FEEL GOOD LIVING It’s no secret that foodies live for their culinary escapades. Borderline obsessive about dining, unapologetic about indulging in mid-week drinks and highly unlikely to count calories, foodies rarely hold back! That said, we are no stranger to the realities of our sometimes unhealthy lifestyles. While we’re all for enjoying food, we need to strike a balance and treat our bodies with kindness. It’s with this in mind that we turn to mother nature’s unadulterated goodness and tackle all things health without skimping on the tastiness. I’ll be the first to say that in no way has this edition been designed to make you feel horrible about your need for a quick fix or even a treat. A healthy diet is often pushed aside in favour of fast, easy and unfortunately often unhealthy alternatives. We’re human! In fact, when we first settled on the theme, I laughed as I had a family pack of sugar biscuits by my side. Truth is, like many, I’m not healthy day in day out. However, what I do believe is, we instead should strive for ways to avoid jumping on the fast track to obesity or disease while still enjoying life’s edible joys! Food is fuel. Being healthy shouldn’t
be a bore. So while the internet will continue to roll out listicles on healthy living, we’re here to help you find a way to adopt some of these ideas without losing your mind. This month, a mother, a startout vegan, a kitchen-loving athlete and a spiritual seeker each take us on their wellness journey on page 32. What’s immediately evident is that their choice to be healthy came out of a keen interest in produce and a desire to be more in touch with their personal needs. Our hope is that you’ll see yourselves in their stories and be inspired to make some changes of your own. They also each shared a recipe from page 34 to prove that healthy eating can still pack flavour. This edition has of course given way to deep research into what does and doesn’t work. We start with the basics - water! We all know we
should drink more but let’s face it, knocking back litres upon litres can be a mission. So instead, we suggest infused water on page 25. If you’re a sucker for snacking (like me) and looking for some guilt-free treats, turn to page 27. If you know you need to exercise but the idea of running on a treadmill to euro trance fills you with dread, then turn to page 42 for some alternative exercise programs available in Nairobi. And finally, if you need a little TLC but simply cannot bring yourself to splurge on spa treatments every month, then try out some of our divine homemade body scrubs! On page 41, Charity’s seasonal love of foraging natures little treasures in Chianti is sure to stir up nostalgia. I think we can all remember going on treasure hunts for edible treats in our playgrounds and gardens. We also have our regular columns, including a
visit to Urban Eatery to sample their customised healthy menu on page 20, we chat with the quirky Tin Roof Cafe’s co-founder on page 22 and we have our monthly guide to the city’s latest eateries to open up shop on page 6. JASON’S LYRICS Jason Derulo is a singer, songwriter and dancer who has become embedded in the fabric of international pop culture. Our returning columnist Anyiko Owoko chats up the “Swalla” hit maker, who is born of Haitian parents, about his favourite Haitian food, music and what he can whip up to perfection. What Kenyan food have you had at the Stanley Hotel? Jason: I had a lot of food and all the proteins and meat dishes remind me of Haitian cuisine. The meat and sauce accompanying it is very well seasoned just like Haitian food. The only new thing is how Kenyans cook the lamb; it becomes tender, almost like chicken. How has your experience in Kenya been so far? Jason: My biggest eye opener was the difference in music throughout Africa. Everybody has a totally different vibe. It’s been really good to dive into everybody’s style and mash it together. I only wish that the world would take note on how music is doing in Africa and how African music is mashing up the world. Our planet would be a better place if it treated itself in the same way music does.
What the one meal that you can whip to perfection? Jason: Eggs! I like to experiment with them. Whether it’s an omelette or adding peppers and mushrooms or a scrambled egg, I try and get it done right but that’s as far as my cooking prowess goes (chuckles)

Tell us about Haitian Food? Jason: The most popular traditional Haitian food is called Griyo (Fried Pork). It is served with lots of rice and fish. It can also be served with cabbage salad or spicy pikliz (pronounced pick lees) a vegetable pickled relish.
What’s the secret to making hit songs? Jason: I try to make music that speaks to me – whether it makes me want to dance, laugh, fall in love or remind me of love- that’s what most fun to me! [Maybe] it’s that the number of songs that I am writing is a lot because at the end of the game, when it comes to song writing - it’s about a numbers game. The more songs you write, the more chances you have of making a great record. I write many songs but the ones I like the most end up
being the big songs because if it speaks to me - chances are it speaks to somebody else because we go through the same things. Did you know that “Swalla” would become such a huge record. The song’s YouTube statistics currently stand at 480,347,898 views in just 3 months. Jason: Swalla is one of those songs that you either love or you hate it. It’s such a pulverizing song - when it comes out it stands out among other tracks and I love the fact that it provokes emotion the way it does. It’s amazing to make people feel something. The song does that. Having Nicki Minaj and Ty Dollar $ign adds to the appeal of the song. I thought of Nicki first because of her Caribbean roots and Ty never disappoints with the melodies. What’s the Coke Studio Africa experience been like? Jason: I feel like the fact that Coke Studio Africa has brought all these artists from different places to collaborate is amazing – there is no better give back. This is the start of something even bigger than music— it’s a merge of people. Through the show, we will be more exposed to different cultures and music. To me, that’s what is most beautiful in the project – I’ve been able to dive into cultures that I would otherwise never have gotten into.

