’TIS THE SEASON The fairy lights are up, those somewhat creepy dancing Santas are stationed outside every supermarket and you’re just about to give in to the fact that after one crazy year you now have every right to switch off and indulge! I’m an absolute sucker for Christmas, a marketers dream if you will! I actually don’t mind that the marketing seems to start earlier every year. I genuinely love Christmas compilation albums and take no issue with the fact that every advertisement is guilt tripping me into spending all my hard earned cash on gifts for everyone but myself. It’s the one time of year that folks are collectively happy and that’s a beautiful thing. I’ll gladly surrender my wallet and waistline for some Christmas cheer! It’s been an incredible year for Yummy. We’ve grown our magazine thanks to our loyal readers, launched the magazine in Uganda and will do the same in Rwanda and Tanzania next year. The stories uncovered of our continent’s blossoming culinary

scene show that it is something to be proud of and to be documented. East Africa’s restaurant industry in particular is thriving, with next year promising to be even better with the sheer amount of establishments rumoured to be setting up shop. As you kick back with your Yummy and a glass of something stiff this month, be sure to flip to page 32 to read about our Fearless Chef’s deep sea adventures off the coast of Mozambique. Take note of all the best spots to hit this festive season from page 18. Then read Susan Wong’s latest restaurant review, where she claims to have practically licked her plate of Spaghetti Scampi clean at Havana, on page 42. Between the provocative artwork, hearty menu and crimson walls that hold the secrets of

many tipsy Havana nights, if you’ve never eaten here before, you’ll now be convinced! It’s only fitting that we bring you a few festive dishes to help inspire your own holiday feast on page 48. I personally go weak in the knees for a perfectly roast turkey, with each serving soaked in a pool of rich gravy made from the sticky remnants on the bottom of my roasting pan. While many of our top restaurants will offer up exceptionally delicious Christmas menus, for those who do not want to be anywhere near a kitchen, I plan to spend Christmas day fiddling over complicated puddings and stuffing several turkeys while knocking back an impressive amount of wine in my glorious comfy pants. There will undoubtedly be plenty

of drinking and eating this season so buckle up… Or down, depending on how many servings of Christmas pudding you inhale. From all of us at Yummy, we wish you and your family the happiest of holidays! May it be filled with love, laughter and blessings for the new year.

I run my own production company here in Nairobi that creates a range of content for the digital market. I also do a number of cultural projects each year for various US embassies across the continent, earning me the wonderfully vague title of Cultural Envoy. What is your morning routine? Wake up. Stare at the ceiling. Contemplate life. Contemplate death. Go back to sleep. Repeat. How did you get started in the entertainment industry? After 20+ years as an abstract painter, I sort of fell into it here in Nairobi, first as an actor (Changes, Mali, Rugged Priest, commercials, Stay, Intellectual Scum, Oh-Bama), then as a scriptwriter, then as a producer and I’ve finally graduated to the role of deranged manic mzungu boss, equally loved and feared by my team, the poor kids. Would you say the industry is fueled by caffeine? Absolutely. That’s certainly why I drink it. At

the same time, people do love the flavour, the pleasure of taking a hot drink, the smell, the colour. However I know people who drink decaf, which has only a tiny amount of caffeine, and still love their coffee daily. What’s been one of your favourite projects to work on? Has to be producing my own show, “Stay,” a drama series about an interracial couple in Nairobi, starring Mkamzee Mwatela. It was incredibly fun to work with 25 young amazing talented Kenyans. The pressure is intense and that’s why I love it :) What’s your favourite nightlife spot to frequent? There’s a new place I found on the 11th floor of what is Cloud Hotel at Diamond Plaza. It’s so trippy and they actually have organic California wine from my home region as their house wine, only 300 bob a glass! The white plastic chairs are each lit up like Xmas lights and need I say more…

SUPER DUPER Bad Mambo Productions brought multi-platinum singer and songwriter Joss Stone to Kenya for a performance at Purdy Arms as part of her Total World Tour. I got an exclusive interview with her and asked 10 Yummy questions. What food/drink items are on your rider and why? We always have healthy snacks like salad and dips on there and a few drinks that the band tends to tuck into but nothing elaborate really. One thing I do ask for is plenty of water for me and my singers, and and I like my lemon, ginger and honey tea..that helps my voice. Coffee or tea? Tea, definitely tea. What 5 food items are always in your kitchen? Baked beans, a nice bar of chocolate, eggs, cheese and there is usually a pot of humous in the fridge. What’s the weirdest gift you’ve ever received from a fan? Hmmm, I don’t really know. I once had a letter from a fan asking for a gift from me. If someone was to buy you a drink at the bar, what would you order? Depends on my mood, it could be a beer or if I’m feeling in a celebratory mood then a glass of bubbly goes down well.

What’s your go-to midnight snack? I think a piece of good chocolate goes down pretty well at all times of the day. What’s your all time favourite meal? It’s beany pancakes. They were my favourite growing up and I still love them now. It’s just beans and cheese, wrapped in a crepe with pasatta and cheese on top then baked. Biggest restaurant pet peeve? Nothing vegetarian on the menu, its 2016 for goodness’ sake! Why did you decide to go vegetarian? I have been veggie forever because my parents bought us up that way. The reason I stay vegetarian is that I don’t want to eat living creatures. I’m not preachy about it, I understand that not everyone feels that way but I personally don’t see the point of doing that if we can go and get a veggie burger quite easily. What was the biggest challenge going vegetarian? Because I have never eaten meat or fish, I don’t miss anything or find it challenging really. You can’t miss what you never had.

