Q&A with henry jones

For chef, teamwork is ‘the most important thing’

Henry Jones has worked in kitchens since he was 16. He has risen through the culinary ranks at Boyd Gaming Corp., last year opening the Redwood Steakhouse at the California. The restaurant, like the hotel known as the ninth island, has a Hawaiian flair.

Do you have any recent news you’d like to share?

We recently updated our menu, adding a few of our guests’ favorite specials. Our newest additions are the sashimi featuring hamachi fish and the baked salmon with crab meat and tomato cream sauce.

In the contemporary lounge-style bar, we also now feature a social hour from 4 to 6 p.m., highlighting a special menu of island-inspired small bites such as tuna poke nachos, a grilled char-sui pork belly served in a steamed bao bun with Thai chili, pickled cucumber, hoisin and baby lettuce. The small bites pair with a selection of signature cocktails like the blood orange whisky sour and spiced mai tai.

You’ve climbed the ladder for 20 years at the California. Other than being a chef, what is the most challenging and rewarding positions you’ve had?

For me, being a saucier was the most difficult — every dish that comes out of the kitchen, you have a part in. It is an amazing position but very stressful to know the finishing elements of the dish rely on your part.

Coming into the business was exciting, learning the basic cooking techniques as well going to school and learning aromatics. It has been a pleasure to grow in this company and to be able to influence the menus in each of our restaurants. I can even say one of my specialties is oxtail stew.

Other than excellent steaks, what is the formula for a successful steakhouse?

Being hands-on, having a dedicated team with the same vision of guest satisfaction, from appetizers to desserts, while integrating impeccable service and variety.

We spend time testing and finding the best product available to us. It is important to me and my team that we are proud of every dish we serve.

What is the best professional advice you’ve received?

“If you stay ready, you don’t have to get ready.”

I utilize this slogan every day. From prepping the kitchen at the start of the night to closing, having an organized kitchen and game plan lead to our success. We are proud to say we are ready for just about anything our guests come in and ask for.

Describe your leadership or management style.

Lead by example. As I rose through the ranks, it was important to me to listen to my team, and learn and grow from them as I hoped they learned and grew from me each day. We work closely together and I like hearing their input. We are a team and that is always the most important thing.

I strive to ensure that everyone on my team takes pride in what they do and has ownership in what they put out.

Who was your greatest cooking influence?

Ted Marchino, a German chef. His focus on using fresh ingredients and working flavors together to have the best profile in a dish is inspiring. I work to ensure that all of my dishes’ flavors complement each other but you can taste the uniqueness in every bite. I want guests to say, “Wow, that was delicious,” and discuss the different flavor profiles they taste.

What is your comfort food?

Homemade chili. It is a dish that goes with every occasion, from Sunday night dinner to Monday night football parties. I find chili to always be a crowd favorite and something that brings my entire family to the table. Chili is that great dish that everyone can make their own.

What’s your favorite place to have fun in Las Vegas?

In my music studio. Music is my release. I love just spending time mixing beats together and making great sounds. It is like cooking, in a way. I love to combine things and make something that is mine, for others to enjoy.

If you could change one thing about Southern Nevada, what would it be?

The summer months are too hot. Walking out

from the heat of the kitchen to the oven that is Las Vegas in the summer is sometimes too much.

Where do you see yourself in 10 years?

I look forward to continuing to harness my craft and be involved in future menus with the company. I have enjoyed opening the Redwood and developing the menu, and look forward to doing it again for the company.

If you could live anywhere else in the world, where would it be?

Hawaii. From the perfect weather to the amazing beaches, you can’t beat the climate, but more important, the culture and the people can’t be outdone. As I have had the pleasure to work at the Cal with many of our Hawaiian team members and guests, their culture and outlook on life are just beautiful. We say all the time that aloha is spoken here, and that feeling of unity and family is my favorite.

What is something that people might not know about you?

I am the youngest of nine siblings. Over the years, I have had to fight for my spot at the dinner table.

What would you want your last meal to be?

I have to toot my own horn here: the Redwood Steakhouse’s ribeye. It is perfectly prepared, if I do say so myself — charbroiled, lightly brushed with butter, sea salt and black pepper. You don’t even need to add a side dish. This steak is perfection.

later, I am proud to be instructing the voiceover course for UNLV. What is the most exciting project you’ve worked on?

