1- Introduction First we chose a recipe from one of the Commonwealth countries for our English optional subject. Then we found information about the country and the recipe on the Internet. Every group of two or three people baked the food of the recipe we had chosen. The next day we presented our recipe to the class (ingredients, method...). We also brought the food so that all the students and some lucky teachers (or unlucky, depending on the recipe) could taste it. Finally, we recorded a video while we were baking the food that was later given to the teacher. All the groups were given different dates to bring the food so that the food would not be tasted on the same day, but for two and a half months. We started the project on the 8th April and finished it on the 3 rd June. All the students and the teacher enjoyed this project. We would like to do it next year!

FAIRY CAKES A fairy cake is a light little bun with icing and cream butter in it. They're widely popular in the UK. Prep Time:10m Cook Time:18m

INGREDIENTS •

3 ounces bittersweet chocolate, finely chopped (I used Ghirardelli 60% cacao bittersweet chocolate, you could also use semi-sweet. Just make sure you use a good quality chocolate).

1/3 cup unsweetened cocoa powder

3/4 cup hot water

3/4 cup bread flour (you may sub all-purpose flour, your cupcakes will just be a little more dense)

3/4 cup sugar

1/2 teaspoon table salt

1/2 teaspoon baking soda

6 tablespoons vegetable oil

2 large eggs

2 teaspoons vanilla extract

2 teaspoons white vinegar

2 Oreo cookies per fairy cake (36 cookies – one for the cupcake itself and one for garnish)

FROSTING INGREDIENTS • •

5 tablespoons all purpose flour 1 cup milk

1 and 1/2 teaspoons vanilla extract

1 cup butter, softened

1 cup granulated sugar

1 cup crushed Oreos (I used my food processor to crush about 1012 Oreos)

DIRECTIONS 1. Pre-heat your oven to 350 degrees. Line two fairy cake pans with 18 paper liners.

2. In a large bowl, combine chopped bittersweet chocolate, cocoa powder, and 3/4 cup hot water. Whisk until the mixture is smooth and all of the chocolate has melted. Place this mixture in the refrigerator to chill for about 20 minutes.

3. In a large bowl combine flour, sugar, salt, and baking soda.

4. When the chocolate mixture has cooled, whisk in 6 tablespoons vegetable oil, 2 large eggs, 2 teaspoons vinegar, and 2 teaspoons vanilla extract.

5. Combine the dry ingredients with the wet and whisk until all of the ingredients are incorporated together. 6

6. Place an Oreo cookie on the bottom of each cupcake liner.

7. Pour batter over each cookie and fill each cupcake liner about 3/4 of the way full. You should get about 18 fairy cake.

8. Bake for 17-18 minutes, or until a toothpick inserted into the center of a fairy cake comes out clean.

9. Cool on a wire rack. 10. While the cupcakes are baking, prepare the frosting. In a small sauce pan combine 5 tablespoons flour with 1 cup cold milk. I used 1%. Stir and whisk the mixture constantly over medium low heat until it becomes really thick. Place this mixture in the refrigerator or freezer for about 10 minutes so that it cools completely. When the flour/milk mixture has cooled completely, cream together butter and sugar with your mixer. 11. When the sugar is well incorporated into the butter, add in vanilla and mix for 30 seconds longer. Add in the thickened milk/flour mixture and mix on low for about 30 seconds. Then turn the mixer to high and mix for about 3 minutes, or until the frosting is light and fluffy, much like whipped cream. If the consistency isn’t like whipped cream, keep mixing! Add in 1 cup crushed Oreos and mix for about 30 seconds. 12. To frost the cupcakes, place the frosting in a ziplock bag, snip the corner, and pipe frosting onto each cooled cupcake. Top with an additional Oreo for garnish.

H OT CROSS BUNS Hot cross buns are traditionally made and eaten in the UK at Easter time.

