COFFEE BACON SANDWICHES For the Bacon: • • • • • •

8 slices uncooked bacon 1/4 cup freshly ground coffee 1/4 teaspoon chili powder 2 tablespoons packed brown sugar 2 tablespoons molasses 1 tablespoon water

For the Spread: • • • • • •

4 ounces goat cheese 4 dates, pitted and coarsely chopped 1 tablespoon lemon zest 2 tablespoons fresh lemon juice 1 tablespoon olive oil 1/4 teaspoon crushed red pepper flakes

In a small bowl, stir coffee, chili powder, brown sugar, molasses, and water into a paste. Spread the mixture on top of the bacon slices, wrap the bacon in plastic wrap and place in the fridge for 2 hours. Preheat oven to 190 degrees (c). Place individual bacon pieces on the lined baking sheet. Bake for 14-17 minutes or until bacon has reached your desired crispiness. Remove and drain on a paper towel. Place goat cheese, pitted dates, lemon zest, lemon juice, olive oil and red pepper flakes in a small bowl. Mash all the ingredients together. Add olive oil to reach your desired consistency. Spread goat cheese mixture on buttered, toasted bread. Top with coffee bacon and fresh spinach. Serve immediately!

DORMANS KAHAWA DIARIES HOW I TAKE MY COFFEE WITH PENG CHEN Peng Chen is one of the founding partners of The Yard, the popular home to The Alchemist Bar, The Bus, Mama Rocks, Upendo Pizza, and others. We caught up with this entrepreneur to learn more about his vision.

What’s your favourite way to take coffee? There’s this new drink going around town called a Coffee Martini that involves spiking some iced coffee with a tot of vodka, shaken over ice, and garnished with a blood orange.

What do you do for a living? My two partners and I currently own and operate The Yard, in Westlands. It’s a cultural space/music venue that contains a variety of food, drink, music, and fashion partners such as The Alchemist Bar, The Bus, Mama Rocks, Upendo Pizza, Taste of Jamaica, Ada Studios, and One Hundred Years.

What’s the best part about your job? Getting to work with such a diverse group of talented up-and-coming and established artists, performers, start-ups and sharing that with Nairobi in an accessible manner.

What’s your morning routine? Depending on how big of a night out I had previously, I try to wake up around 7-8AM, cuddle with the fiancé, do some stretches, and if I’m feeling super adventurous, make some breakfast. How many coffees do you have in a day? I find that I’m a pretty amped up person by nature, so taking too much coffee in a day puts me in superdrive mode and I end up crashing. I take coffee in small doses every now and then to give me a little boost when I need it.

What do you see as the future of Kenyan nightlife? The future of Kenyan nightlife is grounded in excellent, 360 experiences for the customer. From the performances, to the tech, to the sound/visuals, to the food, drinks and service, we’re really pushing for a complete entertainment package for the customer to wow all of the senses. What is your mission/vision/goal with The Yard? BRING ON THE BUNS Burger buns don’t need to get in the way of a delicious hamburger, discovers Charity Keita, as she explores the world of low-carb bread options.

A

s I open the oven door I’m hit by the rich wholesome smell of baking goods. Could it be, I ask myself, that my low-carb burger buns have actually turned out to be a success? My dear readers will have noticed I have been on a bit of a health tip of late. I’ve been watching my carbs and upped my vegetable intake, I’m not counting calories because I find it depressing, I’ve managed to cut about 70% of wheat from my diet and I’ve managed to give sweet potatoes an important role in my life (apparently they are really good for you). I try to read up as much as I can on all this stuff and sometimes I get incredibly lost with all the conflicting information out there. One thing for sure is that I’m nowhere close to embarking on a glutenfree diet. Nothing that anyone has

written so far, has convinced me this is something I should worry about. When it comes to meat, I’ve been in two minds: ever since the Atkins diet exploded into our communal consciousness at the beginning of the century, there have been so many different diet variations that insist we should basically only eat meat. Now I find this a bit of a hard sell: so the world gave us an unlimited bounty of delicious fruits and vegetables and somehow they’re supposed to be evil? I just don’t buy it, sorry. That said, since I’ve been reading up on the evidence that fat has been unnecessarily maligned over the past 75 years or so, I’ve begun to be swayed by the argument that it is sugar that is the real evil and not meat and fat and as such, eating them is not such a bad thing after all. This argument does fail to take into account the unarguable impact