WE CATCH UP WITH RENOWNED DJ AND RADIO PRESENTER, G MONEY. WHEN HE’S NOT GETTING YOU PUMPED UP ON HBR RADIO, HE IS MOVING CROWDS IN CLUBS. HE TELLS US HOW HE LIKES HIS CUPPA AND MORE. How do you like your coffee? Coffee for me is divided into two categories. There’s the “I need a caffeine fix now!” - when I wake up in the morning and get ready for work. In this instant, it’s just a strong black coffee. No milk, no sugar, just the Gold Blend instant coffee. When I’m out for coffee then I like a strong brewed coffee. I prefer cream to milk, in fact, at home if I’m brewing I use evaporated milk rather than regular cow’s milk because it’s creamier. Coffee flavoured ice cream with chocolate sponge cake or iced coffee with a chocolate croissant.... choose one. This is a tough one. Until recently, I wasn’t really a fan of iced coffee, but on a recent trip to Memphis we stopped in a coffee house and I had an iced caramel macchiato! It was out of this universe! Since then I have really been experimenting with iced coffee. The problem here though is that I don’t like chocolate croissants! So could I have iced coffee with chocolate cake? If not, reluctantly coffee ice cream and chocolate cake. I’m sure you can make a special dispensation for me though right? What’s the absolute maximum cups of coffee you can have in a day?
I try to have no more than 3 cups a day, that roughly translates to maybe two in the morning and one when I get home in the evening. Apart from radio, what else do you do? Hmmm, I’ve recently become a fitness freak spending 4 or 5 afternoons a week training. I DJ extensively on the club circuit here in Nairobi and I have a talent management company with a long time friend here, something that I really enjoy doing. I am about venture into a new business. I also cook and sleep a lot, I love traveling so every so often, I disappear for a while. Have you ever experimented cooking with coffee? I can’t say that I have, but have I drank coffee while cooking, Does that count? Have your Caribbean roots influenced your love for coffee? Most definitely. Jamaica is famous for Blue Mountain coffee. Because of the altitude, the berry flavour is very distinctive. It has won numerous awards globally and is an amazing cup of coffee. I also recently discovered Ethiopian Coffee which I must say is very good, but nothing compares to Kenyan coffee.

CURATED GOODNESS After sampling Urban Eatery’s healthy menu, Susan Wong walked us through her experience as she made an attempt at dining all healthy for a change. Eating healthy has always been part of my family. Growing up, it was always less oil, less salt, less this, and less that. Partly rooted in my mother’s Taoist upbringing, eating simply was a practice that directly impacted a person’s longevity and health, and more importantly, on how one should live and practice spiritualism. Despite not following my mother in practicing Taoism, I admit that there is wisdom to the general Taoist practice of eating simply. We are what we eat, after all. Back in January, Urban Eatery partnered with NutriEats, a bespoke weight management company, to come up with a new menu that would help diners achieve their new year goals – assuming dieting or eating healthier was one of them. Personally, I’m not a fan of the traditional sense of going on a diet, but if it’s about making better lifestyle choices, I’m all for it. Urban Eatery is a place of buzz, to some, noise and clatter, where the sight of chefs grilling and serving in four different kitchens and mixologists shaking cocktails from a signature bar, entertains not just the diners but also the cocktail-going crowd. Urban Eatery is a one-of-akind concept that brings dining and a contemporary-designed social space to Nairobi’s blossoming food and beverage culture. The approach is like a cafeteria, but much more refined and comes with the perks of personable and friendly
service. In fact, the only similarity between the two is that the diner may choose from a number of options, in this case: All-day dining, Pan-Asian, Mexican and Mediterranean, Indian, and specialty frozen yogurt. Urban Eatery is banking on that it can be everything to everyone. With four kitchens, a bar, and frozen yogurt, more than 80 items on its extensive menu, choice is what Urban Eatery thrives upon. I understand the important of choice. But, sometimes when I am passed the heavy clipboard menu during my visits, I often find myself wishing for a simple onepager. Enter the Healthy Menu. It’s one page, well, double-sided. We started with a beautiful, non-alcoholic, pineapple and mint concoction dubbed “Pinemade.” A much more well-balanced and less tart than other pineapple and mint juices I’ve had in Nairobi. Aside from the welcomed smoothness, knowing that we weren’t consuming empty calories of no nutritional value certainly got us all quite chuffed. The Paneer and Mango Salad featured grilled homemade cottage cheese that had become cold and hard, fresh mango, and some garlic naan for substance. A little bit of warmth would’ve softened the paneer and made it more palatable. The fresh mangoes were the highlight of this dish, which had been prepared with minimal oil. Obsessive garnishing is a pet peeve of mine, and this salad arrived with a tomato rose, mint