Fishing has always been one of my greatest passions so it should come as no surprise that, in what has been one of my favourite episodes of The Fearless Chef.

DEEP DIVE

Dive into the Indian Ocean with Chef Kiran as he recounts an adventure to capture a Dogtooth Tuna on the fourth episode of The Fearless Chef. I try to relax as much as possible before filling my lungs with air and diving down into the ocean. This is my first attempt at diving to such depths without oxygen and while descending isn’t difficult with my large fins, the pressure is excruciating. I look up to see a thirty-metre tower of water above me, I feel like an elephant is standing on my chest and I’m finding it hard to focus (although I can see that I’m surrounded by sharks). Then, just as I’m on the verge of giving up I spot it: a Dogtooth tuna, the holy grail of spearfishing! To the best of my fading abilities I aim my spear gun and unbelievably, hit him! But my spear doesn’t stick and I feel I’m close to drowning so I shoot back up and by the time I breach the surface I’ve been under for over three minutes. Hit by an uncontrollable wave of exhaustion and seasickness I proceed to throw up all over the deck . Fishing has always been one of my greatest passions so it should come as no surprise that, in what has been one of my favourite episodes of The Fearless Chef, I insisted on checking off an important item off my bucket list: plunging into the deep waters off the coast of Mozambique to go spearfishing for one of the world’s most delicious but difficult fish to catch - Dogtooth tuna.

Our destination, Vamizi island, lies off Mozambique’s northern coast in the Quirimbas Archipelago. Our plane lands amidst a blustery thunderstorm but as it gradually moves away, I am able to take in this beautiful island paradise. I start to feel nervous as I think about the task ahead. To snag the “Doggy” I’ll have to dive without oxygen into shark infested waters using one of the most dangerous methods of fishing in the world. To assist me with this monumental mission, I have called in the help of an expert - Cameron Kirkconnell, a 13time spearfishing world record holder. Cameron teaches me breathing techniques that are the key to successful freediving. He tells me to take deep breaths into the diaphragm to oxygenate the blood and slow exhales to drop the heart rate and relax the body. If I want to stay under for long, I have to keep calm. Easier said than done! At the end of the breathing session I’m feeling tingly but manage to stay under for a whole three and a half minutes. With the sun slowly setting we bid farewell to Vamizi. We’re sailing 70 Nautical miles overnight to the St. Lazarus Banks – our hunting ground for Dogtooth tuna. When we arrive we’re in the middle of the ocean, with no other boats or land to be seen. It’s an incredible feeling but I can’t enjoy

it for long as it’s soon time to get in the water. Back on deck after my unsuccessful attempt at spearing the tuna, Cameron is smiling at me with badly disguised amusement. He then proceeds to tell me I look green but suggests running back up current to do another dive. Though I can’t

think of anything I’d rather do less, I’m not willing to give up quite yet. Still feeling ill, I have to hurry and make my descent. In the depths I see a huge fish circling the bait, it’s not a Dogtooth but a Wahoo - another delicious game fish. I thrust my spear at the Wahoo and success! As the Wahoo swims hurriedly away, I have

to work quickly while trying to keep my eye on him. It’s a tough struggle but I manage to land my catch and proudly bring the 17 kilo fish to the surface. Now if we can just bag one of the Dogtooths, it’ll make our day complete. I look into the water and realise that sharks, attracted by the smell of blood, are circling the boat. With so much unwanted attention we’ll only have one more shot so Cameron takes the plunge leaving me to fend off the predators. It’s not long before he spots a Dogtooth tuna 30 meters down, swimming along the rocky bank… Bull’s eye! The buoy above goes haywire; the Dogtooth is immensely strong and pulls the buoy under water. Eventually the buoy emerges and Cameron goes in for the fight. After a long struggle, he manages to haul in our prize. With the sharks all over us, time is long overdue to get out of the water. Back aboard the yacht, I prepare a sumptuous meal of panfried loin of Dogtooth tuna, with a reduction of tuna belly and coconut for Cameron and the crew. As we eat the delicious fish, I think to myself that this really has been the trip of a lifetime. Despite the physical and mental challenge of spearfishing, we managed to get what we came for which makes it all oh so worth it.

THE FOOD LIFE

LIVE FROM NAIROBI Charity Keita is over back in town for the holidays and loves how the live music scene is moving ahead in leaps and bounds.

I

step out of the taxi the moment the rain starts to bucket it down. I have less than a hundred meters to walk but I can see that I am going to get utterly drenched. In front of me four blondes march deftly through the onslaught, they are all wearing wellies and raincoats. I chide myself for having failed to check the weather; earlier that day while I was putting on my pretty red Italian ballerinas and a dress bought during the August sales, the fact that the short rains had not yet made an appearance had totally failed to register. We are at the Joss Stone concert at the Purdy Arms in Karen put on by Bad Mambo Productions. Not my usual Nairobi haunt but a gaggle of my best girlfriends surprised me with tickets when I arrived a day earlier

and who was I to say no? After collecting our tickets we are escorted under large umbrellas to the main tent; on stage Tetu “Troubadour” Shani is captivating the crowd with his enchanting guitar skills and soothing vocals, behind us more people stream in and I begin to suspect that this is one event that people are willing to brave the downpour for. On the night of my arrival Blinky Bill was on stage at the Alchemist, I couldn’t help notice how in the six months since I’ve been away the popularity of everyone’s favourite Westy haunt hasn’t waned one bit. Live music and international acts definitely seem to be on the up. Back in April, I was thrilled to attend the Blankets and Wine Aloe Blacc concert, when he began belting out “The Man” I distinctly remember singing along