intensive meat rearing has on our environment and how difficult it is in Kenya to get really nice free range organic meat. As a result, I still have at least one or two meat free days a week and really enjoy the challenge of cooking vegetarian meals. Recently however, much to Joao my fiancé’s pleasure, I have begun to bring meatcentred meals back into the fold. Which brings us to hamburgers. I really don’t care how many people claim that eating a hamburger without a bun is fine. I hate to break it to you but it isn’t. Hamburgers were invented to be eaten with your hands not with a fork a knife. Recently I’d taken to ripping off most of the bun and just leaving a tiny island onto which I could clasp my thumb and index finger, but I kept on thinking there must some kind of “try this at home” solution. Turns out there is and I didn’t

need to trawl through a million infinitely baffling low-carb burger bun recipes online (they all require me to use xantham gum… does that even exist in Kenya?) the answer to my problems could be found in the aisles of our city’s upmarket supermarkets and health food shops. Bob Redmill’s low carb bread mix. There, the cat’s out of the bag and I was in no way paid to tell you this. Turns out the low carb bread mix is filled with great ingredients (and no mention of xantham gum), is easy to clobber together and the end results are both extremely palatable and incredibly filling! GOOD NEWS Is the perfect burger out there? Susan Wong muses. She certainly believes it does and heads to News Cafe for a classic burger experience

T

he search for a perfect burger is to me like the search for the perfect man – an often arduous journey full of surprises, some good and some pretty bad. When a burger first arrives, it inevitably looks irresistible; but after your first bite, you begin to realise that the bun is crumbly and the beef patty is overcooked and then after the second bite, it dawns on you that God Forbid what you are actually eating is highly processed piece of meat. Some burgers may not look perfect but reveal themselves to be astonishingly good once you take the plunge and take a mouthful. So have I found my perfect burger? No, not yet, but on my recent trip to News Cafe in Nairobi’s Kilimani neighbourhood, for example, I licked my fingers after indulging in a burger. Surely, that’s a good sign. The new kid on the block, this


South African franchise injects its signature style into their Kilimani branch – one that emotes a special vibe. Gentle house music thumps in the background as the generous space fills-up quickly before the dinner rush and guests enjoy a full menu of cocktails and spirits that loosen tongues and inspire conversation. At the stroke of eight, the lights dim to an ambient glow and the volume of the music increases – it can go a bit high at times with conversations eventually transforming into shouting over the next table’s conversations. The U-shaped bar anchors the space, transparent glass pendant light fixtures hang from the ceiling, copper pipes that run up the faux brick walls – whitewashed and blackened – add an urban feel while the heavy black crush velvet drapes at the front ensure that the space maintains a sensual vibe. My companion and I begin with the

Jalapeno Bites – their style of deepfried poppers encasing melting feta, mozzarella and cream cheese with finely diced jalapenos. The interesting sticks, subtly spicy, arrive with servings of guacamole. Don’t forget to squeeze some fresh lime juice onto the poppers – it’ll definitely help cut through the richness of all that delicious cheese! Our Tempura Prawns, despite being a starter, arrive looking like a healthy main dish. The mountain of deepfried breadcrumbed shrimp are not exactly a light and airy tempura-style, rather more a Deep South favourite. No complaints here though! The dip, a mayonnaise with sweet chilli sauce, is altogether forgettable. Stick with a squeeze of fresh lime and you’ll be heading to a comforting food coma. When a classic becomes fashionable, it’s always easy for its basic virtues to be lost; thankfully at News Cafe, they managed to showcase what

a classic burger experience should be like. The menu features ten burger choices: from classics to exotic twists. The burger patties come custom-blended for the chain – the lean-to-fat ratio remains a closely guarded secret. The classic Bacon and Blue Cheese comes with a juicy beef patty topped with crispy streaky bacon and gorgonzola sauce. The Big Beef, a popular selection – on a good day the kitchen will pump out 100 orders – arrives as a towering burger with cheddar cheese, bacon, caramelized onions, mushroom sauce and slices of avocado. The burgers both arrive with sides to the table on a wooden platter that always stops conversations thanks to their sheer intimidating size and display. The spread stares back and almost dares you to eat it. News Cafe burgers are a wonder. With all the busybodies roam-

ing the restaurant floor, service is swift...often too much. The rhetorical question “May I clear this?” is usually accompanied by a rapid motion of removing dirtied plates, even before your companion has finished. The burger movement of delicious new takes on the American classic in Nairobi has heated-up in recent years. From using locally sourced meats, artisan breads, organic produce, homemade condiments, funky names, to that burger patty that’s been injected with extra love thanks to grilling over charcoal – the “better burger” movement has taken Nairobi by storm. There’s nothing wrong with a humble dish getting a noble makeover. For now, at least, the options for burger enthusiasts are at an all-time high, especially with the inaugural Nairobi Burger Festival! The perfect burger is said to be hard to find, but I believe out there, there is one for every person.