Visually, the salad looked confused and it took a little bit longer for me to taste the best parts of the salad. The wok-tossed Thai Chili King Prawns with coriander, pineapple, bell peppers and Tamarind Sauce was also prepared with minimal oil. Sweet, chili, tart, and savory - the punchy flavours of Thai cuisine was instantly recognizable and incredibly aromatic, making this a satisfying pairing with steamed rice. I was drawn to the Omega-3 Salmon Fillet Burger. A beautiful plate from the low-fat grill section, the salmon was marinated in mustard, served with a brush of more mustard on the
grilled-side of the soft bun. The fish was cooked perfectly, both moist and crispy on the skin, and the dill complemented the mustard that had a surprising kick. The thin slices of gherkins, onions, tomato, and lettuce completed the burger experience. The scribble of balsamic syrup, one of my all-time favourite pantry items, elevated the simple side salad. I would definitely order this again. Then there were the lean pork chops grilled with minimal olive oil served with a delicious grapefruit and mango salad. The Cuban Pork Chops arrived with a fan of thin apple slices covering the beautiful charred chops. For a leaner version of a chop, I was surprised how much flavour there was. I was amazed that I didn’t miss the fat. The sauce was quite flat, and didn’t make any impact at all. In fact, the chops were better without it. Eating healthy is certainly a practice and state of mind. When it came to dessert, that’s where the healthy menu came to a screeching halt. Clearly, this menu was designed with dessert as an afterthought. The nearest was a Chia Seed Parfait. Perhaps natural yogurt layered with fresh fruits and Chia seeds would be satisfying for breakfast, but forgive me, old habits die hard. “Manuel, do you have a dark and rich chocolate brownie on the other menus?” “Of course, Susan. Would you like it warmed?”

SERVE IT RIGHT In recent years, Nairobi has seen a marked increase in the number of restaurants that serve what they deem as healthy food to their clients. Tin Roof Cafe in Karen is no different. We spoke to Abbie Sharp, the co founder who shared her journey. Tin Roof Cafe opened its doors in Karen almost four years ago with its first outlet at The Souk. Abbie partnered with her husband and a friend to come up with a concept that would try and make their brand environmentally responsible and healthy. Two years later, after the success of their first outlet, they opened their second cafe at Langata Link about 2 kilometres from its sister cafe. The idea was to have a simple cafe with a relaxed ambiance that people could stop by and wind down. Abbie, who is into film and photography, designed both spaces and their respective menus making salads their speciality. In a bid to stay away from typical salads, she did her research and consulted with a nutritionist friend of hers to come up with combinations that weren’t boring and were pleasant. Lentil based salads or grilled vegetables and cheese are

just some of the many salads that get served up if you happen to drop by. The good thing is that their salads can be ordered as a meal on its own or with an accompaniment. “Fortunately or unfortunately, we don’t serve chips at the cafe. It all depends on how one looks at it” she says with a smile. The good news is that they still serve burgers and sandwiches for those seeking to satisfy a mad craving on their cheat days, with a salad option of course. How about drinks? “All our juices are freshly squeezed with no added sugar. Unless requested by a customer. Our kiddie menu also comes with a gluten free and sugar free option” But what makes this cafe environmentally friendly? “We got rid of all our plastic straws and in their place, we have paper straws”. So what made this restaurant owner make the change from documentary film making to become a chef? “I am
a self taught chef, something that has grown organically since I opened Tin Roof Cafe” she confirms. “Most of what I know and what I continue to learn is based on research, trial and error. Before opening Tin Roof Cafe, I travelled extensively because of the nature of my job.” It was after the birth of her son that she realized that she couldn’t travel as much. Instead, she indulged in her second passion which was cooking. Over time, she became interested in healthy diets and eating right and decided to consult with her good friends at Green Spoon Kenya in order to get it right. The importance of teaching her chefs the right meal combinations was important because she wanted her customers to get the best of the menu, without feeling like they are eating cardboard. Does Abby practise eating healthy in as much as she preaches it? “I’m in transition because I’ve been thinking
of becoming a vegan. Granted, it’s not an overnight process because the body needs time to adjust”. She recently started researching on sugar free diets and is experimenting with sugar free banana bread which, according to her, tastes just as sweet because of the natural sugar in banana. With time, Abbie intends to expand the restaurant’s menu which will be able to capture everyone’s diet preference from the staunch vegan to the carefree burger loving individual, but all within the parameters of a healthy meal. This is because she recognizes that people are becoming aware of what they eat and how they eat it. “As long as I continue to learn new things that are good for one’s health, it shall be reflected in the menu.”