Voicing promos for “The Ellen DeGeneres Show” and narrating Justin Timberlake’s documentary have to be at the top of the list.

What is your business philosophy?

Who are your customers/clients?

So many people are interested and curious about the voiceover industry. We mentor moms, dads, police officers, airline captains, doctors, forensic scientists, theater majors, hair stylists, actors, financial advisers, you name it. We’ve even had performers from the Strip train with us. Some people come to us purely for the fun of it. It’s a creative outlet for them. Others have goals to potentially earn part-time or eventually full-time income.

What was your career path prior to becoming a small-business owner?

I grew up in a musical family and by the age of 11, my parents had me working with a vocal coach studying classical voice. At 16, I landed my first gig singing big band music/standards around the Chicago area. I’d always wanted to become a cruise director, and by 19, I was performing on cruise ships and finally got to live out one of my lifelong dreams of being Julie McCoy from “The Love Boat”! I met my husband at sea, and we were married in 1999.

Since I was a kid, I had expressed an interest in doing voices for commercials. After moving to Las Vegas in 2000, I enrolled in a voiceover course taught through UNLV. That led to me pursuing it full time. Now, 17 years

I treat every client as though they are my only client.

I know how important their project is to them, and I’m honored to be the voice they selected to share their message with the world. With my students, I give them everything I’ve got. I’m an open book. Anything I can share with them to make their journey less scary, I will.

What is the best part about doing business in Las Vegas?

We encounter so many different people, from performers on the Strip to people who have retired here to people who visit from all over the world. And many seasoned voiceover pros vacation here and enjoy taking a workshop with us while they’re in town, or utilizing our studio.

Anything else you want to share?

I’m thankful to get to do what I love every day. I’m also grateful to my husband, Troy, who is the glue that holds our crazy-cool-never-a-dull-moment-creative life together. He’s behind the scenes doing everything that makes our studio possible, and he’s my biggest fan.

Life is short. Through all of this, I’ve beaten cancer twice. When you face mortality, you realize how precious time is. We should all do what we love and help as many people as we can along the way.

Just how much will Raiders seat licenses cost?

Start filling up your piggy bank now to prepare for the day the bill comes due on your Las Vegas Raiders personal seat licenses.

A recent meeting of the Las Vegas Stadium Authority board included a discussion of a draft personal seat license agreement with the Raiders.

While the document contained little intrigue, Raiders President Marc Badain briefly discussed the potential cost of the licenses, or PSLs, to buy season tickets for the football team beginning in 2020.

Badain confirmed that the average cost of a PSL would be just less than $4,000 per seat, saying prices “will range from much lower than that to much higher than that.”

At an average of $4,000 per license, a family of four would spend $16,000 for the right to buy Raiders season tickets. That one-time expense does not include the annual cost of the tickets. At the Oakland Coliseum this year, season ticket prices range from $330 for upper deck seats in the end zone to $1,725 for club seats near the 50-yard line, although season seats are sold out.

The $4,000 figure requires little heavy math: Divide the $250 million the Raiders need to raise by the expected 65,000 seats in the stadium.

The Raiders have received more than 50,000 deposits of $100 per person toward future PSL sales, just 43 percent of which came from Nevadans.

Although the stadium authority ultimately will grant the seat licenses, it will not pay any shortfall if the Raiders fail to raise $250 million toward the

A deficit remains unlikely. The Atlanta Falcons sold more than 55,000 PSLs for $256 million at MercedesBenz Stadium, which opens this year, with another 6,000 left to sell as of late July. Raiders lender Bank of America financed the team’s loans on PSL projections of between $350 million and $500 million, based on other recent NFL stadium sales figures. “$250 million is a bit modest and something that we find very achievable,” said Elliott McCabe, managing director of Bank of America’s sports and finance advisory group, which presented on the bank’s financing of up to $850 million in loans to the Raiders.

In addition to discussing seat licenses, Raiders officials addressed their stadium parking deficit but offered few specifics. “(Plans are) well underway, but still

a work in progress,” Raiders consultant Don Webb of Cordell Corp. said.

“I’m not embarrassed to say we are not prepared to share the final plan with you.”

