It all began at CULMAR, where inspiration and innovation collide. Chef Cody Dodson was already buzzing with ideas on how to create heartfelt, memorable service pieces when Kevin Dorr’s powerful message about building your brand and storytelling hit home. Realizing the potential to make a genuine impact, Chef Cody and his director, Megan Herrmann, knew they needed a polished approach, so they turned to the experts—the Culinary Strategy & Innovation Marketing team.

Fast forward to Patient Experience Week. The Arkansas Children’s Northwest client enlisted Chef Cody to hand out his signature cookie boxes as a special touch for the hospital’s patient experience efforts. The results were nothing short of magical. As they made their rounds, witnessing the surprised and delighted faces of parents and patients was a sight to behold.

“It’s incredibly moving to see the impact of a small gesture in such a challenging environment like a children’s hospital, where parents are often enduring a heart-wrenching journey alongside their little ones,” said Megan Herrmann.

Chef Cody’s cookies became a symbol of comfort, bringing a bit of sweetness to both caretakers and patients alike. Reflecting on the experience, Chef Cody encourages others to consider their setting and the perception they want their service to convey. His advice? Conceptualize something meaningful and authentic. HEALTHCARE INNOVATIONS MARKET ON THE MOVE AT TERREBONE GENERAL HEALTH SYSTEM

Market on the Move is making an impact in cancer centers across Morrison Healthcare, reshaping patient care and their individual experience. Inspired by the work of Cleveland Clinic, Allison Cazenave, the oncology dietitian at Terrebonne General Health System, was determined to bring this transformative concept to her account.

After sharing the success story of Cleveland Clinic’s Market on the Move featured in Vol 2 of That’s So Morrison magazine, Allison garnered support from the Terrebonne Cancer Center philanthropy. By the end of January, the wheels were set in motion with funding secured for their very own Market on the Move cart. Within just two months, the program was operational.

Allison teamed up with Executive Chef Bryan Ledet and Patient Services Manager Torrell Hebert to craft a menu of nutritious snack offerings and retrofit an existing patient dining cart. This effort aimed to provide complimentary healthy options to patients undergoing infusion treatments.

“The response has been overwhelmingly positive,” shares Allison. “Our guests and patients

are delighted with the variety of healthy snacks available on the cart. The professional look of the setup has also garnered numerous compliments.”

The introduction of the mobile cart has been a game-changer for the staff as well. “Our team no longer needs to make multiple trips to the kitchen or snack area to fulfill patient requests,” explains Torrell Hebert. “This service has lightened their workload significantly, allowing them to focus on other critical tasks.”

Securing funding for snacks has been challenging previously, but through collaborative efforts with the kitchen and philanthropy, the team is thrilled to offer this service free of charge to their patients. This innovative approach not only enhances patient satisfaction, but also underscores Morrison Healthcare’s commitment to holistic and compassionate care.

At Nemours Children’s Health, in Wilmington, Delaware, a unique initiative is taking root: the Can Grow Garden. In collaboration with Morrison Healthcare and Nemours Estates, this project has been in development since 2023 and is now flourishing.

The Can Grow Garden begins in the greenhouse, where seeds are planted before being moved to the garden area right outside the café. This project isn’t just about growing plants; it’s about growing a community. Patients actively participate in the planting process, contributing to the garden.

Accessible and Inclusive

The Can Grow Garden features raised beds and wheelchair-accessible planting areas, ensuring everyone can get involved. This space serves as an educational hub, offering activities on healthy eating, food production, and food insecurity. Additionally, it provides a peaceful retreat for associates, offering a break from the daily healthcare environment.

One of the standout features of the Can Grow Garden is that all produce is freely available to patients and associates. This initiative not only promotes healthy eating habits, but it also addresses food insecurity within the community.

Garden-to-Table Events

Beginning this summer, the Morrison Healthcare team will partner with the Nemours Estate to offer an exciting lineup of events, including recipe tasting opportunities featuring produce from the garden, as well as filming episodes of their show “Cooking with Chef Will & Friends,” highlighting garden-based recipes. Each recipe featured during the showcases—like the fresh caprese salad and eggplant fries—will be accessible via QR code for patients who aren’t able to attend in person.

A Collaborative Effort

Managed by a dedicated team from Nemours Estate, hospital associates, and Morrison Healthcare, the Can Grow Garden thrives on teamwork. Judy Lieberman, Director, Auxiliary and Volunteer Services, emphasizes the importance of this partnership: “Nemours is transforming the idea of child wellness beyond medicine. With the help of Chef Will and Shannon Mayhart, we’re creating an enriching experience that teaches families about nutrition and well-being.”