SIPPING PRETTY Many health enthusiasts will agree that water plays a pivotal role in staying fit. For some people, me being one of them, water is bland. Good thing is that water can be infused with different fruits and fresh herbs to give it some much needed liquid personality. Your body is about 70% water, the majority of your blood and every cell in your body is composed of it. Therefore, you need water to function properly. Let’s face it; water can be a little plain for some people. “It has no taste”, or “I forget to drink water”, are some of the regular excuses. To begin with, water has its own benefits which include; relieving fatigue, helping in weight loss, flushing out toxins, improves skin complexion, natural headache remedy. Water doesn’t have a taste and maybe therein lies the whole challenge to drinking enough. Now of course, simple and plain water is the perfect choice, but if that’s not going to do it for you, let’s infuse it! Infusing water is fast becoming a trend which has caught on. So how do we jazz it up whilst enjoying the maximum benefits? The good thing about infusing your water with fruits and or fresh herbs, you ‘spice’ your drink with all the extra minerals the body needs while hydrating yourself at the same time. One can use oranges, lemons, cucumbers, ginger, strawberries and many more. SLIM DOWN DETOX WATER This is a really popular recipe that makes it good for detoxing. The tartness of the lemons is balanced with the unique, mellow taste of the
cucumbers, and the sweetness of the grapefruits helps add a nice element of flavour. This tangy recipe helps provide a healthy dose of Vitamin C, which is full of antioxidants and has amazing health benefits, including protection against immune system deficiencies, cardiovascular disease, prenatal health problems, eye disease, and even skin wrinkling. ENERGY BOOSTING This infused drink gets you all pumped up especially before a workout session. Mint is one of few natural herbs that are beneficial for your digestion. It eliminates gases, prevents stomach acid, helps you absorb nutrients, is an antiinflammatory and relieves nausea. Ginger activates the functioning of the intestines and stomach, helps digestion, prevents gas and inflammation, and boosts the elimination of fat. If you combine it with the other elements like the ones listed here, you will get an ideal remedy to get that workout. The ginger will heat you up just enough to cause a sweat detox. Cucumbers are a great diuretic, facilitate the elimination of fluids, and are great for treating infections like cystitis and nephritis, diseases that also tend to make your stomach get bloated.
CUCUMBER, MINT, AND GINGER (Energy boosting) Ingredients 1 litre purified water 10 mint leaves 2 tsp of ginger, grated. 1 cup cucumber, sliced Method Make the mint infusion by adding ten mint leaves to boil in a cup of water. Once it boils, let sit for five minutes. Peel the cucumber and blend it as you add the mint infusion. Blend until smooth and pour into a pitcher. Pour in the water and mix it all. Add two teaspoons of grated ginger and if you would like, another mint leaf. Let it sit in the refrigerator for up to an hour but not more than 24 hours. Serve. LEMON, GRAPEFRUIT, CUCUMBER, LIME AND LEMON. (Detox) Ingredients ½ litre purified water ½ lemon, sliced ½ lime, sliced 10 grapefruits, sliced 1 cup cucumber, sliced Method Pour the chopped fruits into a jug; add the ½ litre of water. Let it sit in the refrigerator for up to an hour but not more than 24 hours. Serve.

SNACK APPEAL To snack or not to snack? Nutritional Therapist Heather Cuthbert suggests that the secret lies in experimenting by listening to your body’s hunger signals and slowly figuring out what exactly is best for you.
If you often feeling restless, if you get snappy at certain times of the day, if your concentration tends to waver as you get close to meal times or if you tend to feel suddenly exhausted, you might be someone who suffers from low blood sugar. For some types of people, long periods without eating may cause the body stress, resulting in the release of the stress hormone cortisol. Cortisol can increase our blood sugar levels and excess sugar can lead to fat storage. So if this is you, best you remember to keep healthy snacks at time because you’ll find that on the long run if consumed in moderation, they can help you lose weight rather than pile it on. It’s all about balancing your blood sugar levels. If you manage to eat a small portion of protein with every snack you can slow down the release of glucose into the bloodstream, preventing a blood sugar roller coaster. Why do we need to balance our blood sugar?
Sugars and refined carbohydrates (such as sweets, cakes, white flour products; pasta, white bread, white rice etc.) are broken down easily during digestion and quickly raise blood glucose levels. Since high blood sugar levels (hyperglycaemia) can be damaging, our bodies respond by releasing insulin from the pancreas. Insulin is a hormone that helps to remove excess glucose from the bloodstream and transport it to our cells; to either be used as energy, stored as glycogen in the liver and muscles or stored as fat for future energy needs. However, if too much sugar is removed from the bloodstream at once, then symptoms of low blood sugar (hypoglycaemia) may occur. For example, after eating a carbohydrate dense, sugar rich meal too much insulin might be produced, which could result in blood sugar levels dropping too low, leading to unpleasant symptoms (irritability, shakiness, dizziness, fatigue, nausea). This is when you might find yourself
reaching for sugar loaded options or stimulating caffeinated drinks. Here is where healthy snacking could help. What to snack on? Even though the world has just about got over the crazy low fat craze of the 90s, many people are still resistant to snack on certain, what I would call ‘goodies’ like nuts and seeds because they still believe that they are ‘fattening’. Opt for snacks containing protein, fibre and beneficial fat, to help slow down the release of glucose into the bloodstream, maintaining steady blood sugar levels and keeping you fuller for longer.

