t’s been a whole year since we last caught up with Neighbours star Olympia Valance and the drama is as hot as ever on Ramsay Street. Her character Paige has become a mother to son Gabe, but his dad Father Jack is off the scene. After pairing her friend Elly with Mark, Paige fights her feelings, but she can’t deny he’s her crush. If that wasn’t enough, there’s a murder mystery to deal with and missing sister Piper fights for her life, lost in the outback. Poor Paige! “I think Paige is quite resilient,” says Olympia. “She’s been through a lot in her life. She’s almost got married and had a baby in a shack. Whatever happens, she’ll be OK.” Away from Ramsay Street, the rumour mill has been churning about Olympia’s secret dates with One Direction heart-throb Niall Horan after she posted a picture of them on Instagram. “We are quite close. I see him when I come to London and he sees me when he’s in Oz,” Olympia explains. “We’ve known each other for a couple of years now. He spends a lot of time in Australia with his cousins.” Here, the actress, 24, chats to TV Life about Neighbours, beauty secrets and visions of a soap-free future… How is Paige dealing with motherhood alone? coping with her relationship with Mark. It’s the happy family he always wanted and he finds it hard to watch that from afar. Paige and Mark have had their hurdles, too. They’re finally together, but there was a love triangle with her friend Elly. Mark’s in trouble, too, isn’t he? That’s right. Hamish has been found murdered and Mark is a suspect. Paige and Gabe are the last thing on his mind at the moment. He’s really worried that he might go to jail. He’s keeping Paige in the dark and that has a bad affect on their relationship. Is there any more drama to come? Oh yes. Paige’s sister Piper is pushed off a boat and almost dies. It’s such a good episode. We’ve been out to the location with the crew. It’s down the coast in Victoria. It’s so beautiful, despite Piper being on the verge of death. Are you at all similar to Paige? After being here for four

years, my character can morph into me sometimes. I watch myself on screen, but I’m so not ready to have a child. I’m happy being single and I don’t want to get married yet. Our lives aren’t similar at all. You’ve become an auntie again. Doesn’t that make you broody? It’s such great news, but Holly is at a very different point in her life. I’m only 24. I’ve got too much to do before I take that step. Is it true that you might leave Neighbours and head for Los Angeles? Of course I think about the future and challenging myself with something else. If it were to happen, I’d love to film something that wasn’t a soap. But at this stage I’m loving my job. I don’t want to leave. If and when the time comes, what would you like to happen to Paige? I’d like to have a happily ever after. She’s been pushed around by the men in her life. The only true happiness she’s felt is when she had her child. It would be nice to see her with a man that could love and protect her, whether that’s Mark or Jack or anyone! What are you up to in your personal life at the moment? I’ve just been on holiday. I’m having a chill time right now as my job gets quite exhausting. I’ve planned a few more holidays for the end of the year. I’m resting up now but I hope next year will be a massive year for me. What beauty products do you swear by? MAC Face And Body Foundation. I carry it with me everywhere. It’s so light and gives me a natural look. What are your go-to cosmetics? Lip gloss and moisturiser. I always like my skin to look dewy and – I hate this word – moist. I have a huge make-up kit. It’s ridiculous how much I travel with – hundreds of brushes, mascaras and lipsticks. I use them all.

Do you wear make-up every day? I get a full face of make-up every day because I work in television. If it’s just a normal day, I’ll put a bit of MAC Face And Body Foundation in my hands and apply it like a moisturiser. When I’m on holiday, I hardly wear any make-up at all. It feels so good. What’s your top beauty tip? I have a trick that I use if I get pimples. I learnt it by watching drag make-up. If you create little dots over them with an eyebrow pencil, they look like freckles instead. Do you diet? I have to keep to a routine because I’m on TV. I love feeling healthy. I eat a well-balanced diet but I’m a huge foodie, too. I will treat myself now and then. How do you stay in shape? I go to the gym. There’s a place called F45 in Australia. There’s one in London Bridge apparently. I use the app to choose a time and smash out a 45-minute session. Is there a part of your body you would change? Probably my hands. I have chubby fingers. My sister Holly has beautiful, dainty fingers. Mine are rough and stumpy.

