help. Put it on any food you want salt on, tasting for flavor as you go. Rich stuff.
Bek-kondaRa One great sweet-savory local herb is “bek-kondara,” a mountain marjoram with tiny leaves and purple flowers, growing close to the ground. This makes a delicious tea, too.

petviani khaChapuRi A version of “khachapuri,” cheese pie, which at first glance seems to be infused with grains of something black. That’s “petvi,” or ground millet, not dirt! So even up here, Georgia’s best-known staple food has a local variety!
mushRooms The mushrooms... of course to be picked only with a local guide as you would do anywhere in the world, so you get only ones which won’t kill you! They come in quite a few varieties, shapes and sizes,

some huge, and are so far removed from “canned button mushrooms” that the latter hardly deserve the name, let alone your attention. These are almost meaty in flavor; fried up with onions, a bit of garlic and a splash of white wine, they send you unforgettably straight into gourmet territory.
sulGuni Cheese Sulguni cheese, made by cutting up and briefly boiling young cheese, then re-forming it- Svaneti has another local type. Quite different from any other cheese, partly from the altitude and the cows’ diet, rich in Caucasus mountain goodness. An important source of income for Svans, too, a big hit in markets in Zugdidi, capital of Samegrelo.
fRuits Temperate fruits grown or found up here include: apples pears, sweet and sour plums; the same for cherries; blackberries, strawberries, raspberries, elder berries, and more. Walnuts are ubiquitous (though they say that walnut trees, despite eventually offering magnificent shade, shouldn’t be planted too close to a house, because of some poorly described bad effect on one’s health). Hazelnuts are mostly wild, in the forests. In summer they are seasonal; else-when they are preserved in jams, compotes, liqueurs and other forms. Winter is long, but that’s no reason to be impoverished in tastes; here we prepare for good eating even during those six months of snow! One should not be stuck with a handful of foods and end up hating them from sheer repetition, no? And Svaneti has as much to offer in the food category, most of it unique, as anywhere else in this hugely varied little country.

Too Much Wine and Vodka (Is There Such a Thing?) in Kakheti By bloggers and travellers jackandjill I have to admit that living 1 hour away from Napa and Sonoma Valley, a world renowned wine country, visiting Georgia’s wine country didn’t excite me. I mean, who ever heard of Kakheti, right? And how can it compare to Napa and Sonoma? But off I went anyway. And this is what I learned: kakheti is one of the oldest wine producing regions in the world. Wine has been made here for so long that it became a big part of the country’s identity. The whole region seems to be overflowing with wine and vodka. As you walk through the beautiful streets of Sighnaghi, you can see people walking around in a permanent alcohol induced haze.
where there’s wine, there’s vodka. Wine and vodka are closely related because Georgian vodka (ChaCha) is made by fermenting the leftovers from the wine-making process (grape stems and skins scooped up and distilled even further). What comes out is a clear, potent liquid that’s drunk in copious amounts by Georgians. Georgian homemade wine is still done in a traditional way, in a Qvevri, a giant clay jar buried underground. A good quality Qvevri can be used to make wine for a hundred years or more. amber colored wine is the norm for white wine since they don’t peel the skins off the grapes.

no fancy wine glasses here. The traditional way of drinking wine in Georgia is from a shallow, clay bowl when gathered around a long table laden with plates of homemade food for a supra (feast). Georgians love to toast. They toast for health, for family, for old friends, for new friends, for good harvests, you get the gist… Every time a tamada, or toastmaster, proposes a toast, everybody must drink to that as per tradition. One of the oldest foreign-owned hangouts in Tbilisi, Prospero’s Books remains popular with both tourists and expatriate residents. The cafe serves unique blends of coffee with beans imported from as far away as Columbia, Kenya and Indonesia, as well as small meals and snacks. A corner of the cafe is used to host a weekly children’s reading and activity hour, as well as occasionally being used for launch events for books concerning Georgia. Gvirabi (which means tunnel in English) is carved into the rock of the Caucasus Mountain Range. The tunnel was opened in 1962 for the World Wine Congress. In the beginning, it belonged to the government and wine from the entire Kakheti region was stored here. Nowadays, it is the Winery Khareba cellar, used to age wine. The constant temperature 12-14 degrees, with around 70% humidity all year round, creates the ideal, natural conditions for wine to age in French oak barrels, as well as to store bottled wines for extended periods. The tunnel consists of two main parallel tunnels and 13 smaller perpendicular ones. The total length of the entire tunnel is

