For all you budding gin geeks, we’ve put together this handy, little guide to some of the different styles of gin out there
LONDON DRY GIN The most common gin style, a London Dry Gin will be sharp, crisp, juniper driven and most of all, dry! London Dry gins don’t actually have to be made in London but they do need to taste predominantly of juniper, be at or above 37.5% ABV and can’t have any kind of flavouring or colouring added to them post-distillation (apart from a little bit of sugar). OLD TOM GIN An Old Tom is a soft, sweet and very traditional style of gin, brimming with gentle spice. They originated in the 17th century when exotic flavourings were added to cheap alcohol to cover up the taste. Don’t worry though, modern day Old Tom’s use high quality ingredients to make a modern approximation of this older style.

NEW WESTERN GIN New Western Gins are notable for using exciting and nontraditional gin flavours. Juniper is still a key botanical but less dominant, letting other flavours take a much greater share of the palate and creating a kind of a botanical democracy. Local and unusual botanicals, as well as rye and malt bases are commonplace. GIN LIQUEURS At its most basic, a gin liqueur is a flavoured gin with a high sugar content. They’re made by leaving fruit and sugar to infuse in gin (this is known as ‘maceration’). This process lowers the alcohol content, making it a gin-based liqueur rather than a fruit gin. While liqueurs always sound a bit like something your granny would drink, with delectable options like rhubarb and ginger or dark chocolate, they’re some of the most delicious gins available! JENEVER Not quite a gin but instead a precursor to our beloved juniper spirit. The traditional drink of Belgium and the Netherlands, jenever is a distilled juniper malt wine. Rich and smoky, jenever tastes strongly of juniper but is noticeably malty too. It was jenever that first inspired the Brits to distil their own, juniper spirit.

A BRIEF HISTORY OF GIN Some days it feels as though we’re living in the golden age of juniper. New gins and distilleries are popping up every day. It’s an incredibly exciting time in the gin world and the perfect moment to have a little wander down Gin’s Memory Lane.
AND SO IT BEGINS Gin originated in the 17th century, when British soldiers returned home from the Thirty Year’s War and tried to recreate the magical booze that had given their Dutch counterparts the ability to go bravely into battle. The burst of ‘Dutch Courage,’ as the Brits dubbed it, was a shot of jenever, a traditional juniper distilled malt wine. With a basic understanding of distillation and a good idea as to what ingredients to use they distilled juniper and local botanicals and came up with a light, aromatic, unaged juniper flavoured spirit - gin! But, this bold, new libation didn’t really take off until …