and feeling that somehow this was a feminist song (yeah I’d drank a few glasses of wine by that point, maybe I was confused). Then there’s Kenya Nights who strive to bring some of the biggest names in house and dance music to an ecstatic audience, not exactly my cup of tea but judging by the strong attendance undoubtedly crowd pleasers. Koroga has made it their business to bring every major African name to their monthly events and I feel my chest swell with pride every time I see a new picture of the Sauti Sol tour bus parked up in some far flung corner of the country. My point is that the scene is not static, sure there is always space to grow and Kenyan live artists can learn a lot from their international counterparts but gone are the days when festivals and live gigs were few and far

between and focused mainly on popular Caribbean reggae artists. Back at the Purdy Arms when Joss Stone finally gets on stage, the tent is bursting at the seams. She plays her set, twirls her pretty blond hair, engages with the crowd and is off. I can’t say she’s my favourite singer, I find her music too often ers on the side of commercial. That said though, the crowd of a thousand plus attendees that surround me are a sign that Nairobians are increasingly happy to dig into their pockets to go and see live music, whether homegrown, African or from Northerly lands. This surely is proof that we are headed in the right direction and all the promoters who are taking the risk to make events like these happen, deserve nothing but praise.

KITCHEN CONFIDENTIAL

BEST SEAT For most chefs, bars are an essential part of their routine. They get to meet and mingle with other chefs after a long day’s work. Chef Ray tells us about bar culture within kitchens and the importance of seriously good bar-side eats. (The theme tune to Cheers is playing repeatedly in my head.)

I

like sitting at a bar. In fact, it is by far my preferred choice. Nairobi has some incredible late night watering holes with some seriously good eats. Amongst my favourites are Havana’s and Gipsy’s who despite being primarily bars, serve up seriously noteworthy food. Back in the day it used to be simple. There were bars and there were restaurants. You always knew exactly where you stood, especially when it came to bar food – stale supermarket crisps and dodgy peanut bowls designed to be eaten yet forgotten, a mere sidekick to a night out, never demanding the spotlight from your whiskey infused mates. But drinking and snacking have had a perfectly

symbiotic relationship for centuries. Drinkers have always needed quick, uncomplicated sustenance to keep them coherent and upright. A number of different cultures figured this out some time ago. From sushi houses to Spanish tapas bars and Italian aperitivo, the food in these establishments was served as fuel for a night out without the fuss of dining in a restaurant. For these cultures, bar dining has been a tradition passed down from generation to generation and taken as seriously as any presidential election. These guys invented responsible drinking! In more recent years the rise of the craft cocktail has had a delicious side effect on snack menus everywhere. We can now find tuna tartare cones or scaled down fois-topped burgers at many cocktail bars around the world. Foodies can now rejoice at the fact

that we can add an extra meal to our day, the late-night Brinner, consumed sometime between dinner and breakfast. The restaurant industry has picked up on this movement too and many establishments now serve their full A la Carte menu bar-side. We are seeing more people choosing the bar stool as their preferred dining choice, taking a break from the formality of the restaurant dining room while still being able to eat the melt-inyour-mouth duck confit! Free from the commitment of a three-course meal and without having to make a reservation. The bar counter truly is the ideal spot for the spontaneous, yet delicious night out. When Joel Robuchon opened his first bar style, late night, L’Atelier in Paris in 2003, people were astounded by the idea that you could eat awe-inspiring food

in such a low-key way, he certainly gave the bar counter culinary credibility. And, as a result made our late nights far more palatable. For most chefs, bars are an essential part of our sanity. It’s where we go and unwind after the long hours and late nights, where we go to joke, laugh and indulge in some friendly competition with other chefs, comparing battle wounds and horror stories. It’s home to a lot of our innovation and creativity as we sit over a vodka tonic discussing new techniques and equipment or simply throwing ideas around. After all, what is better than sharing mindblowing food with great friends and interesting conversation (preferably) at a bar where everybody knows your name.

HAVANA GREAT NIGHT Susan Wong discovers delicious seafood dishes in Havana, one of Westlands’ most happening weekend bars.

T

hings are often not what they seem. Often the times my friends thought my life was the most exciting have also been the times when I’ve felt most creatively challenged and that I’m not doing enough. A man can proclaim that they love you but his actions tell another story. Friends comment on your flawless curves but you struggle with the discomfort of your slimming body shaper. You drive a luxury car but can’t afford the upkeep. Here’s another one: you expect mediocre pub food at a tired Havana Bar that only gets packed from Thursday and are surprised to find an absolutely delightful dining experience that even features some of the tastiest prawns you’ve had in a while. To be fair, I’ve only dined at Havana a couple of times; the rest of my visits are a collection of disjointed memories, probably thanks to the popular bar that when crowded overflows onto the street. Those that have dared to venture to the back of the establishment will however know that there lies a delicious secret, a restaurant that’s been led by the same chef for more than a decade and one who loves seafood. “I’m a seafood kind of guy,” Chef Kimani chuckles during my most recent visit. The kitchen veteran beams with pride. Kimani first joined Havana 16 years ago as a steward and steadily rose up the ranks. Never would I have imagined that behind the soft-spoken and humble character