There’s also a popular nursery rhyme for them:

Ingredients: For the buns: 300 ml of Milk 1tsp. sunflower oil 50g of butter 1 egg 500g of flour 1tsp. of salt 9

For the glaze: 3tsp. apricot jam

Water Sugar

Method: Bring the milk to the boil, then remove from the heat and add the butter. Leave to cool until it reaches hand temperature. Put the flour, salt, sugar and yeast (see Tip, below) into a bowl. Make a well in the centre. Pour in the warm milk and butter mixture, then add the egg. Using a wooden spoon, mix well, then bring everything together with your hands until you have a sticky dough. Tip on to a lightly floured surface and knead by holding the dough with one hand and stretching it with the heal of the other hand, then folding it back on itself. Repeat for 5 mins until smooth and elastic. Put the dough in a lightly oiled bowl. Cover with oiled cling film and leave to rise in a warm place for 1 hr or until doubled in size and a finger pressed into it leaves a dent. With the dough still in the bowl, tip in the sultanas, mixed peel, orange zest, apple and cinnamon. Knead into the dough, making sure everything is well distributed. Leave to rise for 1 hr more, or until doubled in size, again covered by some well-oiled cling film to stop the dough getting a crust. Divide the dough into 15 even pieces (about 75g per piece – see Tip below). Roll each piece into a smooth ball on a lightly floured work surface. Arrange the buns on one or two baking trays lined with parchment, leaving enough space for the dough to expand. Cover (but don’t wrap) with more oiled cling film, or a clean tea towel, then set aside to prove for 1 hr more.

Heat oven to 220C/200C fan/gas 7. Mix the flour with about 5 tbsp water to make the paste for the cross – add the water 1 tbsp at a time, so you add just enough for a thick paste. Spoon into a piping bag with a small nozzle. Pipe a line along each row of buns, then repeat in the other direction to create crosses (see Tip below). Bake for 20 mins on the middle shelf of the oven, until golden brown. Gently heat the apricot jam to melt, then sieve to get rid of any chunks. E TON M ESS This dish is traditionally served at Eton College's annual cricket game against the pupils of Harrow School. The dish has been known by this name since the 19th century. Ingredients: 250 ml cream 400 gr of strawberries 75 gr sugar 100gr of dried meringues

Method:

First we need to clean the strawberries, cut them and leave half of them to decorate the end. Meanwhile, we make the cream and break the meringues into pieces.

Then mix half the strawberries with meringues, cream and

Ingredients: •

2 cups all-purpose flour, or 2¼ cups pastry flour, sifted

½ cup granulated sugar

1 Tbsp baking poder

½ tsp salt

1 cup whole milk

1 tsp pure vanilla extract

1 large egg (or 2 medium)

4 Tbsp butter (½ stick) or shortening

Method (thermomix): Preheat oven to 400° F.Combine the flour, baking powder and salt. Unwrap the butter and heat it in the microwave, in a microwave-safe bowl, for about a minute, until it’s thoroughly melted. Set it aside at room temperature to cool, but don’t let it solidify again.

Beat the eggs in a separate bowl and then add the sugar, milk and vanilla to the eggs.

Thoroughly grease and flour a muffin pan (or use paper muffin liners). Pour a tiny bit of the melted butter into the egg-vanilla-milk mixture and stir it in. Repeat 3-4 more times, adding a slightly larger amount of the liquid butter each time until it is all incorporated. IMPORTANT: Don’t add hot melted butter to the egg mixture as the heat from the butter would cook the egg, and that’s not what you want to do! Add the liquid ingredients to the dry ones and mix no more than ten seconds. The batter should be visibly lumpy, and you may see pockets of dry flour. That’s OK! It’s extremely important not to overmix the batter, or the resulting muffins will be too hard. Gently pour the batter into the prepared muffin pan and bake immediately. TIP: The dry and wet ingredients, respectively, can be mixed in advance, but as soon as the wet and dry ingredients have been combined with each other, the liquid will activate the baking powder and the batter must be baked right away. Preheat oven to 190 째 C (moderate temperature). Line a baking sheet with parchment paper. In a bowl, sift together the flour, ginger and bicarbonate. Cut the butter into small pieces and mix with the flour to form lumps. Add the sugar. Whisk together honey with egg and add to flour mixture. Knead with hands until dough is smooth. Roll out the dough on a floured surface to achieve an inch thick. With a cutting for cookies. Decorate with raisins, nuts or chocolate chips. Bake for 15 minutes, until golden. Cool on a wire rack.

FLUFFY PANCAKES These are the best pancakes you’ll ever enjoy! They are one of the most typical dishes from Canada. This Fluffy Pancakes will melt in your mouth and they are really easy to prepare.