ROCK THE YARD Two sisters from London are determined to give Nairobians the hamburger experience of a lifetime

N

estled behind a large red London bus in a Westlands yard, hedged between a Maasai market, a industrially made chain sandwich restaurant and a recentlyclosed down kwik-fit tyre repair centre, sits a cream coloured food truck, branded in bright graphic patterns. Sam and Natalie, the brains behind the popular Mama Rocks food truck, are sisters with no formal culinary training who share a passion for cooking and eating delicious food. Their journey began in London, where they grew up in a mixed Kenyan and Nigerian family. In London, they were exposed to many different African cuisines including their Nigerian mother’s cooking and it was their love for the bold and distinctive flavours of their motherland’s cuisine, that inspired Sam and Natalie to bring these flavours to life in their own unique way. For three years, the idea brewed in their minds as they paid their annual visit to their

family in Kenya. On these visits, they began noticing the extent to which the culinary scene in Nairobi had begun evolving. As the variety of dining options and frequency of diners dining out increased, Sam and Natalie decided they wanted to bring an interesting urban brand that celebrated Africa to Kenya. The vehicle for this vision: the burger. As their vision became more concrete, they one day decided to quit their respective jobs in order to pursue this unique dream. Starting out as waitresses at Patty n Bun, a specialty burger restaurant in London, Sam and Natalie learned the inner workings of customer service in the food industry. When they weren’t working at the restaurant, they were at the library doing research on the Kenyan market, crunching numbers and getting estimate figures for the venture they were about to invest in. In the beginning months after arriving in Nairobi, Sam and Natalie spent time doing on-the-ground market research meeting with restauranteurs and

finding suppliers for their menu. Sam and Natalie aimed to differentiate the Mama Rocks burger from the rest of the Nairobi burger panorama by creating homemade specialty sauces such as their honeyed nutty mayo and coastal Zanzibar chutney. “We just sat down and thought ‘what would taste amazing?’ then we played around with food and flavours and came up with some recipes” says Sam of their menu conceptualisation. At The Yard, the official name for the location they are set up in, Mama Rocks offer African-influenced gourmet burgers with a London twist. From their Fela Supa, a West African inspired peanut crusted chicken burger with fiery chili and coconut mayo, to their Mango Maasai Mama, an East African inspired beef burger with signature chili mango sauce and roasted red bell pepper, their menu will leave your mouth salivating and your stomach grumbling for more. And it doesn’t stop there: choices include chicken wings two ways, fries, plantains, milkshakes (both boozy and

regular), fresh juices and desserts to compliment your burger. Sam and Natalie agree they were lucky to find the communal space at The Yard in Westlands. Originally, they intended to open a restaurant, not a food truck, but as circumstances changed and finding a piece of land in a prime location was challenging, they adapted. Their location changes may have been a blessing in disguise. The Yard is home to The Bus and The Alchemist bar as well as other eateries, making it a lively destination on weekdays and weekends. The venue hosts events ranging from doggy socials to dub reggae nights, bringing in an eclectic range of individuals who try (and love) Mama Rocks burgers. You can catch Mama Rocks at The Yard from Tuesday to Sunday from noon until late. A BREIF HISTORY OF THE BURGER Burgers are without a doubt one of the most satisfying forms of comfort food. Devouring a well cooked hamburger is a quasi religious experience, a ritual of sorts. Observe peoples’ faces as they chomp down on a perfectly fluffy bun that holds within it a juicy patty slathered in molten cheese and their expressions are ones of pure unadulterated bliss. The sight is truly something to behold!