Wherever I Lay My Hat By tony hanmer Along with landscape, music, song, dance and cuisine, Georgia’s various regions also boast great variety in their local traditional costume. Svaneti is no exception. Although first glance rates the clothes of Khevsureti as perhaps the most spectacular in the country, with rich embroidery in many different colors and geometric designs, Svaneti’s men’s hat is just as distinctive and interesting in its construction, if far simpler. Indeed, it is the main item separating the wearer from looking like any “generic” Georgian, as the rest of the local costume is just the long chokha tunic with its bullet cartridge pockets along the chest, belt, knife and high supple black leather boots. Only a “bowl” or skull cap of sheep’s wool felt: that’s all there is to it. Photographs of Svan men of a century or so

ago show that the shape has evolved from a larger version, with more of a brim, to today’s simple hemisphere. A cross added in thread is visible from the top, meeting an equatorial circle in the same thread. The sole variations now are in a possible short front brim to keep any rain off the face, and in the natural color of its wool: white, brown and black join the commoner traditional gray. Certain villages in Upper Svaneti are well-known for the production of the hats, especially Lakhamula, located between Dizi and Kveda/ Zeda Luha. There are also much fancier, more colorful dyed ladies’ versions being attempted now as a new statement, welcome play with very powerful and conservative traditions to cater to the fashion and tourism industries. They can be found here and there in Mestia. When buying the men’s hat, there or elsewhere,

currently priced at around 30 GEL, one should ask where it was made, and beware cheap imitations! There are also tiny souvenir versions to be found in tourist shops, and these can “Svanize” any doll, toy or other figure which they fit. Although sheep are far less populous than cattle in Svaneti than in the more eastern regions of Georgia, there are enough of them to provide the wool which becomes the felt from which these hats are made. It must be washed, gathered, rolled out and pressed before the basic thick flat sheet emerges, quite a time consuming process. Then the hat maker (usually a woman) stretches it over a wooden form, which exists in several sizes to determine the diameter of the finished hat, which is definitely not a “one size fits all” product. It is made to warp to the new shape, and
must dry before this becomes permanent. Cut the edge, add the thread and possibly a long string with a colored bobble on the end coming from the center, and it’s finished. A Svan hat is thick enough to keep the head nicely warm in the long cold winters which are part of this province’s climate; it is less comfortable in the hot summer lowlands, but still quite wearable. They can be itchy if one’s scalp is not used to wool, but time diminishes this to becoming unnoticed. They are thick enough to protect the head from minor injuries, too, almost like an English equestrian helmet. The author discovered this in the autumn of 2000, following a severe mugging and robbery one evening in Tbilisi, a much darker and more dangerous and corrupt city at the time than it is today. His head suffered far less wearing the hat than it would have without it, and he lives unscathed to tell the tale. Properly cared for, such a hat can last for years, even with regular wear. Sadly, they are far less commonly seen now than earlier, particularly among the younger generations, for whom a baseball cap may be much more of a status symbol. The hat is, of course, as all over Georgia, removed before one enters any holy place, and to show respect. If you want to really impress your friends and hosts at any Georgian supra, or feast, invert your Svan hat, carefully pour some white wine into it (darker wines would stain), make your toast, and drink up! They’ll never forget your well-informed adherence to Svan mountain tradition, even if they’ve never seen it in their region before.

The quality of weaving and the number of knots (up to 800,000 per sq.m) are considered to be very important in defining the value. The more knots, the higher the quality is. A good carpet also has to be made using natural dyes.