INGREDIENTS TO MAKE 16 PANCAKES: 1 tablespoon baking powder 1 pinch of salt 1 teaspoon of white sugar 2 big eggs (beaten) 30 grams of butter 300 ml of milk 225 grams plain flour Butter for frying

METHOD The easiest method to make pancakes is: -First, we put all the ingredients in a blender, and mix it. But if you don’t have a blender, you can mix it in a bowl with your hands. Make a little hole on the flour, put the baking powder, the salt and the sugar. Than beat the eggs, the butter and the milk. Finally, put all this in a jug. -Heat the pan. -Then cook the pancakes like creeps, you can make them big or little. -Pay attention to the heat they burn fast!!

FRITTERS INREDIENTS 625 grams of flour 150 grams of sugar 7 grams of salt 15 grams of anise (may be in powder or grain) 65 grams of fat or butter 4 eggs lemon peel 12 g 35 g of yeast pressing 250 ml of warm milk. METHOD Make pressed dough with the flour, sugar, butter, yeast and salt. Prepare an infusion of anise or anise in a quarter of a litter of milk. Optionally, you can add about 10 grams of coriander ½ cinnamon stick. Strain the infusion and incorporate while still warm, so they mix better. Then add the lemon peel and a 10 cl and 10 cl water Grenache. If we add Grenache and water is very important deduct them from the total weight of the milk or the mixture will be watery. Don’t knead but incorporate the eggs one at a time until you have dough and let stand in a warm place with no air flow. In two hours, it will have doubled in volume. With wet hands or floured, so the dough does not stick, make balls the size of a doughnut. In a pan, heat the oil. 24

Caramel Shortbread Ingredients: 225g plain flour 175g unsalted butter, cold, cut into cubes 75go caster sugar 150g butter 379g can condensed milk 100g golden syrup 350g dark chocolate, or a mixture of dark and milk, chopped into small pieces Method: 1.Preheat the oven to 150C/300F/Gas 2. Line a 23cm/9in square cake tin with baking parchment. 2.Combine the flour and butter cubes in a food processor and pulse until the mixture resembles fine breadcrumbs. (Alternatively, you can rub the butter in by hand.) 3.Add in the caster sugar and pulse again until combined. 4.Tip the mixture into the lined cake tin and spread it out evenly with the back of a spoon. Then press the shortbread down firmly with your knuckles so that it is tightly packed in the tin. 5.Bake the shortbread for 30 minutes or until very light golden brown. Set aside to cool. 6.Meanwhile, for the topping, heat the butter, condensed milk and golden syrup in a saucepan, stirring occasionally until the butter is melted and the mixture is smooth. 27

7.Increase the heat and bring the mixture to the boil, stirring frequently. The caramel will thicken and turn golden-brown. Set aside to cool slightly, then pour over the cooled shortbread. Allow to cool completely. 8.Melt the chocolate in a bowl set over a pan of simmering water (ensure that the bottom of the bowl does not touch the water), stirring occasionally. 9.Pour the melted chocolate over the caramel and set aside until the chocolate has cooled completely. 10.Cut into squares and serve. Ingredients: 125g butter, softened 1 cup caster sugar 1/2 teaspoon vanilla extract 3 eggs 1 3/4 cups self-raising flour, sifted

Method: Step 1 Preheat oven to 180째C/160째C fan-forced. Grease a 3cm-deep, 20cm x 30cm (base) lamington pan. Line with baking paper, leaving a 2cm overhang on all sides. Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add eggs, 1 at a time, beating well after each addition (mixture may curdle). 29

