2 cups Cooked Spekko Saman Brown Rice 1 tablespoon Oil 1 cup Corn kernels, cooked 1 x 410 g Can black beans, drained 2 Limes, juiced 1 Lemon, zested 2 tablespoons Olive oil Salt and pepper 1 cup Cherry tomatoes, halved 1 Jalapeno pepper, seeded and minced 1 cup Fresh coriander leaves, chopped
Method
• Heat 1 tablespoon of oil in a non-stick pan. Add the corn kernels and cook until they start to brown. • Stir in the black beans and remove from the heat. • In a bowl, mix the lime juice, the lemon zest, 2 tablespoons of olive oil, and salt and pepper.
Spekko tips for caterers
This is an easy salad to make for a large crowd. Serve with spicy chops or chicken for the special event.

Method:
Build over ice and stir and serve in a tall glass and garnish.