was a talented and creative man that showcases his charisma through the food he serves. The gold stamped leather-bound menu is a long one, about 10 pages. It’s old and page edges roll and ripple thanks no doubt to a few spilled drinks over the years. Flipping through it feels strangely exciting and humbling at the same time. A chef weekly dinner special helps you navigate through a collection of dishes with a global influence. My companion and I start our meal with Lamb Tacos with Prawns – a marvelous combination of super soft braised lamb leg, perfectly cooked butterflied-prawns, fresh leaves of mint, pomegranate, slices of red bullet chilis, spring onions, tomatoes and topped with Tzatziki sauce. A squeeze of fresh lime juice make this a mouth-watering beginning. A Fish Taco that features two deep-fried battered fillets follows. Its fillings include a classic spread of guacamole, which serves as the perfect creamy bed for the crispy fish to nestle on and is topped with red cabbage slaw and a sprig of mint. The Sweet-Chilli Glazed Tiger Prawns arrives tender, juicy and savoury with a sweetened kick. It is a very harmonious dish that showcases Chef Kimani’s obvious talent for cooking seafood to perfection. Next, a simple plate of Grilled Calamari, Chorizo and Prawns topped with fried Quail Eggs exudeds both finesse and charisma. The smokey spicy sausage gives the mild-flavoured calamari

some personality and its scored knife marks drank-up most of the flavoured oil and juices. Again, the prawns are cooked perfectly, complemented by the assertive flavour of quail, which stands-up to the strong flavours of each ingredient. I am convinced the Lamb Tacos and the Grilled Calamari are my favourites until I nearly lick the plate of the Spaghetti Scampi, which feature prawns and calamari with a simple garlic and white wine sauce uplifted by fresh basil, pine nuts, cherry tomatoes, sundried tomatoes, red chilli flakes and parmesan. My favourite dish also arrives with deep-fried squid tentacles as a delicious garnish. My least favourite is the Chef’s version of Lasagne, which could be likened to a giant package of slowly braised beef – shoulder and soft cheeks – in red wine and bacon bits, finally topped with béchamel sauce.

The dish is a meat lover’s confused dream. Super rich and too many powerful flavours that struggle to find space for one another. But if this is any redeeming virtue, they have marvellous garlic bread! Stay for dessert. The Toffee Cake with Caramel, warm Chocolate Fondant with an oozing center that lures you and syrup soaked Crêpe Suzette are all well-executed classics. There’s a brief wine list and an extensive malts and spirits menu – as one would expect from a bar. The service is spotty as waiters are easily distracted by thirsty patrons. On a slow day, lunch or early in the evening, the staff are attentive and confident. We sit beyond the bar in the back corner where fiery red and orange walls feature black and white photos of street scenes from Cuba. White linens drape the tables and featured lighting makes the intimate restaurant space distinctly different from the bar. It does get a little bit smoky after the kitchen starts cooking, but nothing unexpected from a popular, comfortable-but-basic, and unglamorous bar. The music, salsa, keeps the atmosphere in the restaurant area intimate, sexy, and drowns away the spilling conversations from the bar. Surely it can’t be any good, or if it is, it’s going to be really expensive. Because, y’know, it’s Westlands! Right? For great food, especially seafood, you normally would head to the suburbs, never to the centre of nightlife; but Havana on Nairobi’s “Electric Avenue” is the exception.

MASTER CHEF Chef Joseph Wamoto is the head chef at Sikia, Crowne Plaza. Cooking has always been a part of his life and we sit down with him to learn about his journey to becoming a chef which entails a cameo on Gordon Ramsay’s MasterChef.

T

here is only one moment throughout our conversation when Joseph Wamoto breaks out of his carefully measured persona in response to a question, mirth shines in his eyes as the laughter echoes from his stomach and across Sikia Hotel on the mezzanine floor of the Crowne Plaza in Upper Hill, Nairobi. The 60 person restaurant has been set up for a fine dining experience - replete with spotless white tablecloths and napkins, polished silver and glassware - and the room is mostly quiet. Some people might prefer this lull but it is the storm that Joseph lives for. Amid the sizzle and sound of a busy kitchen, a rush of adrenaline courses through his veins giving him a buzz that has powered him for the 15 years since he became a chef. In reality, Joseph’s first “Head Chef” title was tongue-in-cheek and wasn’t earned at a fine dining establishment but back when he was 10 years old and had become a fixture in his family kitchen. Recognising the potential of the hospitality industry in Kenya, his parents sent him to culinary school in London after he had finished secondary school, where he trained and studied for a number of years in various establishments. In 2007, he returned to East Africa to build both Artcaffe in Nairobi and Breezes Hotel in Zanzibar from the ground up. Then, 6 years ago, he joined Crowne Plaza as Head Chef and today works a steady schedule of workdays that are uninterrupted for most of the year. Joseph is up and about by 5AM and

after that, events rapidly blur into one another as he moves from one meal to the next: going through lunches and dinners, supervising the team of chefs under his care and managing all five restaurants at Crowne Plaza. Before he knows it, it’s 10PM and he leaves the restaurant to wake up early the next morning and repeat the same series of activities. Given his demeanour throughout our conversation, I imagine that Joseph is less of a Gordon Ramsay type and more like a Yodi in the kitchen: commanding obedience by the sheer will of his calm yet firm energy. However, Joseph tells me that the two chefs have more in common than meets the eye: for one, both Joseph and the fiery British chef-turned-television-personality played sports before embarking on their cooking