TAXES AND THE FRENCH When William of Orange was crowned King of England in 1689, he raised import duty on French products, making good quality wine and cognac almost impossible to buy. Fearing an eternity of sobriety or weak ale, the population turned to that decent spirit that their grandfather had made with the pot still. Gin rose swiftly in popularity as it was incredibly easy to make and didn’t need to cost much (if the distiller was prepared to cut it with turpentine - which he probably was). As many as two in three homes distilled their own gin so getting a pint of gin took only a quick knock on the neighbour’s door.
THE GIN CRAZE Throughout the first half of the 18th century, gin was drunk in such epic proportions (up to 41 million gallons in a single year) that it became an official cause for alarm. The Government issued 8 anti-gin laws between 1729 - 1751.
This effectively banned gin but failed to reduce the nation’s love, and consumption of ‘Mother’s Ruin.’ Gin went underground, becoming dangerous to drink. Questionable ingredients were used to make a drink that was mostly methanol, with spices used to mask the poor quality. There were riots over the ban, and funerals held for ‘Madame Jenever’. Under this pressure, the government realised that they had to moderate, not prohibit.
THE GOLDEN AGE OF COCKTAILS Flappers, martinis and jazz. Gin was an essential part of the roaring twenties, of freedom, good times and good drinks. London Dry Gin was the darling of the cocktail world at a time when cocktails, or mixed drinks, were the only thing to drink! Short and boozy, the idea was to showcase each spirit rather than mask with fruit and sugar. Thanks to the invention of the column still, gin was cleaner and of a higher quality but most of all, it was dry and bitter, perfect for mixing with vermouth or a good tonic.
THE SECOND GIN CRAZE Gin is undoubtedly the popular spirit of the day. Effortlessly stylish, classic yet modern, gin is brimming with potential and innovation.
Freed from old fashioned ideas about how gin should taste and full of innovative designs for our palates, those in the gin craft are pushing the boundaries of the spirit to produce the most enticing drinks that they can. There are dedicated gin bars who have perfected the art of a gintonic and a good Martinez, long forgotten recipes have been recreated and incredible, new gins are born on a daily basis. Gin Festival is proud to be a part of this second gin craze, driven by quality over quantity.
500ml Hayman’s Sloe Gin 250ml water 125g granulated sugar 2 cloves 1 stick of cinnamon 1 strip of lemon zest 1 vanilla pod, split (optional)
4 hard, squat pears, preferably comice or williams Thyme and Juniper Cream 6 sprigs fresh thyme 10 juniper berries 175ml double cream
Step 1. Heat the oven to 180C/gas mark 4. Put the sloe gin in a pan with the sugar, spices, zest and water then bring to the boil, stirring occasionally to dissolve the sugar.
Step 5. Reduce by half until syrupy. Plate the pears, pour the sauce back onto them and serve warm or cool with cream.
Step 2. Peel the pears and cut out the core at the base and leave the stalk intact. Find an ovenproof dish just wide enough to hold the pears in one layer and lay them in there.
Thyme and Juniper Cream
Step 3. Pour the spiced gin over the top it should just cover the fruit. Bake for an hour, checking after 45 minutes; when the fruit is tender to the point of a knife, but still holds its shape, lift it out of the liquid and set aside. Step 4. Pour the liquid back into the saucepan and bring to the boil.
Step 1. Combine 175ml of double cream and 6 sprigs of chopped thyme in a small saucepan. Step 2. Bring to a gentle simmer over medium heat. Step 3. Add 10 juniper berries to the cream and add a lid. Step 4. Allow to cool, then leave in the fridge for 12 hours. Step 5. Strain the cream and then whip until ďŹ rm.
MAKE YOUR OWN
Here at Gin Festival, we like our garnish. We love what it contributes to a drink; the way it enhances the taste, the smell and the appearance of a drink. Garnish is a delicious and aesthetically pleasing way to improve the entire G&T drinking experience. The garnish staple of the G&T, the wedge of lime, is fantastically simple and regularly works well in a drink. However, by looking at the flavour of a specific gin, you can choose a garnish to complement or accentuate particular aromas within the spirit. Half the fun of garnish is experimenting with flavours and finding something that you really like. CITRUS - BASIL, THYME OR LEMON Citrus gins work amazingly with savoury, herbaceous garnishes like basil. However, some distillers like to add in extra lemon citrus to up the ante!
gins, as the gentle flavours don’t dominate but do add something lovely to the serve.
HERBACEOUS - ROSEMARY, ROCKET OR APPLE For aromatic, savoury gins, try a herb like rosemary or rocket; the fresh, dryness perfectly emphasises the gin’s dominant flavour. Another option is to take a crisp slice of apple and add a little sharpness!
SPICED - ORANGE, CLOVE OR PEPPER For spiced gins, orange is a fabulous companion, working incredibly well with warm spices like clove and cinnamon. Alternatively, to amp up the spice level, add a clove or two. If you prefer something less structured, do a little research on the botanicals in your gin. Look at what’s already in there and think about it almost like cooking. What flavours work with that? What will best bring out my favourite flavour? Be careful though, over-garnishing is possible and whilst it looks beautiful, your G&T will taste of nothing but your lovingly chosen garnish.

Singapore Sling Shake together over ice: 2 parts Slingsby Gin ½ part Cherry Heering Liqueur ½ part Benedictine DOM
Much like one’s memory after a few of them, what exactly a Singapore Sling is, and when it hails from, are both a little hazy! At its core, the Singapore Sling is a long, fresh and fruity drink that was created by Ngiam Tong Boon, sometime during his tenure at the Raffles Hotel’s Long Bar in Singapore between 1899 and 1915. Rather unusually, what exactly went into that drink has been lost to history with contemporary versions relying on a scribbled note given to a customer by a barman at Raffles in 1936 and a recipe in the Savoy Cocktail Book, published 20 years later and half a world away. Raffles is proud to be home to Singapore’s national drink and has incorporated it as a key feature of the hotel since the 1970’s. Their signature serve for the Singapore Sling adds triple sec, pineapple juice, lime juice and grenadine to create a longer, sweeter

version of the drink that they say is the original and was created to allow women to drink under a veil of propriety. Its original conception was during a time where it was not socially acceptable for women to be seen drinking alcoholic beverages and the Singapore Sling, with all it’s fresh fruit and rosy-hue, made it appear that drinkers were nothing more than well behaved women, with a glass of fruit punch. Yet many believe that, initially, a Singapore Sling did not have the sweetness of the Raffles version. Caribbean inspired Tiki drinks were popular at the time of the Singapore Sling revival and the addition of the pineapple, orange and lime seems like a way to capitalize on the popularity of those drinks. However you like your Singapore Sling, there’s no denying that it’s a classic!
1606 Gin Royal Tunbridge Wells, England
A classic juniper-led London Dry Gin, 1606 Gin is flavoursome, yet incredibly smooth and delicate. Earthy pine is joined by citrus and a touch of angelica. Finishing on a delightfully peppery note. 1606 Gin is distilled using natural spring water from the South East’s only spa town, Royal Tunbridge Wells, as well as their own, organically grown Spanish lemons and oranges. abv: 43%