Webb reviewed with board members a map of the stadium site and surrounding areas, identifying as a potential solution up to 75,000 parking spaces at Strip properties and the nearby Thomas & Mack Center at UNLV. He also mentioned the nearby Bali Hai Golf Club site currently leased to Billy Walters by Clark County — a location that could create 13,000 parking spaces and largely solve the parking problem.

“It’s no surprise to us that a 62-acre site … can’t support 16,000 parking spaces,” Webb said.

Badain talked about the possibility of both surface parking and garages, as well as the use of ride-hailing and shut-

tles in a collaborative approach.

“We’re leaving no stone unturned,” Badain said. “We’re asking for a little bit of patience.”

Board member Bill Hornbuckle noted that the Raiders would have one year from approval of the project by Clark County to finalize a parking plan, meaning the authority board would finish its votes on a dozen required agreements in October long before the parking plan were set.

“The notion that we would vote on something of this scale ... without parking resolved is concerning,” Hornbuckle said.

Officials from all sides requested patience on the much-discussed community benefits plan as well. Lynn Littlejohn, who runs community benefits for stadium contractor Mortenson, told the board and interest groups that the process is ongoing.

“People are thinking they’re behind the eight ball, that they and their company have been left out,” Littlejohn said. “We just want to assure the board and everybody here that that’s not the case. There have been no workforce opportunities that have been missed.”

Tempers grew hot on the community benefits issue at July’s stadium authority meeting when more than 1,000 job seekers showed up at the Clark County Government Center expecting hiring opportunities. They were lured by a misleading flyer from community activist Stan Washington, who repeatedly expresses concern about community benefits during public comment at board meetings.

The board’s next scheduled meeting will be Sept. 14.

‘Leading by example’: County to add more fuel-efficient vehicles By mick akers Staff Writer

As part of its continuing effort to improve air quality, Clark County is beefing up its fuel-efficient vehicle fleet.

Grants totaling $620,000 to add 45 fuel-efficient vehicles to the county’s fleet were approved recently: $385,920 for 35 hybrid vehicles and $234,080 for 10 plug-in electric vehicles.

The funds will derive from a pair of grants from the Federal Highway Ad-

ministration’s Congestion Mitigation and Air Quality Improvement Program (CMAQ). To acquire the grants, the county is contributing a $20,312 grant match for each hybrid and $12,320 grant match for each electric vehicle.

“We routinely encourage Clark County residents to take an active role in helping lower ozone levels,” said Kevin MacDonald, spokesman for the Clark County Department of Air Quality, which was started in 2001. “By converting our county fleet

to fuel-efficient hybrids, electric vehicles and alternative-fuel vehicles, we are leading by example to lower emissions and promote cleaner air.”

Once the local partnership agreement is executed by both Clark County and the Nevada Department of Transportation, the funds to reimburse the county for the purchase of the vehicles can be released.

The county has 2,386 vehicles in its fleet. Of those, 2,001 vehicles (almost 84 percent) feature some sort of a fuel-efficient option:

In the booming Colorado market, business for Denver-based alcohol vendor Vieri Gaines of Western Distributing Co. flourished four years ago, with sales of beer, wine and liquor all increasing steadily across the board.

Gaines’ model changed Jan. 1, 2014, when legal recreational marijuana sales began in Colorado. While wine and liquor sales have continued on the same growth pattern, beer sales have seen a dip of up to 5 percent.

“It happened gradually, and there was a smoking gun,” Gaines said, referring to marijuana sales growth across his state. “I don’t think most people saw it coming.”

The average American alcohol consumer spent about $645 annually on booze last year, including beer, wine and liquor, while an average pot consumer spends $643 annually on weed, according to separate studies from Cowen and Seattle-based Headset Inc.

In three of the first four states to start legal recreational pot sales, an increasing number of consumers are choosing bud over Budweiser.

That conclusion comes from a study by New York-based investment and research firm Cowen and Co. In Colorado, Oregon and Washington, domestic beer sales for Budweiser, Coors and Miller were down 4.4 percent from January 2015 to the end of 2016, while purchases of craft beer fell 2.4 percent. No data were available for Alaska.

How the beginning of recreational marijuana sales in Nevada affects local alcohol sales remains to be seen, as the program began just eight weeks ago.

Robert McDonald manages Nevada Beverage, one of Clark County’s largest distributors, and he anticipates “plenty” of demand for beer — even with pot.