career: where Gordon Ramsay played football as a teen, Joseph Wamoto was a professional rugby player on the Kenyan Nondies Rugby Football Club. Another is a shared appearance on MasterChef in 2000, when Joseph was a commis trainee chef at The Fairmont in London. I ask if there are any misconceptions that he has experienced in relation to his job and without a beat, he responds that he has always felt very respected for his work. Anything he doesn’t like? Joseph, ever positive, shakes his head and states easily, “I enjoy the job fully” but with a caveat, there is some disappointment when he encounters a customer who doesn’t like his food. Like the buzz of a busy kitchen, guest feedback is the other thing that sustains him. “Feedback gives us direction, “ he says. With a mischievous

twinkle in his eye, he recalls a time when, after ordering and sampling a plate of steak tartare, a guest sent it back to the kitchen complaining, “You’ve given me raw meat!” On the other hand, he glows at a compliment which he received during the Global Entrepreneurship Summit last year, when, after observing him at his work for the days of the conference, a member of the US envoy told him, “I would like to be like you.” When he tells me about cooking in his family kitchen as a 10 year old, I ask him what he thinks of people who say that boys should not be in the kitchen. Joseph chuckles heartily before responding, “I think there’s something that they’re missing out. Cooking does not have a gender.” What it does require, he adds, is the resilience to the early mornings and late nights and the ability to thrive under pressure. In his free time, when he has it, you will find him watching a game of rugby with his friends, or dining out with his family, or watching a cooking show. One of Joseph’s favourite cooking shows, naturally, is MasterChef. It was thanks to his appearance on the show that Joseph obtained a job at the five star Savoy Hotel which in turn inspired him to pay it forward by mentoring young chefs in Kenya, for whom he has a few key words of wisdom: “Discipline is key. Be ready to learn and be creative.” Above all, he adds, “Be patient for growth.”

BREW TIME Brew Bistro Master Brewer and Managing Director Aleem Ladak has always had the mission of growing the craft brewing industry in Kenya. Aleem shares how he does this and the success behind the Brew Bistro brand. We meet with Aleem Ladak Master Brewer and Managing Director of Big Five Breweries Ltd, otherwise notoriously known as Brew Bistro and Lounge, at the Piedmont Plaza branch on Ngong Road. Aleem has been brewing his own beers for 20 years; he started home brewing beer and wine when he was in Montreal whilst in university. Although Aleem went to university to study chemical engineering, he switched majors to food technology when he discovered

his passion for brewing. While pursuing a degree in Food Science, he worked at multiple craft breweries in Montreal and later received a masters in brewing and distilling in Berlin, Germany. In December 2009 Aleem decided to bring the craft of micro brewing back home when he opened Brew Bistro Lounge in Piedmont Plaza which, at the time, was still mostly under construction. Although the concept of micro breweries was

still new to the market, Aleem was confident he could make it work by building an experience around the brewery. The heart of Brew Bistro has always been the Big Five Brewery: the bar, restaurant and lounge were built to create an experience around the Brew Bistro brand. “When you introduce a new brand to the market and the experience is not there, it’s very hard to create demand for your product” says Aleem about starting a new venture “We wanted people

to know Big Five Breweries for the craft beer and Brew Bistro Lounge for the experience and view both as premium Kenyan brands. For the first three years it was tough but I think we’ve achieved what we wanted over the last six years. People know the Big Five as the beer and Brew Bistro as the experience”. The five core beers of the Big Five brewery consist of four ales and one lager. Each core beer is named after one of the Big Five animals and

it’s respective brewing style. Brew Bistro also brew seasonal beers and recently worked with Jameson East Africa on their Brew Barrel campaign to produce Enkare, Masaai for ‘cool water’. The Brew Barrel campaign was inspired by Jameson’s global project, Caskmates and Brew Bistro was the fifth brewery chosen globally to participate in this project. Aleem travelled to Ireland to meet with Head of Whiskey Science David Quinn in the Jameson distillery and learn about the whiskey making process. He then travelled back to Nairobi with Jameson whiskey barrels and brewed a Belgian style triple ale which aged in the barrels for 16 weeks. The beer extracts flavours from the barrels creating a full bodied beer with a malty character and notes of spice, pepper and vanilla from the whiskey. “Jameson is very passionate about their product, just like we are. When you look at Enkare and taste it, you’ll see the passion of both industries in that product” Aleem says of the partnership. We take a walk through the small brewery in the heart of Brew Bistro as Aleem describes the brewing

process. “When someone drinks a beer they don’t see the technical aspect, people see a beer as a beer but to make a good product is extremely challenging. It’s all about time, temperature and the quality of the raw materials” says Aleem as he compares the art of brewing beer to that of cooking. Brew Bistro works with select suppliers in Europe for their raw product and conduct physical checks in Nairobi. The raw material is checked, milled and mixed with water to extract the natural sugars. The mixture is then filtered to get a thick sugar syrup and remove the outer husks of the grain. The syrup is then boiled for about 90 minutes at which point hops are added. Depending on the time in which the hops are added determines the flavour and aroma imparted to the beer. The product is then cooled and passed into a fermenter where yeast is added. Depending on whether an ale or a lager is being produced determines the type of yeast used, as well as the fermentation temperature. The main difference between an ale and a lager is a lager is always clean, crisp

and slightly bitter whereas an ale has slight fruitiness and more floral aromatics. Aleem attributes Brew Bistro’s success to the experiences they create, their collaborations and great staff. Brew Bistro is run in a family style with his wife Soraiya leading marketing and himself, the Master Brewer. In collaboration with a local NGO, Brew Bistro has a performancebased scholarship fund, the Nairobi Slums Scholarship Fund which started in 2013 and currently supports 25 kids. Kids supported by this fund have performed well in primary school but do not have the means to attend secondary school or university and the fund allows them to do so. Proceeds from events such as Brew Bistro’s Oktoberfest go toward this program and Aleem runs a trainee mentorship initiative for these kids with work placement opportunities at Brew Bistro in the brewery, kitchen, HR and admin. In the coming year, Aleem aims to grow the Brew Bistro brand through collaborations with companies such as Brown’s Cheese by washing their cheeses in beer, creating a