Beckett's Gin Kingston Upon Thames, England
Beckett’s London Dry Gin has a fresh but warm and whisky-like take on the nose but with soft juniper and citrus following. This is an impeccably balanced gin: zesty and refreshing, bittersweet and aromatic. A smooth, full-bodied gin, bursting with juniper and a gentle, peppermint finish. Beckett’s is made with National Trust juniper from Box Hill! abv: 37.5% 18

Blackwoods Vintage Dry 60% Shetland, Scotland
A fantastically strong offering from Blackwoods (at 60% this is the strongest gin at the festival); sharp, dry and complex. The floral notes on the nose are nicely balanced with juniper. There is a rich mouth feel with pleasant citrus flavours followed by a long, dry finish. Despite its navy strength ABV, Blackwoods 60 is a remarkably smooth gin! abv: 60%

Blue Bottle St. Sampsons, Guernsey
Inspired by the kind of beauty that is everywhere when looking carefully, Blue Bottle Gin is a detailed work of art! With gorse flowers, cubeb peppers and nutmeg this unusual combination of floral notes and spice is supported by a menthol sweetness. Juniper plays a strong role yet works well with its companions. A beautiful gin! abv: 47%

Brighton Gin Brighton, England
Clear and bright in the glass, Brighton Gin has subtle notes of juniper at the fore, with sweetscented, fresh citrus and just a touch of spice. A gentle and approachable gin with persistent hints of orange. With milk thistle as one of the key botanicals, Brighton Gin can help you detox! Or so we hear.. Detoxing aside, Brighton Gin is light, fresh and delicious. abv: 40%

Cambridge Dry Gin Cambridge, England
Using a range of local botanicals The Cambridge Distillery have created a light and elegant dry gin. Cambridge Dry Gin is possibly the spirit most like an English country garden: rich, herbal greenery and rose-violet florals frolic alongside quiet, lemon verbena. All supported by sweet berries and juniper. A fabulous and sustainable gin. abv: 40% 20

Cardiff Dry Llantrisant, Wales
Eccentric Gins used a modern, innovative approach to learn what bartenders and gin-lovers most wanted in a gin; Cardiff Dry Gin is the first gin to be made as the result of a social media experiment. It is dry and tart with rich pine reserves tempered by spicy caraway and fennel seeds. Cardiff Dry is unusual in that no citrus is used in its creation. An exceptionally warming spirit. abv: 37.5%

Daffy's Edinburgh, Scotland
Named for the Goddess of Gin, Daffy’s is a fantastically strong bodied, Scottish gin. Fresh and woody on the nose, there is a hint of toffee as well as a rather gentle floral fragrance. Daffy’s has lively juniper and citrus married to a wonderful range of red, summer fruits and light mint followed by a long, buttery finish. A smooth and vibrant gin! abv: 43.4%

Durham Gin Durham, England
Durham has a calm but complex nose, slightly floral with hints of juniper, elderflower and pink peppercorns. With ten botanicals, from the usual to the less common, there is a mix of very traditional gin flavours: orris and angelica with some hints of cardamom. Nuanced citrus notes arise from the fabulous mix of orange and lemon rinds and coriander seeds. abv: 40%

Eccentric Citus Overload Llantrisant, Wales
A bright and bold citrus gin with sherbert undertones and a soft, sweet finish, Eccentric Citrus Overload lives up to its name quite spectacularly! Distilled with a fabulous range of citrus (coriander seeds, lemon, orange and grapefruit) as well as meadowsweet and sunflower root, this is a delightfully piquant spirit. abv: 42% 22

Jawbox Gin Belfast, Northern Ireland
Jawbox Gin is named in honour of a Belfast term for a sink, a.k.a. the Jawbox - one of Belfast’s lasting legacies. A thoroughly modern London Dry, Jawbox uses two distillation techniques (steep and boil and vapour infusion) to bring forward crisp citrus and coriander and a firm pine flavour. This is joined by the quiet complexity of pepper, green angelica and a fine rootiness. abv: 43%

Masons Yorkshire, England
Masons Yorkshire Gin is as Yorkshire as it gets. Based in Bedale in North Yorkshire, Masons use Harrogate Spring Water and locally grown juniper to create their smooth, malty gin. Coriander mixes on with piney elements, bright juniper and orange before a smooth move to fennel and cardamom. Soft herbal notes and a little sweetness add to the long, lingering finish. abv: 42%