“I know in other states we saw it,

Cowen’s research notes that the drop in beer sales experienced by Gaines and other vendors in pot-legal states mirrored nationwide trends of decline for beer. But those states significantly underperformed compared with states where recreational pot is not legal.

Las Vegas marijuana advocate Jason Sturtsman said deciding between alcohol and marijuana has become a “one or the other” choice for many consumers. While alcohol is a depressant and can result in a hangover, marijuana generally won’t produce a lingering effect for casual users.

“It’s definitely not recommended to mix a depressant and cannabis together,” said Sturtsman, who manages Las Vegas Releaf dispensary in addition to running nonprofit marijuana education groups. “But on its own, cannabis is a great substitute, and people are doing it as much for their health as for their enjoyment.”

Official numbers on recreational pot sales in Nevada won’t be available

from the state’s Department of Taxation until at least mid-September, department spokeswoman Stephanie Klapstein said.

Allan O’Neil of Las Vegas-based Bonanza Beverage echoed McDonald’s sentiment, saying business has “continued as usual,” despite marijuana’s expansion. O’Neil said his company does not plan to modify its business strategy.

“It’s just too early to tell at this point,” he said. “It’s just something else here in the market,” Allan Nassau of Red Rock Wines is one of six alcohol distributors across the state now licensed to distribute recreational pot, according to regulations outlined in last year’s Ballot Question 2, in which voters approved legal use and possession recreational pot in Nevada.

While Nassau doesn’t sell beer, he sees pot’s legalization and sale as “beneficial” to Nevada alcohol distributors, who can cash in on the ability to distribute the plant.

As both retail and the Las Vegas landscape continue to change , I’ve helped facilitate efforts to introduce experiential elements and marketing programs to guests.

What’s been your biggest accomplishment since you were awarded? Our firm won SBA Nevada Family-Owned Business of

the Year in 2015. But I think my biggest accomplishment was surviving the Great Recession. All of my mentors told me I would hit a hard spot in business. Since I got off to such a great start in 2006, I did not believe them. The recession took us to the brink, losing 60 percent of our revenues. This taught me not to get too high in good times or too low in bad times.

What do you want to accomplish? I want to change the course of my family and community. Having my daughter become the president and CEO of our firm has already moved our familyowned business into the next generation. I am accomplishing what my father wanted: to build a legacy.

What have you learned the hard way? Change often involves living outside of your comfort zone. Some of our best decisions, yielding the most favorable results, were risky ones.

Companies are finding many uses for drones of a prototypical all-American CEO, but the space is all-American.

There’s a Michael Jordan sculpture and a statuette of former NFL star Barry Sanders. And Bernstein doesn’t leave you standing. Instead of plain swivel chairs, he offers either a Yankee Stadium seat or a bar-height director’s chair.

“My sports career gave me the ability to be an investor in some things,” he said.

Before he got into drones, Bernstein was a sports agent, and because he was a sports agent, he got into drones. So he decided to invest in AviSight, a Las Vegas-based startup that was founded by military veterans to help companies integrate drones into their business models.

He initially thought he could help introduce drones to sports coverage as a replacement for those ubiquitous overhead cameras suspended on wires. But his focus shifted to what he sees as more lucrative opportunities to tap an emerging industrial market.

DRONES ON THE STRIP (AND EVERYWHERE ELSE) In addition to the obvious entertainment use — covering live events — Bernstein is working to connect drones with law enforcement and private security teams on the Strip, utility companies and even facility managers. Entertainment on the Strip may be the obvious, high-profile application, but drones are capable of much more.

“Think of the drone as a Swiss army knife,” Bernstein said. “Then we have all these sensors we can pop on.”

In an adjacent building, past a signed Joe Montana picture, Bernstein has a Pulse Vapor 55. It’s a white, 15-pound helicopter drone with a LIDAR (Light Detection and Ranging) sensor, used to survey terrain.

That’s one of the tools Bernstein can pull from his Swiss army knife.

Sensors — AviSight has infrared, multispectral and gamma sensors as well — allow the company to complete tasks such as inspecting power lines and monitoring crowds as they exit from an event at T-Mobile Arena.

“We’ve already started working with most of the hotels on the Strip (on) getting some baseline marketing images that we’ve been putting together,” Bernstein said.