FARMER’S CHOICE ROAST TURKEY WITH STUFFING INGREDIENTS For the stuffing: 2 onions halved and sliced, 2.5g butter, 1kg Farmer’s Choice turkey stuffing (you can order via the contacts indicated below), 200g packet whole cooked chestnut, zest of 1 lemon, 15g packet flat-leaf parsley finely chopped, 85g fresh bread crumbs

For the turkey: 1 onion quartered, 2 lemons quartered, 10g thyme sprigs, 5.6kg Nightingale turkey (you can order via the contacts indicated below or your nearest retail supermarket), 85g soft butter, 1 whole nutmeg, 10 rashers Farmer’s Choice streaky bacon, 125ml white wine

METHOD First make the stuffing. Fry the onions in the butter for 10 minutes, until golden. Cool, then mix with the Farmer’s Choice stuffing, chopped parsley, lemon zest and bread crumbs. Roast and chop your chestnuts and add to the mix. Season well.

Set aside half of the stuffing. Line a greased 500g loaf tin with bacon and half of the stuffing then bring the rashers round over the top and secure in place with cocktail sticks. Chill until ready to cook. Prepare the turkey. The night before, put the onion quarters, lemon halves and thyme sprigs in the cavity between the legs. Pack the reserved stuffing into the neck end. Secure the neck skin with skewers and tie the legs together. Weigh the turkey. Calculate the cooking time at 40 minutes per kilo, plus 20 minutes.

Put a large sheet of extra-wide foil in a large roasting tin and put the turkey on top. Smear the breast with the butter, then grate over half of the nutmeg and season well. Cover with bacon, then pour over the glass of wine. Seal the foil well to make a parcel. Chill overnight.

One the day, take the turkey out of the fridge 1 hour before roasting. Heat oven to 170 - 180°C. Put the turkey in the oven; then, 90 minutes before the end of cooking, remove foil and bacon and drain off the juices from the tin to use in the gravy. To test whether the turkey is cooked, push a skewer into the thickest part of the thigh -- the juices should run clear. If they are pinkish, cook for 15 minutes more and test again.

Transfer the turkey to a platter, cover with foil and let it rest for at least 30 minutes before carving. Meanwhile, cook the stuffing in the loaf tin for 30 minutes and reheat the bacon. BACON BRUSSEL SPROUTS INGREDIENTS 1/4 kg sliced bacon 1/4 cup butter 2/3 cup pine nuts 1 kg brussels sprouts cored and shredded 3 green onions, minced 1/2 teaspoon seasoning salt pepper to taste

METHOD Place bacon in a large, deep skillet. Cook over medium-high heat until crisp. Drain, reserving 2 tablespoons grease, crumble bacon and set aside.

In the same skillet, melt butter with reserved bacon grease over medium heat. Add pine nuts, and cook, stirring until browned.

Add brussels sprouts and green onions to the pan, season with seasoning salt and pepper. Cook over medium heat until sprouts are wilted and tender, 10 to 15 minutes.

Stir in crumbled bacon just before serving.

ROASTED SWEET POTATOES INGREDIENTS 4 small orange sweet potatoes 1 tbsp olive oil 1 medium red onion thinly sliced 2 tsp balsamic vinegar Salt and black pepper 2 garlic cloves minced Sprig of rosemary chopped

METHOD Preheat the oven to 180°C. Dice the sweet potatoes, place on a baking sheet with minced garlic and rosemary, drizzle with olive oil and roast for 40 minutes, or until potatoes are tender.

Meanwhile, heat the olive oil in a medium skillet. Add the red onion, cover and cook over low heat, stirring a few times until caramelized, about 15 minutes. Remove from the heat and stir in the vinegar; season with salt and pepper. Toss red onion into baking sheet with potatoes and serve.

NO DRIPPINGS GRAVY INGREDIENTS 2 tablespoons flour 1 cup broth 1 tablespoon milk 4 tablespoons butter 1 onion salt and seasoning to taste.

METHOD Chop up the onion. Melt the butter in a large pan. Fry the onion in the butter until it has browned lightly, roughly for 5 minutes.

Mix in flour and allow to cook for a minute before pouring in the stock.

Let the mixture sit for five minutes until it has thickened, then add in the milk, salt and seasoning to taste.

Allow to boil and serve hot with your Christmas turkey and choice of starch.

CHRISTMAS FRUIT CAKE INGREDIENTS 225g self raising flour 110g butter 110g sugar 225g mixed dried fruit 1 egg 5 tbsp milk 1 tsp mixed spice (optional)

METHOD Rub the butter into the flour until it looks like fine breadcrumbs, add sugar and dried fruit and mixed spice, if using.

Add egg and milk to make a soft dropping consistency.

Put into lined 2 lb loaf tin or 6� round cake tin. Sprinkle demerara sugar over the top and pat down with the back of a spoon (this gives a nice crunchy top) and bake for approximately 1 to 1 hour and 25 minutes in a preheated oven at 180 degrees Celsius until a skewer comes out clean.