ORGANIC CHIA Chia is an ancient cereal from Latin America and legend says Mayan and Aztec warriors would eat it to keep their strength and stamina. Since then, chia’s popularity has spread across the world and is now making its East African debut thanks to innovative farmers and health-focused consumers. Laura Secorun found out more about this cereal. At first glance, Betty’s farm in Masindi, Western Uganda, looks pretty conventional – a field of deep green rolling as far as the eye can see. But Betty is actually an agricultural pioneer because instead of growing maize or bananas, she is cultivating a crop few have ever heard of: Chia seeds. Granted, when Betty first heard about this mysterious new crop, she was skeptic. The small grey seeds didn’t look very appetizing to her. Who would want to buy them? And if she didn’t sell them, how would she even feed them to her family? Still, she decided to give chia a try and quickly realized that she could earn more money from it than any traditional crop. Not only does chia sell for a higher price than maize but it is also more resistant to drought and pests. Betty now feeds her own children chia seeds for breakfast and grows hectares of the crop for Dr. Chia, the Kenyan company pioneering the seed’s commercialization in East Africa. Sabina Karumba is Dr. Chia’s cofounder and says the interest in chia seeds is growing by the day “In the past three years, we have noticed a very high increase in demand from both individuals and restaurants.”
Karumba started with a handful of food stands and is now selling her Uganda-grown chia to shops and chefs in all Kenyan counties. The health appeal is strong. Nutritionist, Fatma Kudwoli confirms “Chia seeds are tiny but loaded with an impressive amount of nutrients. For starters, they are very rich in Omega-3, a crucial supplement for cardiovascular health that is hard to find outside fish. They are also full of minerals. A spoonful alone has as much calcium as a glass of milk and more iron than a serving of spinach”. If that wasn’t enough, chia seeds are also rich in antioxidants, key in slowing down the aging process and managing chronic disease. To be sure, there are plenty of vegetables with similar qualities but none has them all at the same time. And few are as versatile in the kitchen. Chia seeds have a very bland taste, which means they can be easily incorporated into virtually any dish. Toasted, they make for a crunchy snack and a great addition to salads. Soaked, they gain a jelly-like consistency ideal for smoothies and desserts. Chia seeds are also becoming a
popular choice among vegetarians and vegans because they contain all nine essential amino acids to form a ‘complete protein’ and can be used as a substitute for animal products. Just a spoonful of soaked seeds is enough to replace an egg when making pancakes. “Kenyans are craving healthier food options and chia seeds are a convenient solution,” says Ann Mbugua, founder of the Bridges Organic Health Restaurant. This popular spot in downtown Nairobi specializes in wholesome meals and its chef uses chia seeds in many of their desserts - from the ‘Tropical Fruit Bowl’ to the ‘Iron Man Smoothie’ – a cinnamon-infused blend of oats, bananas and honey. Mbugua says chia seeds are also a great aid in weight loss, which is a concern for most people trying to clean up their diet. The seeds contain plenty of fiber and can absorb up to 20 times their weight in water. That allows them to expand when digested, leaving diners feeling more satiated and less likely to snack. Bridges Organic is not the only restaurant bringing Chia into their
kitchen. ArtCafe too has several chia-powered items on their menu. “I was so happy to find Chia seeds in Kenya!” says Sabrina Gilles, a German tourist having brunch on the Westgate terrace “they are an easy way to get my nutrients when I’m traveling.” The blonde is sipping on a tall glass of ‘Chia Firecracker,’ a bold smoothie made with chia seeds, honey, banana, melon, passion juice and red chilli. But smoothies are not the only food that can be made healthier with a touch of chia. ArtCaffe’s bakery is also selling beautiful brown loaves of ‘Chia bread,’ which tastes just as delicious as a whole-grain baguette but packs an added dose of fiber, iron and calcium. For healthy conscious chefs, this is just the beginning. As Kenyans become more interested in nutrition, this super-food is likely to start showing up in countless other dishes. Dr Chia is already developing cookies and breakfast cereals and Sabrina thinks chia seeds would be great in chocolate cake. “They are like a nutritional Trojan horse,” she says, “you can’t taste them but you can feel the difference.”

Ingredients ½ cup mango, finely diced ½ cup pineapple, finely diced ½ cup brown sugar Chop both the pineapple and mango very finely, and add the fruits to your mixing bowl along with the brown sugar. Use a pestle and mortar to smash the ingredients together, and then scoop into a jar. Apply onto skin and avoid eye contact.