he humble burger has been around for decades having been made popular by the fast food industry during the second half of the twentieth century. According to McDonald’s, the chain sells an incredible 75 burgers every minute—try and count how many burgers that is in a day! While fast food chains continue to churn out millions of carbon copy patties, burgers are also a culinary staple on the menus of many highly respected restaurants, reinforcing the wellknown fact that burgers rule the roost when it comes to the perfect all-inone meal. The origins of the hamburger are, however, highly disputed. While

we know that the Americans made the hamburger what is is today, the concept of the patty is said to have come from, yes you guessed it, Hamburg! A number of American culinary classics have immigrant roots: the original hamburger pattie is said to have been inspired by German immigrants who ate salted mince beef steaks while sailing on the HamburgAmerican Line in the 1840s. With the passing of time the infamous Hamburg Steak evolved and additions like the burger bun were added. A varying version on the hamburger origin myth claims that in 1885, the Menches, two brothers who had a sausage stand at a fair in New York, are said to have run out

of pork and to have invented the hamburger after being forced to think fast and serve seasoned ground-beef sandwiches as an alternative. In yet another story, 15 year old Charlie Nagreen, is said to have been the first to have served a similar sandwich at another fair in Seymour, Wisconsin. The story goes that the resourceful young man recognised his saucy meatballs weren’t selling, as they were difficult for fair goers to eat on the go, so he squashed them between two pieces of bread et voilà: the hamburger was born! Whatever the truth, these savoury treats soon began to pop up on menus everywhere. They eventually got their opportunity to shine with the

opening of White Castle, the world’s first burger chain, in 1916. This simple staple with humble beginnings quickly became the ultimate recipe for commercial success with millions of burgers eaten around the world every day. Its evolution has seen a variety of ingredients become staple add-ons including, but not limited to, tangy cheeses, sour pickles, gooey sauces, caramelized onions, crispy bacon, crunchy lettuce and peppery jalapeños. Whatever the topping, whatever the twist, hamburgers whether classic or not, are not going out of fashion any time soon!

THE PERFECT BURGER The secret to the perfect burger doesn’t need to be discovered, just choose your meat wisely and maintain a balance of flavours explains Chef Ray Cournede

L

ike football and (sadly) the Kardashians, the burger, is truly universal. That glorious combination of meat, bread, cheese, sauce and pickles has traveled far and wide. As iconic as any celebrity or politician, and with the same infamous history to prove it, the burger has had its fair share of bad rep too. We’ve all seen Super Size Me, it was the gourmet equivalent of Paris Hilton’s sex tape. Scandalous yes, but we still felt like eating a burger after. I won’t mention the Mc-word as it would only bring tears to most Kenyan’s eyes as we patiently wait for one clown that sure knows how to rise from the ashes. But just like Paris, the

burger has managed to successfully re-invented itself over the years: healthier, more culturally diverse, gourmet even. And by doing so a whole army of gourmet burger joints and five star chefs have followed suit and led us into the light. Make no mistake: there IS an art to making the perfect burger, it doesn’t just have to be dubious ingredients that have been over processed and fried to a crisp. The heart and soul of your burger is the meat: use great meat for your patty. Why, Oh Why people persist in using cheap off-cuts just because it’s a burger boggles the mind. Ask your butcher to coarsely mince some

good quality, well-aged beef cuts like chuck, short rib or rib eye. And if you’re feeling adventurous add some bone marrow. Just remember to keep the fat content between 20% and 40%. Don’t overwork the meat or you will end up with a sausage texture. Size does matter. Make sure your patty is the right size for your bun, and keep in mind that it will shrink while it cooks so make them slightly larger. The finished product should cover the entire bun to the edges. Don’t make it too high either, you should be able to bite into your burger without unhinging your jaw. When you’re putting the burger together make sure you grill the buns

to prevent them getting soggy. Like any dish you want to get it perfectly balanced. It should be sweet and sour, creamy and crunchy, rich and fresh, with a hit of salty, savoury meatiness and a hint of smokiness. Make sure your layers are held together, alternate dry and wet ingredients so that it doesn’t disintegrate. All your components should be bite-size so that you don’t tear the whole thing apart when you bite into it. Whatever you do, don’t forget the essence of a burger. It should be casual, easygoing and fun (even when gourmet). Don’t overcomplicate things. Simple ingredients go a long way!