The Can Grow Garden is more than just a garden; it’s a living classroom and a sanctuary. It embodies Nemours’ commitment to holistic health, providing nourishment for both body and mind while fostering a sense of community and well-being.

Modernizing the Dining Experience

Skylight Commons is revolutionizing its operations with the help of collaborative robots (also known as cobots). These sleek robots, supplied by Richtech Robotics, are enhancing efficiency and service, thereby transforming the way meals are delivered and enjoyed by patrons.

Streamlined Service

Guests can breeze through their meal experience using self-service kiosks or ordering directly from the counter. Ambassadors and food service team members are on hand to assist, ensuring every guest’s needs are met promptly.

Once orders are placed, a unique table tracking system kicks into gear. Each guest receives a tracking tag that syncs with the table of their choice, seamlessly guiding meals from the kitchen to the guest utilizing the cobots.

The Rise of Cobots

Mayo Clinic’s decision to incorporate cobots didn’t happen overnight. After thorough evaluation, Richtech Robotics emerged as the perfect partner, aligning with the Mayo Clinic’s commitment to excellence.

FAST FACTS:

In 2023, Cobots at Skylight Commons traveled 285 miles.

At this pace, 2024 is projecting 427miles, a 49% increase.

Installation took just a day and a half. Within hours, the cobots were mapping out their routes, ensuring precision in every delivery. Staff feedback played a pivotal role in guiding the adoption of cobots to alleviate the strain of repetitive tasks.

Division Spotlight: BREAKFAST BISCUIT CONTEST

In a delicious celebration of National Biscuit Day, the Southeast Division of Morrison Healthcare recently hosted a Turkey Sausage Biscuit Sandwich contest, inviting chefs to showcase their culinary creativity. Participants were tasked with developing a unique housemade turkey sausage breakfast biscuit and sharing their creations on Workplace by Meta. The contest featured two juding categories:

Popularity: The top five sandwiches with the most likes on Workplace were selected as finalists.

Final Judging: From these finalists, a winner was chosen based on creativity, scalability, and taste.

The competition was fierce, but it was Senior Executive Chef Santiago Lopez and the UM team who ultimately triumphed. Their Jalapeno Turkey Cheddar Biscuit Sandwich and Maple Bourbon Turkey Sausage Patty impressed judges across both categories, earning them the top spot. Senior Executive Chef Kristen Bethel and the CMC team followed closely as the runner-up with their innovative Turkey Sausage Breakfast Bomb entry.

This contest not only highlighted the culinary talents within Morrison Healthcare but also underscored the power of creativity and community engagement through Workplace by Meta. Congratulations to all the participants for their mouthwatering contributions and to the winners for setting a high bar in this flavorful competition!

The recent New York City Compass Community Council (CCC) event, held aboard the USS Intrepid this May, was a remarkable showcase of community, connection, and culinary innovation within Compass Group. Over 1600 attendees, ranging from unit managers to prospective clients, gathered for this special occasion.

Crafting Perfection AT PIZZA UNIVERSITY

Twenty-four of our top chefs recently gathered in Maryland for a unique and flavorful educational experience at Pizza University. These chefs delved into the art of crafting the ideal pizza, immersing themselves in a hands-on journey toward pizza perfection.

The attendees were hand selected by their Regional Vice Presidents and Corporate Executive Chefs for an exclusive journey into the art of crafting the perfect pizza. The primary objective? To elevate their skills in dough making, dough handling, and the versatility of high-temperature pizza ovens. Equipped with this newfound expertise, these chefs would then return to their respective regions as pizza ambassadors, sharing their insights with eager teams.

The event took place over an engaging two-day period, packed with a diverse array of topics. From the rich history of pizza to the science behind dough chemistry, attendees were treated to a comprehensive exploration of the culinary craft. Partner presentations and business ideation sessions further enriched the ex-

perience, providing valuable insights beyond the kitchen.

Reflecting on the impact of Pizza University, Stephan Naleski, Division Chef, shared his enthusiasm: “Chef Leo Spizzirri’s Pizza University was an amazing opportunity for our chefs to not only connect and network, but also to increase their knowledge of classical dough handling and highheat oven cooking. They now become the pizza trainers for their regions, and the ripple effect starts.”

Since returning from Pizza University, these talented chefs have left a mark on their regions, infusing their accounts with newfound creativity and expertise. Through their dedication and passion, the training they received from Pizza University lives on, one perfectly crafted pizza at a time.