FATMA KUDWOLI Nutritionist and mother of two As a trained nutritionist, it was only natural that i take on this journey with my family. I wanted to give my family the best. I believe you are what you eat. The quality of your life is significantly influenced by your eating habits. And this comes from everything your mind body and soul consumes. A typical weekend menu in my home includes a pepper steak with grilled sweet potatoes and a salad. Whenever we are out and about with my children (aged between 7 and 12), that’s when it gets tricky because

people use a variety of ingredient combinations thus making it a little difficult. With time, they have come to start making better choices when we are out and about because they now understand the importance of eating healthy. We also eat sushi which is lean.Kids being kids just love pizza, so when they want some, we make it with gluten free flour, on a thin crust and healthy toppings. Over time, they have learnt to make it on their own. When it comes to preparing snacks for young children, I don’t encourage using processed sugar in any form. This encourages inflammation, cause dental cavities and only offers an energy hike that quickly dips because it lacks any beneficial nourishment. My kids love most of the snacks we make but their favourite is almond banana bread.It’s healthy because it’s glutenfree, sugar free (processed) and additive free. Another favourite is sweet potato snackers which are guilt free, easy to prepare plus they taste great. Over the weekends, I like to indulge in my favourite meals although I don’t have any typical menu at while I’m home. I’m drawn to eat what I crave, food is there to be enjoyed and I find having a planned menu though convenient, can become a little boring. I will give my body what it craves that day. When I entertain guests, pork ribs will have to be on the menu. I believe
I make the best barbecue pork ribs out there and it’s one of those meals you can make to feed a crowd. Chicken makes an appearance too in the form of chicken wings. I would serve them as appetizers paired with a simple salad or coleslaw. My favourite food? Of course I have one! And that would have to be what I just prepared on any given day, so that means I love what I cook. Experimenting with new recipes where I’m able to give an existing dish ‘the Dennis touch’ by adding my own twists to it, these type of meals are my favourite. The satisfaction you get from getting a new recipe right is unmatched. As an athlete, I’m peeved by the smoothie and green tea fad in order to shed off weight. I’m not entirely convinced that they are the healthiest way to achieving weight loss. I’m also against feeding kids junk. I believe they should be taught a healthy lifestyle from a young age and they will make better choices in future. Apart from rugby, I am a food blogger and a graduate in Political Science and Sociology from University of Nairobi.

WANJA WOHORO Musician and writer About once a week I get asked why on earth I chose to become a vegetarian/ vegan. In this meat eating culture, it is almost an affront to people’s idea of normalcy to decline a succulent, pan-seared steak. I had struggled for a long time with how to maintain a healthy mental relationship with food and my body. Perhaps that’s why I found those first steps into veganism so freeing. I gained a peace of mind and a fullness of stomach that I hadn’t experienced in my earlier, bodyconscious years of young adulthood.
The decision to go meat free and to significantly reduce my dairy consumption happened over the course of a few short months in my second year while in University in Sydney. My student budget made meat eating a luxury, reserved only for birthdays and nights out on the town. This, combined with living in a health-conscious shared accomodation of excellent student cooks, soon made meat eating almost redundant. Those among my friends who were vegetarian would explain their ethos behind abstaining from animal products. They demonstrated the beautiful, careful and creative ways they would prepare their meals. It became clear to me that plant based meals can be wholesome, colourful, tasty, as well as more environmentally friendly. It’s definitely not an easy road to walk, especially while travelling through cities and households that are less accommodating. With that necessity came innovation, and now I find myself cooking with a greater sense of joy and creativity than I ever did before. This choice was a part of a bigger
journey to of self love and self care, discovering the way that my body works, what makes it feel good and satisfied, and learning to accommodate it. Vegetarianism comes in all colours and portion sizes and the version I chose is robust, non calorie restrictive, full of spices and flavour and utilises every vegetable under this tropical sun. PAIGE ELENSON Co Founder, Africa Yoga project The truth is that I simply stumbled upon this journey of health and wellness. I was on a vacation and wanted to “check-out” a yoga program that was happening down the road. Turns out it was training with world renowned Baron Baptiste. It was during that training that I learnt the practices of Meditation, Yoga, and Self Inquiry and I was hooked. I started choosing the journey of health consciously over and over again. I am a vegetarian so a typical weekend menu would consist of a morning smoothie and/or green juice and coffee with almond milk. The afternoons consist of salads and mixed nuts and in the evenings, I like to enjoy rice with fresh cooked
vegetables. When we are consciously aware of what we are putting into our body, then the food will support what our body needs. I think it is important for us to be grateful and give thanks for the food we enjoy. After a yoga session, I crave a fresh green juice! I have been practicing yoga for the last 20 years. It happened over a school break and I haven’t stopped since. My favourite salad recipe right now is a bowl of Vegan fattoush. It is healthy because of the fresh foods and nutrients to fully and completely nourish our body.

VEGAN FATTOUSH (Paige Elenson) (Serves 1) Ingredients For the salad: 1 head or 2 cups chopped romaine lettuce ½ bunch or 1 cup chopped kale ⅔ Cup chopped Persian or English cucumbers 2 scallions, thinly sliced 3 radishes, thinly sliced ½ cup tomatoes, halved ½ cup cooked chickpeas 10 mint leaves, torn 2 tablespoons torn parsley For the dressing: ½ clove garlic, grated Juice of ½ lemon ⅓ Cup extra virgin olive oil Salt, pepper and sumac For the za’atar flatbread: 2 spelt flatbreads 1 tablespoon extra virgin olive oil 1 ½ teaspoons za’atar Salt to taste Method 1. Preheat your oven to 220°C. 2. Combine all of the salad ingredients in a large bowl. 3. To make the dressing, whisk together the garlic clove, lemon juice, and olive oil, and season to taste with salt, pepper, and sumac. Set aside. 4. Brush one side of each the flatbread with olive oil and season with the za’atar and flaky salt. Place on a baking sheet and bake for 5 minutes, or until browned and crispy like a cracker. Use your hands to roughly break them into bitesized pieces. 5. Toss the salad with the dressing, season to taste with more salt, pepper, and sumac as needed, and top with crushed flatbread.