Celeb chat Would you ever consider going under the knife and having cosmetic surgery? Maybe when I get old and wrinkly, but at this stage, no. What’s your signature fragrance? My go-to perfume is Coco Mademoiselle by Chanel. Which women do you think are naturally beautiful? The most beautiful woman I know is my mother. She’s so beautiful on the outside, and even more beautiful on the inside. She’s the most generous, kind, giving person I know. If I turn out like her, I’ll be a very lucky lady. If you had to describe your style, what would you say? If I’m on the red carpet, I like a daring and dramatic look. I like to take risks. My everyday style is classic. Do you have a favourite shop that you turn to when it comes to buying clothes? I always get overwhelmed when I go into the high-street stores. I bought a jumper from H&M while I was in Greece this year. Instagram went wild for it. It was £10! What about designers? I really love what Gucci’s doing at the moment. I also love the classic style of Chanel. The pieces I buy I will keep forever. Who are your style icons? My number one is Olivia Palermo. She finds the perfect balance between being original and creative while remaining effortlessly chic. I also love Monica Rose, the stylist. She uses lots of brands that people don’t know about. Have you had any fashion disasters you can tell us about? There was one in the UK on the red carpet. You could see my boob tape. It was a bit embarrassing but I didn’t care too much. It could have been much worse. How do you pamper yourself when you get time off? I like to go to the Crown casino in Melbourne. Me and my girlfriend go to the spa for a massage and a facial, have lunch at Nobu then watch a movie at the cinema. What’s your favourite hairstyle? An effortless beachy wave. It’s really, really hard to achieve. My hairdresser in Melbourne, Lauren Mackellar, nails it. I try to do it myself and it’s impossible. Describe your style… Casual with an edge. Which colours and shapes suit you best? Black is my signature, but I embrace vivid colour in the summer, especially tropical prints, and I like my accessories to be colourful. Style-wise, I prefer body skimming and fitted shapes. What do you think of your character Alya’s wardrobe? I really like it. She did fashion at university so she’s got a great eye. Also, because she’s so determined to make it as a businesswoman in the fashion world, she wears fantastic statement accessories and quite edgy styles. She is much bolder than I am in her clothes choice, but I like that because she’s so different from me. Have you any particular favourite pieces from Alya’s wardrobe? She has some lovely, unstructured silky jackets in soft, feminine colours but I’m not so fond of her A-line skirts. Which is your favourite era when it comes to fashion? Definitely modern-day because you can mix contemporary pieces with elements from other interesting periods.

Do you have any favourite highstreet brands? Topshop – for my high-waisted Joni jeans – plus Zara, New Look and River Island. Who is your favourite designer? I’m not really into designer fashion, although I do love Zadig & Voltaire for their studded accessories and leather jackets, plus Tom Ford for sunglasses. If I’m splashing out, it would be Rag & Bone, and if money were no object I’d go to Céline. Do you have a style icon? Zoë Kravitz. She always looks phenomenal on the red carpet – effortlessly chic with an edge. What is your best beauty secret? Good skincare. My favourite brand is Rodial. All the sales staff know my name in Space NK. Are you a hoarder or do you clear out your wardrobe each season? I’m a terrible hoarder. It’s a trait I’ve inherited from my mum. All my wardrobes are filled to bursting and I have clothes scattered all over the place. Are you a fan of vintage? I don’t consciously look for vintage, but if I spot something I like which has been pre-loved, then I’ll buy it. How many shoes and handbags do you own? About 60 pairs of shoes and about 30 handbags. My favourites are my Bottletop bags, made from recycled bottle-tops, which generate funds for good causes in Africa and Brazil. One day I’ll probably buy a designer handbag but I don’t have the urge right now. Have you any good pieces of advice about fashion? Wear the clothes, don’t let the clothes wear you. Looking good is all about feeling confident. Is there an “old favourite” you turn to in a wardrobe crisis? An oversized, black, vintage mohair coat by Murray Brothers of Scotland.