Nelson's Gin Staffordshire, England
Nelson’s Gin is a light and refreshing spirit, very clean on the palate but with an exceptionally complex aftertaste. Created by an experienced chef, it uses a wide range of perfectly balanced botanicals. Deliciously dry, Pinkster is made with only 5 botanicals including, most importantly, raspberries! The juniper shines without being overpowering but the raspberries contribute both soft, fruity flavour and and the tart dryness of the berries. Light spice and pepper emerge from the dryness. Brockmans’ unique infusion of exquisite botanicals creates a seductively smooth and well balanced gin. Taking their inspiration from cognac, V.J.O.P stands for ‘Very Junipery Over Proof’. The Sipsmiths have taken the lead instrument in their dry gin, juniper, amplified its presence and upped the proof. Using a unique, triple juniper technique, they have created a surprisingly smooth, navy strength gin bursting with classic gin notes. abv: 57.7%

A fabulously light and fruity gin, Slingsby Gin is made using Harrogate spring water and a range of local botanicals. Brilliant Gin is the product of two long-time gin connoisseurs who, through The Really Brilliant Company, decided to make their gin dreams a reality. Colombo 7 London, England
A London Dry Gin inspired by a passionate and determined history in Ceylon; Colombo London Dry Gin is distilled using on 7 botanicals, most of which are native to India. Ginger root, coriander seeds and, rather uniquely, curry leaves make this a subtly spicy gin; angelica and juniper are responsible for the more traditional, resinous flavours. Braeckman's Vanilla Jenever Oudenaarde, Belgium
Produced entirely in-house at the Braeckman Grain Distillery, this flavoured jenever is a real treat! Braeckman’s Vanilla Jenever is a soft and creamy liqueur with a fantastic level of complexity that comes from its juniper malt wine base. Not overly sweet, the malt and juniper flavours meld together perfectly. abv: 17% 70

Braeckman's Hazelnut Jenever Oudenaarde, Belgium
Experimenting with the very traditional jenever can create some thoroughly marvellous results, one example of which is Braeckman’s Hazelnut Jenever. A creamy, nutty and moreish liqueur, sweet and well rounded with a malty warmth. The unusual combination of juniper and cream make this the perfect after-dinner drink! abv: 17%

Absolutely bursting with Perthshire raspberries and Scottish innovation, Edinburgh Raspberry Gin Liqueur, is fruity and sweet with added botanical complexity from its base gin, finishing with hints of lavender and pine. An aromatic and moreish liqueur.

By unifying chocolate and gin in one, delectable drink, Ely Gin have done something quite special. This dark chocolate and gin liqueur produces a very balanced hit of both. The smooth, luxurious cocoa, rich with an almost woody fruitiness, weaves seamlessly through the pine heavy gin. A rather elegant liqueur made in small batches by an independent producer. abv: 30%

Pink grapefruit and gin make a fantastic double act here; the botanicals of the gin and the light, heady taste of the fruit create an elegant drink whose grace is evocative of the 1920’s. abv: 30%

Sikkim Fraise Spain
Sikkim Fraise is full of juniper and summer berries. A gentle pine flavour combines with red tea, floral essences, strawberries of the forest and red cranberries. A slightly lemony coriander raises its head alongside a touch of bitter orange. A well balanced, invigorating gin!

JJ Whitley Elderflower Gin Liverpool, England
The newest gin created by Johnny Neill (a direct descendent of Thomas Greenall, the founder of Greenalls), JJ Whitley Elderflower Gin is a glorious burst of floral freshness. There is a candied sweetness to this gin but it is dominated by the unmistakeable taste of elderflower alongside grassy tones, orange blossom and honey. abv: 38.6%

Masons Tea Gin Yorkshire, England
Masons - Tea Edition is, rather excitingly, distilled with Yorkshire Tea! It is a smooth spirit with all the warmth of tea. Strong tannins meld wonderfully with a rich, almost malty, Yorkshire juniper, while faintly herbal background notes are supported by citrus. Sikkim Bilberry is a beautiful, distilled gin; inspired by the mountainous state of India, famed for its rooibos tea. Victoria’s Rhubarb Gin (so named as the rhubarb was originally grown in Queen Victoria’s garden) is a rumbustious drink with a big burst of rhubarb; smooth and earthy with an exquisite fruity balance of sweet and sour. The rhubarb combines natural acidity with the fruity sweetness to create a real palate cleanser that’s very quaffable. abv: 44%

We first dreamt up Gin Festival back in 2012; we love gin but every tasting session we attended and ‘gin bar’ we visited left us disappointed, we wanted more! More interesting gins, more exciting gins, more knowledge and the right garnishes. With that in mind, we started Gin Festival. Bringing in the best juniperbased spirits, the perfect serve and a wealth of (g)information, we found a whole host of fellow gin lovers to share it all out and the events you
know and love were born! Today, we’re incredibly proud that our passion for gin has created the original, biggest and best gin festival! With gins from all around the world, distillers who just want to talk about their beloved spirit and some damn fine music, we hope you love Gin Festival as much as we do!