‘TIS THE SEASON Annabel Onyango struggles to get into a festive mood this festive season but finds solace in a glass of wine and a great holiday season wine offer from The Wine Shop.

T

he holiday season always comes as a time of reflection. As we wrap up another year, I find myself thinking about all that’s come to pass in 2016. I suppose I’m expected to write about how blissful the year has been, how perfect life is, how much I love everyone and can’t wait to see them, things that go against how you’re supposed to feel during the holiday season. Seasonal joy is something I’m going to have to dig deep to find this year. My challenges in the past twelve months have seemed insurmountable. From personal life tragedies, work struggles, to health scares and even global current affairs; the stresses

have mounted, reaching their climax right in time for the festivities. As the Wine Chic(k) I should probably insert something about how wine has been my saving grace through everything. Well, I’m happy to report that it truly has! That calming glass of wine at the end of a tough week often feels like it’s the only thing that will get me through. That’s why this year, I will be gifting myself a Wine Advent Calendar from The Wine Shop. For the 24 days leading up to Christmas there’s a different bottle to pop open and pass around the room. There are premium wines carefully curated from all over the world including: Argentina, New Zealand, Spain, France, and the US, to see you and your loved

ones through the holidays. I’m currently debating with my husband about whether or not to get a Christmas tree. I cite many excuses for not getting one: there’s isn’t space in the house, I don’t have the time to look for a good one, I only like white ornaments and we don’t have enough, etcetera, etcetera. In my current state of mind, it’s hard to visualize a perfect Christmas with presents glistening under the tree, the fresh smell of baking, carols resounding through the day, the halls decked with boughs of holly and the cheerful clinking of glasses. If those cosmetic elements don’t fall into place this year, the real value of Christmas – strength for today

and bright hope for tomorrow – will always be lodged somewhere deep inside me. Hallmark holidays (Christmas, Valentine’s Day, Mother’s Day etc.) can be a challenge when you’re not necessarily in the mood to join in on the careless joviality that fills the city streets. Although I’m not in a frame of mind where I’ll be belting out Christmas carols or decking the halls, I’m grateful for my glass of wine at the end of the day and a time of reflection. THIS IS WESTIE Jackson Biko is no stranger to Nairobi nightlife. We get a peek into one of his nights out with an old friend in Westlands.

Only the beautiful and the favoured walk in Westlands after 11PM,” I tell Tony. He’s my long chum from back in the day. He went to the States 16 years ago, when we had no hair on our chins, were idealists and were sure that we would eventually hold life by its cojones. He disappeared for a decade in midwest America, surfaced a few times after that, and is now back to visit; a citizen, married then divorced with an ugly McDonald’s paunch and an accent I can’t stand. We are standing right outside the Equity Bank building on the (in) famous Electric Avenue. It’s hurtling towards midnight and Tony is smoking while we watch the throng of cars, Ubers, taxis and posh vehicles spew out girls and women with glitter on

their cheeks and men with skinny jeans and college jackets. Small frail girls hang from the arms of bewildered expats barely believing their luck. There is laughter in the air. There is no way you can say the economy is a mess when you stand here. You can’t convince anyone that there is no money in circulation. This right here is the home of happiness. “Do you know anyone who can score some weed?” Tony asks, as our eyes follow this girl who is miraculously walking in the highest and clearest heels in the history of heels. She looks like a giraffe with culture. I retrieve my phone from my pocket and call this photographer pal of mine who knows people who sell weed. He doesn’t pick. “Is Havana still the place to be?” Tony asks. I shrug, “Depends on who you ask”. We stand

there, watching a snazzy Porsche coupe crawl along the street driven by an Asian girl with red lipstick. In the passenger seat, staring out at us without looking at us, is another Asian girl with red lipstick. Tony crushes his cigarette butt under his soles and sighs loudly, “I need a drink. Ebu call her again”. I call his college sweetheart and hand him the phone. “Where are you?” he growls. He hangs up, lights another cigarette and we walk to The Alchemist on Parklands Road. The Alchemist is full. At the entrance is a mzungu with long dirtylooking dreadlocks telling a pointie girl with numerous bangles on her wrist in a heavy British accent to, “Please make up your mind, luv?” Luv is nonplussed, or too high to answer. We sit at the bar. “Do you accept Mastercards?” Tony asks the barman

and I scold him for half an hour about that. Do we accept Mastercard? No we don’t accept Mastercard here, we accept cowrie shells and spearheads, you idiot! What. The.F**k? I only stop when his college sweetheart rocks up. She has two small strands of hair on her chin (I swear I’m not making this up). She’s stunning as morning dew but she has hairs on her chin. I spend the whole night resisting the urge to pluck those two strands of hair. On the stage, a band plays. Tony is smoking and laughing. His college sweetheart is rubbing the back of his neck and drinking mojitos. The beautiful and the favoured. This is Westlands, the wasteland of debauchery.