If in doubt, I’ll dress top-to-toe in black and wear the coat on top. How much do you spend on clothes each month? From £50 to a few hundred pounds. It really varies. What is the most expensive item in your wardrobe? And your best bargain? My studded Sandro jeans, which fit like a glove and cost a few hundred pounds, are probably the most expensive. My best bargain is an Adidas T-shirt. I wear it all the time so I’ve definitely got my money’s worth. What is the oldest item in your wardrobe? A Fred Perry jacket I bought when I was 17. It cost about £60 or £70, a lot of money to me at the time, but I’ve worn it to death. I still love it. Who would you like to make your wedding dress? Bridal designer Suzanne Neville. I wore the most gorgeous two-piece by her to the NTAs, so she’d be top of my list. Do you have a favourite little black dress? Not really, but I have a lot of lovely little black tops, which I wear with high-waisted, black-coated, skinny Topshop Joni jeans. What is the one item of clothing you couldn’t live without? A black Topshop biker-style leather jacket. I wear it with just about everything. Which is your favourite piece of jewellery? All the rings I have collected over the years. They have been with me through so much – good times and bad times. What is the most crushing remark anyone has ever made about your clothes? Someone once said that I shouldn’t wear culottes because my legs are too short, but it hasn’t stopped me wearing them.

Roast butternut squash and mushroom wellington with goat’s cheese, chestnuts, sage and roast cherry tomatoes

Serves: 4 (4 wellingtons) For the wellingtons: 1 small butternut squash 4 flat-cap mushrooms Olive oil Salt and pepper 50g cooked chestnuts 6 sage leaves 100g goat’s cheese Ready-rolled puff pastry sheets Egg wash For the veg gravy: 1 carrot 1 shallot 1 stick celery 2 flat-cap mushrooms Olive oil 1 tsp flour 1 dsp tomato puree 100ml red wine 1 sprig thyme 500ml water 1 dsp Marmite Salt and pepper To serve: 20 green beans Olive oil Salt and pepper 12 cherry tomatoes Peel the butternut squash and slice 4 rounds from the top piece, each around

The Botanist restaurant chain shares recipes perfect for party-season entertaining

1 inch thick. Place on a tray with the flat-cap mushrooms, drizzle with the oil and season. Bake in a hot oven until cooked. Chop the chestnuts and sage and mix with the goat’s cheese. Form into 4 balls. Using the butternut squash discs as bases, top each with a goat’s cheese ball and cover with a roast mushroom. Put the puff pastry over the top of each and tuck under to form a parcel. Brush with egg wash and season. Bake the wellingtons in a medium to hot oven for 15 minutes. The pastry should be crisp and golden brown. To make the veg gravy, peel, wash and roughly chop the carrot, shallot, celery and mushrooms. With a little oil, fry the veg in a hot pan until it has a good colour. Add the flour and tomato puree and cook for 2 minutes. Deglaze with wine, add the thyme, water and Marmite, then simmer until you have a nice gravy consistency. Strain through a fine-mesh sieve and check the seasoning. Blanch the green beans in boiling salted water for 1 minute. Remove from the pan, drizzle with olive oil and season. Drizzle the cherry tomatoes with olive oil, season and bake in the oven for 3 minutes. Place five green beans in the centres of 4 plates. Top with the wellingtons and place 3 roasted cherry tomatoes around each. Pour over the veg gravy and serve.