WELL HUNG How one Laikipia family is making it their mission to raise the quality of Kenya’s beef and lamb

T

he door opens onto a white room with a high ceiling and rays of sun streaming through a pair of wall size windows. The late morning light in this barn turned slaughterhouse casts a warm glow on a busy tableaux of butchers as they expertly carve a large haunch of beef down to size. In the foreground stands Jack Dyer—chef, turned butcher, turned slaughterhouse owner, as he carefully slices through a shoulder of lamb. Fifteen or so bresaolas (oblong cuts of cured beef) hang wrapped in cloth from an airing rack that stands in the corner: an “experiment” in the making. In the air the smell of rosemary mingles with a rich meatladen scent which excites the senses and awakens the taste buds. “The other day a vegetarian friend of mine came to visit,” smiles Jack, who recently turned 27, as he looks up from his carving. “She told me she honestly believed that if this is how we treat our cows in life and death, then ours are truly happy beasts”. This humane ethos is the cornerstone of the Well Hung Butcher (WHB) meat mantra: an ode to meat that starts in the green Borana pastures that are owned by Jack’s family and extends to every facet of his operation. Occasionally as he works, Jack looks up, surveys the hive of activity that surrounds him and a small flush of

pride spreads across his face. Jack Dyer is a fourth generation Kenyan whose great grandfather, one of eleven children and the son of a vicar, was given a parcel of land after the first World War as part of the soldier resettlement scheme. William Powys came from a humble background and dedicated his life to making something out of the land he’d been given; his descendants have expanded on his legacy and Michael Dyer, Jack’s father, runs the Borana conservancy through a system of holistic rangeland management, owns the Borana eco lodge (which serves almost exclusively products that were made on or around the conservancy) and sits, amongst other things, on the Council of Elders of the Kenyan Northern Rangelands Trust (NRT). While Dyer Senior has dedicated his life to shoring up the conservancy, breeding high quality Boran cattle and finding ways for the wildlife, the livestock and the local communities to live in harmony, his son Llewellyn (Jack’s brother) is passionate about scaling up permaculture in Kenya and Jack is on a mission to revolutionise the way Kenyans butcher and buy their meat. No small feat in a country where meat is more often than not sold and distributed by brokers with little concern for quality, hygiene and above all the wellbeing of livestock.

The WHB opened for business in March this year. Its ethos is to strive to work in harmony with the environment at every stage of the livestock breeding, butchering and ageing process. Plans for a biogas digester, which will be fed by the blood and guts of animals to create energy for the slaughterhouse, are already underway. From the butchery’s refrigerated room comes a beef that has been aged from 21 to 48 days and a lamb that is aged for up to 15 days. On the plate, both meats are tender beyond belief, bursting with a complexity of flavour that deftly eludes so much of the meat butchered, sold and eaten in under 24 hours across Kenya. “If you treat cattle in a humane way right until the end and don’t put it under any undue stress—like for example seeing another animal slaughtered in front of it,” Jack explains, “stress hormones don’t enter the meat which means it doesn’t tense up and remains soft and supple”. Combine this with the fact that the Boran cattle that the Dyers breed on their ranch has been crossed with a Simmental breed from Europe and we have the recipe for some truly world class cuts of meat. Before launching himself into producing quality beef and lamb for the discerning Kenyan market, Jack did a course at the world-renowned

Ballymaloe cookery school in Ireland. Following that, he headed to Berlin where he spent three years working in the highly-charged fine dining restaurant circuit. “When I got back to Kenya I tried to run the restaurant at our lodge but the quality of the meat we were sourcing just wasn’t up to my standards and I found that the only things I would ever serve was the lamb we’d hang ourselves” explains Jack. “I could see there was a niche for good meat that needed to be filled not only at the lodge but for Kenyans in Nairobi and beyond”. Judging by the sheer volume of orders that are scrawled out in a whiteboard marker across a chart that has been drawn on the wall of the slaughterhouse office, Jack’s predictions were on the mark. So far the WHB is selling on a small scale wholesale and retail level and beyond sourcing meat for the newly reopened River Cafe, they are shying away from distributing to restaurants because, as Jack points out, restaurants request a disproportionate amount of fillet beef while shunning other perfectly good cuts. For now, if you want to try out some of the produce of this booming new venture, head down to the Purdy Arms organic food market on a Saturday and look out for their stall. With a name like that, you can’t miss it!