Step 2 Sift half the flour over butter mixture. Stir to combine. Add half the milk. Stir to combine. Repeat with remaining flour and milk. Spoon into prepared pan. Smooth top. Bake for 30 minutes or until a skewer inserted in centre comes out clean. Stand in pan for 10 minutes. Turn out onto a wire rack. Cover with a clean tea towel. Set aside overnight. Step 3 Make icing: Sift icing sugar and cocoa into a bowl. Add butter and boiling water. Stir until smooth. Step 4 Cut cake into 15 pieces. Place coconut in a dish. Using a fork, dip 1 piece of cake in icing. Shake off excess. Toss in coconut. Place on a wire rack over a baking tray. Repeat with remaining cake, icing and coconut. Stand for 2 hours or until set. CHOCOLATE TRUNK Chocolate Trunk is a really known Christmas sweet in Malta. It’s a creamy roll, and it’s very rich with chocolate. Maybe, is the most delicious thing you can ever taste. At Christmas, all families prepare this delicious recipe for breakfast. It’s very easy to make. And if you want to know how to make it, just keep reading! First, you need to prepare the ingredients: For the cake, you will need: -6 separated eggs -150 g of fine white sugar -60 g of coconut powder -200 g of black chocolate (finely chopped) And, for the filling you will need: - 300 ml of cream - Some icing sugar - A few drops of vanilla extract - Coco powder - Also, you need a baking sheet to prevent the cake from sticking. Now you are ready! Let’s start!:

Start melting the dark chocolate in a water bath. Meanwhile, you can start beating the egg yolks and the white sugar until the mixture is soft and creamy. Now, it’s time to add the melted chocolate, and mix it well. Put it aside, and start beating the egg whites until it forms firm picks. Next, start adding the previous chocolate mixture to this one. And lastly, add the coco. 33

And the last step is to pour the mixture into the tray lined with baking paper and spread it evenly to the edges. While is baking in the oven at 180º for 25 minutes, we can make the filling. To start, we are going to beat it until it’s firm (if you want you can add some vanilla extract). And the latest thing, take the cake and spread on it the cream. 2-The Recipe Ingredients: 4 large egg whites at room temperature 1 cup of Castor sugar, also known as "Berry sugar" 1 tsp of white vinegar 1/2 Tbsp of cornstarch 1/2 tsp of pure vanilla extract 1/2 cups of whipping cream Fresh fruit such as strawberries, raspberries, kiwi fruit, passionfruit, bananas and blueberries 1 Tbsp fresh lemon juice

Method: Preheat the oven to 275F (140C) and place the rack in middle of the oven. Line a baking tray with foil and draw a 7 inch circle on the foil with the blunt edge of a knife (don't tear the foil). Set aside. Bake the meringue for about 1 hour and 15 minutes or until it goes a very pale, pinkish egg shell color. Turn the oven off and leave the door slightly ajar to let the meringue cool completely. As the meringue cools, it will crack slightly.

Gently spread the cream to the top of the meringue with a spatula and arrange the fruit on top.

Carrot Cake Ingredients: 4 eggs 1 cup chopped pecans 1/2 cup butter, softened 8 ounces cream cheese, softened 4 cups confectioners' sugar 1 teaspoon vanilla extract 3 cups grated carrots 1 cup chopped pecans 1 1/4 cups vegetable oil 2 cups white sugar 2 teaspoons vanilla extract 2 cups all-purpose flour 2 teaspoons baking soda 2 teaspoons baking powder 1/2 teaspoon salt 2 teaspoons ground cinnamon

Method: 1-Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. 2-In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan. 3-Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. 4-To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

Ingredients (for 6 people): 1 l milk 8 egg yolks 10 big spoons of sugar (6 for the cream, 4 for the caramel) The grated rind of a lemon 1,5 to 2 big spoons of corn flour Material: 6 bowls to serve the cream. A griller. A strainer. Method: In a saucepan, heat the milk with 4 spoons of sugar and the lemon grated rind. 41

In the mean time, whip the 8 yolks with 2 sugar spoons and the corn flour (It is better to sieve it first to avoid lump formation). Use a mixer fitted with a whip attachment to whip it since the lumps disappear. When the milk is starting to boil put it on a low flame. Add a single ladle of hot milk to the yolk mix. Add it slowly to avoid that it curdles. Mix it and then add the yolk mix to the boiling milk (again, make it slowly to avoid it curdle). Cook it at a very slow flame during at least 5 minutes stirring it all the time with a wooden spoon. Strain the cream and pour it in a big bowl or 6 (more or less) small bowls and let it cool down. It must be on the fridge at least for 1 h. Prior to serve, sprinkle the cream with sugar and, using the griller, burn the sugar to form caramel (just a little bit, until a little smoke is formed). Don’t do this earlier than 45 minutes before serving, for the caramel would melt with the cream. Míriam
