Fiesta de Mayo is our celebration of Cinco de Mayo, traditionally celebrated on May 5th, but we will be celebrating the entire month. Every Tuesday during May, showcase our Verde café concept at your entrée station. The concept’s authentic recipes and easy-tofollow format allow us to compete with the street’s most popular trend while highlighting traditional dishes. Or, spice things up and feature our Latin-inspired pop-up brand, Flat Top Quesadillas.
Why will it grow sales?
• There’s plenty of opportunity in Latin food for all day-parts and stations. Research by the National Restaurant Association finds that 80 percent of consumers eat at least one type of ethnic cuisine a month.
• Cinco de Mayo is a time for fun and indulgence with guests looking to break up their day and celebrate with authentic Latin flavors.
Menu Guidelines
MINIMUM STANDARDS
Feature authentic Latin fare at your entrée station paired with chips and salsa. Allow guests to upgrade their bundle by adding a signature salsa, house-made guacamole, or queso for an upcharge. Don’t forget to incorporate desserts and other themed retail items at your interruption table. You can even play some traditional music to really set the stage!
LEVEL UP
Salad Station: A Latin-themed salad station during Fiesta de Mayo adds a festive touch and attracts guests who are seeking variety. Your daily rotation can have a Latin feel by adding in baked tortilla bowls and the following ingredients: black beans, cheddar, cilantro, green onions, jalapeños, Monterey Jack, roasted peppers, roasted corn, salsa fresca, and tortilla chips, along with cornbread as an add-on.
Dessert: Classic flan, house-made churros, and Mexican rice pudding add Latin flavor to the dessert station while increasing sales. Merchandise these authentic desserts at all stations offering Latin recipes.
Afternoon Snacks: Try an afternoon snack of signature freshly-made salsa or pico de gallo and tortilla chips. Market ahead of time and let your guests know when to come back down. Set up a Chef’s Table, or better yet, take a mobile cart to a popular meeting place or coffee bar. Play music and make it an event.
WELLNESS
Avocados have healthy fat that sustains your energy, are popular in many diets, and are trending with our guests. Host a lunchtime Chef’s Table or afternoon break and feature housemade guacamole to order. Allow guests to create their own guacamole and serve with baked corn tortilla chips or fresh veggies.