I like individual pieces of anything, each with its own look and feel and character. Sets of drinking glasses remind me too much of the eighties. I love Kitengela Glass precisely because every glass made there is unique, mixed-and-matched in every colour you can think of. They are handmade (from recycled wine bottles no less) and no two pieces look exactly the same. But here I was at the mall, confront-

ed by an aisle full of glass sets. Likely all made in China. So you know what I do next? I pick a set (6 in a box) of each – a chardonnay set, a bordeaux set, a long-stem set, a flute set, and two boxes of tumblers. My thinking is that I will take out three from each box, put the rest away, and replace them as they inevitably brake one by one. Then visually on a table I can still have my eclectic, doesn’t-take-itself-too-seriously feel. My parents’ prized crystal wine goblets signaled to us kids that wine was special. It was to be savoured only on special occasions. My deliberate mish-mash of wine glasses and

relaxed attitude about breakage (I even keep the chipped ones) shows that exactly the opposite applies – that wine is to be enjoyed at any time with anyone. Cheap bottles, pricier brands, pulled from the cellar or picked up at the corner store, corked or twisted open, sipped over a fancy meal or downed with a burger – wine is the everyday elixir of life. On the way to the cash register, I do the only thing you can do after picking out every conceivable type of wine glass invented – I grab a bottle of the Fat Barrel Cabernet Sauvignon. How else to test the new glasses?

PIT STOP It’s raining and the roads are inevitably trafficked. Jackson Biko finds the solution to sitting idly on the road.... Or so he thinks.

T

his has got nothing to do with burgers. Sorry. But there is rain, which recently started coming down when I was on Ngong Road. By the time I was getting into Ring Road, the whole of Nairobi had clogged the roads with all manner of cars, sitting there, going nowhere. I look ahead, at that dreadful junction of Argwings Kodhek and Ring Road, where Yaya Center stands? I see a gridlock and I tell myself, “ Biko, do you want to spend the rest of your life in that jam?” Side note: sometimes I speak to myself. Especially in the car when it’s raining. I say stuff like, “Biko, do you think Jesus would have bought those bananas from that man hawking by the roadside, because they look like really healthy bananas?” Or sometimes I say, “Biko, do you know all you had to do is say you are not having another whisky and save the

money you just spent, now you will be short 3K and with a headache. Essentially you have bought a headache for 5K. Is this how you want to live your life going forward? A father of two?” So yes, I speak to myself in the car. It centers me. And it’s not crazy. It can’t be crazy if nobody hears me speak, can it? But now that I have confessed it here, it might sound crazy but it’s still not because you haven’t heard me speak alone. I can easily deny it. Anyway, where was I? Yes, I say, “Biko, do you want to spend the rest of your life in that jam?” And I shake my head and say, “No, sir.” (Sometimes I also call myself “sir”, especially when I’m wearing the swanky leather brown shoes of mine). So what would Jesus have done? He would have driven into EastLand Hotel on Ring Road, to kill time as

the jam dies. And that’s what I do. Eastland hotel is a Chinese hotel, yes, but it’s not a Chinese Hotel if you know what I mean. Why do I say this? (Gosh I sound like my dad), because they want everybody to know that they are not only for Chinese people even though they have those Chinese artworks and decorations adorning their walls. They want you to know that the Chinese people are friendly people who build hotels where other people are invited. Oh, and nobody will force you to eat anything stir fried. There is a bar there, some sort of a terrace bar, right next to the casino. Yes, there is a casino too if you want to gamble while it rains. I ignore the food menu which is continental (surprise!) and order a single Glenlivet 12 year old which I hear is being dephased and replaced by Glenlivet Founders Reserve which is a fantastic

drink. I long discovered the source of happiness is to always order in singles, that way you will always feel you are drinking too much when you order more. It comes down hard. The rain, that is. There are people having an evening drink, mostly business people because they have suits and it is a Thursday evening. I drink my singles, make friends with a waitress whose name I can’t recall (sorry, honey) and eventually look at their menu and contemplate ordering a burger. When I get back to the car, I tell myself, “Sir, Biko, you did the right thing, I don’t think Jesus would have ordered a burger and a whisky.” When I swing out into Ring road and look up, there is still a gridlock at the Yaya Center junction. Oh, thanks a lot, Jesus!

CHEAT MEALS Are you on a diet or simply trying to embrace healthier eating habits? If so, cheat meals are inevitable according to Meera Vadgama, and something you shouldn’t feel guilty about when done within reason!

W

hat is a cheat treat to you? Is it spending the day wallowing in your pajamas whilst eating carton after carton of ice cream gleefully thinking; ‘hurray for cheat days’? Or do you approach treats with trepidation already feeling guilty about what you’re about to consume? With Nairobi Burger Festival upon us I’m sure you have been wondering how you will get to enjoy all the gastronomic delights that await without breaking your fitness goals. Let me just tell you that you really can have your cake and eat it too (well, your burger!) Firstly, let’s look at this as a cheat meal, and not a cheat day. A cheat meal is just one meal of the entire day.