Roast jerk ham, celeriac and apple remoulade and honey and mustard dressing Serves: 4 300g boiled gammon joint 2 dsp honey 100g mixed leaves (rocket, baby gem, radicchio), to serve For the jerk seasoning rub: 1 tsp ground allspice 1 tsp ground black pepper 1 tsp ground cinnamon 1 tsp ground nutmeg 1 dsp dark brown sugar ½ tsp salt 1 dsp chilli powder For the celeriac and apple remoulade: ¼ celeriac

½ red apple 4 dsp mayonnaise 2 dsp crème fraîche ½ tsp Dijon mustard Salt and pepper For the honey and mustard dressing: 2 dsp runny honey 2 dsp wholegrain mustard Mix together all the jerk seasoning rub ingredients. Rub the gammon joint all over with the jerk seasoning, place on a tray and drizzle 2 dsp of honey over the top. Roast in a hot oven until the gammon is a dark, golden

brown. Take it from the oven and leave to cool. When it has rested, thinly slice. For the celeriac and apple remoulade, peel the celeriac and slice into thin strips. Take the core out of the apple and slice into thin strips also. Add the remaining ingredients. Mix until combined then season to taste. Mix together the honey and mustard to make the dressing. Place the celeriac and apple remoulade on 4 plates and top with mixed leaves. Position the sliced ham beside the remoulade and drizzle all over with the honey and mustard dressing.

Cranberry and raspberry meringue with poached pear and eggnog cream

Serves: 4 For the meringue nests: 4 egg whites Pinch of salt 300g sugar 3 dsp raspberry coulis (shop bought) 30g dried cranberries chopped For the poached pears: 14 TV LIFE

500ml water 200g sugar 1 star anise 1 cinnamon stick 2 pears For the syrup: 200ml red wine 100g sugar For the eggnog: 250g cream cheese 100ml whipping cream 25ml advocaat 1 pinch ground nutmeg 1 pinch ground cinnamon 50g sugar To serve: 4 mint sprigs Dusting of icing sugar To make the meringue nests, put the egg whites and salt into a clean, dry bowl and whisk until soft peaks form. Gradually add the sugar until the mixture is glossy and thick. Carefully fold the raspberry coulis into the meringue mixture and place into a piping bag.

Pipe 4 nests on to a sheet of greaseproof paper and top with the dried cranberries. Bake in a low oven for 45 mins. The meringues should still be soft in the middle. Remove and leave to cool. For the poached pears, put the water into a medium-sized pan and add the sugar, star anise and cinnamon stick. Bring to the boil. Peel the pears and carefully place in the pan. Cook gently until soft. Take out and cool, then cut into quarters and slice each quarter into 4. Place the red wine and sugar in a pan and reduce to a light syrup. To make the eggnog cream, place all ingredients in a food processor and blitz until smooth. To serve, cut each meringue nest in half. Place the bottom halves on plates, top each with ¼ of the eggnog cream, arrange pear slices on top and add the meringue lids. Drizzle with the red wine syrup, place the mint sprigs carefully on the meringues and dust with icing sugar.

1g fresh oregano 7.5ml Marie Brizard Cinnamon 2ml The Bitter Truth Orange Bitters 60ml Wild Turkey 81 Orange zest, to serve Cinnamon stick, to serve Put the ingredients into a mixing glass. Add cubed ice and stir down the drink to achieve correct dilution and temperature. Strain into a botany flask and smoke using oak wood chips. Serve in a tumbler with ice, orange zest and a cinnamon stick.

In the show we meet families and individuals who have left the rat race for a quieter life in some of the most rural locations in the world. Ben, 43, shot to fame back in 2000 on reality show Castaway and since then has presented shows including Countryfile and Animal Park. Here, Ben tells TV Life all about his new series and why he’s not afraid to get a bit of breast milk in his eye…