SPICY GRILLED PERI PERI BREASTS (Dennis Ombachi) (Serves 2) INGREDIENTS 2 large chicken breasts Ÿ cup Peri Peri sauce Homemade Peri Peri sauce 3 tablespoons olive oil 1 teaspoon paprika 1 tablespoon chopped red onions 2 red chilli peppers (more or less according to your heat level) ½ red jalapeno pepper 1 teaspoon salt Pinch of black pepper 2 garlic cloves 1 teaspoon lemon juice 1 basil leaf 1 teaspoon dried oregano 1 tablespoon red wine vinegar Method -Blend the sauce ingredients in a blender until smooth and consistent. -Wash and pat dry your chicken breasts -Using a kitchen mallet, gently hammer your breasts until even and flat. -Generously apply the marinade - Set this in the refrigerator to marinate for 30 minutes or overnight. -Take your chicken out of the refrigerator and let it come to room temperature before grilling. -Cook undisturbed for 4 to 5 minutes then flip over. -Let this cook for a further 4 minutes then take it off the heat. Serve.

RICE, SPINACH AND SWEET POTATO CURRY (Wanja Wohoro) (Serves 4)
Ingredients 2/3 Cup of brown or white rice 2 ½ tablespoon Olive Oil 1 Onion, chopped 3 Cloves of Garlic 1 ½ tablespoon Curry Powder 1 tablespoon of Cumin ½ tablespoon Cinnamon 2 tablespoon Salt 2 Medium-sized Sweet Potatoes (cubed) 3 Small Carrots (thinly sliced disks) 1 Red Capsicum 1 Broccoli Bunch 2 Chopped Tomatoes 1 Can Crushed Tomatoes 1 Cup of Vegetable Stock/water 165ml can of Coconut Cream /milk ½ a Lemon (juice) 1 Bunch of Spinach (or Kale) Method - Add onions and garlic to a medium pot with olive oil and fry until translucent. Add spices and the salt. Fry until fragrant.. - Add the chopped sweet potato, carrots, capsicum and tomatoes and fry for 3 - 4 minutes on medium turning the vegetables regularly. Pour in the can of crushed tomatoes, stirring it in with the vegetables and reducing the heat to medium. - Cover and allow to simmer for 10 minutes. Pour in the stock/water and simmer for a further 15 minutes (covered). -Add the rice. Allow to cook in low heat for another 5 minutes with the lid off, stirring occasionally. -Stir in the coconut cream once the dish has started to thicken and reduce. -Once the rice expands, squeeze in the juice of half a lemon. Add the spinach leaves last, mixing them in with the rest and serve with chilli, coriander and mango to give the dish an extra kick.

SWEET POTATO SNACKERS (Fatma Kudwoli) (Serves 2) Ingredients 2 Large sweet potatoes 2 tablespoon arrowroot powder 3 teaspoon sesame oil 1 teaspoon Sea salt 1 teaspoon Cinnamon
Method Peel the sweet potatoes and dice them (French fries). Place the potatoes in a quarter size zipper bag, add the arrowroot powder close the bag and shake to coat the potatoes. Lay the potatoes out flat on the baking sheet, sprinkle some sesame oil and bake for 20 minutes or until crispy. Sprinkle with salt and cinnamon. Allow it cool then serve.