Plan ahead – if you know you’re going to be sinking your teeth into a juicy burger for dinner, eat well during the day. Keep your breakfast, lunch and snacks clean, nutritious and well balanced so that you can then eat less guiltily. Also, plan your workout routine to include some resistance training so your body is still burning calories hours later. Nothing like a high carb, high protein meal contributing to your fitness gains is there? Whatever you do, don’t skip meals in anticipation of your cheat meal. This is the worst thing you could do for your metabolism, and can cause you to overindulge on your treat. If you have a light snack before heading out for a burger date night – say for example, a handful of grapes and some nuts, or a hummus dip with

some crudités– you will already be slightly satiated and less likely to opt for a double burger with fries and a thick shake – and quite happy to just focus on the burger itself. Ok, so what happens when you’re at the restaurant itself and you’re presented with a menu which contains tens of delicious sounding options and you want to choose them all? Here’s what I do. I avoid breaded / deep fried / coated in cream sauce and instead opt for pan fried/ grilled/ roasted. And if I’m really determined to only have a sneaky treat rather than a full blow out, I’ll opt for a burger without the bun and have it instead on its own, or on lettuce or a mushroom “patty”. Instead of going for the fries I would choose a salad or a side of steamed vegetables. When you have a meal that is both high in

carbs and protein, it will leave you feeling satisfied and fuller for longer, and this as a cheat meal is way way way better than scarfing down an entire tub of ice cream or that whole tin of cookies. BUT. I also believe that life should be lived. And you should truly enjoy your treat meals wholeheartedly. Especially when you work so hard to eat well and work out the rest of the time. So I say, have the burger, with extra guacamole and a slice of cheese, some onions rings on the side and possibly a cocktail to wash it all down with. Trust me, you’ll love it, and tomorrow you will work out that much harder and eat cleaner because you let yourself have a well deserved treat today.

PARMESAN BREADED CHICKEN & TOMATO SLIDERS FOR THE CHICKEN: 6 boneless, skinless chicken breast halves, 6 tbsp. Dijon-style mustard, 1 tbsp. white wine or water, 3/4 tsp. salt, 1/4 tsp. ground black pepper FOR THE COATING: 1 cup freshly grated parmesan, 1 cup fresh breadcrumbs, ground black pepper, 4 tbsp. melted butter FOR THE SLIDER: 6 bread buns, 2 sliced fresh tomatoes, 12 sundried tomatoes, 6 thick slices of feta, 2 handfuls of rocket or mixed salad leaves, Dijon-style mustard to spread

METHOD For the chicken: In a bowl, whisk the mustard, wine, salt, and pepper and add the chicken breast. The chicken can be coated immediately or kept in the refrigerator for up to 2 hours. For the coating: In a large, shallow dish, mix the grated cheese, breadcrumbs, and pepper. Drizzle the melted butter over the crumb mixture and toss until well combined. To coat and cook the chicken: Pre-heat oven to 200°C and line a baking sheet. Take a breast from the marinade with one hand and lay the chicken in the crumbs. Scoop and pat the crumbs over the breast using your other hand, patting until both sides are thoroughly coated. Put the breast on a buttered baking sheet and repeat with the remaining breasts. Bake the chicken until it’s crisp, golden, and cooked through, for 25 to 30 minutes. If the chicken is getting too brown, reduce the heat and add 5 minutes to the total cooking time. For the sliders: Cut open the bread bun, toast and spread a healthy layer of mustard. Take a chicken breast, slice into 5-6 pieces and lay them out on the bottom bun. Top with sliced tomato, rocket, a few sundried tomatoes, a slice of feta and the top bun. Serve immediately.

BEER BATTERED ONION RINGS Serves 4 to 6

INGREDIENTS Golden Fry oil for frying, 4 onions, 1 cup all-purpose flour, 1 bottle lager-style beer, 2 tbsp. cornstarch, 1 tsp. salt, ground black pepper

METHOD Fill a heavy cast iron pot with a few inches of oil and heat on medium-high until it reaches 180°C. Line a baking sheet with paper towels on which you’ll drain the onion rings. While the oil heats, peel the onions and cut them crosswise into 1/4-inch to 1/2-inch slices. Separate slices into individual rings, discarding the centers. In a shallow mixing bowl, whisk the flour, cornstarch, salt and pepper. Whisk in just enough beer to make a smooth paste, mixing the batter as little as possible. Whisk in more beer (about 1/2 cup) until the batter is creamy. Using tongs, dip an onion ring into the batter and flip to coat completely, shaking excess batter back into the bowl. Drop the ring into the oil and repeat. Avoid crowding the pot. Fry until golden, flipping occasionally, about 4 to 5 minutes. Remove the rings using your tongs, and transfer to lined baking tray to drain. Season with additional salt, stack and serve immediately.