Commercial drones have been legal for several years, but companies are

Gregor noted that the Strip is within the highly controlled Class B airspace around McCarran International Airport. “We have given a few operators authorization to fly in locations adjacent to the Strip,” he said. “However, the authorizations are very restrictive to ensure drones don’t pose hazards to any airplanes or air tour helicopters, or to people on the ground.”

Drones can be used for search and rescue. They can be used to monitor gas leaks. They can be used for the kinds of dynamic marketing images AviSight has been shooting. They can even help predict when buildings might be damaged.

Often, the forces affecting buildings and other structures cause stress and strains not visible to the naked eye. In the near future, Bernstein said, drone-collected data will be fed into computer models, which will employ information about construction materials and methods to make more educated predictions about when a structure could fail.

DRONES IN NEVADA With ample empty land and eight official sites for drone development

Drone development and testing sites in Nevada The Nevada Institute for Autonomous Systems, a nonprofit corporation created by the Governor’s Office of Economic Development, has eight officially designated areas in Nevada for the testing and development of drones: n Reno-Stead Airport, Reno n Silver Springs Airport, Silver Springs n Hawthorne Industrial Airport and the surrounding area, Hawthorne n Mesquite, a test range 10 minutes north of the town n Tonopah Airport, Tonopah n Beatty Airport, Beatty n Unmanned Vehicle Range (adjacent to Nevada State College), Henderson n The Aerodrome, Boulder City

and testing, officials see Nevada playing a role in drone development.

In December 2013, Nevada was one of six federally designated test sites for commercial drones, a distinction used to bolster the state’s profile in the industry. Last year, Chinese company Ehang said it plans to test its passenger drone in Nevada, and a Reno-headquartered startup conducted the first residential drone delivery of first aid. This month, The New York Times reported that Microsoft had been testing autonomous gliders that use little power in Hawthorne.

Some of the state’s large employers are supporting the industry’s expansion and use in Las Vegas. Bernstein rattles off a long list of AviSight’s corporate partners — NV Energy, MGM Resorts International and Caesars Entertainment among them. The company also has an exhaustive list of contracts with municipal agencies throughout the valley.

Bernstein said his company has helped Metro monitor events such as the Electric Daisy Carnival and the first day of school. It also has helped the Regional Transportation Commission conduct traffic analysis and survey sites for new roads.

“If you don’t own your backyard, you don’t own anything,” Bernstein said. “We’re the official drone of Metro Police. We’re the official drone of the city of Las Vegas. We’re the official drone of Clark County.”

AviSight became the first company this year to receive a broad waiver from the Federal Aviation Admin-

istration to operate over the Strip.

Other companies are allowed to operate in that rarefied airspace but must receive special permission before every flight.

Praxis Aerospace Concepts International is one of those companies.

The Las Vegas-based firm helped set up a drone traffic-management system with AirMap and is developing drone software.

“Right now, there is someone flying, because I’m watching them on my screen,” Praxis CEO Jonathan Daniels said.

Like AviSight, Daniels said, Praxis has municipal, federal and corporate clients, including Fortune 500 companies. Both companies see an opportunity in bringing a new industry’s tools to old organizations. They both focus on education, teaching operators how to safely fly and manage a drone fleet.

AviSight, for instance, works with other companies to come up with five- or 10-year plans. The firm sets the groundwork, helps get certifications and train employees. “The drones allow you to (fly) closer to get better data. They reduce your costs massively,” Bernstein said. “That’s part of the proposition we are packaging. ... My gut is that of course they are going to bring them in-house.”

He isn’t worried, though, that this will cut into business. What makes AviSight different is not just its hardware but its software, Bernstein said.

Drones collect streams of data that must be analyzed. The company has developed an artificial intelligence (AI) model and is using machine learning to automatically do analysis that a company can then act on, he said.

“Basically, aerial inspection has two sides, the services side and the software side,” Bernstein said. “The services side flies over the structure and collects data that gets fed back into the AI engine that looks for faults.”

Bernstein said in the not-too-distant future, the AI engine will not only recognize the problems but will relay the information to a dispatch system which will then send a crew out to fix the problem.

All this hasn’t left Bernstein with much time to think about replacing the suspended cameras at sporting events.

“It’s kind of become back-burner for us,” he said. “That’s kind of the irony of my situation.”