CHIANTI FORAGING As Charity Keita’s Italian stint draws to an end, she waxes lyrical about mother nature’s free bounty and how it always tastes best when eaten straight off the stem. It began with the blackberries. Everyday I’d pick a small handful as I dragged myself up the hill after a game of late afternoon badminton. The purplish berries would peak out from amongst the brambles, fairytale princesses inviting me to brave the thorns and pluck them from their spiky prison. The best ones always beckoned from heights I could not reach, no matter how hard I jumped. As August wore on, the lack of rain turned everything but the hardiest of trees a pale hue of yellow and the blackberries withered away. One day while I walked down a path, I stopped to investigate what the crunch underfoot was. Turned out they were hazelnuts that dropped from trees that had been planted by local monks many many moons ago. I tentatively bit down on one that looked intact and the shell opened to a perfect nut. I let out a shriek of happiness. I was less lucky with my next one though as it contained no nut but a fat white maggot. I
screeched in disgust. By October the foraging bug was becoming too strong to resist. The promise of free food, nature’s bounty made available to me straight off the stem, was simply too good to resist. Over the coming months I would head to the Chianti hills on weekends to stay in the little forested valley and see what edible delights I could uncover on my walks. Autumn brought a bounty of crab apples which were too bitter to eat and had to be cooked down into a chutney. To give them texture I threw in half a dozen tiny little peaches I found on a small tree down by the little brook. I’m not sure if the peaches were wild but their size lead me to believe they were. How long does a fruit tree have to be forgotten before harvesting it can be considered foraging? Was I simply stealing from the neighbour? When the rains came, I made it my business to go and look for the porcini mushrooms that everybody
told me grew under the chestnut trees on the far side of the valley. I wish I could tell you that I found some. Instead of mushrooms I did come back with a shopping bag full of chestnuts which I saved and roasted in December. With spring, the green began to peep out from under the dead leaves again and nettles were the first of the treasures the valley had to offer. Turns out nettles can be made into an excellent risotto and once you have mastered the technique of picking them, you hardly ever get stung at all. With the warming months came flowers which, to my surprise, could be sprinkled liberally on salads and brought great visual satisfaction to the Easter feast we had prepared. Spearmint, picked from the field, was cooked in sugar and vinegar to be served next to a succulent leg of lamb. Wild fennel began to make its presence known in May by letting off a strong liquorice like smell. I had no
idea what to do with it’s bright green stringy fronds that looked nothing like the fennel I know and love, but was eventually directed to making a bright green pesto which could be spread over pork, fish and pasta alike. The crowning moment came in June when one day I spied on a little grassy knoll a minute red berry poking out from under a jagged leaf. Wild strawberries are the most precious of the gifts the valley bestowed upon me. Once I knew how to spot them I could find whole patches that were simply invisible to the uninitiated. Never once did they make it back home, their rough yet delicate skins bruise so easily they are simply best eaten on the spot. The sun is high and the weather is hot and the valley now only bears fruits that are the result of man’s intervention. Which is fine, I’m not complaining, the blackberries will be ripe soon.

NAIROBI IN MOTION Nairobi has seen an upsurge in fitness communities in the last few years. So what are residents of Nairobi into when it comes to fitness?
BIKRAM YOGA- Fitness at 40 degrees. Celsius Bikram Yoga is a 90 minute series of 26 Hatha yoga postures and two breathing exercises, carried out in a room heated to 40 degrees Celsius and 40 percent humidity. The combined heat and humidity increase muscle flexibility. Bikram Yoga is said to release large numbers of toxins through the breath and the skin by sweating. It is designed for everyone from absolute beginners to more advanced practitioners. The combination of heat and sequence of postures makes their sessions very intense with dramatic and immediate results. GUILT TRIP After a night out in Nairobi, our man about town faces the realities that come with Saturday morning. Not only does he discover that spending time outdoors with his children awakens the guilt felt after a night out but it’s also a chance to consider detox and exercise as part of the recovery process.
My daughter is nine. Pretty little thing. At 9- they are already becoming strangers right before your eyes. They ask strange questions, they want strange things you have never heard of, they join dance classes where kids wear strange shoes and they want their own phone. Not too long ago her mom told me: “Please don’t mention anything to do with weight to her, she thinks she has added weight.” I laughed out loud a the preposterous thought. Then it dawned on me that perhaps all those burgers and fries she likes to order were beginning to make themselves visible and, however cute I thought this was, I could see how it might have started to become an issue with the kids at school or simply by watching tv. I mulled over her predicament: I

couldn’t sign her up for yoga, or a gym membership, or for a spin-class and I sure couldn’t take her running with me on Saturday mornings. Fundamentally, I want to let her be a child and not worry about her babyfat. Then a brilliant idea occurred to me: teach her how to ride a bicycle! “Papa, can I get a purple bike?” It is a saturday afternoon and we are in Karura forest. “Of course, of course you can!” I respond, purple is the colour of royalty, after all. We ended up getting a blue bike that regrettably - clashed with the colour of her sneakers. We push the bicycle out to the football field. It is a wonderful Saturday morning and all the morning runners have left for home so it is just us and some two middle-aged men kicking a ball through the goal post.
My daughter climbs on the bike and I hold the seat to balance her and off we goes her pedalling, me running, her pedalling, me encouraging. What can I say, she is a natural. At some point an attendant comes up and asks me if he can teach her to ride, he can do it in an hour he says. I send him away. Does he imagine that I want my daughter, in her adulthood, to remember a cigarette-smelling stranger teaching her how to ride a bike while her father sat under a tree reading The New Yorker from his phone? An hour into the exercise and she’s ready. “Papa, can I try alone?” she asks, I was bursting with pride. Then she falls down. It takes me five minutes to convince her to get back on. Later as we drive out, through a
corridor of tall trees, she asks me: “Papa, why do forests only have thin trees?” and I am not sure if the usage of thin is in any way in reference to her weight. So I say: “Oh no, there are many forests with big trees and big trees are also quite lovely and wonderful, plus they are strong and sturdy even when strong winds come. Thin trees can’t stand the wind, they snap easily...” I talk relentlessly like an idiot hoping that her reference to thin trees is not metaphoric in any way. I’m hoping one day she will remember Karura Forest and learning to ride her bike and, if not for anything else, think “dad was a bit of a whisky-head, but he also loved trees.”