WALKER FESTIVAL Sam Rabadia, the founder of Tapas Cielo bar in Mombasa was born in Kenya and grew up in London where he studied design and architecture. Sam came back to Kenya when he was a member of the team consulting on the construction of English Point Marina. While working on this project, Sam and his team would often go into Mombasa during the evenings for a drink. It was here that Sam and his friends noticed there weren’t many places to go out to at the time. They struggled to find bars that had consistent food, drinks and service. One night, Sam’s friends insisted he start his own bar after a subpar night out and a few drinks later, Sam agreed. The next morning, Sam searched Mombasa for a location to begin construction of his bar. In mid-July of 2014, Tapas Cielo’s

opened it’s doors. When they opened, their menu offered international tapas (small bitings), cocktails and other drinks. Since then, tapas and cocktails have been the focal point of Tapas Cielo’s offering although their food menu has now expanded. At the time of construction, East African Breweries Limited (EABL) were scoping Mombasa for bars to partner with. They liked what they saw in Tapas Cielo and the partnership between the two was born. Through this partnership, EABL helped train and continue to train the Tapas Cielo bar staff and mixologists. Tapas Cielo has a cocktail menu that’s 32 pages long and changes yearly

depending on global trends and sales of drinks. “The support from EABL is very helpful” says Sam of their partnership, he mentions that any starting business appreciates help where they can get it. Today, Tapas Cielo is a booming bar which attracts a mature, older crowd daily. Tapas is open on weekdays from noon to 3AM and on weekends from noon to 4AM or 5AM. This year, from December 11th to January 1st Tapas Cielo will be the flagship bar participating in the Walker Festival. This festival will celebrate scotch whiskies and feature a different Kenyan DJ every evening with drink specials on Johnnie Walker, Singleton

and Bulleit Bourbon. If you’re in Mombasa over the holiday season, you don’t want to miss this party! Stop by Tapas Cielo any evening between December 11th and January 1st and catch an epic party with great drinks.

I remember visiting Malindi for the first time as a child in the 1980’s. Two memories still remain vivid: the first was the Malindi Marine Park, where we spent hours snorkeling above vivid displays of coral forests, fluorescent clown fish and neon tetra; the second was perching on a rickety bench outside Bawaly’s at 4PM (the witching hour) devouring what felt like, a ton of freshly made cardamom spiced halwa brimming with chopped nuts. It felt like heaven then, much like it does now. Malindi’s grown quieter, a little sleepier, but still oozes Swahili warmth, eternal sunshine and boasts some very chic places to eat, stay and play.

We discover how this stylish seaside town offers the perfect combination of Swahili flavour and Italian Chic. Get some of the freshest selection of seafood at Old Man and the Sea on Silversands Street. Established in the 1990’s in a century old colonial building, this restaurant has oodles of character. Think candlelit tables, fine cutlery and the home of the delectable Malindi Smoked Sailfish. Just a stone’s throw away is I Love Pizza; an obvious name for what this joint serves up best, plus a really good selection of fresh pastas and a lot of choice for vegetarians. Further up along Casuarina road is an idyllic lunching spot and my personal favourite, Rosada Beach. Perched along a perfect stretch of white sand, this Italian restaurant and beach club is home to perennial Italian vacationers, whose love for the sun has turned skin from shades of delectable caramel to leathery brown. Melanin aside, Rosada’s is a popular establishment even for local Italians and judging by the quality of seafood, pizzas and pastas served up, it’s not surprising. Once lazy lunching is over, we love to head to Oasis Gelateria for some homemade Italian gelato. The choice of flavours can be overwhelming but my personal favourites are the Nociola (Hazelnut) and Amaretto (Almond liqueur). After that, if you’re not already in a food coma, head to Bawaly’s Halwa Shop on Odinga Street by 4PM, when gigantic trays of hot halwa are laid out and served up or packed by the kilo. Don’t expect to be hankering for any dinner after!

We stayed at the expansive Ocean Beach Resort and Spa, just a 25 minutes drive from Malindi airport, rickshaw traffic permitting! A stunning property, where the amenities and hospitality is as generous as the space itself. Even the standard rooms are 50 sq meters and all the rooms have an open patio that flow out onto a lush lawn facing the ocean.

For the more adventurous beach tourist, head to Che Chale. Just a 30 minute drive from Malindi, it’s arguably one of Kenya’s top kitesurfing destinations. This secluded beach lovers paradise offers loads of activities from kayaking and dhow sailing to deep sea game fishing. On Friday and Saturday nights, Malindi picks up the pace if just by a fraction. For bar hopping tourists, start the evening with a tipple at Karen Blixen, where they have a decent wine list. Then, head upstairs to Fermentos Bar to shake some booty. The music can be hit or miss with a range of Deep House and Techno to 80’s and 90’s classics but hopefully by then, you would have drank enough for it not to matter. Malindi’s Stardust Nightclub is a great place to end the night, just a stone’s throw from Fermentos with an uber kitsch vibe. Think Miami Vice meets Florida 2000!

Like most seaside tourist towns, most activity and goings on revolve around the beach and the water. Nevertheless, thanks to the strong Italian influence in Malindi town, there are a handful of galleries and shops that are worth a visit; White Elephant is one of these. The resort is home to the Italian Malindi-based artist, Armando Tanzini’s magnificent gallery space. Here you’ll find the exceptional skill of Malindi artisans and wood carvers come together with Tanzini’s fierce design skill and artistic sensibilities. Larger than life sculptures of elephant heads and intricately carved furniture come together in this surreal space. An hours drive from Malindi is the Marafa Depression, a stunning geological formation that’s the closest thing to the Grand Canyon in Kenya. Millions of years of wind and water erosion have left a series of sandstone canyons in their wake which are particularly magical at sunset when the various layers of earth catch the sun’s warm light. A great day trip especially when you pack some beer and wine to enjoy at sundown.

As a fully fledged tourist town, Malindi has many other accommodation options.