Did you have a favourite place from this series? That’s so hard. It’s the same crew who have done nearly 40 of these now so it’s our favourite game to play which life would you embrace? Which person would you go to live with? I don’t know if there is a favourite, but I’ve got highlights. The Canadian story is amazing. It’s called Freedom Cove off the west coast of Canada and they made an island that floats in the middle of a bay, 50 miles from anywhere, in the middle of the Canadian wilderness. I think there are elements of all of them that I love and would embrace myself, but I haven’t found one yet that ticks all the boxes. Maybe in series seven, which we are already starting, perhaps it will happen there. Do you live in London? Yes, very much so. I am away for seven or eight months of the year and it works very well because it is where my family, my wife’s family and our friends are. My wife is very happily settled in London and I think the main reason why we stay there is because I am away so much. I think it would be a little thoughtless of me to take my wife to some remote area with my family and then abandon them there while I traverse the world making television shows. So do you like city life as well as country life? I do. I love London. I am city born and bred. I was born literally within sight of Marble Arch. My father has an urban veterinary clinic just off Baker Street. I think London is the greatest city in the world. I love the melting

But it only lasts for about five days to be honest, and then I get itchy feet and get ready to go off again. How do you refer to yourself? As an adventurer? I don’t know! I have just published my ninth book, called English, and writing is a huge part of what I do. So if I had to describe myself using my proudest terminology, it would probably be “writer”, because I failed all my exams. But I have also just got a new role. I was in New York where I was made United Nations Patron Of The Wilderness and that for me, I think, is almost how I’d like to describe myself now. That will

be on my gravestone! I have spent 25 years travelling extensively all over the world doing expeditions and adventures and I feel I have a really good understanding now of the wilderness and the pressures that we humans are putting on it. I’d like to describe myself as an activist now. I’ve taken so much from the world on my travels that I’d like to give back a little. You’ve got a knack for generating headlines – from finding Ed Miliband’s “Ed Stone” to using your sister’s breast milk to cure an eye infection. Have you ever Googled yourself? I would be a complete liar if I said I had never Googled myself. That is an admission everyone has to make at some stage, partly to keep an eye on whatever is out there! But no I don’t look at all of it. There are certain things that capture people’s imaginations. The “Ed Stone” one was bizarre. I still don’t know how I was the only diner in the whole restaurant to have noticed. I find that one a little stranger than all the others. But I live life. I seize opportunities. If someone tells me to try some breast milk in my eye to cure an eye infection, I’m very happy to give it a go. And I don’t mind sharing that with people! You’ve admitted to eating army rations at home if you’re by yourself. Does that mean you’re not really a cook? I’m a terrible cook. My wife is a very good cook, which I think has been my downfall. She’s happy to embrace all the cooking – that means I have become lazy. I love my food but I have no patience for it. It’s one of my weaknesses – a terrible inability to cook! Sunny California has surprisingly majestic winters

hen you think about California, the mind is instantly drawn to an image of palm trees and golden beaches, but the state has much more to offer than just that. North America’s third biggest state has a landscape that covers all seasons and does so with style. Without leaving California, you can embrace the ultimate US road trip, cruising through national forests, desert plains and the tallest mountain ranges in the west. Around five hours’ drive from Oakland International Airport, which has direct routes from London on low-cost airline Norwegian Air, you will come across the quaint alpine town of Mammoth Lakes. With an

elevation of 2,400 metres, the drive up to Mammoth is spectacularly scenic. Winding roads of towering pines give way to snowy peaks and postcardworthy log cabins.

When the snow has fallen, Mammoth is home to some of the best slopes for skiing and snowboarding. Mammoth Mountain carries over 400 inches of annual snowfall, so pros with their own kit can show up and show off. There is also a ski school on site for beginners or anyone who needs to brush up on their skills. For those who want to reach the peak and admire the views, a gondola operates year-round from the foot of the mountain. In the summer months when the snow has melted, the area becomes a mecca for hiking and mountain biking and the adrenaline-filled Mammoth Motocross is held here annually. Venture out to the neighbouring areas of June Lake and Mono Lake, which are the definition of true beauty spots. Hike through the alpine meadows and dip a toe into the crystal clear mountain lakes and streams left by the melting snow. Apparently, Kendall opted to snowboard while Dunkirk star, Harry, was said to skillfully whizz down the mountain on skis.