HERB POTATO WEDGES INGREDIENTS 4 medium-sized potatoes, 2 tbsp. Golden Fry oil, 1 tbsp. finely chopped fresh thyme leaves plus a sprig to garnish (optional), 1 tsp. paprika, salt and freshly ground pepper

METHOD Pre-heat the oven to 200째C. Scrub the potatoes and cut each into eight even-sized wedges. Place the wedges on a baking tray, add the oil, thyme, paprika and season with salt and ground pepper. Turn the wedges with your hands until evenly coated in the oil and seasoning then spread each out in a single layer on the tray. Roast in the oven for about 35 mins, turning occasionally, until golden and tender when tested with a sharp knife. Garnish with a sprig of thyme and serve hot

T

he watercraft’s driver meets me at the pier, hands me a life jacket to wear and ties my feet to a board with a pair of boots connected by a long hose. After giving me strict instructions, they shove me out into the ocean, solo. I lie on my back as the flyboard begins to drag me through the water, the hose pulls me deep into the ocean and far from the shore. When I’m finally comfortable and have gained momentum and balance, I remember my instructions and raise my hand to signal to the watercraft driver I am ready. Next I flip onto my tummy and take up a standing position to propel myself upright. I’m flying! I can hear the sounds of my gleeful screams. I have never seen Mombasa’s beauty on display as in the ending of Sauti Sol’s Unconditionally Bae video. Being their publicist, I have always regretted not accompanying Sauti Sol on that shoot so I have been planning to visit English Point Marina for ages, to discover more about what it has to offer. As fate would have it, it was the last place we stayed after the conclusion of Sauti Sol’s Live and Die in Afrika Tour, in Mombasa. Arriving at the revered property is my great escape from the tiresome weeks of the tour. My motive is to feed off the Marina’s beauty and find rest and rejuvenation. I decide to try my luck at the Jazz Restaurant. Their à la carte continental menu is delightful, the fried prawns are my favourite. On Thursdays, they serve Thai food and on Saturdays a delicious array of Mongolian dishes. Every Friday is set for live Jazz music. English Point stands out in that it offers guests a choice – to either have a hotel experience or stay in their apartment blocks, what can best be described as a home away from home. Marina apartments each have different themes - where beauty meets luxury. My block B apartment on the second floor is cozy and furnished with a delicate palette of simple turquoise and marine colours. Floor to ceiling mirrors on a large

wardrobe succeed in making the already spacious room feel even airier. A patio looks onto to the island of Mombasa, as the moon comes out, the city dances its lights on the deep blue ocean. Marina’s shower is without a doubt the best shower I’ve had over the six intense weeks of touring with the band. The large square-shaped shower-head streams hot water consistently and takes only a few minutes to heat up. Make sure you put aside ample time to enjoy this steamy experience! Soon, Marina’s sailing centre will be ready and yes – you can come with your boat before proceeding to your destination of choice. But flyboarding, not sailing was my excuse to visit the Sports Centre for the safest and most reliable flyboarding experience in the coast, exclusively provided at English Point Marina and Diani by Raydon Water Sports. I have always watched videos of flyboarders and thought that it’s one of the coolest water sports. I can swim and I am good bicycle rider so I knew I had a chance because my instructor insisted that flyboarding is first about maintaining balance and then embracing water and ultimately suppressing fear. The watercraft instructor releases the pressure on the hose forcing the flyboard to thrust me further up into the air. I’m told you can reach up to 15 metres in height although personally I hardly flew above my waist. Upon completion, I feel very pleased with myself for having taken up the challenge. The water is so cold but it feels so fresh and therapeutic to the body. You need a lot of strength and balance to flyboard so after I’m done I head straight for the Marina’s eco-friendly swimming pool. Here, again I bask in the delights of the beautiful view of the ocean’s horizon as it meets the end of the swimming pool in an effortless combination of blues. This is not a view I’ll forget any time soon.
