Everyday Indulgence

Ilove food and cooking and indulgence in general. Mess with the quality of my coffee, my wine or my butter and there WILL be trouble.

I do feel however that ‘food wankery’ is slowly taking over food enjoyment. Since the arrival of Masterchef and its ilk we all feel intimidated by both the ingredients and the methods. You can’t whack a steak on the BBQ You have to inject it with a syringe full of organic smoked hickory, chuck it in a sous vide for 12 hours then gently char over a fire of roasted chestnuts. It exhausts me just thinking about it! Our coffee beans have to pass through the digestive system of an Indonesian civet cat before being roasted in order to pass quality control! (vomit emoji). I think that the sensual enjoyment of food is enhanced by the quality NOT the cost of the ingredients. Expertly toasted white bread slathered in salted butter with just the perfect amount of vegemite (according to personal preference) can be a perfectly indulgent feast for the senses. The perfectly boiled egg dipped lightly in salt can be heaven. My personal bit of food wankery is that I like this to be truffle salt! The company also enhances the enjoyment. Wine and cheese with friends beats solo caviar any day. You should never be afraid to ask a waiter exactly what a mysterious unknown ingredient is. Curiosity is to be rewarded not derided. In these times of change and upheaval we need indulgence and comfort food more than ever. I’m happy to be adventurous with my food choices and I love an exotic ingredient, but sometimes I just want a perfect cup of English breakfast Tea and a scotch finger biscuit.

Terysa Vanderloo and Nick Fabbri didn’t do things by halves when it came to their sea change, leaving their lives in London in 2015 to set sail around the world. The couple speak with Get It Magazine’s Holly Bartter to talk about adventure, community and the freedom of #boatlife.

While they both had experience out on the water, Terysa recalls when she and Nick were ‘bitten’ by the sailing bug for good. “In 2013 and 2014 we took six weeks off to do an extended sailing holiday around France - it was then that we decided we needed to make the move!”

After such a dramatic change in lifestyle, the couple received a variety of reactions from friends and family. “A lot of people didn’t believe we would go through with it - it’s safe to say our parents were a little worried. However, our families were very supportive of our plans,” says Nick.

Life on the water today revolves around recording and sharing their travels with their loyal audience. “We started the YouTube channel in 2017 after arriving in the Caribbean and realising we needed a creative outlet and a way of documenting our sailing adventures - the channel gained momentum quickly,” says Terysa. Terysa and Nick found their footing with a community of fellow sailing enthusiasts through social media. “More and more people can take inspiration from this lifestyle. “It’s about the freedom of living on a boat, of being able to point your bow in the direction of your choosing and cultivating a connection to the ocean and nature.”

With a growing #boatlife community across Youtube and social media, Terysa and Nick have seen the reach of their platforms. “Countless emails, messages, DMs and comments over the years from people who have made the same lifestyle change after being inspired by our content. It’s very humbling to think that we’ve made such a difference to someone’s life.”

Their travels to date include France, Spain, Portugal, and Morocco, before crossing the Atlantic in late 2015 to the Caribbean.

“We loved sailing in Morocco because it was off the beaten track,” Nick says. “We also loved France, particularly the Atlantic coast which has an incredible wild beauty, and the Bahamas which has the most amazing blue waters.” At present, Nick and Terysa are enjoying sailing across the New South Wales and Queensland coasts, a trip they describe as a “very different and very beautiful experience”. “We have loved the Whitsundays - so many beautiful islands, and the snorkelling and beaches are beautiful, with some great hikes. The weather is generally gorgeous, and everyone in Queensland is so friendly.” With many adventures yet to come, Nick and Terysa are excited for what the future holds.

“We’re currently in partnership with the Australian catamaran manufacturer Seawind Catamarans and our new boat is being built by them right now. We’ll be taking delivery early next year and continue to explore the world by boat, documenting it all.”

Navigating their way to a life on the water may not have always been smooth sailing, but Terysa and Nick wouldn’t have it any other way. “There’s no point to life at all unless you’re doing something you love. Change is always hard, but now we’re living a lifestyle that’s authentic, exciting, and extremely rewarding.”