WHERE CAN I EAT AND DRINK? Eat with the locals at pancake joint Toomey’s, surrounded by baseball memorabilia in true “Yankee” style (toomeysmammoth. com). If you can’t choose between the fluffy French toast and the famous coconut pancakes, you may need to find time for a second visit. For dinner, try the Smokeyard in Mammoth Village. On the menu you will find ribs, pork chop and BBQ-chicken cooked on an open grill. Large portion sizes will keep your energy up for a busy following day on the mountain (smokeyard.com). If you fancy a drink or two, the Mammoth Brewing Company (mammothbrewingco. com) has craft beers with mountain views and the food here is pretty fantastic too.

8pm, BBC1 As much as we still love The X Factor, we must confess we’ve been recording Sunday night’s episode to watch on another night. That’s because we cannot tear ourselves away from the brilliance that is this second series of Blue Planet. Tonight, we are sailing away to the green seas where competition is fierce. It’s the sunlight that is responsible for powering large kelp forests, mangroves, prairies of sea grass and blooms of algae. But to survive, animals have to fight for space and grub. In kelp forests, a common octopus has to become the ultimate escape artist to avoid its

nemesis, the pyjama shark. Also, the Garibaldi damselfish defends its seaweed garden from marauding sea urchins as sea otters prove an unlikely friend. On prairies of seagrass, tiger sharks play a game of cat-and-mouse with green turtles while in shrubby meadows of seaweed, a vast army of spider crabs emerge from the depths for an annual mass moulting, while trying to avoid being eaten by massive stingrays up to four metres long. Finally, male Giant Cuttlefish compete for a mate – while a smaller male wins by pretending to be female. ★★★★★

In fact we are increasingly relying on artificial intelligence for everything in many parts of our lives. But just how far would you trust a robot to help you find solutions to the most intimate problems that you might be facing? In this fascinating documentary, a team of AI experts are on a mission to find out. In fact they have even come up with a robot of the future to

discover how much they might one day be capable of understanding. And as the AI gets more advanced, they examine just how far we might be willing to go to let it into our most private thoughts. A team of experts from Manchester and Plymouth Universities have worked together with the aim of answering some of these questions and have come up with Jess, a personal assistant robot. 8pm, BBC2 It’s the last week of the heats so these are the last six chefs to battle it out in order to make it through to the next round. Tonight’s first task is Marcus’ skills test in which the contestants have got to cook up a storm in front of judges Monica, Marcus and Gregg. The chefs have 20 minutes to prove that they have the skill and technique to cook rose veal sweetbread. The added challenge is to serve it with a garnish and sauce. And in a true test of their palate and understanding of the flavours, they’ve got to know their offal inside and out. Sweetbreads need lots of TLC in the kitchen to be

cooked to perfection. But can the chefs rustle up a melt-in-the-mouth dish for the judges or will they struggle to impress? Then the six chefs have one last chance to use their style, technical skill and flair to wow the experts in the signature dish challenge. In one hour and 15 minutes, the heat is dialled up as they try to create a tried-and-tested dish of their own which will be enough to win them a place in the next round. Once the judges have tasted their dishes they have to decide which three chefs will go home and which will return for the last quarter-final. ★★★★✩

Bargain-Loving Brits in Blackpool

8pm, Channel 5 Bridges aren’t always the most fascinating things. They’re practical, they help us get from A to B a lot quicker and we probably take them for granted most of the time. But we will be looking at them differently today, thanks to Rob Bell’s fascinating series about the history and construction of the country’s iconic bridges. In this final episode of the series, he takes a look at the British bridge that changed the way modern suspension bridges are built. Opened in 1966, the mile-long Severn Bridge was the first road structure to connect England and South Wales by

spanning the Severn estuary, one of the most dangerous waterways in Britain. An ill-fated 19th-century railway crossing had previously existed over the Severn and Rob reveals the failures in engineering that led to the downfall of that earlier bridge and the advances that now enable suspension bridges to safely cross vast expanses of water. He explains how designs for the new overpass were tested in wind tunnels and how an aerodynamic box girder deck was created to completely revolutionise bridge design to what we know today. ★★★✩✩
